It’s Spring and time to revisit our “always in the know” resident produce authority, Robert Schueller, of Melissa’s World Variety Produce. When it comes to knowledge of the season’s best there is no better resource than Robert (also known as “The Prince of Produce.”) Robert will brief us on the newest produce items that are sure to be trendy this year. He’ll also discuss trends in fruits for 2023.

Already tending is Baby Baker Russet Potatoes. “Melissa’s Baby Baker Russet Potatoes are absolutely adorable and perfect for almost any meal. Casa Vega in Sherman Oaks under the watchful eye of 2nd generation restaurateur Christy Vega has reopened again for full-service dining. Celebrating its 65th Anniversary in 2021 there will be a year of festivities honoring the late founder, Ray Vega, who passed away earlier in the year. Also new is a changing series of $5.00 Margarita Mondays served from 4:30 p.m. to 7:00 p.m. every Monday. Christy Vega is our guest with a Los Lucadores Foo in hand.
 
Barbara Fairchild, a past inductee in the James Beard Foundation’s “Who’s Who in American Food & Beverage,” is the former, long-time Editor-in-Chief of Bon Appetit Magazine. She currently serves at the Chair of the Los Angeles Council for C-CAP (Careers through Culinary Arts Program and also is a member of the National Board of Directors for C-CAP. In normal times Barbara dines out frequently at a wide variety of restaurants. For the past pandemic year Barbara has stayed safely at home with restaurant dining on the far back burner. Barbara recently broke the fast with a celebratory birthday meal on the original patio of Spago Beverly Hills (with proper social distancing of the tables.) Barbara shares the memorable experience with us.

Mayfield Restaurant & Market is an ambitious, glowingly reviewed, modern California restaurant and market located in Downtown San Juan Capistrano in an extensively refurbished historic building. It’s on two levels and includes a comfortable covered patio. The menu has a distinctive Mediterranean and Levant flair and there is also an extensive cocktail list along with an ample selection of craft beers and natural wines. The operating days, and hours, have just been extended. All seating on the 2nd level patio and in the main dining room is properly socially distanced. Proprietor George Barker and Executive Chef Jayro Martinez join us.

Restaurants in Southern California are finally again allowed to operate for outside/patio dining and inside dining at reduced capacities with all the requisite COVID 19 safety precautions. We’ll “Ask the Chef.” As if restaurants didn’t have enough to contend with right now the insidious Dine & Dash” scheme to defraud restaurants is, unfortunately, a growing trend with a pair of awful variations. Barbara Fairchild, a past inductee in the James Beard Foundation’s “Who’s Who in American Food & Beverage,” is the former, long-time Editor-in-Chief of Bon Appetit Magazine. She currently serves at the Chair of the L.A. Council for C-CAP (Careers through Culinary Arts Program) and also is a member of the National Board of Directors for C-CAP.

In normal times Barbara dines out frequently at a wide variety of restaurants. For the past pandemic year Barbara has stayed safely at home with restaurant dining on the far back burner. Barbara recently broke the fast with a celebratory birthday meal on the original patio of Spago Beverly Hills (with proper social distancing of the tables.) Barbara shares the memorable experience with us.

She also provides us with an overview of C-CAP and the upcoming virtual culinary fundraising event (“A Taste of C-CAP – 2021 Virtual Annual Gala) they are presenting nationally on Thursday evening, April 29th with culinary celebrity Carla Hall as the honoree (and hosted by Marcus Samuelsson) and showcasing nationwide Celebrity Chefs. Giving options include a meal (delivered by Goldbelly) prepared by Chef Marcus Samuelsson or Chef Carla Hall to be finished in the home kitchen.

Originally launched in December 2020 as the second installment of the restaurant’s charity band tacos (following the initial launch with Fall Out Boy in October), the special collaboration was cut short when the restaurant temporarily closed that month in response to new COVID restrictions. Now that Casa Vega has reopened for dine-in and take-out, the taco has returned as a special combo plate (Foo Fighters Especial) created by Foo Fighters lead singer Dave Grohl—inspired by his passion for smoking meat—as well as a cocktail.” The libation is the Los Lucadores Foo with a shot of La Gritona resposado, fresh lime juice and Modelo Especial.

