“The overall industrial feel of Bestia, couplled with the passion, hard work and talent of Chef Ori and Chef Genevieve make Bestia an honest Mom and Pop restaurant (with character) built to last.”

Charcuterie and Cured Meats at Bestia“Chef Ori maintains an aggressive house-cured meats program with over 60 different forms of charcuterie for Bestia. Bestia means “Beast” in Italian. He is also responsible for raising his own yeast culture which he uses to bake Bestia’s sourdough Pain au Levain, used as toast ubiquitously on the menu, as well as for the pizza dough, which rises and falls over a 24-hour cycle prior to being composed as a Napolitana pizza. It’s then baked in the Acunto (wood burning) oven at 900 degrees.”

‘On the dolci side of the menu, Chef Genevieve is preparing a plethora of desserts from scratch using the finest raw ingredients such as acquarello rice for her al dente rice pudding served with perfectly ripened in-season fruit or her earthy, nutty, chestnut flour zeppole served with house-made coffee gelato and cream. In addition Chef Genevieve was partially responsible for the design of Bestia. She re-furbished oil drum spouts converting them into lighting fixtures.”

Shachi MehraChef Shachi Mehra is well-known to Orange County diners as the opening chef for the fine-dining Tamarind of London in Newport Coast. Now Chef Shachi has branched out on her own and launched the more accessible ADYA in the Anaheim Packing House. It’s a reflection of modern India cuisine revolving around fresh, sustainable ingredients, simply prepared, in a casual setting.

Earlier in her career Chef Shachi was mentored by pioneering Indian Chef Floyd Cardoz in Manhattan. She worked at both Tabla and Bread Bar eventually rising to the position of Head Cook at Bread Bar.

“With ADYA, I present an Indian experience that will allow those who are both familiar and less experienced with Indian cuisine to embark on a delicious, unique culinary journey that emphasizes fresh ingredients and pronounced flavors,” commented Chef Shachi, who blends Western and Indian cultures to create artful dishes that successfully marry tradition with modernity. “The casual setting of ADYA makes it inviting and accommodating to a wide range of guests who seek out the rich experiences that Indian cuisine has to offer.”

Allan KarlWhy would anyone of sound mind sell nearly everything he owns (including a premium wine collection with cult California labels,) then pack up and travel for three years – alone – on a motorcycle? Meet world traveler and adventurer, Allan Karl, the author of Forks: A Quest For Culture, Cuisine And Connection. The standout book documents his incredible 62,000 mile journey through 35 countries on 5 continents over three years as well as provides authentic local recipes.

Getting the beautiful coffee table book published was an additional three-year odyssey of its own that became a Kickstarter case study..

From Allan: “Through the pages of this book, I share not only incredible adventures, I share the powerful gift of human connection – often made over good food and drink. Readers can experience the world as I did by traveling through each country, meeting the people and their unique cultures, and tasting their food.”

“As I traveled it occurred to me how important is the ritual of sharing food and how much we learn when we take the time to connect and share a meal with strangers or good friends alike.”

Forks: A Quest For Culture, Cuisine And Connections by Allan KarlForks: A Quest For Culture, Cuisine And Connections is an oversized, coffee-table art-book with more than 700 photos, stories of adventure and survival and global local food.”

For two years Allan struggled to find a publisher willing to take on this unusual and ambitious book project. They couldn’t pigeonhole it…Finally he turned to Kickstarter to raise the needed initial funds to self publish. He raised almost twice his initial goal for a total of $44,994

After three years on the road Allan truly believes the Irish Proverb: “There are no strangers, only friends you haven’t met.”

Eric WadlundSpencer’s Restaurant at The Mountain is consistently one of the most popular and favorably reviewed restaurants in the greater Palm Springs area. Since 2008 the secret has been the culinary talents of Executive Chef Eric Wadlund in the kitchen. Their relaxing Sunday Brunch is top of the mind with the locals.

“Featuring Four Star American Cuisine with a French – Pacific Rim Influence in a casually elegant atmosphere.”

The restaurant’s outdoor patios and the striking indoor dining area create an extremely inviting visual experience.

