The 2018 Western Foodservice & Hospitality Expo will be held Sunday, August 19 – Tuesday, August 21, 2018 at the Los Angeles Convention Center. The tradeshow and conference will provide 9,000+ industry professionals with access to the hottest menu trends, state of the art design and decor, a renowned education program, special events, and 450+ of the leading vendors and purveyors dedicated to serving the restaurant & foodservice community. This year it’s co-located with Coffee Fest and Healthy Food Expo West. Representing the Expo is Tom Loughran, Vice President for the Show.

“After a year on the road getting in touch with their roots and cultivating the essence of Southern cuisine, South City Fried Chicken Co-Owners Joshua Kopel and Chef Sammy Monsour returned to Los Angeles with the innovation and grit to tackle their second venture together. “South City Fried Chicken is the canvas on which to experience a story that is important to Josh and I,” says Monsour. “Our food honors Southern culture, the people we come from, and connects us with our guests.””

“Setting out with the intent to not only create the most delectable Fried Chicken Sandwiches in the West, but as an homage to the people of the South, Chef Sammy set his standards high from the get-go with an adamant motto: No heat lamps, no freezers, no excuses. Everything on the South City Fried Chicken menu is made-to-order, maintaining farm-to-table concepts by utilizing the same local vendors as fine dining big sister restaurant Preux & Proper. No detail is too small, from the homemade pepper mixes and sauces, to the employment of Jidori chicken, an artisan-take on poultry farming by utilizing hand-pulled methods over machines, and brioche buns from La Brea Bakery.”

Each Fried Chicken Sandwich begins with succulent Jidori chicken in marinade and buttermilk brine, marinating together for a minimum of 24 hours. When it is finally ready to go, the last step is dredging the chicken in the “stay crispy batter” before getting fried to perfection and seasoned according to each sandwiches destination. Described by Chef Sammy as “A love letter to the South written in flavor,” the South City Fried Chicken Sandwich Menu highlights nine crispy on the outside, succulent on the inside offerings, eight of which feature namesake cities that are major players in Southern cuisine.

Western Foodservice ExpoThe 2018 Western Foodservice & Hospitality Expo will be held Sunday, August 19 – Tuesday, August 21, 2018 at the Los Angeles Convention Center. “Sally Camacho Mueller graduated with honors from both the Culinary and Baking & Pastry Programs at the California Culinary Academy in San Francisco. She returned to her home in Los Angeles, to work with Donald Wressell at The Four Seasons Beverly Hills and from there went on to work at numerous award-winning resorts and fine dining restaurants including The Wynn Las Vegas, Bradley Ogden at Caesars Palace, the Fairmont Turnberry Isle Resort in FL, Wolfgang Puck‘s WP24, the Hotel Bel-Air, and the Jonathan Club. In 2015 she joined as the Culinary Institute of America Greystone in Napa Valley as pastry chef and baker instructor.”

Her work has been featured in numerous publications and in 2011 she was a cheftestant on Bravo‘s Top Chef: Just Desserts where she came away as a finalist and runner-up.

Chef Alan Greeley of The Golden Truffle in Costa Mesa is an Orange County original. The destination restaurant is in a bit of an odd location for an establishment with its reputation. After 37 years Chef Alan has closed The Golden Truffle. He’s off to Florida for the next chapter. We’ll share some memories with Chef Alan and chat about the state of the restaurant business. Along the way he’s graciously mentored many young chefs who now have successful Orange County restaurants of their own.

The California Restaurant Association Foundation is part of the annual Western Foodservice & Hospitality Expo (for the restaurant trade) starting this Weekend (Sunday, Monday & Tuesday) at the Los Angeles Convention Cente. They will have a fundraising booth there but their big event is The 6th Annual Culinary Cocktail Clash on the Main Stage on Sunday afternoon. Alycia Harshfield, the Executive Director of the California Restaurant Association Foundation, joins us with a preview.

Loves Alex’s Lemonade, hosted by Chef Suzanne Goin, business partner Caroline Styne (LucquesA.O.C.,Tavern) along with Chef David Lentz (The Hungry Cat), returns to UCLA’s Royce Quad on Saturday, September 9, 2017 from 12:30 – 4:30 pm for its eighth highly-anticipated event. Goin, Styne and Lentz have again enlisted the support and generosity of their culinary friends around the country who graciously donate their time and services to raise funds and awareness for Alex’s Lemonade Stand Foundation (ALSF) in their quest to find better treatments and cures for all kids with cancer. L.A. Benefit Co-Founder Caroline Styne and returning participating chef, Chris Bianco (Phoenix’s Pizzeria Bianco) are our guests.

