Inspired by the spirit of legendary bar woman Ada Coleman of the Savoy Hotel, Ada’s (Las Vegas) is driven by the idea that hospitality begins with offering every guest the best ingredients, preparation, and service possible. With Italian-inspired fresh pastas, artisanal American style pizza, seafood, meat and vegan selections at lunch, dinner and weekend brunch, Ada’s offers the best quality version of “something for everyone” in an elegant but casual setting amongst the Italianate streets of Las Vegas’ Tivoli Village. The Ada’s team is led by Chef/Owner James Trees (Esther’s Kitchen), who is our guest.

Powell & Son wines are sourced from various vineyard sites throughout Australia’s the Barossa and Eden Valleys. Dave and Callum Powell (father and son) employ traditional, minimalist winemaking techniques to produce a wine that speaks of the place that it was grown. Their inspiration for winemaking having its roots in France’s Rhone Valley, Powell & Son red wines are made from the classic Rhone varietals: Shiraz, Grenache and Mataro and its whites: Roussanne, Marsanne as well as Eden Valley Riesling. Dave Powell joins us to gently pull the cork on Powell & Son for us.

Leah Spielberg Adler was a fixture of the Pico-Robertson neighborhood (The Borscht Belt) in Los Angeles since 1977 until her passing in early 2017 at 97. She was the proprietress and heart of the kosher dairy restaurant, The Milky Way. In a loving tribute to her memory The Spielberg Family (Steven, Nancy, Anne and Sue) reimagined and reopened The Milky Way in February of 2019 with a new look and an updated, appealing and streamlined kosher menu. Sunday Brunch was then added right before Mother’s Day 2019. Executive Chef & Restaurant Consultant Phil Kastel of PK+J Hospitality Group is the Creative Chef at The Milky Way and is our guest for the update.

Valentine’s Day is a particularly difficult Holiday for restaurants to manage. Expectations are high on the part of couples and it’s all tables of two who want to linger. What are the operational and food preparation challenges of Valentine’s Day from the restaurant’s perspective? Executive Producer Andy Harris (who has a background in restaurant operations) talks about this with the show’s Producer/Engineer/Board Operator Aaron Fry who moonlights as a proficient bartender and server. Victor & Steven also update us on Dingo Pup Trans-Pacific-Style Hazy Pale Ale, a collaboration craft beer between Golden Road Brewing and Sydney’s 4 Pines Brewing Co.

It’s also a tribute to Wandi, the rare purebred dingo pup (with an incredible story) now residing at the Australian Dingo Foundation. Golden Road and 4 Pines Brewing are contributing a portion of the sales of Dingo Pup to the Australian Dingo Foundation as well as fire disaster relief.

“The Powell philosophy is that a great wine is made in the vineyard and so Callum and Dave work the vineyards they use on their own in the Winter and Spring seasons, then in Autumn pick the fruit and vinify using old concrete ferment vats and basket pressing – producing unique and expressive wines from their most prized vineyards throughout the Barossa.”

The varied selections range from Huevos Rancheros with Black Beans, Ranch Sauce, Fried Eggs, Feta Cheese, Lima Cream, Olives and Avocado to the Impossible ™ Green Chile Breakfast Burger with fries. Also Brunch Cocktails (think Beermosa with IPA and Grapefruit Juice) and creative Mocktails.

The Milky Way serves Lunch and Dinner Monday thru Thursday. Friday is lunch only. Closed on Saturday. Sundays feature Brunch and Dinner.

“Bernie and Leah (Spielberg) Adler opened the doors to Milky Way restaurant in 1977. Their vision was to offer fine kosher food to the Jewish community at a time when such a thing didn’t exist in Los Angeles. Leah wanted to introduce interesting fare to many who had never tasted dishes like Cajun, Mexican, or Thai.”

“Shortly after opening, it was very apparent that the main attraction wasn’t just the food, but was Leah herself! With her unique and exuberant charm; independent and confident style, Leah had the ability to make every guest in the restaurant feel as if they were the most important.  People came for the food, but they kept coming back for Leah!”

“Leah disdained being identified as a “kosher deli”! Yes, she served traditional Jewish dishes like blintzes and potato pancakes, but that was where the similarities ended. When Leah would greet each table, she would describe the daily specials with such animation that she would easily convince the table to try them. She was known for her love of classical music, art, denim and Cabernet Sauvignon wine.”

“After more than a decade of success as a corporate tax attorney in Cincinnati, Ohio, Dave Specter was emotionally and physically spent. His wife Sara convinced him to leave the profession and they turned the hobby that brought him joy—winemaking—into his new career. The pair had fallen in love with Newberg and the Willamette Valley while on vacation in 2008, subsequently moving here in 2012 and establishing Bells Up in 2013. The first wines were released Memorial Day 2015, coinciding with the opening of the estate winery/tasting room.”

“Every Bells Up wine is named for a piece of classical music that perfectly epitomizes the wine and/or prominently features the French horn, the instrument owner and winemaker Dave Specter played for more than 20 years.”

