Show 407, January 9, 2021: Cindi Thompson of Crafted Kitchen, Arts District of Los Angeles Part One

Cindi Thompson of Crafted KitchenCindi Thompson’s Crafted Kitchen established in 2017 is a collegial business incubator-style, shared use commercial kitchen located in the Arts District of Los Angeles. A state-of-the art facility, housed in a fully restored 100-year-old brick warehouse, Crafted Kitchen is designed to give small food businesses access to the space, resources, and business skills they need in order to make their culinary dreams a reality. With a variety of kitchen formats available, Crafted Kitchen provides Los Angeles-area food entrepreneurs with room to grow.”

Under the roof of Crafted Kitchen are private kitchens, semi private kitchens and a fully equipped test kitchen with soaring 20-foot high bow-truss ceilings (and an adjacent landscaped patio) that can be used for distinctive private dinners, events and cooking classes.

The shared use kitchen space (available by the day or hour) has all the cooking equipment and cookware a budding food entrepreneur needs. All they need to provide are the raw ingredients for their food or beverage creation and packaging supplies.

“The Crafted Kitchen story began with the desire to build more than just a state-of-the-art shared-use kitchen. It started with the belief that, through community, an individual “me” could become part of the greater “we”. With community as our catalyst, Crafted Kitchen defines success as more than just the bottom line. We believe it’s about growing, learning and thriving alongside other culinary creatives and innovators. By leveraging industry resources, regulatory & licensing experience, bulk purchasing power and culinary expertise, we provide tools and resources to help food entrepreneurs accelerate business growth.”

Late last year Crafted Kitchen was honored by the food critics at the Los Angeles Times for inclusion in the widely studied 2020 feature of “101 Restaurants, Dishes, People and Ideas That Define How We Eat.”

It’s the dream (and carefully planned) venture of encouraging and supportive culinary entrepreneur Cindi Thompson. We’ll meet her.

Show 31, June 15, 2013: Adam Fleischman, CEO of Umami Restaurant Group, Los Angeles Continued…

Umami BurgerEvery Umami Burger location is different in design to capture the look and feel of the area it’s in. Every location has a signature burger.

By the end of 2013 Adam guesstimates that there will be 30 Umami Burger locations. He sees a maximum potential in the USA of perhaps 150 locations. He will only go into cities with an existing food culture.

Adam then talked about his pizza concept in Westwood, 800 Degrees. They are now serving 1,200 pizzas a day. He’s proud of the made-to-order pizzas they serve. They are going for the authentic Naples pizza certification which is the VPN Americas administered by the authentic Neapolitan pizza makers in Italy.

Money has been raised to expand the 800 Degrees pizza brand. Initial new locations will be focused in Los Angeles.

Fleischman’s newest project is a business incubator for creative food entrepreneurs. Umami Ventures will provide their expertise (and special ability to raise money) to grow exciting food concepts in partnership with the creating entrepreneurs.

We’re all over these great United States today with celebrated chefs, a local food entrepreneur, and bargain dining at extraordinary restaurants in Orange County for the next week.

Richard Rosendale of the Greenbrier Resort in Sulphur Springs West VirginiaWhen we spoke with Thomas Keller back in December he was giving us the background on the talented American chef representing the USA in the prestigious Bocuse d’Or culinary competition in Lyon, France in late January. That distinguished chef is Richard Rosendale, the executive chef of the historic Greenbrier Resort in West Virginia.

Chef Rosendale is with us this morning to share the extraordinary experience of competing in the Bocuse d’Or on the international stage. If you think “Chopped” is tough wait until you hear what is required for this intense international competition! The winner comes as close to achieving perfection in the culinary arts as humanly possible…

Daniel ShemtobYou’ve no doubt heard about The Lime Truck, one of Orange County’s pioneering gourmet food trucks. Perhaps you’ve even enjoyed one of their Ultimate Tacos. It’s been so successful that there are now three of them on the road in Orange and Los Angeles Counties. The food is both original and tasty.

The fame of The Lime Truck is now national. In a spirited competition The Lime Truck deftly maneuvered it’s way across the USA on Food Network’s “Great Food Truck Race” (Season 2) and crossed the finish line first. That earned young food entrepreneur Daniel Shemtob and his colleagues a $50,000 cash prize.

Last year Daniel debuted his first bricks and mortar spot in Westwood Village. TLT Food has an expanded menu and a thoughtful collection of craft beers and boutique wines. You’ll actually see Daniel there regularly cooking!

Chef Govind Armstrong of Post and BeamOn Tuesday evening, February 26th super chef Marcus Samuelsson will be joining forces with Chef Govind Armstrong (Table 8) to present “A Taste of Harlem” at Govind’s new restaurant, Post & Beam, located in Baldwin Hills. The menu is reimagined soul classics. A portion of the proceeds will be donated to C-CAP Los Angeles.

Unfortunately the dinner reached capacity some two weeks ago. The good news is that an After Party benefiting C-CAP has been added so foodies will have a chance to meet Chef Marcus and Chef Armstrong and enjoy some good music.

Chef Govind Armstrong will be with us to talk about the festivities and how to obtain a coveted ticket for the After Party.
