We’re cooking and baking with tea and then talking about a promising new Tex-Mex establishment in Downtown LA, with some flair from a young chef who does it his way. We’re then on to Newport Beach Restaurant Week and finally a taste of Northern Baja!

Robert WemischnerAcclaimed pastry chef and culinary educator Robert Wemischner has always been intrigued by the flavor potential of ingredients, from turmeric to tea and from cumin to coffee.

He is the author of four well-received cookbooks, including his most recent effort, The Dessert Architect. For the last 18 years he has headed the respected baking and pastry program for Los Angeles Trade-Tech College in Downtown Los Angeles.

Chef Bob joins us to present Tea 101 and guidance on cooking and baking with tea.

He also shares his delectable recipe for Chocolate Assam Tea Torte which he served at the “Getting Our Just Desserts” Benefit for C-CAP last November.

Josef Centeno

Josef Centeno is part of a group of risk-taking, young chefs who are going out on their own and making names for themselves. He created quite a splash when he designed the original menu and concept for Lazy Ox Canteen in Little Tokyo in Downtown LA.

After that was up and running he ventured out on his own in a more urban area of Downtown and launched baco Mercat at the corner of 4th & Main. He even makes his own soft drinks there from quality ingredients.

In December he debuted his 2nd Downtown spot, Bar Ama, which is a tribute to his Grandmother’s style of Tex-Mex food.

Newport Beach Restaurant Week is January 18th to 27th. Participating restaurants have special pricing for lunch and/or dinner. It’s a chance to experience the best in Newport Beach dining at very affordable prices.

Deborah SchneiderDeborah Schneider, the executive chef & partner of SOL Mexican Cucina joins us to tell us about what SOL is doing for Restaurant Week.

One of the most prominent and distinguished chefs cooking in Mexico today is Javier Plascencia who makes his home in Tijuana. He’s cooked for Mexico’s president, Felipe Calderon. His family also has a fine restaurant on the US side of the Border in Bonita.

Javier PlascenciaChef Javier is also an unabashed cheerleader for the foods and premium wines of Baja. The finest wines in Mexico come from the region and are just now finding their way into US distribution channels.

Last year when Anthony Bourdain of Travel Channel’s “No Reservations” visited Northern Baja, Javier was a prominent part of this at his latest venture, Mision 19.

On Monday evening, January 14th Chef Javier has recruited the best chefs and winemakers in Northern Baja to join him in preparing a 7-course, wine-paired meal at Romesco as a benefit for the San Diego Chapter of The American Institute of Wine and Food.

It’s sold out with a waiting list but this is a chef you should really know.

Food TV Producer and Culinary Personality Eric Boardman who is also an Advisory Board Member for Careers through Culinary Arts Program – Los Angeles.

Eric was the Host & Master of Ceremonies for C-CAP’s “Just Dessert Challenge” on Nov. 17th at The Art Institute of California-Los Angeles as part of the “Getting Our Just Desserts” Benefit. The competition pitted five C-CAP graduates against each other in an intense “Chopped” –like competition. There was a mystery basket of five ingredients and the alums had two hours to create a standout dish using all of those ingredients. After an intense deliberation on the part of the judges panel (including Keith Roberts, the Executive Chef at the Loews Santa Monica Beach Hotel) Anthony Greco took the crown. Anthony currently works in the kitchen of The Four Seasons Hotel Los Angeles at Beverly Hills.

The Holidays are upon us and the “SoCal Restaurant Show” is getting into the spirit of the season. It’s a stuffed grab bag of entertaining info this week.

Ever wonder what a busy chef (and new father) does for his own Family on Thanksgiving? Chef Jet gives us the behind-the-scenes on his Thanksgiving 2012.

The picturesque Temecula Valley Wine Country is only 90-minutes from most of Los Angeles and is a great local getaway with numerous inviting attractions including a winery for every palate and budget.

In the last year The Inn at Europa Village (located on a hilltop with an unrivaled view of the Valley) has been remodeled and enhanced, and now defines the standard of truly memorable bed and breakfast establishments in the Temecula Valley.

The personable Innkeepers are the dynamic duo of Executive Chef Dean Thomas and his wife, Nicole. Chef Dean also oversees the culinary operations at the neighboring Europa Village Tasting Room & Vineyards.

We’ll talk with Dean about his unusual hands-on approach to managing a bed and breakfast and the show-stopping breakfasts he creates with premium local ingredients for his appreciative guests every morning!

Eddie Lin of Deep End DiningJoining Jet in studio will be Asian food blogger extraordinaire and culinary personality Eddie Lin. You may know him from “Deep-End Dining.” He also has a new Web series, “Kamikaze Kitchen.”

Eddie’s most recent assignment is as a contributor to Los Angeles Magazine’sDigest” blog.

Peruvian cuisine has captured the attention of SoCal foodies. At the forefront is Chef Ricardo Zarate who achieved fame in L.A. with his hole-in-the wall spot, Mo-Chica, originally located in the Mercado La Paloma just East of the USC campus. This was later relocated to a more ambitious and expanded space Downtown at 514 W. Seventh St.

A new spot in Marina del Rey is on the horizon.

Jet will chat with both Chef Ricardo and Stephane Bombet about their expanding restaurant empire which started quite modestly.

Our vote for nicest couple in the hospitality business in Orange County has to be Florent and Amelia Marneau who are the greatly respected proprietors of the acclaimed Marche Moderne located in The Penthouse (Level 3) at South Coast Plaza.

Since they opened in 2007 the restaurant has earned the reputation as the premier French restaurant in Orange County and beyond. Florent is behind the stoves and Amelia creates the incredible desserts and also graciously runs the front-of-the-house.