“Winemaker and owner Dave Specter and his wife Sara began making kit wine in their basement in 2006 on their five-year wedding anniversary. Dave, a corporate tax attorney, fell in love with winemaking. He left his legal career in 2009 to work as an unpaid cellar rat to award-winning winemaker Joe Henke of Henke Winery in Cincinnati. Joe mentored Dave for three years, during which time Dave enrolled in the Washington State University online enology course, earning a certificate.”

“In 2011, Dave won two amateur national winemaking competitions with two different wines in two months; a year later the Specters relocated to Newberg. Dave worked fall 2012 harvest under Bryan Weil, winemaker at Alexana in Dundee, and studied viticulture in 2013 in the Chemeketa Community College program. He also served as a member of the board of the Chehalem Mountains Winegrowers Association.”

“Yianni obtained his formal culinary training at the prestigious California Culinary Academy in San Francisco. After graduation he worked under his first culinary mentor, Chef Daniel Boulud, a James Beard Award-winning chef, cookbook author and restaurateur at Restaurant Daniel Manhattan.”

“Just two years later, Yianni was asked to join Chef Wolfgang Puck’s team at Spago in Beverly Hills, where he worked closely with world cuisine chef Lee Hefter, and Wolfgang Puck.”

“In 2005, Yianni was brought in to open Petros Greek Cuisine, where he served as Executive Chef. With much press and praise for Petro’s Greek, and his knowledge and passion for Mediterranean foods rekindled, Yianni decided it was time to open a restaurant of his own.”

“In 2008, together with his partner George Makridis, Yianni opened the first Olive Pit Grill in Brea, California. The restaurant’s success was immediate, and in order to keep up with demand, they opened their second location in Huntington Beach, California two years later.” This year the Brea restaurant moved to a new, expanded space in Downtown Brea on S. Brea Blvd.

Chef Kagel’s passion for feeding those in need continues; she is a guiding founder of Santa Fe’s response to food insecurity – with first vision for the Food Depot, Santa Fe’s food bank and she is also co-chair of Kitchen Angels capital campaign, the group that provides free hot meals delivered to Santa Fe’s homebound.

Katharine has authored two well-received cookbooks; Cooking with Café Pasqual’s, Ten Speed Press and Spirited Recipes from Café Pasqual’s, Chronicle Books. Both are still in print.

Café Pasqual’s received the prestigious James Beard Foundation award as an America’s Classics (1999). The same year she was nominated by the James Beard Foundation as Best Chef: Southwest.

Café Pasqual’s (Santa Fe, New Mexico) Founder and Chef Katharine Kagel, originally from Northern California, studied cooking in Japan and Hawaii, and then developed a passion for Chinese cooking before moving to the Southwest. In 1978 she moved to Santa Fe and opened Cafe Pasqual’s the following year.

She helped to found the international association of prepared and perishable food rescue programs, Foodchain, as well as Santa Fe’s local program, The Food Brigade.

Café Pasqual’s Gallery (adjacent to Café Pasqual’s on the 2nd Floor) features handmade mica cook pots in both the Jicarilla – Apache style and of the Northern New Mexico Pueblos. The gallery represents 24 artists in an array of media.

Pascal Olhats is the well-respected Dean of French chefs in Orange County. Earlier in the year he made the decision to focus his efforts on Café Jardin at Sherman Gardens in Corona del Mar. He has a new restaurant chef there, Jessica Roy (ex-Current at Renaissance Newport Beach hotel.) Pascal Catering is now based at Sherman Gardens, too. Some fondly remembered dishes from Pascal’s restaurants over the years are now on the lunch menu. Special dinners are also planned. The new direction is “tradition meets innovation.” Both chefs are learning from each other. Chefs Pascal and Jessica Roy join us in-studio.

It’s the season for special styles of limited production craft beers to celebrate the Holidays. Our brewers share the spirited Holiday cheer.

We sampled Victor’s signature (and long-ago perfected) recipe for Pumpkin Ale (6 % ABV) and Steven’s special creation, Drunken Pumpkin, which is 9.5 % ABV and is Golden Road’s Pumpkin Ale aged for 11 months in Buffalo Trace Bourbon barrels.

Victor mentioned that Golden Road Pub OC’s 25,000 square foot outdoor expansion has been completed just in time for the Holidays. It includes a dog run and is all child & Family-friendly. (More restrooms, too…)

La Posada de Santa Fe, a Tribute Portfolio Resort & Spa in Santa Fe, NM, with a rich history features, Julia – A Spirited Restaurant & Bar, their destination restaurant. La Posada’s Executive Chef, Tom Kerpon, escapes his busy kitchen for a chat.

Taco Rosa, Chef Ivan Calderon’s upscale Mexican restaurant in Newport Beach, will host its 7th Annual Battle of the Tequileros on Sunday, September 22nd from 4-8 p.m. Bringing together 34 different tequila and mezcal brands, the celebratory event will benefit Operation of Hope Worldwide, a local non-profit providing free, life-changing surgeries and health care for children and adults in under-served areas of the world, while creating a self-sustaining program of hope through education.” Chef Ivan artfully uncorks the tequila for us.
