Boozehounds, is a newly debuted pet-friendly dining, cafe and bar concept in Palm Springs. The 3,812-square-foot restaurant with an additional 1,168-square-foot glass atrium and 2,020-square-foot outdoor lounge is located on bustling N Palm Canyon Drive. Boozehounds features a vibrant design and a welcoming atmosphere with a unique food and beverage menu, including options for dogs. It is poised to quickly become part of Palm Springs’ burgeoning culinary scene.”

“Palm Springs has the best of both worlds when it comes to patrons. There’s a large close-knit local community as well as a massive seasonal and weekend visitor population. We intend to make Boozehounds comfortable for both groups, with a focus on conviviality for all to mingle over a coffee, meal or cocktail,” says co-owner Jimmy McGill.”

“This is a deeply personal project for him and co-owners Bryan Rogers and Steve Piacenza. The concept pays homage to their past and present pets with the logo design inspired by Jimmy and Steve’s beloved dog, Striker. Striker was rescued from the Pasadena Humane Society in 1999 and for 18 years he was more than a four-legged best friend — he was a brother. His memory lives on in Boozehounds.”

“Boozehounds serves globally-inspired, locally influenced dishes including classics with a twist and daily fresh fish selections, with gluten-free and vegan options. Signature dishes include Miso Chilean Fish and Chips, 48 hour miso-marinated Chilean sea bass, beer batter fried, served with root vegetable chips; Sweet “Spot Prawn” Shrimp Ceviche, red Aguachile, Fresno chili, red onions, avocado, and cilantro served with fried shrimp heads; Adobo Chicken, simmered chicken thighs, steamed rice, topped with adobo broth, and side of spiced coconut vinegar; and Slow Roasted Baby Carrots with Almond Milk Sauce, Crispy Farro and Furikake.”

“The city of Palm Springs has a large dog owner community and we want to contribute to that beloved community and create a space for them. Boozehounds is a coffee, co-working, and lunch spot by day and the place to be for happy hour; and when happy hour turns into happy hours you can grab snacks or dinner as well. Coffee Service starts at 8am – 3pm, Happy Hour 3pm-5pm, Dinner 5pm – 10pm (Sun-Thurs) 11pm (Fri & Sat). We are currently not serving lunch or brunch, but will be in the near future.”

Chef Andrew is continually updating us on the real impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the very survival of restaurants which is a genuine concern as the hoped-for recovery ever so slowly moves forward.

Shifting the conversation back to food we also ask Chef Andrew about preparing and cooking the perfect fish and chips. It’s appearing on a lot of restaurant menus now (at all levels) including ones that aren’t really seafood oriented. What fish is best to use? What about the breading? How does malt vinegar fit it?

Brit Tommy Martin started as a Bartender at Corona del Mar’s Five Crowns back in 1968. 50 years later Tommy is the longest serving, active co-worker at Five Crowns. Earlier this Summer he was recognized with a very special honor. Five Crowns’ Guest Ambassador, Tommy Martin is our guest.

Chef Andrew Gruel, the founder of The Slapfish Restaurant Group, joins us with another installment of “Ask the Chef.” What’s the secret of proper Fish and Chips? We’ll find out from Chef Andrew and also discover the remedy for the wet sock conundrum with the crust on the fish.

Harissa, the restaurant, pays homage to Chef Alain Cohen’s Tunisian origins, his family’s Paris restaurant, and his American culinary experiences. Harissa, the name, celebrates the beloved spicy sauce that symbolizes Chef Cohen’s vibrant cuisine. In fact, harissa is so valued in Tunisia that an old wives’ tale suggests a husband can judge his wife’s affections by the number of hot peppers she uses when preparing his food

Indeed, Chef Cohen’s harissa sauce stays true to the family recipe, that dates back generations to Tunisia—and while Harissa’s harissa has heat, the emphasis is on balance, not just spicines

“Tunisian cuisine is more savory than its Moroccan neighbor, which leads into the sweet side. Central to Tunisian cuisine is couscous, and you will find the dish well represented in our menu. In 2009, Stuart Skversky, a graduate of the Culinary Institute of America and a rising-star chef, made a dramatic life change by giving up a promising chef career in Los Angeles to move to Chiang Mai, becoming a full-time volunteer at the Wat Dan Chan (a local Buddhist temple), teaching local children English, cooking and baking. Recognizing a need to help prepare these high-risk Hill Tribe kids following their graduation, he founded Stu and the Kids to better prepare them for adulthood, helping them get into a university or technical college and giving them the tools for an independent future.