The Los Angeles Times The Taste is an annual festival celebrating the flavors of the world in Southern California style. Hosted by The Times’ editorial staff and acclaimed L.A. chefs and bartenders, The Taste will transform Hollywood’s Paramount Pictures Studios into the ultimate epicurean pop-up and block party over Labor Day weekend (Sept. 1-3). Admission to each of the five events includes unlimited tastings from the city’s best kitchens and a variety of wine, beer and seasonal cocktails.  Chef highlights from the 3-day event include Sherry Yard, Jet Tila and Antonia Lofaso. Noelle Carter, Times Test Kitchen Director and Sherry Yard of Westwood’s Tuck Room Tavern join us in separate segments with all the sweet and savory details.

For the 3rd time The Olympics is returning to Los Angeles in 2028. Did Los Angeles get a good deal for 2028, or just a deal? The person to ask is our resident Olympic Games expert, Richard B. Perelman. Mr. Perelman was the youngest Vice President of The Los Angeles Olympic Organizing Committee (LAOOC) from 1980 to 1984. Thereafter he was the Editor of The Final Report, a massive 2-volume tome officially documenting the Games of the 23rd Olympiad (the 1984 Summer Olympics).

Our always on-the-go show Co-Host, Chef Andrew Gruel, has been traveling extensively since he was last in-studio. The ambitious itinerary was production for Food Network, New Jersey, New York, London, Hawaii, Orlando, Washington, D.C. and now a new Slapfish opening in Sandy, Utah. He’s also appearing at the Los Angeles Food & Wine Festival this weekend. We’ll reel him in from the kitchen for a visit. He’s actually back in studio on September 2nd.

Alycia HarshfieldThe California Restaurant Association Foundation (celebrating their 35th Anniversary in 2017) is part of the annual Western Foodservice & Hospitality Expo (for the restaurant trade) starting this Weekend (Sunday, Monday & Tuesday) at the Los Angeles Convention Center. They will have a fundraising booth there but their big event is The 6th Annual Culinary Cocktail Clash on the Main Stage on Sunday afternoon.

The Clash is a lively cooking and craft cocktail competition between restaurant brands – all to raise money for The Foundation’s ProStart high school culinary arts program. 500 guests are expected.

The California Restaurant Association Foundation (CRAF) has introduced a new philanthropic branch to its foundation, Restaurants Care, an emergency assistance fund to support restaurant workers facing an unforeseen hardship. To celebrate the launch of this new fund, CRAF will host an inaugural benefit dinner and reception called The Grateful Table on Saturday, September 9th, 2017. Bringing together some of the Orange County’s most influential chefs including Ross Pangilinan of Mix Mix Kitchen Bar and Ryan Adams of 370 Common. The Grateful Table will feature a twilight reception followed by a farm-to-table family-style dinner held at the OC Fair & Event Center‘s Centennial Farm (88 Fair Dr., Costa Mesa 92626) on September 9th, 2017 from 6 p.m. – 10 p.m. Individual tickets range from $250 – $300 and are available for purchase online.

Rich PerelmanFor the 3rd time The Olympics is returning to Los Angeles in 2028. Did Los Angeles get a good deal for 2028, or just a deal? The person to ask is our resident Olympic Games expert, Richard B. Perelman. Mr. Perelman was the youngest Vice President of The Los Angeles Olympic Organizing Committee (LAOOC) from 1980 to 1984. He also was the Editor of The Final Report, a massive 2-volume tome mandated by the IOC officially documenting the Games of the 23rd Olympiad (the 1984 Summer Olympics).

The ambitious itinerary was production for Food Network, New Jersey, New York, London, Orlando, Washington, D.C. and now a new Slapfish opening in Sandy, Utah.

Lam founded what came to be known as the world famous Chinese Ceramic Arts Import and Export Company. John FosselmanFosselman’s Ice Cream Co. “Using the finest ingredients available to make the most delicious ice cream” has been a local favorite since 1919. The ice cream is still handmade in small batches in Alhambra. It relocated there in 1941.

Fosselman’s has just introduced a flavor line of soft serve ice cream for restaurants. The line extension was done in association with Dog Haus, based in Pasadena. Fosselman’s soft serve and milkshakes will now be available in all Dog Haus locations.

“As a Pasadena-based restaurant, we’ve always had a deep respect for local businesses in our community like Fosselman’s that are as committed to quality as we are at Dog Haus,” observes Dog Haus partner Hagop Giragossian.
