The two shops offering the best quality meats and poultry (along with genuine customer service) have come together to host their first Holiday Kids Pajama Drive taking place the entire month of November. The goal is to collect 300 pairs of pajamas for distribution to local agencies servicing homeless and low income families.” Proprietor Jim Cascone joins us with the meaty details.

Drew Brahs of Harper Barbecue (Costa Mesa based) is well-known in the West as the go-to builder (via word-of-mouth) of hand-crafted, custom smokers for skilled pitmasters and home backyard barbecue fans alike. He crafts everything from small backyard pits to large versions on trailers. Drew is responsible for creating the massive twin, 1,000 gallon offset smokers used to the max at Danny Castillo’s Heritage Barbecue in San Juan Capistrano. Drew is a fan of the Central Texas style of barbecue. In the early stages of development and construction is his own restaurant, Harper Barbecue, in Costa Mesa which will be a Family affair. While the restaurant is being built Drew will shift the smoker enterprise to selling stock items. We’ll meet barbecue entrepreneur Drew Brahs.

Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef”> segment where Chef Andrew responds to listeners thoughtful inquiries. Chef Andrew is regularly updating us on the impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the very survival of restaurants. Thanksgiving is fast approaching on November 26th. In the spirit of the Holidays it’s appropriate for Chef Andrew to now share his best Thanksgiving cooking tips. This week we’re talking about cooking the seasoned bird. Chef Andrew suggests this might be the year to spatchcock the turkey. It seems more people will be doing Family Thanksgiving at home this year and probably with smaller groups. We’ll “Ask the Chef.”

The prestigious Michelin Guide recently honored Fable & Spirit with a 2020 Discovery award. Only 25 restaurants in California achieved this new designation.

In addition to PJs for children aged infant to age 18, the shops will be collecting children’s slippers, robes, security blankets, story books and toothbrush/toothpaste sets through November 30th. At the conclusion of the Pajama Drive, collected items will be distributed to Los Angeles area agencies for gift giving to their youngest clientele over the holiday season.”

Show 373, May 16, 2020: Sommelier Ali Coyle, Fable & Spirit, Newport Beach

Sommelier Ali CoyleNewport Beach’s highly praised, Fable & Spirit, has reopened in the Via Lido Plaza for takeout service. The public, once again, is able to partake in Chef Executive Chef David Shofner’s imaginative, globally inspired dishes. In addition, Sommelier Ali Coyle presents a curated list of wines offered at exceptional prices, and Director of Spirits Drew Coyle offers a selection of signature cocktails to go.

Guests will be able to order by phone or online Tuesday through Sunday. Menu, hours and online ordering will be updated on Fable & Spirit’s website. Orders may be placed between Noon and 6 p.m., for pick-up between 4 p.m. and 7 p.m. Tuesday through Sunday. The restaurant will be closed on Monday & Tuesday. Contactless curbside pick-up can be requested when placing orders.

“Ours are neighborhood restaurants that have achieved success because of the communities that support them, and we are grateful to reopen to see the reassuring smiles of our friends during this time of uncertainty,” comments Darren Coyle, who owns Fable & Spirit, Dublin 4 Gastropub, and Wineworks for Everyone with his wife, Jean. “We look forward to when we can welcome guests into our dining room again for food, drink and good times, but for now, we will limit service to takeout and strive to share some of the spirit and magic of our family with yours.”

The 2019 OC Fair opened the gates on Friday, July 12th. Outrageous Fair Food is always a mouthwatering highlight. What crazy edible will they next put on a stick? One of the all-star Fair Food personalities is the well-traveled Midway Gourmet, Chef Dominic Palmieri of Biggy’s fame on the RCS Carnival Midway. We’ll find out what indulgent deliciousness Chef Dominic is cooking up for July 12th through August 11th.

