Show 336, August 10, 2019: Mealtop (Korean Shaved Ice) with Proprietor Joon Hyun-Baek

Joon Hyun-Baek of Mealtop CafeSince 1985 Mealtop has been serving traditional Korean shaved ice (Bingsoo) all over South Korea. These popular and traditional Korean desserts have recently arrived in the United States with locations in Buena Park and on L.A.’s Koreatown.

The menu at Mealtop features a multitude of authentic Bingsoo (shaved ice). All of Mealtop’s Bingsoo variations include four classic ingredients: soft shaved ice, braised red beans, chewy rice cakes and sweet condensed milk. The cast-iron braised sweet-but-savory red beans are the most important aspect, while the other three play equal parts in the taste of Korean tradition. All of the flavors come together in harmony and every ingredient is either made in-house using traditional techniques or locally sourced.

In addition to traditional shaved ice, Mealtop also offers other items such as lattes from South Korea (Bibibig Latte, Orange Latte and Babamba Latte), and desserts such as Injelomi Pancake and more.

Julie MargolinJulie Margolin is now in her third winning season as Director of Food and Beverage at Honda Center. We’ll check-in with Julie and see what’s new in edibles and libations for Ducks Hockey. All the tempting and properly decadent desserts available are now made in-house! This includes the much-talked-about brownies.

We’ll get briefed on the new sandwiches and premium burgers at Standing O as well as what’s happening at Shock Top Terrace with the chef inspired entrees. They are now even baking their own bread in-house for the sandwiches at Honda Center.

Our friends at Melissa’s are always adding to their selection of healthy and satisfying snacks at Honda Center. Their carts feature whole fruit, gluten-free snacks and trail mix.

Craft beer is well-represented at Honda Center, too. We get updated on the wide variety of thirst-satisfying offerings including what’s on tap with Golden Road Brewing and Hangar 24.

Show 99, November 29, 2014: Corporate Chef Ida Rodriguez, Melissa’s Produce

Chef Ida Rodriquez of Melissas World Variety ProduceMelissa’s Produce adds another useful and informative cookbook to the company’s growing series, each devoted to one fresh ingredient. Newly published is DYPs – The Perfect Everyday Potato Cookbook. The Dutch Yellow Potato (DYP) is the perfect cooking potato with its creamy texture, buttery flavor and year-round availability.

Since the DYP is available twelve months of the year, the consistency of this year-round supply is what this cookbook celebrates. There are 154 recipes (including desserts,) grouped according to the four seasons of the year, incorporating the fresh harvests of the day to enhance, support and combine with the DYP.

The Dutch Yellow Potato is grown exclusively for Melissa’s by their grower-partner in the Magic Valley region of Southern Idaho. DYPs remain dense and moist when cooked. The variety also cooks a lot quicker than other kinds of potatoes. The naturally small and uniform size of the Dutch Yellow is another characteristic that makes the variety a useful culinary tool.

Co-author and Melissa’s Corporate Chef, Ida Rodriguez, joins us. She just returned from a trip to Spain and was surprised to observe how prominent potatoes are in the Spanish diet. There are even a couple of Spanish-inspired recipes (Papas Bravas) in the DYPs book.

Joshua Lurie of Food GPSJosh Lurie of Food GPS is at it again with delectable food and beverage events. The 3rd Annual Food GPS Fried Chicken Festival Presented by Bolthouse Farms is set for Sunday afternoon, August 17th in Chinatown’s historic Central Plaza. Hours are 4:00 p.m. to 7:00 p.m.

This all-inclusive, chef-focused event includes some of L.A.’s best chefs preparing unique fried chicken dishes and complimentary sides. Additionally, there are an array of delicious desserts (Valerie Confections) and beverages.

Participating chef Jesse Furman (Free Range LA) and Josh Lurie of Food GPS preview the Festival.

Just added to the lineup are Chef Jimmy Shaw of Torta Co. with a Milanesa de Pollo and Chef Eric Greenspan of Greenspan’s Grilled Cheese.