Chef Eric was just four when he whipped up his first culinary delight: doughnuts. His father owned a bakery and taught him the tricks of the trade, and, most of all, to love food and cooking.

By the way, he’s cooked for the President, too.

Tomas EstesThe Museum of the American Cocktail is hosting one of their special “Touring the Cocktail” evenings at Guelaguetza Restaurante on July 23rd. It’s a tequila appreciation evening with Oaxacan food tastes. Tomas Estes, Mexico’s official Tequila Ambassador to Europe has the details for us.

Tomas Estes, London resident, native Angeleno, acclaimed restaurateur, and Mexico’s “Official Tequila Ambassador to Europe,” issues participants a passport to the world of tequila and takes them on a behind-the-scenes tour of agave spirits. Josh Goldman, Co-Founder of Soigné Group, a portfolio of 12 Los Angeles-area craft cocktail bars and restaurants, executes a drink menu that demonstrates tequila’s range and versatility.

A sampling of savory specialties from the authentic Oaxacan kitchen of Koreatown’s Restaurante Guelaguetza are included in the price of admission. Come taste why Pulitzer Prize-winning Los Angeles Times food critic Jonathan Gold says “Guelaguetza is the best Oaxacan restaurant in the country.”

Tickets are $45 in advance, $40 for MOTAC/SoFAB and USBG Members, and $50 at the door.

What's Cooking with Travis Rodgers and Jet TIla on AM830When you put our delightfully food obsessed morning show host, Travis Rodgers, together with Chef Jet Tila you know you’re going away entertained but really hungry. Be sure to catch their weekly feature, “What’s Cooking with Travis and Chef Jet Tila,” at 7:50 a.m. every Friday morning on AM 830 KLAA. It’s a feast for the ears…

Chef Jet and Producer Andy preview the show.

If you crave authentic regional Mexican cuisine then you’ll want to hear Jimmy Shaw, the founder of Loteria! Grill. How about an award-winning celebrity chef from Chicago who was enticed by Steve Wynn to pull up stakes and move his family to Las Vegas so he could helm Mr. Wynn’s signature Italian seafood restaurant? That’s a story…You’ll also meet the executive chef and owner behind the hottest restaurant opening in Hollywood last year. It’s even located in a totally renovated historical building built by Charlie Chaplin.

All of that and lots more deliciousness on the “SoCal Restaurant Show.”

Jimmy Shaw of Loteria Grill and Torta CompanyWhen it comes to authentic regional Mexican cuisine few are as knowledgeable as Jimmy Shaw, the founder and executive chef of the popular Loteria! Grill Restaurants. He was born and raised in Mexico City

He started modestly with a graphically-interesting stand in a great location at The Original Farmers Market at Third & Fairfax. The locals were wowed. Since then full-service restaurants in Hollywood, Studio City, Santa Monica and Westlake Village have been added. Any moment now Downtown Los Angeles will launch at FIGat7th.

Next to Loteria! Downtown will be a new gourmet sandwich shop Jimmy is doing with his brother, Andrew. It’s the Torta Company.

Two Loteria! Grills will be coming soon to Los Angeles International Airport (LAX.)
Chef Jimmy provides us with the rich history of the Mexican sandwich and what is correct as far as bread is concerned. The bread needs to be crunchy on the outside and pillowy soft inside.

Torta Company will offer both traditional and contemporary sandwich variations. There will definitely be appealing vegetarian options, too, including a wild mushroom tinga.

Look for pulled pork, batter-fried snapper in a Veracruz tomato sauce, and turkey in mole. Also on the menu will be Chef Jimmy’s clever spin on a tuna torta.

Paul BartolottaPaul Bartolotta is one of the rarified, distinguished James Beard Award winning chefs who has an incredible destination restaurant at Wynn Las Vegas.

His Bartollota Ristorante di Mare opened with the hotel back in 2005 and is one of the most successful fine dining restaurants at the property.

It just underwent a multimillion dollar renovation because Steve Wynn thought it was time…Chef Paul observed that the facelift alone cost more than the opening cost of many restaurants!

