Robert SulatyckyTime to revisit the progress of Team USA competing in the Bocuse d’Or International Culinary Competition at the end of the month (January 29 & 30) in Lyon, France. Team USA is defending “The Gold” from the 2017 competition. Chef Robert Sulatycky is the Head Coach for Team USA 2019. Team USA 2019’s Head Chef is Matthew Kirkley and his Commis is Mimi Chen.

Chef Robert Sulatycky has a long history with the Bocuse d’Or. Representing Canada in 1999, he placed fourth and was awarded the “Prix Viande,” or best meat prize. He has since mentored both Canadian and American chef candidates and was honored to be a member of the international jury for the 2007 and 2013 editions of the competition. He also served as Assistant Coach for Bocuse d’Or Team USA 2017, who won the first-ever gold medal for the United States.

Based on the draw Team USA will compete on the first day, January 29th.

Paul BartolottaOur culinary Team USA 2019 was in Mexico City on April 12th & 13th competing in The Bocuse d’Or America’s selection semi-finals leading up to the Bocuse d’Or International Culinary Competition in Lyon in late January of 2019. Five of the 11 countries represented won the right to compete in the Lyon finals.

Team USA (Chef Matthew Kirkley and Commis Mimi Chen) prepared Chilean Salmon Roulade and Suckling Pig Presented Three Ways.

“The Bocuse d’Or is about promoting local and traditional gastronomy, but also revealing young Chefs from all countries in the world. The candidates invest tremendous time and energy in the preparation for the contest, in the national and continental selections, to promote their culinary legacy and win their ticket to go to the Finale that can change their lives and careers.”

Show 260, February 10, 2018: Young Yun, Executive Director, ment’or BKB Foundation

Young YunThe late Chef Paul Bocuse (Lyon, France) had a profound impact on creating and inspiring the ment’or BKB Foundation. Always a friend of the USA, he fortunately lived long enough to see his dream of Team USA winning the Gold at the 2017 Bocuse d’Or International Culinary Competition. He even flies the American Flag at his flagship restaurant in Lyon. Young remembers the celebrated “Chef Paul.”

The ment’or BKB Foundation oversees, and funds, the USA’s participation in the biannual Bocuse d’Or International Culinary Competition. Inspired by Team USA’s unprecedented Gold Statue at the Bocuse last year ment’or is now funding, and building, a dedicated training kitchen for Bocuse d’Or Team USA located at the Culinary Institute of America at Copia’s campus in Napa. Scheduled to open in Spring 2018 ment’or’s hope is that this kitchen will become a permanent home for the Team.

The targeted fundraising goal is to raise $250,000.

The new space will replicate the kitchen at the Bocuse d’Or, so that Team USA can practice to compete as they would on the actual competition day. Most importantly, the kitchen will be outfitted with the necessary equipment to ensure that Team USA can continue to succeed on this international culinary stage. In addition, guests will be able to visit the training space to see the physical platters, tools. Photos, and memorabilia encompassing Team USA’s storied history and growing legacy.

Show 109, February 7, 2015: Chef Philip Tessier, Team USA & The French Laundry Continues…

24 teams of the most gifted culinary minds from across the world competed in the Bocuse d’Or Culinary Competition and Team USA (guided by the ment’or BKB Foundation) was awarded the Silver Medal (second place) for their artful and spectacular meat platter and fish plate. Team Norway was the first-place winner. This is a giant first for Team USA. Their previous top finish was sixth. Congratulations to Team USA on a stunning achievement.

Barrel-Oak Roasted Guinea Hen from Team USA at the Bocuse D'orTeam USA presented “the acclaimed panel of judges with a stunning meat platter of Barrel-Oak Roasted Guinea Hen with sausage of guinea leg confit, white corn mousse, and black winter truffle, “Garden of Sweet Peas” with French Laundry garden blossoms and herbs, sugar snap peas, and black trumpet mushroom panade, “Beehive” with boudin of smoked guinea liver, grapevine honey, pistachio “Pain des Genes, ” wild fennel buds, and topaz wine glaze, Black Truffle Consomme with ragout of gizzard and heart “confit,” steamed custard, and flowering cress, White Corn “Nest” with buttered corn pudding, crisped corn silk, and “petit” popcorn, and Preserved Chanterelles with salad of frisee and garden blossoms, pickled huckleberry, and “foie gras” jus.”

