It’s a great time to reflect on the high points of the past year and look ahead. Kedric will share some of his thoughts on 2014 and look ahead to the anticipated edible treats of 2015. He’ll also preview the upcoming food and beverage options of the new $185 million ARTIC transit hub (67,000-square feet) adjacent to Angel Stadium and Honda Center.

We last spoke with Chef Richard Rosendale just after he returned from competing in the international Bocuse d’Or in early 2013. At the time he was the executive chef of iconic The Greenbier (White Sulfur Springs, WV.) Since then he’s gone out on his own and can be seen Saturday mornings on CBS’ “Recipe Rehab.” He’s also a coach for Team USA for the upcoming Bocuse d’Or competition in Lyon in late January. We’ll talk with Richard about Team USA’s chances for 2015 and what it takes to compete in this prestigious and rigorous international competition (24 countries competing) known as the “Olympics of Cooking.”

When Chef Charlie McKenna opened the original Lillie’s Q in 2010 in the Bucktown neighborhood of Chicago he brought award-winning competition BBQ and timeless Southern cooking to the City of Big Shoulders. Now Chef Charlie and partner Joe Manzella of TAPS Fish House & Brewery and The Catch have launched Lillie’s Q in Brea Downtown. The joint venture marks McKenna’s fourth location for his growing barbecue concept. Chef McKenna is our guest.

Cocktail experts David Solmonson and Lesley Jacobs Solmonson are back with us providing inspired advice on New Year’s Eve libations. They are the authors of The 12 Bottle BarA Dozen Bottles. Hundreds Of Cocktails. A New Way To Drink.

It’s been an epic year for our Friends at The Winery in Tustin and Newport Beach. The Orange County Concierge Association just awarded The Winery the designation of “Restaurant of the Year.” In unprecedented fashion The Winery also won this recognition from the OC Concierge Association in 2008, 2009, and 2013. At The Golden Foodie Awards this year The Winery took home the honor for “Best Wine list” for the third year in a row. Also in the Orange County Register’s restaurant critic Brad A. Johnson’s 2014 O.C. Restaurant Awards the new Winery in Newport Beach was in Johnson’s “Top 10 New Restaurants” (in the Number Three position.) Winery Managing Partner and Sommelier William Lewis joins us to share all the good news and their celebratory plans for New Year’s Eve.

After being open for all of six weeks, ARC was referred to as one of the “most important restaurants to open in America this decade” by respected food and travel journalist, Brad A. Johnson of The Orange County Register. He is the recipient of a prestigious James Beard Award for excellence in food writing.

Earlier in the year the OC Register Magazine (February 4th) awarded Chef Noah the accolade of “Chef of the Year”

Prior to her ride to fame on “Top Chef” she held the Executive Chef position at China Poblano by Jose Andres at The Cosmopolitan.

Chef Shirley is opening a modern Chinese restaurant in Irvine at the end of September. “I like my cuisine to tell a story,” commented Chef Shirley, who has developed the innovative menu of sharable plates for TWENTY EIGHT. “My inspiration for this menu is reflective of my childhood years in Beijing, my past experiences, and my travels, all of which have inspired me to push the envelope.”

“In addition to the menu of modern Chinese specialties, diners can look forward to an enticing Dim Sum and Small Plates menu, a full bar with a focus on craft cocktails, and private dining options for both large and small gatherings.”

The Palm Beverly HillsThe iconic Palm Restaurant in West Hollywood will close and lock its doors for the last time on September 30th after almost 40 years. The better news is that their new 6,000 square foot restaurant seating 185 guests will debut at in Beverly Hills at 267 N. Canon Dr. in early November.

Kedric Francis of the Orange County Register Magazine and Coast Orange County Magazine has been out and about exploring the latest finds in the OC. He was at the very exclusive pre-opening preview lunch for the eagerly anticipated Din Tai Fung Dumpling House in South Coast Plaza on August 15th and will share some of his observations.

Executive Chef Michael Rossi (ex-Napa Rose) has been at the helm of The Ranch Restaurant & Saloon since it’s opening day in early 2012. He was actually on the ambitious project over a year testing recipes before the first guests were greeted. The Ranch (unusually) has its own farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh fruits and vegetables used at the highly regarded and much acclaimed restaurant. It’s a chef’s dream to have these resources…

Freddy Vargas is the forward-thinking executive chef of the high profile Scarpetta located in the Montage Beverly Hills across a pocket park from Thomas Keller’s Bouchon Beverly Hills. This is one of Celebrity Chef Scott Conants’s restaurant properties. At lunch on Weekdays he’s operating a to-go Paninoteca. Think gourmet Italian sandwiches like a Porchetta. It’s spiced pork belly, broccoli rabe pesto and a fried hen egg on house-baked bread.

Brad A. Johnson is the James Beard award-winning restaurant critic for both the Orange County Register and the Los Angeles Register. Where does a restaurant critic eat when he’s not reviewing? Those are the spots we all want to go…Brad shares with us some of his favorites in both Orange County and Los Angeles. The origin of this discussion was a recent article Brad wrote for the Orange County Register Magazine.

The show was live on Saturday morning from The Valley View Casino. The fine dining restaurant there is Black & Blue – The Place For Steak. We’ll meet Chef de Cuisine Michael Knowles.He started cooking at age 14! He has elevated Black & Blue to an award-winning California steakhouse that’s true destination dining for San Diego residents.

