Eric SamaniegoExecutive Chef Eric Samaniego (ex-Little Sparrow) is hosting an unusual 5-course collaboration dinner with Taco Maria’s (SoCo in Costa Mesa) acclaimed chef/proprietor Carlos Salgado on May 24th at Michael’s on Naples in Long Beach. This is part of Michael’s on Naples ongoing monthly “Guest Chef’ing” series.

Among the many accomplishments of Chef Salgado is being named one of Food & Wine’s Best Chefs of 2015. Taco Maria is known for Alta California cuisine, an intriguing fusion of Mexican and American flavors and cultures.

Chef Samaniego never reveals in advance what he and his guest chef will prepare simply because he’s not quite sure himself. The evening tends to be spontaneous, much like going to a friend’s home for dinner and leaving the menu up to the host. Both chefs will shop the local farmers’ markets and visit Farm Lot 59, the local urban farm, for ingredients just days before, which will drive the creativity of their five-course dinner.

“I really like collaborating with other chefs,” said Samaniego. “I love to try new techniques and experiment with new ideas in the kitchen. It’s even more fun when you’re cooking with someone you have tremendous respect for and consider a friend. I’m looking forward to having Chef Salgado join me on May 24.”

Chef Deborah Schneider is the Executive Chef/Partner of SOL Cocina in Newport Beach, CA and Scottsdale, AZ, as well as solita in Huntington Beach and Santa Clarita. She is the author of The Mexican Slow Cooker; The James Beard Award-nominated Cooking with the Seasons at Rancho La Puerta; Amor y Tacos; Baja! Cooking on the Edge, which was one of Food & Wine’s Best of the Best of 2006. She is also the co-author of Williams-Sonoma’s Essentials of Latin Cooking.

We’re now talking about mole. Chef Deb points out that all moles don’t have chocolate as their base. She also shares her recipe for a “quick mole” that’s great in a pinch. In her extensive research for the book Chef Deb developed a new-found appreciation for the depth of moles.

Show 120, May 2, 2015: Chef Eric Samaniego and “Little Maria” Evening

Eric SamaniegoWhen two highly regarded young chefs get together for a collaborative dinner that’s a recipe for true dining excitement! On Tuesday, May 12th, Chef Eric Samaniego of Little Sparrow in Santa Ana and Chef Carlos Salgado of Taco Maria at SoCo in Costa Mesa will partner up for a special chef collaboration event, Little Maria. The five-course dinner will be hosted at Little Sparrow, featuring dishes that motivate both chefs to break out of their comfort zones.

“Guests can expect the unexpected” Samaniego said. “This has been in the works for a long time and Carlos and I are excited it’s finally happening.”

The Little Maria dinner features two seatings, at 6:00 p.m. and 8:30 p.m., priced at $85 per person with an optional $30 wine pairing. Tickets must be purchased in advance. To maintain the element of suspense the menu will not be revealed until a few days before the dinner.

Later this Summer there will be an encore “Little Maria” evening at Taco Mario with a completely different menu.

Both Chef Samaniego and Salgado have made a huge impact on the Orange County culinary scene in the past year. Little Sparrow recently had their debut on Season One of Bravo’s “Best New Restaurant” series hosted by Chef Tom Colicchio while Chef Salgado was recognized by Food & Wine magazine as one of the “Best New Chefs of 2015.”
