At the recent Pechanga Microbrew Festival and Chili Cookoff she wowed the crowd with her creation and unseated two-time Chili Champ, Chef Damian Stanley, the Executive Sous Chef at Pechanga. Chef Marlene joins us to stir the pot.

Restaurants in tree-lined Claremont, CA are preparing for the third annual Claremont Restaurant Week on now through July 19, 2015. The annual Midsummer Night’s Dine runs for 10 days, including two weekends, to encourage Southern California foodies to stay overnight at one of Claremont’s five distinctive hotel properties. Ed Inglese, the proprietor and co-founder of the landmark Tutti Mangia Italian Grill (now in its 18th year), will provide us with more background in our continuing series.

The OC Fair is hosting One Big Party from July 17th to August 16th in celebration of its 125th anniversary with culinary creations to suit all palates. Foodies can enjoy wild and new fare mixed in with the traditional fair food. Culinary enthusiasts can savor a variety of competitions and exhibits highlighting baking, preserving and cocktail-making. The OC Fair’s Robin Wachner is here to provide the highlights.

Brew Ha Ha Productions, creator of award-winning craft beer festivals in Orange County, along with the OC Fair, are presenting the 2nd Annual Brew Hee Haw Craft Beer Roundup on July 18-19, opening weekend of the OC Fair. The Brew Hee Haw offers day and evening tasting sessions and includes free admission to the OC Fair, a commemorative festival glass and special presentations by “Dr.” Bill Sysak, Craft Beer Ambassador & Certified Cicerone, at the Stone Brewing World Bistro & Gardens in Escondido.

Hawaii Chef Mark Noguchi is based on Oahu. His latest project is providing the food at the historic Hawaii Mission Houses with the Mission Social Hall & Café. In June, Chef Mark was part of the highly exclusive chefs group participating in the James Beard Foundation’s 7th Chefs Boot Camp for Policy and Change at Glynwood in Cold Spring, New York. Chef Mark Noguchi joins us to bring us up-to-date.

At the recent Pechanga Microbrew Festival and Chili Cookoff on June 6th she wowed the crowd with her creation and unseated two-time Chili Champ, Chef Damian Stanley the Executive Sous Chef at the Pechanga Resort.

A new chili champion has been crowned by the people at the annual Pechanga Microbrew Festival and Chili Cookoff at Pechanga Resort & Casino. Temptations Food Court chef, Marlene Moore, tantalized the sold-out crowd with her original creation of Temptation” Hearty Southern Style Chili. She edged out seven other Pechanga chefs’ chili varieties which included Texas style chili with a trio of meat, steak chili mac, and black bean chili con carne, with poblano rajas, crispy pork and shishito peppers.

Chef Marlene’s winning chili recipe is now posted on our Website. Go to the “Blog” file tab and then click on “Recipes.”

Southwest Syle Chili Recipe by Marlene Moore of Temptation Food Court at Pechanga Casino ResortWith 219 votes out of a total of 914 from Microbrew Festival attendees, Chef Moore, originally from Trinidad and Tobago, unseated Chef Damian Stanley who had held the chili throne for two years.

Now in its seventh year, 1,695 people came to enjoy brews, chili and music at the 2015 Festival, making it the most well-attended to date. Proceeds from the event benefited Habitat for Humanity Inland Valley.

Chef Marlene joins us to stir the slow-simmering chili pot.

Chef Marlene’s Chili Original Temptation Hearty Southern Style Chili Recipe

Southwest Syle Chili Recipe by Marlene Moore of Temptation Food Court at Pechanga Casino ResortIngredients:
5 pounds ground beef
4 cup diced onion
1 cup diced green bell pepper
1 cup diced red bell pepper
5 cloves garlic, minced
2 (10.75 ounce) cans tomato puree
1 (15 ounce) can kidney beans with liquid
1 (15 ounce) can pinto beans with liquid
¼ teaspoon paprika
¼ teaspoon oregano
¼ cup oil
1 arbol chili pepper (roasted & crushed)
1 California Anaheim chili pepper (roasted & crushed)

Sprinkle of: dark chili powder, cayenne powder, onion powder, ground black pepper and cumin

Salt to taste

Directions:
Place the oil in a skillet until hot, and sauté the garlic, onions, green & red bell pepper 
Place the beef in the skillet over medium heat, and cook until evenly brown
Place the tomato puree, kidney beans, and pinto beans. Season with paprika, oregano and the Roaster chili Heat & salt to taste. (If you like it spicier you can add more roasted chili heat…)
Cover and slow cook for 8 hours on Low.

Garnish: Optional 

  1. Pico De Gallo
  2. Mixed Cheese
  3. Diced Green Onions
  4. Sour Cream
  5. Fried Fresh Japanese Chili on top
  6. With a dash of Roaster Chili Heat

Chef Jet’s Porchetta Sandwich at Stir Market was just recognized by Restaurant Hospitality magazine as “Best Sandwiches in America 2015: Pork.” The key ingredients are porchetta seasoned with fennel, lavender, lemon zest, rosemary and garlic.

