Hop PhanOne of the pioneering food trucks in Orange County is the innovative Dos Chinos taco truck (Chef Hop Phan) which is a tasty fusion of Latin-Vietnamese fare. It’s also a permanent food stall at the 4th Street Market in Santa Ana.

Hop Phan’s newest concept is Sit Low Pho (Vietnamese) at the 4th Street Market. He’s planning something fresh for the upcoming Trade market hall in Irvine arriving before year’s end. It will have a captivating Hawaiian flair with a few twists.

Chef Hop is already a veteran of Food TV. Most recently he competed on FYI’s Man versus Child: Chef Showdown. You’ve also seen him on NBC’s “Food Fighters,” Cooking Channel’s “Eat Street”, Food Network‘s “Cutthroat Kitchen” and “Chopped.”

The festival kickoff is scheduled for Saturday afternoon, June 20th in Exposition Park. Beer journalist Tomm Carroll of Celebrator Beer News and Beer Paper L.A. along with Thomas Kelley of El Segundo Brewing Co. join us with an effervescent preview.

Restaurants in tree-lined Claremont, CA are preparing for the third annual “Claremont Restaurant Week” set for July 10 – 19, 2015. The annual Midsummer Night’s Dine will run for 10 days, including two weekends, to encourage Southern California foodies to stay overnight at one of Claremont’s five distinctive hotel properties. Sal Medina of Packing House Wine Merchants in the restored College Heights Lemon Packing House in Claremont will provide us with the tempting overview.

Italian-American character actor Steve Schirripa is best known for his role as Bobby Baccalieri on HBO’s “The Soprano’s.” He’s also a serious home cook. Taking his mother’s recipe for pasta sauce he created a line of popular sauces including Marinara, Tomato Basil and Arrabiata in the Steve Schirripa’s Uncle Steve’s Italian Specialties line. The premium pasta sauces are each hand-crafted with organic whole, imported Italian peeled tomatoes, fresh onions, extra virgin olive oil, fresh garlic, sea salt and spices.

Orange County’s 37th annual “A Taste of Greece” festival will be held on June 26-28 at St. Paul’s Greek Orthodox Church in Irvine. More than 12,000 guests are expected to attend the three-day festival, which will feature traditional Greek cuisine, wine tasting, live music, authentic Greek dancing with lessons and boutique booths reminiscent of the Plaka, a well-known picturesque historical neighborhood of Athens. The long-time volunteer pastry chef, Kathy Gabriel, who oversees the time-consuming preparation of thousands of incredible Greek pastries for the Festival is our guest.

Some grape vines in California can still produce modest clusters of fruit after 125 years. The yields are very small.

On Saturday afternoon, June 13th Wine Exchange is hosting their Grand Re-Opening Tasting Alley Party and Project Hope Alliance Community Fundraiser in Santa Ana. The festivities include the outside Tasting Alley Party as well as the in-store, door –busting deals.

For $40, guests will experience upwards of 30 wine tastings as well as a sandwich or burger from local TK Burgers. Proceeds from the Tasting Alley are donated to Share Our Wine Foundation and their direct beneficiary, Project Hope Alliance.

Michael Larner is an accomplished winemaker, enology professor and viticulturist. His wife, Christina Larner, is the tasting room manager (located in Los Olivos as part of the Los Olivos General Store) as well as a favorite local artist. Monica Larner, a renowned wine critic, returns regularly from her adopted home, Italy, to oversee public relations.

The 134-acre ranch is planted to 34 acres of vine, focused on the Rhone varieties ; Syrah, Grenache, Mouvedre and Viognier. As a small tribute to Italy, the Larners also have a little block of Malvasia Bianca.

Most of the premium grapes grown on the ranch are sold to other boutique wineries including Sine Qua Non.

In early 2012, Michael and Christina opened the Los Olivos General Store in the bucolic town of Los Olivos within the historic old gas station on the corner of the flagpole. The store now houses the Larner tasting room, the perfect intimate location to try the family’s exclusive and limited estate offerings.