“The gorgeous fish plate showcased Brioche-Crusted Brown Trout Pave with American caviar, tartelette of crisped skin, garden dill, celery branch “Farci,” celery root puree, compressed apples, brown butter emulsion, sand smoked mushroom consomme. Both the meat platter and fish plate were designed by the lauded  Martin Kastner of Chicago.”

The non-profit ment’or BKB Foundation created by Jerome Bocuse, Daniel Boulud and Thomas Keller supports Team USA with funding and coaching support. It also aims to inspire excellence in young culinary professionals and to preserve the traditions and quality of classic cuisine in America. Donations are graciously accepted.

db brasserie in Las Vegasdb Brasserie boasts a wine list of approximately 300 international selections, curated by Boulud’s group Wine Director Daniel Johnnes and db Brasserie Sommelier Devin Zendel.

The list pays tribute to the glories of American Wine, which are presented in three categories : PIONEERS ‘the first to prove the quality of American terroir’; NEW FRONTIER ‘young wineries inspired by their old-world counterparts’; and CLASSICS ‘next generation American winemaking, classics in their own right’.

The spacious restaurant seats 280 diners, including two private dining rooms, as well as a casual bar and lounge.

Located at the start of Restaurant Row (in the former Valentino Las Vegas space,) just off the casino floor, db Brasserie is accessible from both The Venetian and Palazzo.

Later in the Summer Chef Boulud will be opening a new restaurant (DBGB) in Washington, DC. It’s a return, of sorts, for him to the Nation’s Capital where he started in America.

Chef Boulud is The Chairman of Bocuse d’Or USA (Thomas Keller is the President) supporting Team USA in the prestigious international culinary competition which is the Bocuse d’Or held in Lyon every other year. Daniel explains why this is very important to the American culinary community. The next competition in Lyon is set for January 27 & 28th in 2015.

Celebrity Cruises is launching their first-ever land-based wine and food festival on May 31st in the Orange County Great Park. Celebrity’s executive chef is with us with the full details. It’s a benefit for charity.

Chef Daniel Boulud has returned to Las Vegas with the opening of db Brasserie at The Venetian Hotel on Las Vegas fabled Strip. His chef de cuisine there is David Middleton. Chef Boulud joins us to share what’s on the menu.

The Hotel Del Coronado is California’s premier, classic beachfront hotel dating back to 1888. It represents luxury from another age. Last week we met the chef at their casual, seafood-centric, ocean-view restaurant, Sheerwater. This week it’s a conversation with Chef John Shelton, the executive chef overseeing all of Hotel del Coronado.

Restaurant impresario Bill Chait is responsible for some of the most successful and high profile restaurant openings in L.A. His most recent effort is Republique with acclaimed Chef Walter Manzke. Next up is Redbird at the old Vibiana cathedral in Downtown and the eagerly anticipated restaurant in Eli Broad’s upcoming contemporary art museum.

The Corporate Pastry Chef for the Patina Restaurant Group, Carlos Enriquez, has an incredible story of personal achievement. He’s with us to talk about what it takes to get there.

Daniel BouludAcclaimed Chef Daniel Boulud has returned to Las Vegas with the opening of db Brasserie at The Venetian. His executive chef there is David Middleton (ex-Marche Bacchus.) (Daniel previously had a restaurant (the now closed Daniel Boulud Brasserie) at Wynn Las Vegas.)

Chef Carlos was part of the opening team of the Paris Hotel on The Strip in Las Vegas. He then moved to Colorado to serve as Executive Pastry Chef for Sky Goble at the Brown Palace Hotel in Denver. A year later, Enriquez joined Goble at the Ahwahnee Resort in Yosemite National Park. In 2006 Chef Carlos returned to Las Vegas and worked as Assistant Pastry Chef at the Hard Rock Hotel and Casino, and later at Alex Restaurant at Wynn Las Vegas. He was Executive Pastry Chef at Café del Rey in Marina del Rey before joining the Patina Restaurant Group as Corporate Pastry Chef in 2012.