“What the Judges Said: This category nearly drove us insane because there were so many great entries, but we fell in love with this porchetta sandwich. In Italy, it’s not uncommon to find street vendors serving this elaborately stuffed and rolled pork in sandwich form, but rarely is it seen in sandwich form in this country. It’s labor intensive to prepare, but well worth the effort. Tila lays juicy white pork atop house-made jam and then adds texture with layers of crispy pork skin. What else can we say but, “Yum!” “

Chef Jet is also part of Food Network’s “Cutthroat Kitchen’s” Summer Tournament, “Camp Cutthroat.” It’s five episodes. Can you imagine host Alton Brown as your Head Counselor? It debuts on Wednesday evening, August 12th.

Additionally, select vendors will offer a just-for-2015 luxury menu item for $125.00 including caviar-topped Deep Fried Twinkie and Chuckwagon BBQ Feast with enough barbecued fare to feed the whole family.

In June Chef Mark was part of the highly exclusive chefs’ group participating in the James Beard Foundation’s 7th Chefs Boot Camp for Policy and Change at Glynwood in Cold Spring, New York. The site was a 225-acre agricultural nonprofit’s farm.

This series of workshops provided the chefs with the policy and advocacy skills they need to be effective champions for their chosen food-system causes.

Planned Parenthood Los Angeles’ annual Food Fare is Southern California’s highly anticipated gastronomic event where food lovers and Planned Parenthood supporters are invited to enjoy Los Angeles’ best restaurants all under one roof at Barker Hangar is Santa Monica on Thursday, March 5th. It’s their 36th big year! This year’s Food Fare will honor “Top Chef Seattle’s” runner-up cheftestant, Brooke Williamson, and her husband, Nick Roberts, as the 2015 Chefs of the Year and their three restaurants, Playa Provisions, Hudson House, and The Tripel will all be serving at the event. Chefs Brooke Williamson and Nick Roberts are our guests.

Specializing in ultra premium wines grown in Paso Robles, California, Artisan Uprising was created by brothers David and William Vondrasek after years of making wines solely for their family. “Originally inspired to try out what we had learned from our grandfather and our heritage of making wine each year, we found ourselves making more than the family could drink. Now that we make enough to share, we have held true to our process and mindset of how our wine should be made.” We are joined by the Vondrasek Brothers.

The kickoff event for San Francisco Beer Week is <The Bistro Double IPA Fest in Hayward. For the Third year our own El Segundo Brewing Co. entered their craft beers into this prestigious competition. Their Hammerland took the Gold! ESBC’s certified Cicerone, Thomas Kelley, is with us to celebrate the big win and explain!

We’re continuing our preview of Chocolate Decadence and the Pechanga Wine Festival set for Friday evening, February 27th and Saturday afternoon, February 28th at the Pechanga Resort and Casino in Temecula. Europa Village winery in Temecula is part of both events. Their new winemaker, George Bursick, joins us to provide an overview of what they are doing at Europa Village. We’ll also be joined by their Events Director, Lisa Ferguson, and Executive Chef and Innkeeper (The Inn at Europa Village,) Dean Thomas.

Eric KleinExecutive Chef & Partner Eric Klein of Spago Las Vegas was a sous chef at the original Spago. He had his share of working pressure-packed Oscar nights there and at The Governors’ Ball.

Wolfgang Puck has been associated with serving food at the Oscars for 21 years. On Sunday, February 22nd Chef Eric is hosting an Awards Night Party at Spago Las Vegas. The 7-course tasting menu is inspired by the cuisine (some 50 dishes) Chef Puck will be serving the same night at The Governors’ Ball at Hollywood & Highland.

One of the official desserts, an Apple Millefeuille with brown butter sauce and apple cider jelly, will be on Chef Eric’s menu, too. Every lucky guest will leave with a special chocolate Oscar painted with edible gold (originally created by Chef Wolfgang’s former executive pastry chef, Sherry Yard.) The guests at the official Governors Ball in Hollywood receive the same coveted keepsake!

Brooke Williamson and Nick RobertsPlanned Parenthood Los Angeles’ annual Food Fare is Southern California’s highly anticipated gastronomic event where food lovers and Planned Parenthood supporters are invited to enjoy Los Angeles’ best restaurants all under one roof at Barker Hangar is Santa Monica on Thursday, March 5th. It’s their 36th year!

This year’s Food Fare will honor “Top Chef Seattle’s” runner-up cheftestant, Brooke Williamson, and her husband, Nick Roberts, as the 2015 Chefs of the Year and their three restaurants, Playa Provisions, Hudson House, and The Tripel will all be serving at the event.

Since the hotel tower and casino opened in 2002 at Pechanga they have enjoyed an outstanding reputation for the quality and diversity of their food and beverage offerings. Chef Damian was the project manager for one of their newest interactive fine-dining spots, Umi Sushi and Oyster Bar.

Chef Damian will also preview the upcoming 2-day, Chocolate Decadence and Pechanga Wine Festival where fine chocolate and premium wines come together on February 27th and 28th.

