Barbara FairchildIt’s a pleasure to welcome food journalist Barbara Fairchild back to the show. She is an editor, writer, speaker and consultant. She was the long-time Editor of Bon Appetit Magazine before the publication relocated to New York.

Her newest position is Restaurant & Travel Editor for grapecollective.com.

Based on her recent travels Barbara has restaurant finds for us from both London and Paris.

Bistro Bellet in the 10th Arrondissement is Barbara’s pick for Paris. The Chef is Francois Chenel (ex-Chez Michel.) It’s an emerging area for better restaurants. It’s two levels of prix fixe menus with lots of choices within each category. Price is highly reasonable for the quality of the cuisine.

For London its chef, restaurateur, and cookbook author Yotam Ottolenghi’s Nopi. It’s tasty Middle-Eastern influenced fare with great atmosphere. It’s all a la carte. It’s expensive but no worse on the wallet than the best in Los Angeles and Orange Counties…

Orange County Restaurant WeekThe OC’s most anticipated, and delicious, dining event, Orange County Restaurant Week, returns from February 23rd to March 1st. Diners will have the opportunity to enjoy the wide spectrum of dining options in the County at special prices for prix-fixe menus for both lunch and dinner. Over 100 restaurants are part of Orange County Restaurant Week.

The iconic Five Crowns, a Corona del Mar landmark, is one of the participating restaurants. General Manager Jim Colombo (also a chef by background and training) joins us to preview his special menu. The prime rib is still incredible but there are a lot more worthy choices, too.

Also on their OC Restaurant Week menu are pan-roasted barramundi and house-made pappardelle.

Show 52, December 14, 2013: Leo Fenn, Director of Operations, Selanne Steak Tavern, Laguna Beach

Sellanne Steak TavernIf you’re a hockey fan then you know Teemu Selanne, The Anaheim Ducks forward and ice hockey icon. Sadly for his legion of fans this is his last season as a pro.

Teemu loves fine dining and it was only a matter of time before he opened a destination restaurant (with his business partner Kevin Pratt) in Orange County where he resides. The result is the newly launched Selanne Steak Tavern on the site of the former French 75, a historic restaurant location in Laguna Beach. It’s a sophisticated steakhouse, and lots more, with a real chef, dedicated pastry chef (ask about the monkey bread dessert,) and a top-flight wine program orchestrated by Leo Fenn, the Director of Operations.

Leo is a recognized authority on rare and cult wines but makes it all approachable for the guest. Leo is with us to provide all the tempting 411 on Selanne Steak Tavern.

When Teemu Selanne is not on the road he will be very visible at the restaurant.

The non-profit Foundation celebrates American gastronomy and funds an ambitious scholarship program for young culinarians, among many other high-profile activities. Previously Zov has honored culinary luminaries including Julia Child, Emeril Lagasse, Anne Burrell and Michael Symon at Culinary Concerts at the original Zov’s Bistro over the years to raise money for the Foundation.

Carla HallOn Sunday, February 9th Zov is honoring chef, cookbook author, and TV personality, Carla Hall, in an afternoon Culinary Concert. Carla is the co-host of ABC’s afternoon lifestyle series, “The Chew,” which recently celebrated its 500th episode. You also remember her as the “Fan Favorite” (“Hootie Hoo”) from “Bravo’sTop Chef.”

Carla will be performing a cooking demo from her book, Cooking with Love: Comfort Food That Hugs You, newly released in paperback. Zov will also be doing a cooking demo from one of her two books.

Show 45, October 26, 2013: Mary Sue Milliken, Founder and Co-Owner of Border Grill Las Vegas

Mary Sue Milliken of Border GrillChef, restaurateur, cookbook author and food television star, Mary Sue Milliken, really needs no introduction to the show. Her “Two Hot Tamales” series for Food Network which she did with her business partner, Susan Feniger, was one of the early hit series for the network. More recently she competed on Bravo’s “Top Chef Masters.”

One of the most successful Border Grills is located in Las Vegas at Mandalay Bay Hotel on The Strip. It opened with the Hotel. There are strong rumors about a new Border Grill opening next year further north on The Strip.

Mary Sue and Susan were on the Chef on Stage East at 1:45 p.m. on Saturday at Life is Beautiful.

The familiar Border Grill food truck was one of the attractions in the Heineken Art of Beer Draught Pavilion.

Chef Duskie Estes and Salumist John Stewart of Zazu Kitchen and FarmDuskie was actually a vegetarian for 23 years while she was a working chef and butcher. She is very concerned about the welfare of the animals her family raises for the restaurant. As she likes to artfully put it, “They have a very happy life except for one day.”

They are very proud of the Black Pig Meat Co. bacon sourced from two varieties of heritage pigs raised on their farm.

The Process:
“Most bacons you find on the market are wet cured injected fast and smoky from liquid smoke in a process that takes less than a day. We slow down and make sure it tastes good and the animals are treated right. Our Bacon is dry cured with brown sugar for up to 21 days and then finished with applewood smoking for about 12 hours. We are focused on quality not quantity.”

“The result is a bacon that is perfectly balanced in salt, sweet, and smoke; complex from the brown sugar and real wood smoke; and one where you can taste the quality of the pork.”

Orange International Street FairToday it’s the last hurrah for the Summer. We broadcasting live from the Orange International Street Fair in Orange. This is a massive community event attracting up to 400,000 people to Old Towne Orange over the two and-one half day festival. The Fair continues until Sunday night.

All of the top quality ethnic street food available is authentically prepared by area non-profits. You have an international melting pot of flavors ranging from Australian to Swiss.

