Michelle Winner of IFWTWA and Culinary TravelerFood, wine & travel writer Michelle Winner is the President of the International Food, Wine & Travel Writers Association (IFWTWA.). She will be talking to us from Hawaii.

Over Labor Day Weekend Michelle was part of the Kaanapali Fresh – A Culinary Experience on Maui and right now she is in the middle of the 4th Annual Hawaii Food & Wine Festival on Oahu.

At Kaanapali Fresh, Michelle was a judge for the “Kaanapali Range to Sea.” Each competing chef was paired with a farmer and utilized his produce or product. The winning dish (vegetarian) was Ti Leaf Wrapped Corn Tamale with Syl’s Produce, corn truffle salsa in a smoked tomato emulsion. The winning chef was Raymond Nicasio of the Sheraton Maui Resort.

Michelle also talked about the revitalization of the well-known Maui Gold pineapple brand. These coveted pineapples are only grown on Maui. It’s an agriculture success story of quality over quantity.

The Hawaii Food & Wine Festival event Michelle attended Thursday evening was the sold out “A Lucky Modern Buddha Belly” at The Modern Honolulu. The event put a spotlight on Hawaii’s unique location as a culinary hub of the Pacific where East Meets West. 14 esteemed chefs (including Iron Chef Masaharu Morimoto) showcased dishes inspired by the Lucky Buddha who is known for happiness, plenitude, and wisdom of contentment.

Ti Leaf Wrapped Corn Tamales with Corn Truffle Salsa and Smoked Tomato Emulsion

Recipe yield:   6 x 4” tamales or 12 x 2” tamales
Recipes for Corn Tamales

1 ½ cups Fresh Corn kernels
½ cup Vegetable Shortening
1 cup Masa harina (Tamales flour)
2/3 cup yellow cornmeal
1/4 tsp cayenne pepper
1/4 tsp ground cumin
1 tsp baking powder
1 tsp Salt
3/4 cup Corn Stock or water
3 each Ti leaf
1/2 cup Corn Truffle Salsa (separate recipe below)
1 cup Smoked Tomato emulsion

Procedure:

  • Clean and remove husk from the corn. Using a knife scrape the corn kernel off the cob and reserve corn cob to make corn stock. Place ¾ cup of fresh corn kernel in a blender or food processor and grind the corn until almost smooth, set aside.   Place vegetable shortening in an electric mixing bowl with a wire whip attachment. Set mixer on medium high and whip the shortening until light and fluffy.
  • On a separate mixing bowl place Masa Harina, cornmeal, cayenne pepper, ground cumin, baking powder, and salt. Mix thoroughly until well incorporated. Heat up corn stock or water to lukewarm and gradually stir stock or water to the flour mix until it forms a thick dough.
  • Change the whip attachment to dough hook attachment. Transfer the dough to the mixing bowl and add the grinded corn and the rest of the corn kernels mix thoroughly. The dough will be quite sticky.
  • Remove the spine off the ti leaf wash, pat dry and line on a flat suface. Using a pastry piping bag, pipe dough on to the leaf and proceed to roll the dough on the leaf making sure it is completely wrapped.
  • On a steamer or pot with a wire rack with boiling water, steam the tamales for 45 minutes. Cut to desired length. Remove the tamales from the leaf and serve with corn truffle salsa and smoked tomato emulsion.

Corn Truffle salsa recipe

1 can Corn truffle or Cuitlacoche (4 oz) can be found in latin specialty store
1 cup Fresh corn kernels
1 1/2 tbs white balsamic vinegar
1 tbs Red bell peppers, small dice
1 tbs Maui Onions, small dice
2 tbs Olive oil

  • Put cuitlacoche in a blender and puree until smooth.
  • Heat saute pan, saute onions and bell pepper until tender
  • Add corn to the pan and sauté until it is tender and has slight caramelized color.
  • Add pureed corn truffle. Stir until completely coated.
  • Remove from heat and add white balsamic vinegar. Stir until well incorporated.

Smoked Tomato salsa

4 ea Vine riped tomato, cut in half
1 ea Maui onion, cut in half
1 ea Jalapeno, cut in half and seeds removed
1 ea Red Bell Pepper, seeds removed and cut in half
4 cloves Garlic, peeled
2 Tbs Liquid smoke
3 Tbs Olive oil
1 ea juice of lime
1 tbs Cilantro, chopped
1 Tbs Salt
1 Tbs Chipotle in adobo sauce, use only the sauce

  • In a mixing bowl, place cut tomato, onion, peeled garlic, jalapeno, bell pepper, olive oil, and liquid smoke. Mix well until well coated with olive oil and transfer to a baking sheet or pan. Season with 1 tablespoon of salt.
  • Pre heat oven to 350 degrees F, place the mixture in the oven and roast for about 30 minutes or until vegetables have a slight char.
  • Transfer to a food processor bowl and add the chipotle adobo sauce, lime juice and cilantro. Process the mixture to a slight smoothness.
  • Season with the remaining salt.