One of the participating craft breweries is the fast-growing Golden Road Brewing in Los Angeles and with a new brewery and tap room soon to be located across the street from Angel Stadium in Anaheim. The veteran, award-winning brewmaster for the future Orange County facility, Victor Novak is our guest.

Krystyn Navarro is the Chef de Partie at Thomas Keller’s Bouchon Beverly Hills. Last year she won the New Orleans competition for the prestigious Ment’or BKB Foundation’s Young Chef Competition Series. She is currently completing her stagiaire at [One] in Chapel Hill, NC. Lobster Rolls are appearing on a lot of restaurant menus. Everyone, of course, has the “best.” Chef Andrew will give us some background on this delicacy. He grew up on the East Coast where this craveable sandwich originated.

The Big Cheese Grilled Cheese CompetitionIn celebration of National Grilled Cheese Month in April Provisions Market (Chef Greg Daniels) and OC Baking Company (Dean Kim) will join forces to once again host The Big Cheese, Orange County’s grilled cheese festival and competition. OC Baking Company Master Baker Dean Kim will supply locally produced, freshly baked bread to the competing chefs. The competitors will present their own spin on the classic grilled cheese sandwich that festival attendees will sample and then vote on.

This year, the professional chefs will be joined by one ProAm competitor who will be selected by event organizers in an Instagram contest. To enter, the public must create and present an original grilled cheese creation on Instagram and use the hashtag #thebigcheese2015 by Thursday, April 16th. The winning entry will be announced Friday, April 17th and the ProAm contender for “The Big Cheese” will participate in the festival on Monday, April 20th.

For the first time in history, per-capita consumption of meat in America has fallen for five consecutive years, with predictions of continuing declines. Vegetarianism and veganism are emerging from the margins and into the mainstream, as 54 percent of Americans now wish to decrease or eliminate meat from their diets. While people have chosen to adopt meatless diets throughout history for a variety of reasons – from ethics to economy to personal and planetary well-being – this book suggests a new reason for doing so: maximizing flavor, which is too often masked by meat-based stocks or butter and cream.

After losing members of her family to cancer, the author – an established culinary professional – was shocked to learn that the number-one cause of death in America is nutritionally controllable diseases such as cancer, heart disease, and diabetes. A lifelong omnivore who grew up eating meat “two and often three times a day,” Page was motivated by nutrition studies to experiment with vegetarianism. She eventually eliminated meat from her diet, losing digestive aches and pains and more than twenty pounds in the process, while gaining new vitality and even joy – and she pours here newfound passion into this book.

BIg Island Chocolate FestivalCraving chocolate? Who doesn’t? The fourth annual Big Island Chocolate Festival (Hawaii) delivers with an array of fun, elegant and taste-tempting activities, seminars and culinary adventures May 7th to 9th. Most of the chocolatey goodness will be offered at The Fairmont Orchid, Hawaii, but three new events take place at Kona farms. Hawaii is the only state in the United States that can grow cacao.

On Saturday, May 9th the 3-days of chocolate fun at The Big Island Chocolate Festival culminates from 5:30 p.m. to 9:00 p.m. in the Fairmont’s Grand Ballroom for the festival gala. Attendees can enjoy both savory and sweet chocolate cuisine created by top Island chefs, chocolatiers and confectioners while voting for their favorite culinary station. Diners can also visit the “all you can enjoy” mole and salad bars. Chef Donald Wressell of Guittard Chocolate Company will be demonstrating the fine art of chocolate sculpting.

Presented by the Kona Cacao Association (KCA), event proceeds benefit the “Equip the Kitchens” campaign for the future Hawaii Community College-Palamanui and a capital campaign to build a community kitchen at the Waldorf-inspired Kona Pacific Public Charter School in Kealakekua.

Aarti SequeiraFood Network’s Aarti Sequeira is our guest. She will be doing a cooking demo and book-signing at next weekend’s Los Angeles Times Festival of Books at USC on Saturday afternoon, April 18th at 2:00 p.m.

Chef Aarti’s first cookbook is Aarti Paarti – An American Kitchen with an Indian Soul. The foreword is by Food Network’s Ree Drummond of The Pioneer Woman Cooks fame.