Paul was one of the most acclaimed chefs in Chicago (Spiaggia) when Mr. Wynn came calling. With his Bartolotta Restaurants firm he operates a number of busy restaurants in Milwaukee. Paul recounts the humorous story of Mr. Wynn’s charming pursuit of Paul to head the restaurant at Wynn Las Vegas. Understand at the time (2004) Paul was based in Chicago with his Family. One of Mr. Wynn’s requirements was that each of his celebrity chefs at Wynn Las Vegas actually reside in Las Vegas.

There is lots more to this fascinating story so Chef Paul Bartolotta of Bartolotta Ristorante di Mare at Wynn Las Vegas continues with us.

The concept of the elegant restaurant is serving the very best of Mediterranean seafood flown in fresh daily from Italy and simply prepared. There is also a live program. Spiny lobsters from Sicily, in season, are in live tanks in the kitchen!

The servers expertly debone the fish at tableside. It’s not unusual to see Paul on the floor touching tables and explaining his dishes.

This is what veteran Las Vegas restaurant journalist Max Jacobson has said about Bartolotta Ristorante di Mare : “The chef is both a fanatic and masterful technician, so expect perfection.”

Kedric Francis of Coast Magazine and the Orange County Register MagazineOur favorite debonair man about Orange County, Kedric Francis, is back with us for a dining report from his recent stay in Cancun. Kedric is the well-traveled Executive Editor of both Coast Magazine and The Orange County Register Magazine.

Kedric stayed at the 274 room, all-suite, Nizuc Resort & Spa in Cancun secluded a bit away from the tourist zone on a cove. It’s on the grounds of the former presidential retreat. Lots of water…

There are six tempting dining options there so Kedric opted to never leave the property during his visit.

Ni is the Peruvian restaurant. Kedric particularly enjoyed their ceviches.

Indochine is an Asian-fusion spot. Recommended is the sushi and deep-fried Grouper.

Of course they need to have a wonderful Mexican restaurant. That’s Ramona overlooking the beach. It’s modern versions of regional recipes using local produce and spices.

Los Angeles Times Travel ShowThe 16th Annual Los Angeles Times Travel show returns to the West Hall of the L.A. Convention Center on January 18 & 19. Los Angeles Times Staff Writer, Jessica Gelt, is with us to preview her activities at the show.

Gelt has written extensively about food, nightlife, entertainment and travel for The Times. She sometimes combines a few different beats within one entertaining story.

She is moderating two sessions of the same panel, “On the Road : Traveling for Music & Festivals” both days at Noon on the LA Times Stage.

Jessica also shared some insider tips about finding the best food at the Coachella Valley Music and Arts Festival. It helps to have VIP access…

Show 35, July 13, 2013: Restaurant Impresario Bill Chait

Bill ChaitIf you’re Southern California-based and not familiar with Bill Chait’s name you certainly know the high profile restaurants with prominent chefs in the kitchen he’s behind. In the last few years these include Rivera and Bestia in Downtown L.A., and Sotto, Picca, Short Order and Short Cake (in the Original Farmers Market at Third and Fairfax) with more standout ventures on the way.

Bill started in the mid-80’s with the purchase of the original Louise’s in Brentwood. Bill (with partners) upscaled and branched it into a casual Italian trattoria, multiple-unit operation. He generously credits his later association with the late Mauro Vincenti (Rex) as his platform to his current success. Before the purchase of Louise’s his only experience in the business was as a nighttime pizza delivery guy for Jacopo’s in Beverly Hills.

Bill Chait’s business philosophy is best summed up by a quote he gave to the Los Angeles Times in a prior interview. “The concept of being in business is that you learn much more from your failures than your successes. People have said that, but I’ve lived it.

Show 35, July 13, 2013: Restaurant Impresario Bill Chait Continued…

Bill ChaitWhen Bill continued the conversation turned to the story of Test Kitchen. The original Test Kitchen occupied the spot where Sotto is now. Ricardo Zarate’s Picca is in the same building right above the space.

As Bill explains it while he was deciding what was going into this space (with Picca being built above) the thought was to do an iteration of a pop-up in that space. The eventual concept was to bring big deal chefs into the space for a week to cook the menu of their dreams and perhaps test new ideas. The only publicity was an e-mail blast to folks who signed up to get it. The media did the rest by picking this up and promoting it as hidden dining! The demand for a seat at any of the Test Kitchen evenings well exceeded the available room thereby creating high interest in future programs!