Throughout the year they do noteworthy special events to keep their establishment fresh. This morning Amelia joins the show to preview Marche Moderne’s “40 Days of Champagne and Caviar” Holiday Celebration. Nightly until December 30th Marche is showcasing a nightly special menu of six top caviar selections and bubbly from four renowned Champagne houses along with the traditional accoutrements and caviar-friendly cocktails. If you don’t think that says “Holidays” with a flourish then forget about it…

Finally Careers through Culinary Arts Program Los Angeles Advisory Board Member (and food TV producer) Eric Boardman is with us to discuss the spirited C-CAP alum competition in the style of Food Network’s “Chopped” that was part of last Saturday’s “Getting Our Just Desserts” Benefit at The Art Institute of California-Los Angeles’ campus in Santa Monica. Eric was the Master of Ceremonies for the competition and shares the results.

The International Culinary School at The Art Institute of California – Los Angeles offers programs in Culinary Management (Bachelor of Science,) Culinary Arts (Associate of Science,) Baking & Pastry (Associate of Science, Diploma,) and Art of Cooking (Diploma.)

Chef Christophe Bernard is the long-time Academic Director.

The student run restaurant there is Bistro 31 with a dramatic floor-to-ceiling glass wall looking into the pristine kitchen. The restaurant provides the students an opportunity to practice the theory and culinary artistry they have learned and honed over the years in the culinary program.

During the quarter usual hours are Tuesday through Thursday for lunch from 11:30 a.m. until 2 p.m. and for dinner from 6:30 p.m. to 9:00 p.m. Call for hours to be sure of the schedule and parking validation is available. Reservations are advised. It’s a bargain, too ! (310) 314-6057.

A national nonprofit, C-CAP manages the largest independent culinary scholarship program in the United States. Since 1990, C-CAP has awarded students $34 million in scholarships and donated $2.7 million worth of supplies and equipment to classrooms. C-CAP operates in seven locations : New York; Los Angeles; Chicago; Philadelphia; Hampton Roads, VA; District of Columbia/Prince George’s County, MD; and statewide in Arizona.

Marcel (a CIA graduate) was the executive sous chef at Jose Andres’ acclaimed Bazaar on Restaurant Row in Los Angeles when he was cast on “Top Chef.” He was the cheftestant that you loved to hate.

Marcel remains in Los Angeles and runs the very busy catering enterprise, Modern Global Tasting.

His colleague, Mixologist Devon Espinoza, is also a CIA graduate. Devon is a C-CAP alum. Prior to Pour Vous Devon debuted the cocktail program for Chef Michael Voltaggio’s ink.

Marcel and Devon teamed up for “Getting Out Just Desserts” to create an incredible a la minute fresh coconut ice cream using liquid nitrogen as the freezing mechanism. What a show-stopper and perfect for Hollywood!

Show 6: November 17, 2012: Chef Duff Goldman of Charm City Cakes West and Cakemix. Food Network’s “Ace of Cakes”

Duff shared a great story about Aarti Sequeira who co-hosted the show.

Duff was one of the judges on Aarti’s first episode of “Next Food Network Star” which was on the famous Santa Monica Pier. After the judging Duff commented to the Food Network brass that they shouldn’t bother with the remaining episodes because Aarti was his clear choice as the obvious winner. Turns out Duff was right. Aarti went on to be the “Next Food Network Star” !

At “Getting Our Just Desserts” Duff created cupcakes (as featured @ Cakemix) and also painted colorful original graffiti art works on the patio with food themes for the Silent Auction.

The Art Institute of California has generously opened up their campus to host this dazzling array of celebrity pastry chefs. Jet will chat with Claude Brown, the President of this campus about their culinary arts program.

Careers through Culinary Arts Program (C-CAP) is the beneficiary of this event. This dessert tasting raises badly needed funds for their scholarship fund benefiting underserved Los Angeles area senior high school students who have demonstrated the talent and motivation necessary for a culinary career. C-CAP’s New York-based President, Susan Robbins, will explain the history of C-CAP and their important mission.

Caroline Mi Li ArtissHave you been following the new BBC America original series, “Chef Race : U.K. vs. U.S.”? The level of competition and intrigue is intense. The series stated right here in Santa Monica. London’s Caroline Mi Li Artiss, a chef competitor on the series, will be with us to talk about “Chef Race” and her new affection for the USA! Caroline is a big celebrity on You Tube in the UK.

Sherry YardTalk about star power. Next up is Sherry Yard and Donald Wressell. Sherry is Wolfgang Puck’s executive pastry chef and she does the incredible desserts for the Oscars every year. She is also the author of two best-selling cookbooks on desserts and pastries. Donald Wressel is one of the foremost chocolatiers in the U.S. He’s executive chef for Guittard Chocolate based in Northern California and teaches pastry chefs in the fine art of chocolate dessert making.

Marcel VigneronHe was the cheftestant you just loved to hate on “Top Chef: Las Vegas” but it turns out Marcel Vigneron is not really a heavy. He joins us to talk about “Next Iron Chef: Redemption” and update us on what he’s doing in Los Angeles with Modern Global Tasting, his catering company. Marcel is joined by his colleague, Devon Espinosa, who is a master mixologist at Pour Vous in Hollywood and was previously with Chef Michael Voltaggio at ink.

Wednesday night is fresh donut night at Neal Fraser’s bld on Beverly Blvd. in Los Angeles near the Original Farmers Market. Pastry Chef Mariah Swan creates a changing selection of five donuts each week. All are fried to order.

She’s also famous for a decadent line of specialty milk shakes with a punch. All the ice creams in the shakes are house-prepared.