This collection of Aarti’s memories and over 100 recipes will make cooking with traditional Indian and Middle Eastern flavors easy and fun for any reader. Wonderfully evocative stories at the beginning of each chapter relate how a woman who was an outsider experienced many cultures and cuisines. But it is the food in Aarti’s life that keeps her close to her roots as she explores new culinary and cultural destinations.

Andrew GruelFinally a chance to chat with our patient Guest Host Chef Andrew Gruel of Slapfish. He really knows seafood.

Chef Andrew will share some useful tips about selecting and preparing lobster. It’s easier to enjoy than its reputation. Chef Andrew will also advise us on what parts of the lobster are best for use in some familiar dishes. This is the continuation of a conversation Chef Andrew started last week.

Lobster Rolls are appearing on a lot of restaurant menus. Everyone, of course, has the “best.” Chef Andrew will give us some background on this delicacy. He grew up on the East Coast where this craveable sandwich originated.

Chef Andrew is the co-host of FYI’s new restaurant makeover series, “Say It To My Face!” It premiers Saturday night, May 9th.

For months Chef Andrew has been talking about the new Food TV restaurant makeover series he has been shooting without a lot of specifics. Up until now he hasn’t been able to even share the series name or network due to confidentiality agreements. The curtain is now open.

FYI’s new original series, “Say It To My Face!,” gives chefs and restaurant owners a chance to redeem themselves before their toughest online critics. Chef Andrew is the mentor chef / co-host along with Anthony Dispensa (Chef Andrew’s West Coast Director of Operations for Slapfish.) Fifteen hour-long episodes are set to premiere on Saturday, May 9th.

Chef Andrew also shares some useful tips about selecting and preparing lobster. It’s easier to enjoy than its reputation.

Every month there is a new theme ingredient around which a 9-course tasting menu is created. It’s only 7 tables and 25 seats with an open kitchen. General Manager and Wine Director Ben Aviram joins us to take us through the extraordinary dining experience at Maude.

Chef Vic Vegas last joined us to discuss his new restaurant in Henderson, NV, Café V. He’s now hosting (along with Laila Ali) “Late Nite Chef Fight” on FYI on Saturdays at 10:00 p.m. Based on the real after hours’ chef competition (originally created by local culinary personality Jolenne Mannina) that takes place in Las Vegas, each episode of “Late Nite Chef Fight” has two leading, Vegas-based chefs competing against each other in a food truck they have never stepped foot inside before.

ChaCha’s Latin Kitchen in Brea is kicking off its Third Annual Toy Drive to benefit local families in need. Guests are encouraged to drop off a new unwrapped toy at Cha Cha’s in exchange for a $15 certificate good toward the Flamenco Sunday Brunch to be redeemed in The New Year. Co-owner (and veteran restaurateur) Don Myers has all the details.

A festive new taco has arrived at Mercadito at Red Rock Resort in Las Vegas as part of Mercadito Hospitality’s national Tacos for Strength Campaign. This December, Mercadito will feature a winter-inspired taco created by James Beard Award finalist and Michelin Star award-winning chef Paul Virant of Vie and Perennial Virant in Chicago.A portion of the proceeds will go to Share Our Strength. Mercadito at Red Rock Resort opened mid-summer. Executive Chef & Owner Patricio Sandoval is our guest.

Eric Klein is the Executive Chef and Partner at Wolfgang Puck’s Spago Las Vegaslocated in the Forum Shops, his first fine-dining restaurant in Las Vegas. Spago is now celebrating their 22nd anniversary with a throwback menu (think Smoked Salmon Pizza) and retro prices from December 15th through 19th.

Chef Eric has been the highly visible face of Spago Las Vegas since 2007. The adjacent more casual Café, has a people-watching view of the throngs of shoppers navigating the Forum Shops. He supervised the successful remodeling and refreshing of the classic restaurant.

Spago is now celebrating their 22nd anniversary with a throwback menu (think Smoked Salmon Pizza) and retro prices from December 15th through 19th.
