Vegas Uncork'dWe’re live from Lagasse’s Stadium at The Palazzo Resort for today’s special show. It’s Vegas Uncork’d Weekend here and the mega-star celebrity chefs with high-profile restaurants in Sin City are in town for the four days of extensive festivities.

As part of the first evening of Vegas Uncorked The Chefs of Thomas Keller Present a French Soiree”. It sold out right away. The two lead chefs are Chef de Cuisine Josh Crain of Bouchon Las Vegas and Chef de Cuisine Matt Alba of Ad Hoc and Addendum in Yountville, CA. Chef Josh joins us.

Morels French Steakhouse & Bistro at The Palazzo skillfully merges classic steakhouse with innovative and unique culinary techniques. It’s all enhanced by more than 60 wines-by-the-glass and more than 400 varieties of French and California wine-by-the-bottle. Our guest is Lou Hirsch, the General Manager, known in Vegas for his gracious hospitality.

John Kunkel, owner and founder of 50 Eggs Inc.’s newest concept Chica Las Vegas at The Venetian delivers the robust and vibrant flavors of Latin cuisine combined with a dynamic wine and mixology program. Crafted by celebrity Latina chef Lorena Garcia, the diverse menu draws inspiration from classic renditions and provides guests the opportunity to explore the flavors of Latin American cuisine as one culture, with influences from Venezuela, Peru, Brazil, Mexico, and Argentina, among many more. Chef Lorena pops out of the busy Chica kitchen to chat.

Veteran Las Vegas insider and widely-followed food journalist Al Mancini works alongside The Las Vegas Review-Journal’s long-time restaurant critic Heidi Knapp Rinella. As a Staff Writer he covers the burgeoning food scene in Las Vegas both in the print and online versions of the daily newspaper. Al also posts food & libation related videos. We pull him away from the Vegas Uncork’d festivities for an update.

Juyoung Kang is the lead bartender at The Dorsey at The Venetian. She was the Nevada Restaurant Association’s Bartender of the Year in 2015. For Vegas Uncork’d she stars in Saturday afternoon’s “Behind the Bar: Learn the Craft of Cocktailing with Masters of the Bar at The Venetian & The Palazzo.” We’re shaking craft cocktails with Juyoung.

For the 3rd time in the show’s history we’re happily broadcasting from Lagasse’s Stadium at The Palazzo. It’s a sport’s fan’s and foodies’ paradise. Lagasse’s Stadium is the ultimate sports bar: a restaurant with stadium-seating featuring elevated game-time classics and gourmet options from Emeril Lagasse. Show 251, December 9, 2017: Chef Mike Minor, Border Grill Mandalay Bay, Las Vegas

Mike Minor of Border Grill in Las VegasMike Minor is back as the Executive Chef of Mary Sue Milliken’s and Susan Feniger’s original Border Grill Las Vegas (launched in 1999) located by the lazy river adjacent to Mandalay Beach at the Mandalay Bay Resort on The Strip. Chef Mike grew up in Las Vegas and has a huge locals’ following. We’ll meet him.

This Border Grill is known for their incredible Weekend, all-you-can-enjoy brunch with everything cooked to order. There is also bottomless sparkling wine. Talk about indulgent…It’s Vegas, baby !

Ironically, it was a French restaurant where Chefs Mary Sue Milliken and Susan Feniger first tasted authentic Latin flavors. While guests were dining on escargot out front, in the back of the house Mary Sue and Susan were discovering the home cooking of Oaxaca and the Yucatan at staff meals prepared by their fellow cooks from Mexico. Unlike anything they had ever tasted in Mexican restaurants in the United States, the dishes were as varied and complex as the French fare the chefs were serving out front.

In 1985, Mary Sue and Susan packed a VW bug and took a road trip far south of the Mexican border. Never setting foot in a “fine restaurant,” they learned the recipes and techniques of market vendors and home cooks, from street corners in downtown Mexico City to back road family barbecues and taco stands along the beach. When they returned they opened Border Grill and “applied the same intelligence,” noted Los Angeles Magazine, “to green corn tamales and cactus-paddle tacos that other chefs might to a lobe of foie gras.” Border Grill quickly established a new standard for gourmet Mexican fare.

The situation with locals might be reevaluated for 2017. We’ll learn how this is going over…Remember MGM already also adds a “Resort Fee” on top of the room rate at all of their properties.

Chef Andrew chats with Brock about the proliferation of gourmet burgers now available in Las Vegas. All the big names are there including celebrity chefs with better burger concepts. Is there room for more players? Even White Castle (with a devoted following) is now there.

The big news is on The Strip is that David Chang’s Momofuku is coming to The Cosmopolitan. Also the former Monte Carlo is being rebranded, renovated and split into two luxury properties. One luxury property will be the trendy NoMad Hotel from Manhattan including the NoMad restaurant from Chef Daniel Humm. Also on the site will be Mario Batali’s Italian food emporium, Eataly, long-rumored to be coming to Las Vegas but in a different location.

Las Vegas is also welcoming their first major league sports franchise. NHL Hockey is coming to the new T-Mobile Arena (just off The Strip) in 2017! They already have over 14,000 deposits for season tickets so it’s obvious The City is ready!

Food and travel journalist Roger Paige is also known as The Focused Traveler. His day job is as Administrative Director of the International Food, Wine and Travel Writers Association. Roger reports on some of his recent road adventures including a visit to the Jack Daniels Distillery in Lynchburg, TN.