On Saturday, September 13th at 10:30 a.m. the Solmonsons will present “Sin and the Silver Screen: The Age of the Hollywood Nightclub.” It’s a free program in the Mark Taper Auditorium at the Los Angeles Central Library.

Garett Marrero of Maui Brewing CompanyMaui Brewing Co., founded by Garrett Marrero, is a craft brewery based in Maui, HI. As the largest authentic Hawaiian brewery, it currently has one brewery in Lahaina, and one brewpub in Kahana that creates more than 40 different styles on a rotating basis. In 2005 Maui Brewing Co. produced 400 barrels from the single brewpub and expanded into an additional brewery location in 2007, producing a little over 20,000 barrels in 2013.

MBC has remained consistent in the vision, “Handcrafted Ales & Lagers Brewed with Aloha.” The beers have been recognized worldwide for quality and innovation winning more than 100 medals in a short history. MBC was one of the first craft brewers to package their products in recyclable aluminum cans.

MBC is currently in construction to move production to a state-of-the-art brewery in Kihei.

It’s the only Hawaiian brewery with product available in the continental United States where the beer is actually brewed, and packaged, in Hawaii.

BIg Island Chocolate FestivalThe alluring, rich taste of chocolate, in both its sweet and savory forms, is showcased at the 3rd Annual Big Island Chocolate Festival, May 2 to 3 at the Fairmont Orchid, Hawaii. Headlining the event is “Mr. Chocolate,” Jacques Torres, Food Network celebrity and acclaimed pastry chef from New York. Also appearing is Donald Wressell of Guittard and Derek Poirier of Valrhona USA.

“The Big Island Chocolate Festival is a fantasyland of chocolate.” Says Kona Cacao Association President Farsheed Bonakdar (Bone-ak-dar.) “It inspires our chefs, encourages our island farmers to grow cacao and shows our chocolatiers that chocolate can be a viable business.” Farsheed Bonakdar of KCA is our guest.

Anthony Carron of 800 Degrees PizzaChef Anthony Carron is the creative force behind 800 Degrees Neapolitan Pizzeria which is growing rapidly with a devoted following. His background is in fine-dining. It started in Westwood in 2011. A “To-Go” branch was added in Westwood. Santa Monica recently opened. Las Vegas, Pasadena, Hollywood, and New York are on the horizon.

It’s thin crust pizza that follows the traditions established in Naples. What’s really different is that once you choose your toppings the pizza is then flash-cooked for about a minute in a wood-burning over at 800 degrees!

“800 Degrees strives to honor the tradition of classic Neapolitan pizza where the integrity of handcrafted ingredients is paramount. We use natural grown California tomatoes, our mozzarella is made for us every day right here in L.A., and our crust is crafted in house from only Italian flour, wild yeast, sea salt and filtered water.”

Michael Passmore of Passmore RanchThe always colorful Michael Passmore is a fish farmer in Northern California.

Passmore Ranch is a premium freshwater, sustainable fish ranch in California. They started modestly by selling live fish at Northern California farmers’ markets, and their quality and service quickly made them a premier purveyor for top restaurants and Michelin-starred chefs throughout the State and country.

Organic fruits and vegetables are getting a lot of attention these days. With the fresh concern about GMOs in food, certified organic fruits and vegetables are, by definition, free of GMOs.

Show 53, December 21, 2013: Aaron Fry, Honeymoon Dining in Maui

It’s Christmas / New Year’s Holiday vacation time and that means a lot of relaxing getaways to Maui. We have a mouth-watering Lahaina dining report from an informed, recent visitor.

Aaron Fry just returned from his glorious honeymoon in Maui. Aaron is a master bartender as well as a senior Board Operator right here at AM 830 KLAA. We’re turning the microphone around on him this morning.

One of the standouts in all his dining in Lahaina is the use of a lot of local ingredients in the dishes where possible. This is a welcome return to the old ways in The Islands when Hawaiians were totally self-sufficient in feeding themselves.

Fleetwoods on Front StreetAaron and his new bride enjoyed a couple of visits to Fleetwood’s on Front Street in the heart of Old Lahaina. The second level of the 10,000 square foot establishment affords an incredible ocean view and there is quality live music nightly. The principal is Mick Fleetwood, the well-know rock drummer. When he’s not touring he spends most of his time on Maui.

Although it’s a casual setting they are equally serious about their food. The chef advisor is Scott Leibfried (who you’ll remember as one of the two sous chefs for Gordon Ramsay on Fox’s “Hell’s Kitchen.”) Chef Scott continues with the project.

Aaron recommends the Lemon Shrimp with a cream cheese polenta cake, wild arugula and cherry tomato salad, lemon-thyme vinaigrette and roasted tomato sauce. Look for “Today’s Local Fish” and the 10 oz. Grilled Filet with Big Island Hamakua Mushrooms as standout dishes.