2014’s competing chefs include Host Chef Ray Garcia of Fig Restaurant, Christian Page of Short Order, Jason Neve of B&B Ristorante, Ray England of Craft, and Brian Howard of Comme Ca. Each chef prepares a maximum of six dishes created from one whole heritage pig.

Top Round Roast BeefTop Round Roast Beef opened in the extensively remodeled space of a former donut shop at the busy corner of Olympic Blvd. and La Brea Avenue last June. The theme is top quality roast beef sandwiches where the beef is sliced to order. On the menu is a variety of quality roast beef sandwiches served on a butter-toasted bun with natural au jus. The beef is impressively sliced to order. Also on the small menu are curly French fries cooked in beef fat for maximum flavor, milkshakes and St. Louis frozen custard.

The owners have impressive culinary credentials from places including Red Medicine, 800 Degrees, and Curtis Stone’s restaurants.

Restaurant investor Jamie Tiampo (who is also the owner of See Food Media in New York) joins us along with Chef Steven Fretz (previously executive chef for Curtis Stone’s restaurant group) to explain the concept.

Rick BaylessWhen it comes to possessing a vast knowledge of the regional cooking of the various states in Mexico the recognized “el jefe” in the United States is Chicago’s Rick Bayless. Locally he’s probably best known for the PBS’s series “Mexico – One Plate at a Time” (now starting its 9th award-winning season) and from Bravo’s “Top Chef Masters.” In Chicago he’s a local culinary celebrity for his highly popular restaurants including River North’s Topolobampo and Frontera Grill.

Chef Bayless has created the menu for the recently opened, and much talked about, highly designed Red O in Fashion Island, Newport Beach. It’s basically his contemporary take on Oaxacan fare and other culinary regions of Mexico.

Certain dishes are exclusive to Fashion Island and the tequila list includes 100 selections.

Chef Bayless offers tips for preparing the perfect guacamole.

The new season of his hit PBS series takers us to Oaxaca, one of his favorite culinary regions in Mexico. We’ll see the “Day of the Dead” celebration Oaxaca-style.

Diners will have the opportunity to enjoy the wide spectrum of dining options in the County at special prices for prix-fixe menus for both lunch and dinner.

Over 100 restaurants are part of Orange County Restaurant Week.

One of the featured restaurants is Santa Ana’s Chapter One: The Modern Local. Chef Jason Montelibano (aka Chef Chicken Wing) joins us to talk about his menu. Given his Filipino ancestry he’s incorporated a few contemporary Filipino touches into his menu.

Chef Jason won Riveria Magazine’s “To Live and Dine” chefs’ challenge event @ SoCo last year with his Lamb & Gnocchi dish.

The Grill on the Alley30 years ago dining history was made in Beverly Hills (a tough city for restaurant longevity) with the launch of The Grill on the Alley which is better known as The Grill. It soon evolved into a high profile business destination for lunch for the power brokers of Hollywood. Where your table was signified your status in the Entertainment Business. At night it became a destination for affluent locals with a very loyal following. Unusually for the time pretentiousness was never part of the gameplan. It also was the start of a significant restaurant company with three successful concepts.

Grill Concepts, Inc. continues to flourish to this day. Public School is the newest concept (with a sense of humor) with locations in Downtown Los Angeles, Culver City and Thousand Oaks. Northern California is next and more locations on the horizon. It’s a bar & restaurant gathering spot.

Founder Bob Spivak, a second generation restaurateur with a love for the hospitality business, joins us to share the fascinating story.

Jet shares the details of his meal at Chef April Boomfield’s Spotted Pig (no reservations) in the West Village. This was one of the country’s first gastropubs. It’s still a scene over ten years later.

Jet also visited Ippudo, a well-known Japanese ramen shop and a personal favorite.