The Museum of the American Cocktail (based in New Orleans at the Southern Food & Beverage Museum) is presenting an evening of cocktails, food, and entertainment featuring (the always entertaining) culinary historian and author Richard Foss on August 18th at 6:30 p.m. at Roxanne’s Lounge in Long Beach. The presentation is : “Dry With a Twist: A Liquid Lesson in How Prohibition Changed America.”

One of the most important wine regions in Mexico is the Valle de Guadalupe located about an hour and one-half South of Tijuana. The best of these wines are slowly finding their way North to Southern California. Manuel Alvarez of AlXimia Vino Elemental winery joins us from the Valle de Guadalupe with his Family’s story.

Tarit Tanjasiri is the baker/proprietor of the revered CremaCafe in Seal Beach. It started as a small breakfast and lunch spot. Tarit couldn’t source a bread for his sandwiches that satisfied him so he added an adjacent production bakery. We’ll meet him.

Dry with a Twist: A Liquid Lesson in How Prohibition Changed AmericaThe Exhibition Room at Roxanne’s Cocktail Lounge & Latin Grill, Long Beach’s “hidden speakeasy,” hosts the next edition of Touring the Cocktail: MOTAC Los Angeles, a liquid lesson in how Prohibition changed America. Come out for an evening of culture and cocktails, costumes and music! Dress as a flapper, bootlegger, moonshiner, or temperance crusader (no hatchets please, ladies). There will be prizes for the best costume, giveaways, and more!

Whether you were a regular tippler or never let a drop of alcohol past your lips, Prohibition affected every American’s life. Dining options, dating habits, vacation choices, and perhaps most infamously, the attitude of citizens toward law enforcement, were forever altered by the temperance movement’s short-lived crowning achievement. Even so, most Americans don’t really understand who we were before that great experiment, how Prohibition came to pass, and the ways in which the period reverberates to this day.

Historian Richard Foss, author of “Rum: A Global History,” transports participants to a world of temperance terrorists and flappers, moonshiners and smugglers, and ordinary citizens who just wanted a drink and would get it by any means necessary. Drinkmaster David Valiante executes a menu of five period cocktails, illustrating the ways in which America’s palate for drinks has changed.  (Don’t worry, bathtub gin will not appear on the menu, but some delightful and largely forgotten beverages will make a glorious reappearance.) A light dinner of savory specialties from Roxanne’s Latin Grill is included in the price of admission.

Tickets are $40 in advance, $35 for members of SoFAB/MOTAC and the USBG. Tickets at the door are $50 (subject to availability.)

Tarit TanjasiriTarit Tanjasiri is the consumed baker/proprietor of the revered CremaCafe & Artisan Bakery in Seal Beach. It started eight years ago as a small breakfast and lunch spot. Tarit’s Kouign Amann was one of the OC Weekly’s “100 Favorite Dishes of 2014.”

According to Anne Marie Panoringan of the OC Weekly : “Per Tarit, a Kouign Amann is a pastry from the Brittany region of France. It’s often considered more of a cake than a pastry, although Crema utilizes croissant dough for their version. Layers of butter, dough, sugar and a bit of sea salt are formed. Shaped to resemble a blooming rose, it is then placed in the deck oven to bake. Sweetness and density are much higher in France, and they come in many more sizes, shapes and filling flavors.”

Bestia, which launched in late 2012 in a secluded location in the former warehouse district of Downtown Los Angeles (now known as the Arts District,) has been a high-profile foodie destination since the beginning. Chef Shachi Mehra is well-known to Orange County diners as the opening chef for the fine-dining Tamarind of London in Newport Coast. Now Chef Shachi has branched out on her own and launched the more accessible ADYA in the Anaheim Packing House. It’s a reflection of modern India cuisine revolving around fresh, sustainable ingredients, simply prepared, in a casual setting.

