Lechon Porchetta by Susan ParkYou can aid the victims of Typhoon Haiyan in the Philippines and enjoy some great Filipino food. There is a huge Filipino community right here in Los Angeles County.

In addition to the high profile benefit for typhoon relief at The Church Key on the Sunset Strip on Sunday (which we’ll be talking about later in the show) there is a more populist fundraiser at Bamboo Bistro in Panorama City on Sunday, Dec. 15th from 4 to 8:00 p.m.

Pinoy food will be there in abundance expertly prepared by L.A. chefs including Chef Mayet Cristobal, the Executive Chef of the Getty Museum. She will be serving Beef Short Rib Adobo. The minimum donation is a modest $20 per adult and there will be live music.

Barbara FairchildThe long-time former editor of Bon Appetit Magazine, Barbara Fairchild, is back with us reporting from New York. Barbara is also an educator, best-selling cookbook author, food and travel journalist and much-in-demand speaker.

Barbara has recently had a couple of culinary excursions to the San Francisco Bay Area and will report on dining spots she enjoyed that merit your attention. She will also speak about an unusual evening she was part of honoring San Francisco’s STARS, a long-departed celebrity chef driven restaurant that, in it’s day, was the Spago of San Francisco. The proprietor/executive chef Jeremiah Tower (now a resident of Mexico) was in attendance.

Roberta Koz WilsonIt’s Holiday Time and our thoughts turn to incredible, fresh-baked, small batch, high-quality cookies as special gifts. That can only mean a chat with Roberta Wilson (jazz saxophonist great Dave Koz’s sister) the force behind Cookies for a Koz. Ten per cent of the proceeds are donated to the Starlight Children’s Foundation. Dave Koz is a Global Goodwill Ambassador for them.

Roberta’s and Dave’s late mother, Audrey, perfected the recipe for a great chocolate chip cookie and that’s the legacy of the company. The much-appreciated cookies were a door-opener all over town for the youthful Dave as his career was just beginning.

Carla HallFood fans know Chef Carla Hall as the “Hootie Hoo” lady and fan favorite from multiple seasons of Bravo’s “Top Chef.” She is now the co-host of ABC’s daytime lifetime series, “The Chew.” Last week “The Chew” celebrated their 500th episode and the show continues to gain in popularity. Carla also is the author of Cooking with Love: Comfort Food That Hugs You, newly available in paperback.

Carla is being honored by Zov Karamardian of Zov’s Bistro in Tustin at her Culinary Concert to benefit the James Beard Foundation on Sunday, February 9th. It’s a great holiday gift for that special foodie in your life.

That Sunday Carla and Zov will conduct a highly entertaining cooking class for the guests followed by a lavish lunch. Carla will be available to sign copies of her book and interact with the guests. It all starts at Noon.

Devon EspinosaDevon Espinosa (a C-CAP graduate) is one of the rising young stars among the master bartenders in the West. He created the cocktail program at ink. and Pour Vous and he’s the bar chef for the new The Church Key on the Sunset Strip. Some of his cocktails are canned for freshness.

Devon is also one of the organizers of a high-profile benefit at The Church Key on Sunday, December 8 from 5 to 9:00 p.m. for Typhoon Haiyan relief efforts. An impressive line-up of chefs and bartenders are coming together to raise the vitally needed funds. Look for celebrity chefs Eric Greenspan, Kris Morningstar, Ray Garcia and Steve Samson among many others.

Donald WressellThere really is no finer pastry chef in America than the pleasantly low-key Donald Wressell. He was the opening executive pastry chef at the Four Seasons Los Angeles at Beverly Hills. This is the luxury property where the majority of the out-of-town Academy Award nominees stay. Every year Chef Donald would create incredible individual chocolate show-pieces celebrating each of the “Best Picture” nominees. These elaborate pieces where then featured, via photography, in the Oscar coverage beamed across the globe.

Donald has competed in the most prestigious international pastry competitions and, most recently, has coached, too. He’s judged pastry chefs for competition shows on Food Network.