Maui Brewing Company CoCoNut PorTeRAaron is a craft beer aficionado so also on his Maui menu was a stop at the celebrated brewpub of the Maui Brewing Co. This is the most successful craft brewery in The Islands and quite a story. Their only “problem” is that they can’t keep up with demand on The Mainland. They can their most popular styles and they are available in California. One of their signature brews is their award-winning CoCoNut PorTeR. The brewpub features some seasonal styles only available on Maui.

The food is seriously good, too, and a big attraction for locals. They even make their own salad dressings. You can’t go wrong with their pizzas or the Kalua Pork Sliders.

A local Island favorite is The Plate Lunch which Aaron sampled at all levels of dining establishments during his visit. It’s a lot of filling food designed for the hungry working guy. The best of the lot was the Pub Plate at Maui Brewing. It’s Kalua pork, white rice, mac salad, and CoCoNut PorTeR BBQ sauce.

Thai 2013 Food FestivalMark Sunday afternoon, September 29th on your calendar. Our very own Jet Tila is hosting the Thai 2013 Food Festival at Paramount Pictures Studios in the heart of Hollywood. It starts at 3:00 p.m.

Celebrity chefs and outstanding local Thai chefs will be there presenting their signature dishes for the guests to sample and enjoy. Entertainment will include music, Thai dancers, and fruit carving.

Randy ClemensRandy Clemens, noted food journalist and author of the best-selling Sriracha Cookbook and The Veggie-Lover’s Sriracha Cookbook, both from Ten Speed Press.

Randy was just in Thailand in Sri Racha in the Chonburi Province researching the unusual origins of Sriracha and shares this rich history with us.

Vernon Cardenas of State Social HouseExecutive Chef Vernon Cardenas oversees the kitchen at the just-opened State Social House on the fabled Sunset Strip. He has extensive experience cooking locally including his tenure as opening chef at Katana, also on the Sunset Strip.

Chef Vernon is an expert on all things Sake. He presents a overview course in Sake Appreciation 411.

Biff Naylor of Dupar'sBiff Naylor is a veteran restaurateur on the SoCal restaurant scene. He previously owned Tiny Naylor’s and Biff’s.

In 2004 Naylor came out of a brief retirement to purchase and revive the surviving Du-par’s Restaurants & Bakeries. The first location at The Original Farmers Market (opened in 1938) remains after a massive renovation and needed refurbishment. They are particularly well-known for incredible pancakes and house-baked fruit pies.

The Naylor Family represents three generations of career hospitality folks. Daughter, Jennifer, was the executive chef for many years at Wolfgang Puck’s Granita in Malibu. One of Jennifer’s key chefs is now the corporate executive chef for Du-Par’s. Most everything is made from scratch using premium ingredients.

If you sit at the counter at a Du-par’s you’ll see servers squeezing the fresh orange juice to order.

There is even a very busy Du-par’s in Downtown Las Vegas in the Golden Gate Casino & Hotel. They are famous for their ever popular “to-go” chilled shrimp cocktail which is actually a clever loss-leader designed to attract guests to the casino.

Soy SaucesJet Tila provides a useful tutorial on the types of soy sauce and their uses. There are differences in flavor and texture between Chinese, Japanese, Korean, and Thai soy sauces.

Light soy sauce, for example, does not have reduced salt. It’s actually saltier than the darker version.

At Ray’s he has just launched their first Water Menu with some twenty selections from around the world. It’s a great alternative for guests who want a festive beverage to pair with their meal but perhaps need to stay away from alcohol.

Jenny RossJenny Ross is the executive chef and proprietress of the 118 Degrees Community Cafes in Costa Mesa, Anaheim, and Laguna Niguel. The original location at The Camp in Costa Mesa recently celebrated its 7-Year Anniversary.

Chef Jenny characterizes her food as fresh, organic living cuisine.

Alan WongChef Wong is one of the distinguished pioneers of Hawaiian Regional Cuisine. This group of influential chefs was advocating using local ingredients and sustainability years before the concept was fashionable. In Honolulu he is the owner / chef of Alan Wong’s and the more casual Pineapple Room located in Macy’s in the Ala Moana Center. On Maui his property is Alan Wong’s Amasia at the Grand Wailea Resort. That’s Hawaii Regional Cuisine with sushi and a robata grill.

Chef Alan defines Hawaii Regional Cuisine as an artful blending of all the cultures now populating the Islands. In addition to native Hawaiian food it includes influences from the Chinese, Japanese, Portuguese, Koreans, and Filipinos, among others.

Chopped Ahi Sashimi and Avocado Salsa StackThere are many ways to experience dinner at Alan Wong’s. The a la carte menu features salads and entrees. There is also an a la carte “Side By Side Tasting” menu. Additionally there is both a “Chef’s Tasting Menu” and “A Tasting of The Classics” prix fixe menu.