Why would anyone sell nearly everything he owns, then pack up and travel for three years – alone – on a motorcycle? Meet world traveler and adventurer, Allan Karl, the author of Forks: A Quest For Culture, Cuisine And Connection. The standout book documents his 62,000 mile journey through 35 countries on 5 continents as well as provides authentic local recipes.

Spencer’s Restaurant at The Mountain is consistently one of the most popular and favorably reviewed restaurants in the greater Palm Springs area. Since 2008 the secret has been the culinary talents of Executive Chef Eric Wadlund in the kitchen.

The Museum of the American Cocktail is hosting one of their special “Touring the Cocktail” evenings at Guelaguetza Restaurante on July 23rd. It’s a tequila appreciation evening with Oaxacan food tastes. Tomas Estes, Mexico’s official Tequila Ambassador to Europe has the details.

Charcuterie and Cured Meats at Bestia“Chef Ori maintains an aggressive house-cured meats program with over 60 different forms of charcuterie for Bestia. Bestia means “Beast” in Italian. He is also responsible for raising his own yeast culture which he uses to bake Bestia’s sourdough Pain au Levain, used as toast ubiquitously on the menu, as well as for the pizza dough, which rises and falls over a 24-hour cycle prior to being composed as a Napolitana pizza. It’s then baked in the Acunto (wood burning) oven at 900 degrees.”

‘On the dolci side of the menu, Chef Genevieve is preparing a plethora of desserts from scratch using the finest raw ingredients such as acquarello rice for her al dente rice pudding served with perfectly ripened in-season fruit or her earthy, nutty, chestnut flour zeppole served with house-made coffee gelato and cream. In addition Chef Genevieve was partially responsible for the design of Bestia. She re-furbished oil drum spouts converting them into lighting fixtures.”

Shachi MehraChef Shachi Mehra is well-known to Orange County diners as the opening chef for the fine-dining Tamarind of London in Newport Coast. For two years Allan struggled to find a publisher willing to take on this unusual and ambitious book project. They couldn’t pigeonhole it…Finally he turned to Kickstarter to raise the needed initial funds to self publish. He raised almost twice his initial goal for a total of $44,994

Tomas Estes, London resident, native Angeleno, acclaimed restaurateur, and Mexico’s “Official Tequila Ambassador to Europe,” issues participants a passport to the world of tequila and takes them on a behind-the-scenes tour of agave spirits. Josh Goldman, Co-Founder of Soigné Group, a portfolio of 12 Los Angeles-area craft cocktail bars and restaurants, executes a drink menu that demonstrates tequila’s range and versatility.

A sampling of savory specialties from the authentic Oaxacan kitchen of Koreatown’s Restaurante Guelaguetza are included in the price of admission. Come taste why Pulitzer Prize-winning Los Angeles Times food critic Jonathan Gold says “Guelaguetza is the best Oaxacan restaurant in the country.”

Tickets are $45 in advance, $40 for MOTAC/SoFAB and USBG Members, and $50 at the door.

This was an over 5-month redo on a major budget…This is easily the most anticipated opening of the year in Orange County.

The Executive Chef is Marc Johnson and the seasoned General Manager is Miguel Rodriquez. Both moved over from the popular Mastro’s Ocean Club in the Crystal Cove Promenade on Newport Coast.

Chef Mark was previously with Studio’s (Montage Laguna Beach) opening executive chef, James Boyce for several years and then followed him to Huntsville, AL to help open Cotton Row, one of the most recognized restaurants in Alabama.

Jet Tila Sunday Supper at Crossroads KitchenJet’s plant-based menu started with Sew Mai Dumplings and concluded with Thai Tea Ice Cream Sandwiches.

Jet adapted his signature Drunken Noodles (Giada De Laurentiss’ favorite) for the evening substituting tofu for pork. The dish earned high praise from the guests.

The Featured Cocktail was Mekhong Smoke. It’s Mekhong rum, mescal, thai basil, tamari salt and blistered shishito pepper.
