Show 377, June 13, 2020: Show Preview with Executive Producer & Co-Host Andy Harris

It’s worthy of repeating…

Chefs and restaurateurs are honestly the most generous people we know. In times of need they are always the very first in generously giving back and meaningfully supporting their communities. Truly remarkable…Right now as dine-in slowly returns at greatly reduced capacity restaurants urgently need our support to stay afloat. Kindly keep this in mind and please do what you possibly can (as you can afford) to support a community-focused, local restaurant….

As always, we greatly appreciate you being a part of our loyal listening audience. Truly couldn’t do it every week without the enthusiastic encouragement and support of the foodie community.

Food lovers are now able to eat and explore their way through Downtown Las Vegas like never before with a pair of private, self-guided, e-assisted culinary tours created by Finger Licking Foodie Tours. The brand-new company represents a follow-up, companion business to the successful Lip Smacking Foodie Tours created by Las Vegas entrepreneur and hospitality-industry veteran, Donald Contursi.

The new self-guided Finger Licking Foodie Tours (Downtown Fremont East and Arts District) offers guests a fun and innovative way to support three top restaurants in the Las Vegas community, while enjoying an array of Instagramable dishes in one outing. Don Contursi joins us with the salivating details.

Factory Place Hospitality Group, a restaurant group led by Restaurateur Matteo Ferdinandi, was founded in March of 2013. Executive Chef and Business Partner Angelo Auriana, joined Ferdinandi and his wife, Francine Diamond-Ferdinandi, in August 2013 shortly before the opening of The Factory Kitchen in Downtown Los Angeles. The L.A. collection of establishments also includes Brera Ristorante and sixth+mill pizzeria. Las Vegas properties are Matteo’s Ristorante Italiano in The Venetian Resort and sixth+mill ristorante, pizzeria & bar at The Grand Canal Shoppes. The Las Vegas establishments have recently reopened for dine-in service. Matteo Ferdinandi is graciously at our service along with Chef Angelo Auriana.

Since partners Chef Michael Cimarusti, Donato Poto, and Craig Nickoloff opened Connie and Ted’s in West Hollywood in 2013 they have redefined the concept of a casual seafood dinner house serving premium seafood. Poised to reopen for dine-in Connie & Ted’s just celebrated their 7th Anniversary. Opening General Manager Matthew De Marte (a 3rd generation restaurant professional) provides all the tasty details.

Chef & Restaurateur Josiah Citrin is an accomplished culinary expert and veteran of Los Angeles’s gourmet dining scene, with more than 25 years of experience. He is a two-star Michelin chef and owner of Santa Monica’s highly-acclaimed Mélisse & Citrin, Charcoal Venice, Dear John’s (with Hans & Patti Rockenwagner) in Culver City and Openaire at The Line Hotel. His culinary philosophy, “In Pursuit of Excellence” sets the standard for all of his concepts, whether fine-dining or casual.

We entice Chef Josiah Citrin out of his busy kitchens for an update on his area restaurant properties.

Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef” segment where Chef Andrew responds to listeners thoughtful inquiries. Chef Andrew is updating us on the impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the very survival of restaurants. Dine-in is slowly starting to come back but with a lot of new rules. Alternately take-out/delivery when you can surely helps…All levels of government have sincerely pledged to support struggling (but essential) small businesses as we start to slowly recover from the COVID 19 crisis. Chef Andrew has a startling personal example of local bureaucratic fumbling at its best. We’re also starting to see a COVID 19 surcharge on select restaurant checks. There is talk in Congress about advancing the Real Economic Support That Acknowledges Unique Restaurant Assistance Needed to Survive (RESTAURANTS) Act of 2020. As always Chef Andrew shares his informed thoughts. We’ll, of course, “Ask the Chef.”

All of this and heaping helpings of extra deliciousness (with proper Social Distancing) on this week’s not-to-miss show!

Pizza is a $30 billion dollar industry in the United States…

Patty Phillips of Pattys PizzaBack in 1988 fearless entrepreneur Patty Phillips was an early pioneer in the Gourmet Take & Bake pizza concept. All of that research and development led to a pizza dough that became really popular with local chefs. Patty’s Gourmet Pizza was established to serve that community and all these years later the Marina del Rey-based firm provides products for commercial clients in over 30 states.

Patty’s Pizza products have won industry awards for exceptional flavor and dependability. In addition, Patty’s “Take & Bake” pizza concept and innovative dough formulations have earned Patty’s critical acclaim from the toughest California restaurant critics.

Patty’s Pizza has worked rigorously to create a par (partially) baked frozen pizza formulation that does not require the heart of industrial level ovens, yet is still able to be frozen, topped, and used in a wide variety of applications. Ultimately, this has led to the development of a new line of pizza products designed to meet the diverse needs of Patty’s ever-growing client list.

The first prominent executive chef to endorse Patty’s Pizza was Roger Pigozzi (now at UCLA) who was then executive chef at The Biltmore Hotel in Downtown Los Angeles.

Zach PollackYou know executive chef and pizzaiolo Zach Pollack from Sotto in Los Angeles. Orange County listeners remember him as the acclaimed opening pizzaiolo at Pizzaria Ortica. He’s just launched Alimento, his own 40-seat place in Silver Lake.

