Trademark Brewing is the ambitious result of one couple with many passions – food, science, beer and brewing. Founded by a husband and wife team, Sterling and Ilana Steffen, who brought Trademark Brewing to Long Beach, California.”

“Trademark Brewing is the first production craft brewery in Long Beach, and one of the only sustainability-focused breweries in California. Their special equipment and processes allow Trademark to use less than half the water of other breweries their size, and 30% less energy. At Trademark Brewing, great beer isn’t enough. Guests can enjoy Trademark Brewing craft beers and cold brew coffee on draft in their Long Beach Taproom & Beer Garden. At any given time there is a choice of over 20 craft beers on tap. Represented styles include Hoppy, Light, Fruited + Sour, Dark, Belgian and even Beer Slushies. They also fill growlers. The Taproom is both dog and kid friendly.

“Since 2014 Sammy’s Original in Lake Forest has been the welcoming place to go in South Orange County for upscale sports bar food, craft cocktails, tap beers, live entertainment and premiere Mini Satellite Horse Wagering.” The handsome, well-appointed and spacious interior features 120 Hi-Def Television screens. There is plenty of on-site parking.

Breakfast is served until 12 Noon daily. Think Breakfast Enchiladas with scrambled eggs and Jack and Cheddar cheese…Happy Hour is Monday through Friday from 2:00 p.m., to 7:00 p.m. with both beverage and snack specials.

All the pizzas (12”) are created using house-prepared dough and sauce. New pizza additions include Ham & Pineapple and White with chicken breast, red onion and green onion.

The pastas are prepared in-house. The Lasagna with Nana’s meat sauce and Mozzarella and Ricotta is from one of the proprietor’s mother’s family recipes. All the soups are prepared from-scratch.

There are beverages aplenty. Typically there are 12 rotating beers on tap in addition to a wide variety of bottled beers including domestic, imported and craft selections. A signature cocktail is the Mango Peach Passion with Absolut Mango Vodka, passion fruit puree, DeKuyper Peachtree and pineapple juice.

Chef Andrew was planning to join us from the opening of his Raw by Slapfish in downtown Indianapolis. At the last minute he connected with an earlier return flight and was in the air during the show. Producer Andy Harris provided the Contest details with a helpful assist from the show’s long-time Website and Social Media consultant, Adam Bell.

Adam also finished his travel commentary on his recent business trip to Miami. He shared his less than memorable experience staying at the legendary Fontainebleau Miami Beach resort there. In Adam’s observation service is clearly not up to their stellar reputation and the cleanliness of the room upon his arrival was not up to par. The upshot here is that when you make your hotel reservation find out what generally expected services there are not being offered due to the labor shortage and pandemic factors. Keep in mind there is no reduction in rates or Resort Fees to compensate for the unfortunate reduced level of service at these hotel properties.…

Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef” segment where Chef Andrew responds to listeners thoughtful inquiries. Chef Andrew is regularly updating us on the impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the very survival of restaurants which is a genuine concern. Restaurants in Southern California are finally again allowed to operate for outside/patio dining at reduced capacities with all the requisite COVID 19 safety precautions. Some form of inside dining at a greatly reduced capacity (perhaps at 25 percent) is on the immediate horizon for “Southern California. We’ll “Ask the Chef.”

Sunday (March 14th) is National Pi Day so we’ll get Chef Andrew’s informed thoughts on pizza which is an area of expertise for him. As Chef Andrew artfully stretches the dough we’ll find out how Jersey-style pizza differs from New York pizza. Think pH of the water used in the dough as well as using uncooked tomato sauce.

Chef Andrew also updates us on the inspiring progress for the grass-roots, 86 Restaurant Struggle campaign to benefit out-of-work and struggling restaurant workers. Chef Andrew and his wife, Lauren, have already distributed over $380,000 in small grants to deserving restaurant workers in serious need. All applications are carefully vetted by the Gruels. The substantial need, and fundraising, continues…

Guests can also contribute to the cause via the juicy, premium Community Burger (made with fresh ground beef generously donated by West Coast Prime Meats) available at all Slapfish locations in Southern California.