Hundreds of wine varieties, sweet and savory chocolate confections, food samples from acclaimed Pechanga Resort & Casino Restaurants, live music, silent auction and helping out a good cause are all on the agenda for the two days of events inside the Pechanga Resort & Casino Grand Ballroom in Temecula, CA.

Chocolate Decadence on Friday, February 27th features more than 30 wine varietals that have been shown to masterfully partner with chocolate and other sweet desserts. The event runs from 7:00 p.m. to 10:00 p.m. and is $50 per guest.

The 7th annual Pechanga Wine Festival goes from 1:00 p.m. to 5:00 p.m. on Saturday, February 28th. Tickets for this unforgettable event are $65.00. Combo tickets for entry into both events are available for $100.00. Proceeds from both events benefit Habitat for Humanity Inland Valley.

Attendees on Saturday will get to partake in wine varietals from the Temecula Valley, Central California, Napa/Sonoma, the Pacific Northwest, as well as international winemaking regions. Pechanga Resort & Casino’s chefs will prepare delectable tastes for guests to savor with their favorite wines. Country/pop live music will be performed by singer Alaina Blair and her band.

Umi Sushi and Oyster Bar at Pechanga Resort and CasinoChef Damian Stanley is the always on the move Executive Sous Chef at the Pechanga Resort Casino in Temecula. Since the hotel tower and casino opened in 2002 at Pechanga they have enjoyed an outstanding reputation for the quality and diversity of their food and beverage offerings.

Chef Damian was the project manager for one of their newest interactive fine-dining spots, Umi Sushi and Oyster Bar. which launched after Thanksgiving in 2013. Umi means “sea” in Japanese. Sushi, sashimi, nigiri, rolls, oysters on the half shell, seafood platters, specialty cocktails and lots more are on the varied menu at Umi Sushi and Oyster Bar.

Three highly skilled Japanese sushi chefs (actually from Japan) are part of the culinary team. It’s an interactive and highly entertaining experience with the sushi chefs if you dine at the sushi bar.

There is a hint of the South on the menu, too. Look for gumbo and jambalaya. The specialty bouillabaisse has clams, fish, shrimp, scallop, and mussels in the hearty seafood broth.

A standout dish is the Bone Marrow Lobster with pear, tatsoi salad, celery root skordalia and black truffle vinaigrette.

Providence RestaurantChef Jet celebrated Father’s Day at Providence in Los Angeles. This is celebrity chef Michael Cimarusti’s (ex-Water Grill) much-praised, fine-dining seafood restaurant. In addition to the expected great seafood non-stuffy, attentive service is part of the experience. There is also a very deep wine list and an outstanding bar. Jet talks about his meal there and why this is such a popular special occasion establishment.

Kedric Francis of Coast Magazine and the Orange County Register MagazineMr. Suave himself, Kedric Francis, is back with us. He’s the Executive Editor of Coast Magazine and co-founding editor of the revamped OC Register Magazine.

Kedric is in-studio talking about local travel opportunities for Summer. He’s got some inspired ideas for traveling on the rails and previews the new attractions at The Disneyland Resort. It’s all child-friendly, too.

The Modern Mixologist Tony Abou-GanimWe’re delighted to welcome The Modern Mixologist, Tony Abou-Ganim, to the show. He’s a master barman and part magician. Tony is based in Las Vegas. He created the entire bar program (nothing short of spectacular) for the opening of Steve Wynn’s  original Bellagio, the trend-setting casino resort of it’s time.

Tony will share his inspirations for Summer cocktails and the importance of quality ice. It really makes the difference in a properly-prepared cocktail!

The Modern Mixologist also previews his new line of custom-designed bar tools.

Man about Orange County, Kedric Francis encores for another segment. This time he’s  chatting about the just-released June Restaurant Issue of Coast.

One feature profiles up and coming areas where there are pockets of distinctive dining places. Downtown Santa Ana is one of these spotlighted dining neighborhoods.

The most interesting piece, we think, is on the best restaurants in Orange County located in the worst spots. What a fun idea…

A truly underappreciated local wine country destination is the Temecula Valley. It’s 90 minutes, or less, from most areas of Orange County. It’s probably best known as the location of the Pechanga Casino Resort (largest Indian casino & hotel property in the West) but there is lots more out there.

Thornton Winery in TemeculaWhen you cross Butterfield Stage Road going East on Rancho California Road you hit the picturesque, and delightfully rural,  wine country. The first winery property you pass is the eye-catching Thornton Winery celebrating their 25th anniversary of proud family ownership in 2013. They are especially known for their premium California sparkling wines but also produce a  distinctive line of still wines under the stewardship of winemaker David Vergari.

Since the beginning Thornton has staged a highly regarded summer Champagne Jazz Series at the winery showcasing renowned contemporary jazz artists. Dave Koz performed two concerts there last weekend. It’s a superb environment to enjoy a concert in. You can also sip wine and enjoy a three-course seated dinner in the concert area.