Travis Rodgers is the easy-going Iron Man of personalities on AM 830 KLAA. Every weekday morning he’s on AM 830 KLAA talking sports for four hours beginning at 6:00 a.m. After he’s finished at 10:00 a.m. on AM 830 he continues his national show for Yahoo Sports Radio for another hour until 11:00 a.m. That’s five hours on Weekdays as the solo host.

Travis’ second favorite subject is good food. Did we say Mexican? The discussion with Travis is on assorted cravable eats.

Kedric Francis of the Orange County Register Magazine and Coast Orange County Magazine has been out and about exploring the latest finds in the OC. He was at the very exclusive pre-opening preview lunch for the eagerly anticipated Din Tai Fung Dumpling House in South Coast Plaza on August 15th and will share some of his observations.

Executive Chef Michael Rossi (ex-Napa Rose) has been at the helm of The Ranch Restaurant & Saloon since it’s opening day in early 2012. He was actually on the ambitious project over a year testing recipes before the first guests were greeted. The Ranch (unusually) has its own farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh fruits and vegetables used at the highly regarded and much acclaimed restaurant. It’s a chef’s dream to have these resources…

Freddy Vargas is the forward-thinking executive chef of the high profile Scarpetta located in the Montage Beverly Hills across a pocket park from Thomas Keller’s Bouchon Beverly Hills. This is one of Celebrity Chef Scott Conants’s restaurant properties. At lunch on Weekdays he’s operating a to-go Paninoteca. Think gourmet Italian sandwiches like a Porchetta. It’s spiced pork belly, broccoli rabe pesto and a fried hen egg on house-baked bread.

Brad A. Johnson is the James Beard award-winning restaurant critic for both the Orange County Register and the Los Angeles Register. Where does a restaurant critic eat when he’s not reviewing ? Those are the spots we all want to go…Brad shares with us some of his favorites in both Orange County and Los Angeles. The origin of this discussion was a recent article Brad wrote for the Orange County Register Magazine.

We’ll meet Chef de Cuisine Michael Knowles .He started cooking at age 14! Every weekday morning he’s on AM 830 KLAA talking sports for four hours beginning at 6:00 a.m. After he’s finished at 10:00 a.m. on AM 830 he continues his national show for Yahoo Sports Radio for another hour until 11:00 a.m. That’s five hours on Weekdays as the solo host.

On Sunday, August 31st at 7:30 p.m. Chef Michael Cimarusti and Jonathan Gold will be hosting “Flavors of L.A.” “Find great eating around every corner.”

Din Tai Fung Dumpling HouseKedric Francis of the Orange County Register Magazine and Coast Orange County Magazine has been out and about in the OC. He was at the pre-opening preview lunch for the eagerly anticipated Din Tai Fung Dumpling House in South Coast Plaza (August 18th was Opening Day) and will share some of his observations.

Din Tai Fung is most famous for XiaoLongBao, the Shanghai-style soup dumplings which became a signature dish at the original site in Taipei.

Din Tai Fung at South Coast Plaza is over 8,000 square feet, making it one of the largest in over 100 locations worldwide.

Michael Rossi of the Ranch Restaurant and SaloonExecutive Chef Michael Rossi (ex-Napa Rose) has been at the helm of The Ranch Restaurant & Saloon since it’s opening day in early 2012. He was actually on the ambitious project for over a year testing recipes before the first guests were greeted.

The Ranch (unusually) has its own 2-acre farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh produce used at the highly regarded restaurant. Think of over 600 heirloom tomato vines featuring 90 different varieties. Original (and fully mature) orange and fig trees are also part of the property.

Future expansion plans for the Edwards Ranch Estates include avocado trees, olive trees, and grape vines.

It’s a chef’s fondest dream to have these incredible resources…

One of Chef Michael’s signature menu items is the much talked-about 58 oz. bone-in Cowboy Ribeye chop.

Valentine’s Day is next week so get moving and don’t panic. It falls on a Friday this year. Friday is an especially tough day for restaurants due to Valentine’s Day anxiety so if you want to be a bit more relaxed make your plans for Saturday or Sunday instead. Still the Valentine’s Day orbit but a bit less crazed for the restaurant. You’ll definitely have better service…

Chef jet Tila and Alton BrownFood Network’s “Cutthroat Kitchen” with host Alton Brown is back on Sunday nights for Season 2. Our own Chef Jet Tila is the most frequently appearing solo judge on this tough competition show that requires strategy as well as cooking chops. Look for Jet’s new episodes starting in February.

It’s the Winter Olympics in Sochi and a classic Newport Beach restaurant is serving a special Olympics-themed menu for the duration. We’ll go inside the menu with the creative executive chef. Caroline Styne is the partner and Wine Director (with Chef Suzanne Goin) in Lucques, A.O.C. and Tavern in West Hollywood and Los Angeles. We’ll talk with her and get insight on how you keep a firmly established and growing restaurant group fresh for the dining public. We’ll also hear the story of Slapfish which started as a modest food truck and now is a growing international empire. Did you know there is an emerging wine region in Northern Baja? You’ll learn about a promising winery in the Guadalupe Valley founded by Italians. Brad A. Letter Grades at RestaurantsLast month The Orange County Register’s James Beard Award-winning restaurant critic, Brad A. Johnson, was looking to review a Newport Beach restaurant. Instead all of the members of his dining group came down with severe cases of food poisoning. When Brad checked the Orange County Health Department records of this restaurant he was surprised to learn that they had received a serious violation on each of their previous inspections since they opened two years ago.

Brad is with us to discuss his campaign for Orange County restaurants to receive Letter Grades as a result of their Health Department inspections as is practice in Los Angeles County and other areas of California.