He’s currently the pastry chef for the proudly American chocolate company, Guittard Chocolate Co. Guittard is based in Burlingame but Chef Donald has a test kitchen and research facility here in Los Angeles. He also teaches classes for professional pastry chefs and candy makers.

In January he’ll create the sure to be dazzling Birthday Cake for The City of Beverly Hills’ 100th Anniversary. He created another cake spectacular for Beverly Hills’ Diamond Jubilee 25 years ago while he was at The Four Seasons.

Blossom Restaurant at the Aria in Las VegasA few weeks ago Brad A. Johnson, the James Beard Award-winning restaurant critic for the Orange County Register, was with us to talk about his first 4-Star review. It’s Blossom restaurant at Aria Resort in Las Vegas.

Brad is back with us to explain his criteria for a 4-Star restaurant review and also talk about the new crop of ultra-luxe Chinese restaurants on The Strip. It’s some of the most elegant Chinese fine-dining outside of China and designed for highly discriminating (and wealthy) Chinese guests!

Dean ThomasChef Dean Thomas is the Executive Chef de Cuisine for the Europa Village Winery in Temecula and also serves as the Innkeeper for the Inn at Europa Village (along with his wife, Nicole.) Chef Dean shares with us the specifics on an independent restaurant in Temecula as well as a winery restaurant that are both on his highly recommended list. He also talks about a Slow Food event he is hosting on December 12th featuring local artisan food products and cooking demonstrations.

Barbara FairchildBarbara was recently in the relatively unspoiled Sonoma County Wine Country. She shares some of her best dining experiences including the One-Star Michelin Farmhouse Inn & Restaurant in Forestville (housed in a real Farmhouse,) and the more casual Healdsburg Shed in Healdsburg.

She also reminds about the whereabouts of high profile chef, Douglas Keane. His acclaimed restaurant in Healdsburg, Cyrus, has closed. Fortunately he is still represented in Healdsburg (and Sonoma County) with the more casual Healdsburg Bar & Grill. It’s basic American comfort fare. In as tip of the hat to being located in wine country there is no corkage fee.

Jason’s observation is that because the diet is so restrictive you can drop some weight rather quickly. The severely limiting factor is that it gets monotonous rather fast.

Merrin Mae FuentebellaChef Merrin-Mae is a cheftestant on the first season of Food Network’s high pressure “Cutthroat Kitchen” hosted by Alton Brown. Her episode is entitled “Kiss My Grits” and was first aired on October 6th.

The level of competition was particularly intense and the sabotages were devilish. Chef Merrin-Mae made us proud in SoCal (she is a local) and she won the episode. One of the other cheftestants was a “Chopped” winner and was eliminated after the first round!

She currently works at Alma with executive chef Ari Taymor. When she did the show she was part of the culinary team at Sotto.

anita-lauAnita Lau of the Mad Hungry Woman blog is with us with a San Diego dining discovery. Anita was a nominee for a Golden Foodie award in Journalism this year.

Anita’s find is Ristorante Kaz. This is an intriguing Japanese Italian fusion cuisine spot. Anita’s favorite bite was an angel hair pasta dish with creamy sea urchin with spinach and salmon roe.

Elizabeth WhittFeeling ambitious in the kitchen…? Time to get a running start on holiday cooking and entertaining. Our superstar chef instructor, Elizabeth Whitt, of www.ChefElizabeth.com is with us again to get those holiday preparations pointed in the right direction with relative ease.

Pumpkin is in this year. Chef Elizabeth has both a savory and sweet recipe to add to your holiday collection. First up is an incredible Pumpkin Risotto with a fresh baking pumpkin or butternut squash. For dessert there is a not too sweet Pumpkin Cheesecake. Yum….!

When Chef Jet has his own culinary questions he turns Le Cordon Bleu, Paris-trained to Chef Elizabeth. She has a series of popular holiday classes coming up that always sell out early. On November 7th she has “Make-Ahead Holiday Side Dishes” from 11:00 a.m. to 1:30 p.m. and “Holiday Pies and Desserts” the same day from 6:30 p.m. to 9:00 p.m.