Show 18, February 23, 2013: Richard Rosendale, Executive Chef and Director of Food & Beverage, The Greenbrier, West Virginia &amp Bocuse d’Or USA Captain 2013

Richard Rosendale of the Greenbrier Resort in Sulphur Springs West VirginiaChef Rosendale represented the United States late last month at the Bocuse d’Or culinary competition in Lyon, France. It’s held every other year and is considered the pinnacle of international cooking competitions. The chefs have an intense five-and-one half hours to prepare a dazzling meat platter and a plated fish course which is then judged by an international panel of respected chefs.

Chef Rosendale and his commis, Corey Siegel, spent a year training every day for this prestigious competition. A duplicate of their kitchen in Lyon was created at The Greenbrier to practice in.

Team USA had a sizeable rooting section cheering them on in Lyon. Thomas Keller is the Bocuse d’Or USA foundation’s President and he was in Lyon, too. USA placed a respectable 7th Place which was in the upper third of the competitors.

We’re all over these great United States today with celebrated chefs, a local food entrepreneur, and bargain dining at extraordinary restaurants in Orange County for the next week.

Richard Rosendale of the Greenbrier Resort in Sulphur Springs West VirginiaWhen we spoke with Thomas Keller back in December he was giving us the background on the talented American chef representing the USA in the prestigious Bocuse d’Or culinary competition in Lyon, France in late January. That distinguished chef is Richard Rosendale, the executive chef of the historic Greenbrier Resort in West Virginia.

Chef Rosendale is with us this morning to share the extraordinary experience of competing in the Bocuse d’Or on the international stage. If you think “Chopped” is tough wait until you hear what is required for this intense international competition! The winner comes as close to achieving perfection in the culinary arts as humanly possible…

Daniel ShemtobYou’ve no doubt heard about The Lime Truck, one of Orange County’s pioneering gourmet food trucks. Perhaps you’ve even enjoyed one of their Ultimate Tacos. It’s been so successful that there are now three of them on the road in Orange and Los Angeles Counties. The food is both original and tasty.

The fame of The Lime Truck is now national. In a spirited competition The Lime Truck deftly maneuvered it’s way across the USA on Food Network’s “Great Food Truck Race” (Season 2) and crossed the finish line first. That earned young food entrepreneur Daniel Shemtob and his colleagues a $50,000 cash prize.

Last year Daniel debuted his first bricks and mortar spot in Westwood Village. TLT Food has an expanded menu and a thoughtful collection of craft beers and boutique wines. You’ll actually see Daniel there regularly cooking!

Chef Govind Armstrong of Post and BeamOn Tuesday evening, February 26th super chef Marcus Samuelsson will be joining forces with Chef Govind Armstrong (Table 8) to present “A Taste of Harlem” at Govind’s new restaurant, Post & Beam, located in Baldwin Hills. The menu is reimagined soul classics. A portion of the proceeds will be donated to C-CAP Los Angeles.

Unfortunately the dinner reached capacity some two weeks ago. The good news is that an After Party benefiting C-CAP has been added so foodies will have a chance to meet Chef Marcus and Chef Armstrong and enjoy some good music.

Chef Govind Armstrong will be with us to talk about the festivities and how to obtain a coveted ticket for the After Party.

orange_county_restaurant_weekOrange County Restaurant Week (The 5th Annual) starts on Sunday and it’s your chance to experience Orange County’s best for lunch and dinner at very consumer-friendly special pricing! Yes, it’s a real bargain. The 2013 OC Restaurant Week will be held Sunday, February 24th through Saturday, March 2nd.

Explains Pamela Waitt, president of the OC Restaurant Association, “This year’s five-year anniversary will serve as a grand celebration as restaurants offer the best menus and ensure that diners will be presented with a truly special weeklong celebration. After all, the goal is for everyone involved to have fun!”

Executive Chef Roy Hendrickson of Zimzala Restaurant & Bar at The Shorebreak Hotel in Huntington Beach and proprietress/restaurateur Nancy Wilhelm and Executive Chef Rayne Frey of Tabu Grill in Laguna Beach will all be in-studio to reveal their ambitious menu creations for OC Restaurant Week.
