Forks: A Quest For Culture, Cuisine And Connections by Allan KarlOne of the most captivating stories in the coffee-table book is how Allan finally got into Syria. You can only get a visa at the Syrian Embassy in Washington, D.C., and that was what he was told at the border.

The Syrian dish he features in the book is Fattoush. This is an incredible crisp salad with fresh herbs and pita strips. He enjoyed this specialty with the proprietor of a dusty, decrepit gas station in the middle of nowhere who spoke English.

Forks: A Quest For Culture, Cuisine and Connections is an oversized, coffee-table art-book with more than 700 photos, stories of adventure and survival and global local food.”

For two years Allan struggled to find a publisher willing to take on this unusual and ambitious book project. They couldn’t pigeonhole it…Finally he turned to Kickstarter to raise the needed initial funds to self publish. He raised almost twice his initial goal for a total of $44,994

Charcuterie and Cured Meats at Bestia“Chef Ori maintains an aggressive house-cured meats program with over 60 different forms of charcuterie for Bestia. Bestia means “Beast” in Italian. He is also responsible for raising his own yeast culture which he uses to bake Bestia’s sourdough Pain au Levain, used as toast ubiquitously on the menu, as well as for the pizza dough, which rises and falls over a 24-hour cycle prior to being composed as a Napolitana pizza. It’s then baked in the Acunto (wood burning) oven at 900 degrees.”

‘On the dolci side of the menu, Chef Genevieve is preparing a plethora of desserts from scratch using the finest raw ingredients such as acquarello rice for her al dente rice pudding served with perfectly ripened in-season fruit or her earthy, nutty, chestnut flour zeppole served with house-made coffee gelato and cream. In addition Chef Genevieve was partially responsible for the design of Bestia. She re-furbished oil drum spouts converting them into lighting fixtures.”

Antonia Lofaso of Black Market Liquor Bar and Scopa Italian RootsFor a chef with as much media exposure as she has received Antonia Lofaso is refreshingly low-key. Her name is not even on the menu for the two successful restaurants in Los Angeles that she is both executive chef & partner of. The popular restaurants are Black Market Liquor Bar in Studio City and, the newest, Scopa Italian Roots in Marina del Rey, her loving homage to Italian-American red sauce cooking.

You first met Chef Antonia on Bravo’s “Top Chef” Season 4 set in Chicago. Two years later she was invited back to compete on “Top Chef All-Stars” where she battled to the finals.

Antonia currently serves as one of the regular judges on Food Network’s hit series, “Cutthroat Kitchen” hosted by Alton Brown. Season 2 is now airing on Sunday nights.

Chef Antonia is a graduate of the French Culinary Institute in New York and cooked at Spago. Her first executive chef post was at SBE’s Foxtail in West Hollywood.

Scopa, located next door to Roy Choi’s Sunny Spot, is her latest venture.

There is a huge antipasti bar where all the cheeses and salumi are cut and plated to order right in front of the guests. The Italian Hero (coppa, prosciutto, salami, provolone, olive oil, and vinegar) is very popular.

There is also an oyster bar.

The varied menu also offers salads, pasta, large plate mains, and seasonal sides including polenta. The Pappardelle with pork shank, stracciatella, and arugula is a standout. The flavorful T-Bone is a meat-lovers’ dream.

Jo Jo DoyleThe new executive chef supervising everything from hot dogs to the gourmet food going into the luxury boxes is Jo-Jo Doyle. You’ll meet him on Saturday’s show. He was most recently overseeing the entire operation at Churchill Downs home of the famous Kentucky Derby.

Chef Doyle is now responsible for managing all food and beverage offerings at Honda Center including the spectacular new Grand Terrace (a 15,000 square foot indoor/outdoor entertainment space,) Jack Daniel’s Old No. 7 Club restaurant and bar, concessions and catering.

LA Sriracha FestivalWith the growing popularity of Sriracha in Southern California as a condiment you just knew it had to happen. On Sunday, October 27th from 3 to 6:00 p.m. in Downtown Los Angeles the curtain will go up on the first annual L.A. Sriracha Festival.

The chef driven food festival is organized by Food GPS’s Josh Lurie and food journalist Randy Clemens. Randy has written two well-received books on Sriracha. His latest is The Veggie-Lovers Sriracha Cookbook.

Josh and Randy join us to take the green cap off the familiar Sriracha bottle and drizzle out all the spicy details.

Multiple stations will allow guests to savor a variety of Sriracha themed dishes, including desserts. Local craft beer, cocktails and sodas will be there to help temper the heat.

The impressive chefs’ line-up includes Neal Fraser, Eric Greenspan, and Ernesto Uchimura of Plan Check Kitchen.

Andy Ricker of Pok PokSurprisingly, Chef Andy Ricker is not from Thailand but as an accomplished restaurateur he’s found great success recreating the flavors of Northern Thailand which he really fell in love with during an extensive visit in 1992. He started with a modest restaurant in Portland, Oregon and his growing empire now extends to Brooklyn.

The original Pok Pok in Portland because a must-stop destination for visiting foodies after being profiled on Food Network’s “Diners Drive-ins and Dives.” In 2011 Andy was bestowed the honor of “Best Chef – Northwest” from The James Beard Foundation.

Just out from Ten Speed Press is Pok Pok: Food and Stories from the Streets, Homes, and Roadside Restaurants of Thailand. Particularly helpful are the writings on what differentiates the various regions of Thai cuisine. The book also contains suggestions for complete menus using the various recipes.

“Pok Pok” is a Thai reference to the sound heard from a mortar and pestle when you are grinding food in it.

Chef Ricker shares his signature recipe for chicken wings which is more Vietnamese than Thai. He also talks about the famed papaya salad and provides tips on how to properly prepare it. In Thailand there are some hundred variations of this popular dish.

Chef Jet Tila host of the SoCal Restaurant ShowWhen Jet’s wife, Allison, is out socially the question she hears the most is, “What’s it like being married to a prominent chef ?” The expectation is that it’s either chef-prepared gourmet meals nightly or dining out at the very best restaurants. Not exactly…