Scott Brandon of LinX DogsScott Brandon, the Chef/Proprietor of LinX Artisan Sausages at 238 W. Chapman Ave., is with us. Last year Chef Scott operated LinX out of a trailer at his location during the Fair because he hadn’t opened yet. On his menu are incredible artisan sausages.

Hand-cut Belgian fries are also top dog here. They are twice-fried and really good. They come with a variety of flavorful dipping sauces all prepared in-house.

Marco Zapien of Zapiens Salsa Grill and TaqueriaChef Marco Zapien is the owner/chef of Zapien’s Salsa Grill and Taqueria in Pico Rivera. It’s proudly family-owned and a locals’ favorite since 1994.

The fare represents the various regions of Mexico. They are known for lengua (tongue) and enchiladas en mole. The corn tortillas for the chips and salsa are made-in house.

On Saturday, September 7th Zapien’s is hosting their 2nd Annual Hatch Chile Roasting and brunch for charity. Hatch Chiles will be sold by the case, roasted or fresh, and Hatch Chile food and drink specials will be available.

Alan Jackson of LemonadeChef Alan Jackson has an extensive background in fine dining and high profile event catering. In 2008 he opened his first Lemonade in West Hollywood. Downtown Los Angeles followed within days. He characterizes it as a modern cafeteria serving Southern California comfort food.

The concept has caught on quickly. The 11th location, the first in Orange County, will launch next week in Fashion Island in Newport Beach. Fashion Island will have a wood burning oven for roasting vegetables and flatbreads and a rotisserie for preparing whole roast rib-eye, leg of lamb and chicken. It will be a destination for dinner.

It seems appropriate to be talking about breakfast this morning. We’re chronicling some recent breakfast dining experiences from Orange County to Las Vegas.

CHAYA Brasserie Beverly HillsCHAYA Brasserie Beverly Hills (located adjacent to Cedars-Sinai Medical Center) is a pioneer in brining innovative Japanese cuisine served in a stylish environment to greater Los Angeles. Amazingly they are celebrating their 30th anniversary in Los Angeles this year. Their celebration kicked-off last Sunday with a “Summer Festival” tasting and celebratory activities continue through October.

Chaya owner Yuta Tsunoda and long-time CHAYA Executive Corporate Chef Shigefumi Tachibe are with us to give us the rich history.

The culinary roots of the founding Tsunoda Family stretch back 400 years when the first CHAYA opened in Japan. It is still in operation today as a restaurant.

CHAYA has four popular restaurants in California including the Flagship in Beverly Hills, Venice, Downtown Los Angeles, and San Francisco. Each location embraces the distinct neighborhood that surrounds it. For instance, CHAYA Brasserie San Francisco, located on the Embarcadero, features sweeping views of the Bay Bridge.

CHAYA also operates two Los Angeles-based locations of M Café, a casual macrobiotic eatery.

Kedric Francis of Coast Magazine and the Orange County Register MagazineMan about Orange County, the always debonair Kedric Francis, is with us in-studio. Kedric is the distinguished Executive Editor of the monthly Coast Orange County Magazine. Kedric is also the co-founder and Executive Editor of the OC Register Magazine.

Kedric will preview a couple of unusual staycation ideas for the OC as well as an exciting food & wine festival set for the Central Coast in late September.

It’s Margarita time! Food journalist and Mexican cuisine-authority, Nancy Zaslavsky, is with us to share the “World’s Best Margaritas Recipe.”

Zaslavsky is an author, cooking teacher, and culinary tour leader specializing in the foods of Mexico. She penned the James Beard Award-nominated, A Cook’s Tour of Mexico.

Daniel Mattern of Cooks CountyRegulars to the show know that Chef Jet is a huge fan of Cook’s County in Los Angeles and dines there often. Starting this month (every Tuesday) it’s their inaugural California Craft Beer and Food Festival.

Chef/Proprietor Daniel Mattern has invited seven of his favorite breweries to come pour their beer selection at the “California Craft Beer and Food Festival” at Cook’s County. The series of beer-centric dinners will take place on Tuesday evenings from August 6th to September 24th. Menus will be tailored around the different craft beers and many dishes will be prepared using beer as a significant ingredient. Each evening’s menu consists of five courses, and all courses, including dessert, will be thoughtfully paired with beer.

Las Vegas has never seen anything quite like this before and it’s a big one !

life-is-beautifulIt’s the Life is Beautiful festival set for many blocks of Downtown Las Vegas from October 25th through Sunday, October 27th. It’s an impressive line-up of world class music, food, art and learning. Tickets are on sale.

With more than 60 prominent chefs and restaurants, 24 wineries and 24 breweries participating in the culinary part of the festival alone, L.I.B presents the attendees with a full-scale food festival experience.

“The food experiences of L.I.B. were carefully designed to be interactive, innovative and unexpected,” says Jolene Mannina, Head of Culinary Arts for the festival. “Working with the vision of our Culinary Advisory Board of 12 world-renowned chefs, we’ve created an approach that we feel will set us apart from other food festivals, giving both our patrons and chefs a chance to enjoy something new, fresh and, of course, delicious.”

Kevin WestCanning, pickling, and preserving has really taken off in local home kitchens. Food journalist Kevin West, a certified food preserver, has just launched Saving the Season: A cook’s guide to home canning, pickling, and preserving from Knopf. In addition to the expected recipes West has mini profiles of his favorite farmers and farm adventures as part of the book.

Kevin is at The Beverly Hills Farmers Market on Sunday, August 4th as part of Pickle Fest. He’ll be signing the book there from 9 to 10:45 a.m.

The block-wide ethnic food court at the historic Grand Central Market (dating back to 1896) in Downtown Los Angeles is undergoing a renaissance. Kevin West is consulting on that effort to bring exciting, one-of-a-kind distinctive food businesses to the Market. It’s already happening…