Then on December 5th its her most popular class, “Appetizers and Hors D’oeuvres,” from 6:30 p.m. to 9:00 p.m.

Josiah CitrinFifteen years ago when fine-dining restaurants located outside of the protective umbrella of luxury hotels were at a low ebb in Los Angeles Chef Josiah Citrin sold his stake in a very popular Santa Monica dinner house and went out on his own to open a ultra-luxe, destination, freestanding, fine-dining, contemporary French restaurant with California accents. That was the start of Melisse. All these years later it still impresses.

Josiah is a new member of the Bocuse d’Or USA Foundation’s prestigious Culinary Council. On November 10th Josiah and five other culinary superstars will join forces to cook an extraordinary six course repast at Melisse in Santa Monica to raise funds for The Foundation. Easter and Passover greetings to all.

It’s a tasty buffet this week. We’re going from big juicy burgers and craft beer to dining with one of Chicago’s best celebrity chefs…From there it’s a conversation with our own, delightful, local “Top Chef” cheftestant. Finally it’s a trip to Venice and Rome for a sampling of their culinary delights!

Scott Slater of Slater's 50/50We’re all on the quest for a great burger. So was Scott Slater when he teamed up with college buddy and chef Brad Lyons to launch the first Slater’s 50/50 in Anaheim Hills in 2009. Bacon is the key…

An impressive selection of craft beer (always changing) on tap is also a popular attraction. Since the success of Anaheim Hills busy locations have been added in Huntington Beach, San Diego, Pasadena and, most recently, Lake Forest.

On April 6th in Lake Forest Slater’s 50/50 will present the 1st Backyard Brewfest. It’s an outdoor tasting event with 15 different breweries and a sampling of Slater’s 50/50 most popular menu items. It’s a benefit for the Pediatric Children’s Research Foundation.

Graham ElliotCelebrity Chef Graham Elliot hails from Chicagoland where he has graham elliott, a well-known, Two-Star Michelin ranked restaurant. He’s perhaps more familiar to Angelenos as the sympathetic judge on Fox TV’s “MasterChef” series now in production on their 4th season.

On April 8th and 9th Chef Graham will be at W. Third Street’s Son of a Gun in Los Angeles cooking a 5-course tasting menu paired with regional wines selected by graham elliott sommelier, Jamie Kluz. Joining Chef Elliott in the kitchen will be Sous Chef John Slack and Director of Operations/Corporate Chef Merlin Verrier.

Brooke Williamson of Hudson House and TripelBrooke Williamson, the youthful co-owner of Hudson House in Redondo Beach and The Tripel in Playa del Rey represented Southern California masterfully in the just-concluded Season 10 of Bravo’s “Top Chef”. Brooke will talk to us about the two-part Season Finale which was shot in front of a live audience!

Chef Brooke has just been added to “Top Chef: The Cruise” aboard the Celebrity Constellation sailing from Miami with stops in Key West and Cozumel before returning to Miami. Those dates are April 11th to 15th.

Barbara FairchildOur International Travel Correspondent, Barbara Fairchild (former editor of Bon Appetit magazine and current hospitality consultant, teacher, speaker, and journalist), has just returned from Venice and Rome.

Laguna Beach UncorkedThe 2nd Annual Laguna Beach Uncorked is set for Saturday, March 9th at the Laguna Beach Festival of the Arts grounds from 12:30 p.m. to 3:30 p.m. It’s an indulgent afternoon of tastings from 20 prominent Laguna Beach restaurants and 30 top wineries from around the world. Kids Cook is the first program in the new series, Making Memories for Children from the Newport Beach Public Library Foundation.

It’s a three-part culinary adventure under the expert direction of Jim Colombo, General Manager of Five Crowns in Corona del Mar. Jim is also an accomplished chef by training.

Making Memories for Children from the Newport Beach Library FoundationThe first session is on Sunday, March 10th in the garden at Five Crowns. It’s an introduction to a variety of fresh herbs, fruits and vegetables, followed by a hands-on lesson in preparing simple, delicious treats.

The program continues on March 17th and 24th.