Chef Davide Cerretini is the Chef/ Co-Proprietor of the modest (10 tables) Botto Bistro in Richmond, CA. In 2014 he discontinued an advertising effort on Yelp and things then suddenly turned highly negative on his Yelp page. Curious…Meanwhile aggressive sales staff at Yelp was relentless in pursuing him to continue advertising. This is all detailed by Chef Davide in the new documentary on Yelp, Billion Dollar Bully.” Chef Davide engagingly explains the unlikely story of how he creatively turned the tables on Yelp.…As the “One Star Chef” business now actually couldn’t be better…

Go Little Tokyo’s 4th Annual Delicious Little Tokyo returns to the heart of Downtown Los Angeles for two days on Friday, July 19th and Saturday, July 20th and features over 20 exclusive events including all-new interactive workshops, tastings, and demonstrations curated for first-time foodies and culinary enthusiasts alike. Little Tokyo Community Council’s 1st Vice Board Chairman, Chris Komai, separates the chopsticks for us revealing all the tantalizing details.

Chef & Restaurateur Don Tahara is a Co-Owner of both Sake Dojo! and Far Bar in Little Tokyo. He is hosting two different tasting demos on Saturday afternoon, July 20th as part of the 4th Annual Delicious Little Tokyo. First up is “Sake & Food Pairing with Sake Dojo” and then “Craft Beer & Chicken Wing Pairing with Far Bar.” We’ll meet him.

Sommelier Ali CoyleAdding to the growing culinary scene that can be found in and around Newport Beach’s Lido Marina, Fable & Spirit launched in June on the Newport Peninsula. The restaurant is the 3rd in the region for husband-and-wife team Darren and Jean Coyle, who previously brought Dublin 4 Gastropub and Wineworks for Everyone to Orange County. Their newest establishment celebrates the Spirit and heritage of the Irish people, and the setting will share the many Fairytales (Fables) of Mythological Ireland, complete with heroes, queens and goddesses.

Fable & Spirit is a true Coyle Family affair. Daughter, Ali, is the Sommelier and son, Drew, is the Director of Spirits.

“The wine program is of note, with a forward- thinking ideology that presents a list with more than just popular wineries, but also lesser-known quality wines. Ali first became intrigued by the world of wine at the age of 17, when her parents opened Wineworks for Everyone.”

“Drew’s rich bar program focuses on an extensive selection of whiskeys, gins and spirits, and liqueurs to present serious cocktails. These complement the bar’s more colorful creations, including the pretty-in-pink ‘Friends In High Places’ with Ford’s Gin, Pomp & Whimsy, raspberry syrup, lemon, lavender water and egg white; the Celtic green ‘Morrigan’s Dream’ with Hendrick’s Gin, pressed celery, pineapple, and chartreuse; and a carrot-orange libation, playfully named ‘Hares Looking at You’, with Wheatley Vodka, Canton Ginger, pressed carrot, lemon and basil.”

“As important as locally sourced, fresh ingredients are to our kitchen, they are equally important to a perfectly designed cocktail,” emphasizes Drew. “Everything but the spirit is hand squeezed, pressed, or infused in-house daily.”

In 2014 he discontinued a modest advertising effort on Yelp and things suddenly turned highly negative on his Yelp page. Curious…The aggressive sales staff at Yelp was relentless in pursuing him. Go Little Tokyo’s 4th Annual Delicious Little Tokyo returns to the heart of Downtown Los Angeles for two days on Friday, July 19th and Saturday, July 20th and features over 20 exclusive events including all-new interactive workshops, tastings, and demonstrations curated for first-time foodies and culinary enthusiasts alike. Little Tokyo Community Council’s 1st Vice Board Chairman, Chris Komai, separates the chopsticks for us revealing all the tantalizing details.

Chef & Restaurateur Don Tahara is a Co-Owner of both Sake Dojo! and Far Bar in Little Tokyo. He is hosting two different tasting demos on Saturday afternoon, July 20th as part of the 4th Annual Delicious Little Tokyo. First up is “Sake & Food Pairing with Sake Dojo” and then “Craft Beer & Chicken Wing Pairing with Far Bar.” We’ll meet him.
