Her latest cookbook, Carla Hall’s Soul Food: Everyday and Celebration, has landed on annual “Best Cookbook” lists across the country and received an NAACP Image Awards nomination. Carla also serves on the Leadership Committee for the James Beard Foundation Food and Beverage Investment Fund for Black and Indigenous Americans.

Just announced is that Chef Carla has her first children’s cookbook (with illustrations) coming out in the Fall. It’s titled Carla and the Christmas Cornbread.

Michael Brughelli of Folded Hills Winery

“In 2017, Andy and Kim Busch started a business in their 50’s which they knew nothing about. Andy, coming from a long line of beer barons, had worked not in the beverage business but rather at Grant’s Farm, the original prototype for the Busch Gardens parks started by his father, Gussie. Folded Hills Winery, Farmstead, Ranch focuses on top notch wine making rather than beer.”

“The Busch’s own Folded Hills, a working ranch, an integrated sustainable farm is located just outside of Santa Barbara in the Santa Ynez Valley. When they purchased a contiguous piece of farming property they learned that the original farmsteader had planted a pre-prohibition vineyard and made wine in the basement of his farmhouse.”

“The Busches had purchased the property to keep the land agricultural in general and organic in particular and in 2014 decided to start farming organic grapes alongside the 18 acres of organic row crops, stone fruits, and animals.”

“As they were deciding what grape varietals to plant everyone told them to “plant what they love to drink”. Andy loves beer – that was no help- although they do have a small patch of hops growing. Kim loved Pinot Noir but the terroir would not grow a quality Pinot. They settled on the Rhône varietals which they knew absolutely nothing about. Now the hillsides are rolling with grape vines of syrah, grenache, Clairette blanc, grenache blanc and marsanne.”

“This is a heart project for the Busches and they wanted to bring some of their mid-West roots and family heritage to the project. Many of the wines have names that harken back to their iconic St. Louis history.”

“Their award- winning Lilly Rosé is named for six generations of Lilly’s.” From Lilly Anheuser who married Adolphus Busch in 1861, to their 3 -year old grand-daughter, Lilly. The Grant Grenache is named for the family seat in St. Louis, Grant’s Farm, which was named for Ulysses S. Grant, the original farmsteader of the that land. The August Red and August White are named for Andy’s grandfather and father, August Busch Sr. And Jr. His father, August, Jr., or Gussie, was the one who gave his father the first Clydesdale hitch to celebrate the repeal of Prohibition in 1934.

“The Busches still ponder why they decided to launch a business that they knew so little about, so late in life, after their children had left home. But it is working. Folded Hills has won many awards for the wines which are grown organically, following the biodynamic calendar. The wines are hand-crafted in small batches with minimal intervention.”

Winemaker Michael Brughelli oversees all winemaking, working directly with the vineyard and cellar staff in a hands-on fashion. “A California native, Brughelli is perhaps best known as winemaker for Scar of the Sea, a label he co-founded with Mikey Giugni. A darling of critics and sommeliers alike, Scar of the Sea quickly rose in prominence as Brughelli’s wines drew wide notice. In 2019, he sold his portion of Scar of the Sea back to Giugni in order to launch his own consultancy, Vignerons. Previously, Brughelli was at Bien Nacido Vineyard, in the Santa Maria Valley appellation of Santa Barbara County, where over the course of seven seminal years, he rose from Sales Manager to Director of Sales to Director of Supply.”

Nathan Peitso, a second-generation farmer of Kenter Canyon Farms, is at the helm of FARMHOUSE together with Executive Chef Craig Hopson. Located on the ground floor of the refreshed Beverly Center, FARMHOUSE redefines the traditional restaurant model by placing a farmer at the forefront of the business and thus creating a new culinary movement focused on collaboration with the region’s top farmers to grow and harvest ingredients dictating the dining destination’s dishes.

Chef Bill Bracken and high profile chef friends (Bracken’s Kitchen, “Driven to combat food insecurity one tasty meal at a time”) – are gathering together for a Holiday Open House benefit on Thursday, Nov. 29 from 6 to 9 p.m. at Bracken’s new kitchen in Garden Grove to help raise awareness and funds for Bracken’s Kitchen’s mission to feed those in need. Bill Bracken is grateful to be in a new 9,000 sq. ft. kitchen, yet with the growth comes more need to do more that requires additional resources and funding. Our own Chef Andrew Gruel’s Slapfish, Two Birds and Butterleaf will be part of the festivities. Chef Andrew provides the details of what’s on the Deck The Halls (And The Kitchen!) menu.

When we spoke with celebrated Santa Monica restaurateur & philanthropist Geraldine Gilliland (Lula Cocina Mexicana and Finn McCool’s Irish Pub) last week her respected animal rescue (Chiquita’s Friends) was still displaced from her ranch in Malibu and her new rescue sanctuary, Cornell Sanctuary in Agoura. Gerri was currently encamped with 26 rescue dogs at a generous benefactor’s ranch in Lompoc. We’ll get updated on Gerri’s plight and how you can help.

Gerri was currently encamped with 26 rescue dogs at a generous benefactor’s ranch in Lompoc. Many of these rescue canines are special needs due to being seniors or are on prescription medications.

The newly restored guest cottage at Cornell Sanctuary was tragically lost in the Woolsey fire along with all of the caretaker’s personal belongings. Miraculously all the animals (including goats and rabbits) were saved.