“The profits from each taco are donated to No Us Without You, a charity providing food security for undocumented back of house staff and their families created by Va’La Hospitality in the early weeks of the pandemic. As Casa Vega celebrates its 65th anniversary this year, expect more taco collabs and programming to be announced soon.”

Journalist Barbara Fairchild

Barbara Fairchild, a past inductee in the James Beard Foundation’s “Who’s Who in American Food & Beverage,” is the former, long-time Editor-in-Chief of Bon Appetit Magazine. She currently serves at the Chair of the L.A. Council for C-CAP (Careers through Culinary Arts Program) and also is a member of the National Board of Directors for C-CAP.

In normal times Barbara dines out frequently at a wide variety of restaurants. For the past pandemic year Barbara has stayed safely at home with restaurant dining on the far back burner. Barbara recently broke the fast with a celebratory birthday meal on the original patio of Spago Beverly Hills (with proper social distancing of the tables.) Barbara shares the memorable experience with us. She also provides us with an overview of C-CAP and the upcoming virtual culinary fundraising event they are presenting nationally on Thursday evening, April 29th with culinary celebrity Carla Hall as the honoree (and hosted by Marcus Samuelsson.)

George Barker of Mayfield Restaurant and Market

Mayfield Restaurant & Market is an ambitious, glowingly reviewed modern California restaurant and market located in Downtown San Juan Capistrano in an extensively refurbished historic building. It’s on two levels and includes a comfortable covered patio. The menu has a distinctive Mediterranean and Levant flair and there is also an extensive cocktail list along with an ample selection of craft beers and natural wines.

The operating days, and hours, have just been extended.

Friday through Saturday from 5:00 p.m. until late is their Supper Club menu. It’s served family-style. The menu categories (with choices in each area) include Rip and Dip, Small Plates, Large Plates and Desserts. Especially popular is the Za’atar Fried Chicken with hot honey, house ranch and house pickles.

An a la carte Dinner menu is offered Tuesday, Wednesday, Thursday and Sunday from 5:00 p.m. until late.

The daytime, a la carte menu is served Tuesday (newly added) to Sunday from 10:00 a.m. to 2:30 p.m. It offers menu categories of Dips, Breakfast Bits and Lunch Dishes. Dishes are designed to be shared.

The newly extended Happy Hour is Tuesdays (all day) and Wednesday & Thursday from 2:30 p.m. to 5:00 p.m.

The Mayfield Market is stocked with premium food products Chef Jayro makes in-house and items Mayfield uses and loves. They carry anything to do with eating and drinking well, including pantry items, natural wines, homeware, cookbooks and more.

Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef” segment where Chef Andrew responds to listeners thoughtful inquiries. Chef Andrew is regularly updating us on the impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the very survival of restaurants which is a genuine concern as recovery slowly starts to happen.

Restaurants in Southern California are finally again allowed to again operate for outside/patio dining and limited inside dining at reduced capacities with all the requisite COVID 19 safety precautions. We’ll “Ask the Chef.”

C-CAP Council L.A.’s Chairperson, Barbara Fairchild (former Editor-in-Chief of Bon Appetit Magazine,) joins us with all the salivating details of the Cocktail Reception and seated Dinner & Live Auction.

Born and raised in Columbia, Winemaker Bibiana Gonzalez Rave had little exposure to wine culture but, by the age of 14, she knew she would become a winemaker. Bibiana joins us to share her incredible journey. In 2015 she was named “Winemaker of the Year” by the San Francisco Chronicle.

For most it wasn’t so much the actual cooking that was a problem: it was the hour plus of organization, prepping and cleaning up. So, a teacher at heart, Carla Snyder wrote One Pan Two Plates: More than 70 complete weeknight meals for two, a guide to a delicious, healthy, hot meal for two in under 45 minutes with easy prep and one pan cleanup. Carla’s most recent release is One Pan Whole Family: More than 70 complete weeknight mealsThis is a book for families who would like to embrace a diet of wholesome meats, poultry, fish, vegetables and grains. Carla escapes the kitchen and is our guest.