Ricardo Zarate functioned as host chef and John Sedlar also helped out. Walter Manzke, Neal Fraser, Javier Plascencia, and others were part of the ambitious effort.  Steve Samson and Zach Pollack (who now occupy the space with Sotto) were also part of the series.

Bill’s newest projects are the pending Republique with Walter Manzke (ex-Bastide) and Redbird with Neal Fraser (bld.)

Republique is looking at a late August or early September launch in the former Campanile space on S. La Brea Ave. It will include a 95-seat café in the style of Joan’s on Third as well as a French bistro that will be Walter’s adaption/refinement of Church & State (where he also previously ran the kitchen.)

Redbird is Neal Fraser’s long in the works restaurant for the former rectory building at St. Vibiana Cathedral in Downtown Los Angeles. The project is in plan check with the City and depending on construction issues is aiming for a late fourth quarter opening.

Previews of potential dining adventures…

Khao Soi at Spicy Thai BBQChef Jet somewhat reluctantly shares his recommendation for Northern Thai food in Los Angeles. It’s a small place with 15 seats but worth seeking out. Their signature dish is khao soi.

Producer Andy highlights Marche Moderne’s (Penthouse @ South Coast Plaza) annual Bouillabaisse festival running nightly until July 18th. It’s an authentic Marseillaise-bouillabaisse with all the fish flown in from the South of France. Spoil yourself with the very best and a glass of Rose! Reservations are a must…

If you dine-out in Los Angeles you’ve no doubt heard of Rivera and Bestia in Downtown Los Angeles. You probably also know the Italian favorite Sotto and the Peruvian-flavored, Picca located just East of Century City. How about Short Order and Short Cake at the Original Farmers Market at Third & Fairfax?

Bill ChaitWhat you probably don’t know is that all of these popular, chef-driven restaurants are ventures put together by low key restaurant impresario, Bill Chait. Bill joins us to discuss how he has created a string of successful, and enduring, restaurants (done on a budget) with talented celebrity chefs in a very tough business environment.

In the pipeline for Chait are Chef Walter Manzke’s Republique in the former Campanile space on La Brea Avenue and Neal Fraser’s Redbird in the former Vibiana Cathedral space in Downtown Los Angeles.

Mary Sue Milliken of Border GrillOn Monday, July 22nd at 6:30 p.m. at Border Grill Las Vegas Mary Sue Milliken, Susan Feniger, and Border Grill Executive Chef Mike Minor are teaming up with Chef Rick Moonen of rm seafood and Chefs Collaborative to host a Trash Fish Dinner. The cocktail reception and dinner will feature tasty alternatives to the seafood we love and, unfortunately, eat too much of. Understand the fish is delicious…

Mary Sue Milliken joins us to preview the fun evening with a purpose.

Time for Fair Food!

Krispy Kreme Sloppy Joe from Chicken CharliesThe OC Fair is on through August 11th! Mad Hungry Woman blogger, Anita Lau, is with us to discuss what extreme foods are new at the Fair for 2013. She will actually be judging some Fair food contests during the event.

Fair food vendor, Chicken Charlie’s, always is always out there with fab fried food items. Eagerly anticipated is his new Krispy Kreme Sloppy Joe’s and Bacon A-Fair’s Wild Boar on a stick (an OC Fair exclusive.)

According to the Orange County Register’s Nancy Luna, Chicken Charlie sold 50,000 deep-fried Twinkies last year at the Fair!

Other Chicken Charlie highlights are a deep-fried bacon pickle and a waffle dog.

SushiDo you crave sushi but feel somewhat compromised about proper manners and ordering technique in a sushi restaurant? When do you use the ginger, soy sauce, and wasabi? Is omakase (“trust the chef”) the best way to go? If you sit at the sushi bar how do you convey respect to the sushi chefs?

Listeners to the “SoCal Restaurant Show” are in luck. When he was helming Wazuzu at Encore Las Vegas, Jet had some of the most highly regarded sushi in Las Vegas on his menu. Backing it all up was in-house master sushi chef (and his highly trained team.) He will give us the 411 on ordering, and enjoying, sushi.