“While Sotto’s early vision was mostly Southern Italian, Pollack expands his reach here. “It’s not as regionally specific, but more loosely inspired by the different regions of Italy,” says Pollack. “It’s really my interpretation of these dishes, so it makes sense for Los Angeles, a city that doesn’t take itself too seriously.” You’ll find small and large plates, seasonal salads and handmade pastas, sometimes using grains from Pasadena’s Grist & Toll flour mill.” (Credit to Lesley Balla of Zagat)

Sotto is part of Dine LA for Dinner. $35 prix fixe menu.

Life is Beautiful FestivalYou’ve been asking for it so here it is….Our first Las Vegas Special!

Jet is in Las Vegas this Weekend as a participant in the giant “Life Is Beautiful” Festival using an event area encompassing 15-blocks of Downtown Las Vegas. The storied El Cortez Hotel and several popular new restaurants are actually part of the Festival area.

Something like this on the scale that it represents has never really been tried before…Unusually the food and beverage component shares the spotlight with the music.

The biggest names in the culinary world like Tom Colicchio will all be there. Some will be performing cooking demos at the Chefs on Stage area and others serving up their signature dishes in the Culinary Village.

Saturday afternoon at 4:45 p.m. Jet is on the Chefs On Stage East with of Ben McKee of Imagine Dragons.

Jet is also in the Culinary Village with a Chef Jet tasting station. Say hello if you’re in the neighborhood…

Mary Sue Milliken of Border GrillChef, restaurateur, and food television star, Mary Sue Milliken, really needs no introduction to the show. Her “Two Hot Tamales” series for Food Network which she did with her business partner, Susan Feniger, was one of the early hit series for the network. More recently she competed on Bravo’s “Top Chef Masters.”

One of the most successful Border Grills is located in Las Vegas at Mandalay Bay Hotel on The Strip.

Mary Sue and Susan are on the Chef on Stage East at 1:45 p.m. on Saturday at Life is Beautiful.

Kent Bearden of Wirtz Beverage Group NevadaCraft beer, premium wines, and fine spirits are well represented at Life is Beautiful. In fact the center of the spirited action will be at the Alchemy Gardens and the related Flight Tastings area (6th St. & Ogden Ave.) at the Festival. The Gardens will showcase the beverages of 18 distinguished craft breweries, 18 quality wineries, and 18 spirits entities.

Craft Beer and Spirits Specialist Kent Bearden of Wirtz Beverage Nevada is with us to provide all the thirst-quenching details. He’s a Cicerone (certified beer specialist) and Certified Specialist of Spirits.

Oscars Goodman former mayor of Las VegasOscar Goodman is the immediate past Mayor of Las Vegas. During his three terms as Mayor he liked to refer to himself as the “Happiest Mayor in the World.” He proudly drinks at least one gin martini a day and on official business he used to travel with two gorgeous Las Vegas Showgirls with one on each arm. His wife, Carolyn, the current Mayor approves.

Oscar is with us to discuss his leadership role in reawaking Downtown Las Vegas, his new autobiography, and his upscale steakhouse at The Plaza in Downtown.

When it comes to big city Mayors in the USA Mr. Goodman is surely a colorful original. Mayor Goodman current serves as the official Goodwill Ambassador for Las Vegas.

Jet Tila and Penn JilletteIn the world of stage magicians there is no enduring act quite like Penn & Teller. Las Vegas is the ideal base for these two performing vets. Their home, since 2003, is at The Rio just off The Strip.

He’s also a musician. Penn plays the upright bass.

What the general public doesn’t know is that Penn Jillette is an accomplished home cook. Jet has been cooking with him recently and Penn will be our very special guest.

Jonathan WaxmanHe’s affectionately known as the Obi Wan Kanobi of chefs because of his practical, no-nonsense approach to cooking and we’re talking about the Manhattan-based Jonathan Waxman of Barbuto in the West Village. You’ve seen him competing on Bravo’s “Top Chef Masters” and Food Network’s “Iron Chef America.” His most recent cookbook is Italian, My Way: More Than 150 Simple and Inspired Recipes That Breathe New Life into Italian Classics by Jonathan Waxman and Tom Colicchio (Apr 5, 2011.) The roasted chicken recipe as served at Barbuto is a classic.

We have great affection for him in California for his early years with Alice Waters at Chez Panisse and as a recognized pioneer of California cuisine.

He’s in Las Vegas for “Life is Beautiful” Festival and will be honored Friday night at the kick-off dinner, “Grill and Guitars,” with a menu prepared by celebrity chefs.

Rick Moonen of rm seafood in Las VegasAn acclaimed former New York chef, know as a seafood master, has really taken to living in Las Vegas. We’re talking about Chef Rick Moonen.

His latest creation is Rx Boiler Room in the Shoppes at Mandalay Place (on the upper level.) The decor is over the top but our Las Vegas food expert, Brock Radke, Food Editor of Las Vegas Weekly, recommends the menu. Highlights include bacon-wrapped pork belly and “fish tacos” which are actually kampachi tartare presented in crunchy/crisp taro root shells. There is a serious cocktail program at Rx.

Chef Rick will also chat about what he’s doing on both Saturday and Sunday at “Life is Beautiful.”