We’ll get updated on Gerri’s plight and how you can help. In this time of great need a contribution of any size would be greatly appreciated.

Bobby Navarro left a decade of work in the hospitality industry to fully commit to his own event planning and culinary promotions company, 100eats.com. He cooked with Amar Santana at both Charlie Palmer’s in South Coast Plaza and Broadway by Amar Santana. Bobby’s passion for branding and business keeps him visiting hundreds of restaurants across the country, stemming from his original feat of dining at 100 restaurants in 100 consecutive days. We’ll meet him…

Simon Majumdar is a food writer, broadcaster, Food TV personality, and author of the recently published, Fed, White and Blue – Finding America with My Fork. You know him as the no-nonsense judge on Food Network’s Cutthroat Kitchen with host Alton Brown. In fact, Mr. Brown penned the enthusiastic Foreword to Fed, White, and Blue.

Majumdar is also the new Master of Ceremonies for the upcoming 2015 Golden Foodie Awards presented in the sold-out, red carpet affair on September 27th at the Fairmont Newport Beach.

Last Saturday (July 25th.) Chef Carla was the honoree at the James Beard Foundation’s Chefs & Champagne benefit in The Hamptons. In New York this is always the annual culinary highlight of the Summer. It’s held on the grounds of the Wolffer Estate Vineyard in Sagaponack. In addition to free-flowing Champagne over 40 celebrated chefs (including Chefs Tom Fraker and Marco Zapien from Melissa’s) served their own delectable creations.

A silent auction at Chefs & Champagne consisting of fine-dining experiences, wines and spirits, cookware, and culinary travel packages raised a record-breaking amount of over $75,000 to support the James Beard Foundation’s mission and educational programs, including culinary student scholarships and the organization’s annual food conference on sustainability, public health, and nutrition.

In June she was part of First Lady Michelle Obama’s Presidential Delegation to the World Expo in Milan and the USA Pavilion. The Delegation toured the USA Pavilion which showcases American leadership on global food security and development issues, innovation, climate change and sustainability, and nutrition and health.

A group of professional journalists from The International Food Wine and Travel Writers Association is visiting the show. Their Secretary, Susan Montgomery, joins us. In addition to explaining the mission of the IFTWTA Sue will highlight her recent visit to Casa Mayoral in the Guadalupe Valley in Northern Baja California.

MJ Hong is the gracious proprietress of The Wine Artist in Laguna Beach. It’s a boutique winery, special event venue (and more) designed to accommodate team building exercises. It’s also a destination for unusual cooking demos and classes. We’ll learn all about it.

ABC’s “The Chew’s” Chef Carla Hall is, fortunately, no stranger to the show. She is a Daytime Emmy Award-winning chef and best-selling cookbook author. Last Saturday Chef Carla was the honoree at the James Beard Foundation’s Chefs & Champagne benefit in The Hamptons. In June she was part of First Lady Michelle Obama’s Presidential Delegation to the World Expo in Milan and the USA Pavilion.

When the conversation turns to artisan coffee roasters in Orange County you always hear the name of coffeehouse visionary Martin Diedrich. He grew up in Guatemala where is Family owned a small coffee farm. In late 2005 Martin and his wife, Karen, launched their latest retail venture Kean Coffee in Newport Beach. A location in Tustin has been added to the portfolio. It’s Coffee 101 with Martin Diedrich.

Bobby Navarro left a decade of work in the hospitality industry to fully commit to his own event planning and culinary promotions company, 100eats.com. He cooked with Amar Santana at both Charlie Palmer’s in South Coast Plaza and Broadway by Amar Santana. Bobby’s passion for branding and business keeps him visiting hundreds of restaurants across the country, stemming from his original feat of dining at 100 restaurants in 100 consecutive days. We’ll meet him…

Simon Majumdar is a food writer, broadcaster, Food TV personality, and author of the recently published, Fed, White and Blue – Finding America with My Fork. You know him as the no-nonsense judge on Food Network’s “Cutthroat Kitchen” with host Alton Brown. In fact, Mr. Brown penned the enthusiastic Forward to Fed, White, and Blue.

Majumdar is also the new Master of Ceremonies for the upcoming 2015 Golden Foodie Awards presented in the red carpet affair on September 27th at the Fairmont Newport Beach.

Last Saturday (July 25th.) Chef Carla was the honoree at the James Beard Foundation’s Chefs & Champagne benefit in The Hamptons. In New York this is always the annual culinary highlight of the Summer. It’s held on the grounds of the Wolffer Estate Vineyard in Sagaponack. In addition to free-flowing Champagne over 40 celebrated chefs served their own delectable creations.

In June she was part of First Lady Michelle Obama’s Presidential Delegation to the World Expo in Milan and the USA Pavilion. The Delegation toured the USA Pavilion which showcases American leadership on global food security and development issues, innovation, climate change and sustainability, and nutrition and health.

As he says, “I’m well rested, not particularly poor, and the only time I ever encountered “huddled masses” is in line at Costco.” But immigrate he did, and thanks to a Homeland Security agent who asked if he planned to make it official, the journey chronicled in Fed, White, and Blue was born. In it Simon sets off on a trek across the United States to find out what it really means to become an American, using what he knows best: food.

On-line voting (for seven days only) in the initial seven categories starts Saturday August 1st. These include Best Cocktail, Bartender of the Year, Best Food Talk Radio Show, Best Food Writer, Best Sushi, Best Dessert and Best Service Award.
