Jonathan WaxmanHe’s affectionately known as the Obi-Wan Kenobi of chefs because of his practical, no-nonsense approach to cooking and we’re talking about the Manhattan-based Jonathan Waxman of Barbuto in the West Village. You’ve seen him competing on Bravo’s “Top Chef Masters” and Food Network’s “Iron Chef America.” His most recent cookbook is Italian, My Way: More Than 150 Simple and Inspired Recipes That Breathe New Life into Italian Classics by Jonathan Waxman and Tom Colicchio (Apr 5, 2011.) The roasted chicken recipe as served at Barbuto is a classic.

We have great affection for him in California for his early years with Alice Waters at Chez Panisse and as a recognized pioneer of California cuisine.

He’s in Las Vegas for “Life is Beautiful” Festival and was honored Friday night at the kick-off dinner, “Grill and Guitars,” with a menu prepared by celebrity chefs including Aaron Sanchez, Michael Symon and Nancy Silverton.

From October 16th to 25th Chef Greg has assembled a group of distinguished OC chefs to raise money for children who suffer from Severe Acute Malnutrition (SAM) worldwide. It’s all under the playful banner of “PB&J for Good.”

Participating chefs will put their creative spin on the traditional PB&J as a special menu offering. Each will donate a portion of the proceeds from the sale of every PB&J dish to benefit StopSAM.org, a fundraising arm for Severe Acute Malnutrition.

Life is Beautiful FestivalLas Vegas, a spot known for excess on a grand scale, has never seen anything quite like this before and it’s a really big one!

It’s the Life is Beautiful festival set for some 18 blocks of Downtown Las Vegas (including the grounds of a large casino hotel) from October 25th through Sunday, October 27th. It’s an impressive line-up of world class music, food, art and learning. Tickets are already on sale.

With more than 60 prominent chefs and restaurants, 24 wineries and 24 breweries participating in the culinary part of the festival alone, L.I.B presents the attendees with a full-scale food festival experience. The elite Culinary Advisory Board is headed by Chef Bruce Bromberg of the Blue Ribbon restaurants in New York. (His Las Vegas flagship is Blue Ribbon Sushi Bar & Grill at The Cosmopolitan.)

“The food experiences of L.I.B. were carefully designed to be interactive, innovative and unexpected,” says Jolene Mannina, Head of Culinary Arts for the festival. “Working with the vision of our Culinary Advisory Board of 12 world-renowned chefs, we’ve created an approach that we feel will set us apart from other food festivals, giving both our patrons and chefs a chance to enjoy something new, fresh and, of course, delicious.”

Jolene is a local celebrity in her own right in the Las Vegas culinary community. Food critic and former ABC Radio correspondent Al Mancini (creator of the popular Eating Las Vegas guidebook series) calls her the “Queen of The Scene”. She originated a much-talked-about late night chefs’ completion series, the Back of the House Brawl.

You’ve probably seen the full page ads in LA Weekly emphasizing the incredible music lineup featuring bands like Vegas’ own the Killers along with Kings of Leon. But there’s also an amazing lineup of celebrity chefs as well! Not just me but pretty much everyone associated with the restaurant scene in America. As for as I’m concerned, the food is the main event and the music? That’s kind of dessert. Festival announces the lineup of culinary programming and experiences for the inaugural festival taking place Saturday, October 26th and Sunday, October 27th, 2013, with a kickoff event the evening of Friday, October 25th . With more than 60 chefs and restaurants, 24 wineries and 24 breweries participating in the culinary part of the festival alone, L.I.B. presents its attendees with a full-scale food festival experience and expects to draw tens of thousands of people to Downtown Las Vegas. Show 32, June 22, 2013: On the Road with Chef Jet and Producer Andy

Chef Jet has really rolled up the airline miles this works. Looks like 3,000 plus.

Chef jet Tila and Alton BrownHe was a key part of the annual college and university dining conference at UMass in Amherst, Massachusetts this week. This brings together the management teams and chefs from prominent universities across the country to discuss trends. Harvard and Cornell University were there for starters. Jet has been a conference participant for a long time.

University students are the restaurant diners of tomorrow and are increasing in sophistication about food and cooking. Colleges and Universities serve from 1,000 to 20,000 or more meals a day when school is in session. Pizza and burgers on the menu don’t cut it anymore!

Jet brought Food Network’s Chef Robert Irvine to the gathering. He was part of a “Chopped”-style competition there that Jet was the host for. It was 16 prominent chefs in four rounds of competition.

When Jet got back to Los Angeles he was a solo celebrity chef judge for an episode of a smart, new Food Network competition series hosted by Alton Brown that is currently in production. More to come on this…

A Taste of Greece in IrvineProducer Andy reported on “A Taste of Greece” which is this weekend. It’s the 35th Annual Greek Festival produced by St. Paul’s Greek Orthodox Church on Alton Parkway in Irvine. It’s Friday evening, Saturday, and Sunday. Over 11,000 guests are expected this year. Chef Cathy Palvos of the popular Lucca (Italian-fare) in Irvine is very involved in the Festival.

It’s three days of delicious Greek food, Greek wine and beer, cooking demonstrations, Greek folk dancing lesions, games, and carnival rides. You’ll have a hard time finding a better variety of exquisite Greek pastries baked by the church’s capable philanthropic group. Adult admission is a modest $3.

Nancy is an author, serious home cook, cooking instructor and tour leader with a love of the culture, cuisine, and people of Mexico. She also is an active board member of the Culinary Historians of Southern California.

Her highly recommended culinary tours to various regions of Mexico are always small groups including chefs, food professionals and food-and-fun loving people in search of dynamic tastes in stimulating environments.

Nancy just returned from guiding a food tour of Morelia and Patzcuaro in Michoacan.
On June 1st is her popular L.A. Mexican Market Tour & Lunch”. It’s a whirlwind tour of Nancy’s favorite wholesale Mexican food markets in downtown Los Angeles. Also on the tour is a terrific bakery stocked with pan dulce and their famous tamales.

The final stop on the excursion is lunch at La Casita Mexicana. Nancy was a judge there for their challenge on “Bobby Flay’s Throwdown” seen on Food Network