Proceeds from this event go directly to the children’s education, school uniforms, supplies, housing, food and tuition for higher education. Now in their ninth year of fundraising throughout the world, Stu and The Kids has raised over $500,000 for the charity, including last year’s astounding record of $158,000 accumulated from the Los Angeles festival, fundraising on the east coast and online donations during 2017.

Stu and The Kids supervises 29 kids, including eleven that received scholarships in 2018 to support education and jobs in accounting, business management, in-home elder care, cooking and fashion and textiles. The charity hopes to increase the awards to twelve, four-year university scholarships in the coming year.

A late-season variety grape with an extremely high sugar content, the Candy Sweets® name describes its great flavor! Though petite in size, this amber-green seedless grape has a big taste that makes it an excellent kids snack or lunchbox favorite. Serve a bunch or two on a party platter; this grape’s firm, crunchy texture and sweetness plays well against any extra sharp cheese. Choose grapes that are firm, with no bruises, decay or shatter (loose grapes that have fallen off the stem). Vine stems should to be green and pliable, never dried out.

Also the incredible Hatch Chile season will launch the first week in August. These flavorful peppers are exclusively grown in the Mesilla Valley of New Mexico and are only available annually for a short season in August and part of September. They are considered by discriminating chile aficionados to be the best peppers in the world. We’ll get a fiery preview.

It’s by-the-slice or whole pies. Unusually the pizzas are cooked in an electric deck oven from Sweden. It gets up to temperature quickly and Chef Steve has found it to be more energy efficient than gas.

By-the-slice options include Tomato, Mozzarella, and Grana Padano ; Four Cheeses & Spinach; Escarole, Red Onion, Salt Cured Olives, Chilies, Fresh Mozzarella and Smoked Provolone; Pepperoni, Tomato, Mozzarella and Grana Padano; and Tomato, Garlic, Capers, Oregano, Chilies, Mint, Parsley, Basil and Extra Virgin Olive Oil (Vegan).

Little did we know that half a century later, after working as bartender, wine captain and now as our Guest Ambassador, Tommy would be Lawry’s longest serving active co-worker.”

Any mild-flavored white fish is a good base for the fish & chips. This gives you a lot of flexibility in utilizing the best, and most sustainable, of what is seasonably available.

A great tip is to keep the batter cold and prepare it in small batches. It’s important that the coating adheres to the fish fillet once the fish is cooked.

A shot of vodka added to the batter is another good tip.

Chips are up to discussion. Some go for the thick steak fries and others prefer thin strips. Definitely the chips need to be crisp on the outside.

Potato Gnocchi

Yields 6 portions

Large pot with 1 gallon boiling water
1 lb. russet potatoes
8 oz. all-purpose flour
¼ lb. rinsed and trimmed mushrooms
1 egg
Salt
Butter
1/3 c. vegetable or chicken stock

Boil potatoes (skin on) until fork tender.
Strain and peel potatoes with a towel.
Cool potatoes to room temperature.
Press potatoes through a ricer or break up with a potato masher.
Refill your pot with a gallon of water, add salt and bring water to a boil.
In a large bowl, mix the potatoes with oz. of flour and the whole egg.
Mix well until all ingredients are incorporated.
Use the remaining oz. to dust and clean dry work surface. Using a kitchen knife, portion the dough into 6 inch long strips and roll with your hands until as big around as a nickel.
Lay 3 rolled pieces next to each other and cut into
½ inch dumplings with a kitchen knife.