Robert Biebrich is the Executive Chef for Legends here at Angel Stadium. Chef Robert is with us in-studio to highlight what’s new in Angel Stadium food and beverage for the 2019 season. He’s particularly proud of the Big A Burger which is a luxe burger creation as well as a new food outlet. Did we hear “Secret Menu”? Joining Chef Robert is his Executive Sous Chef Omar Almaraz and Executive Pastry Chef Tracy Felipe.

Chef Thomas Ortega (Playa Amor Mexican Cocina and Amor Y Tacos Mexican Kitchen & Cantina) recently launched his fourth restaurant in SoCal, and this time it’s his first fast-casual concept: AMORCITO Urban Taqueria. Credited as one of the innovators of the Modern Mexican and pocho cuisine food movements, Ortega’s goal is to bring more quality Modern Mexican/ pocho cuisine to the Southland at an affordable price point with his new interpretation of the urban taqueria in Long Beach at Hangar at Long Beach Exchange. We’ll meet Chef Thomas.

Winemaker Bibiana Gonzalez RaveBorn and raised in Columbia, acclaimed Winemaker Bibiana Gonzalez Rave had little exposure to wine culture but, by the age of 14, she knew she would become a winemaker.

“So I packed my bags and left for France. And in that moment I set the course of my life, a never-ending journey pursuing inspirational wines. During the summer of 2001, I immersed myself in all things wine, ultimately earning a BTS degree in Viticulture and Enology from Cognac followed by a degree in Enology from the University of Bordeaux, graduating with honors.”

‘Driven by the tenacity which first took me to France, I pruned vines during ice-cold winters, trimmed shoots in sweltering summers, and tended to the vines that cling to the sheer slopes of Côte-Rôtie—first at Domaine Stéphane Ogier, then at Domaine Clusel-Roch. At the famed estates of Château Haut-Brion & La Mission Haut-Brion, I completed research for my thesis. This hard work paid off – I had the privilege to work among other family-owned wine producers in Burgundy, Alsace, and Cognac. My passion for wine whisked me around the globe, sending me between California, South Africa, and France for several years before I decided to call California my home.”

“By the end of 2011, after many harvests perfecting the craft of making wine, I set upon my own adventure—a label known today as CATTLEYA WINES. Meanwhile, I became a viticulturist and winemaker consultant; focused on vineyard optimization to produce exceptional wines from Sonoma and Napa Valley.”

Real-deal Kansas City-style barbecue has arrived in Orange County with the launch of Ember BBQ in Santa Ana under the watchful direction of Chefs Derrick Foster and Kylie Gordon. Chef Derrick was born and raised in Kansas City. Ember BBQ is located within Native Son Alehouse. We’re getting fired up with Chef Derrick.

Our favorite, and always opinionated, “Diary of a Mad Hungry Woman” blogger, Anita Lau, has been dining in the Bay Area. One of her recent finds is Brown Sugar Kitchen. Think Buttermilk Fried Chicken & Cornmeal Waffle. The owner/chef Tanya Holland is a Cheftestant on the current season of Bravo’s “Top Chef.” Anita has the bite-by-bite report for us.

If you’re in the gourmet specialty food business Las Vegas is the land of opportunity. There are multiple high-end, fine-dining restaurants located on The Strip as well as in the affluent suburbs of Summerlin and Henderson. A great local success story is Chef Michael Stamm of MGP Specialty Food. “Specialty Products for the Gourmand.” He brings out the imported cheese and foie gras just for us.

The current thinking is that a lot of fine wines are released for sale way too early. What wines have aging potential and for how long? What are the suggested storing conditions? Our resident wine authority, Kyle Meyer of Santa Ana’s Wine Exchange, provides the need insight.

Our always in-the-know Co-Host, Chef Andrew Gruel, returns with his “Ask the Chef” series. Chilean Sea Bass (actually Antarctic toothfish or Patagonian toothfish) is back on restaurant menus. Only a few years ago diners were asked to not order it due to illegal overfishing. Is this desirable fish a good choice now?
