The Big Cheese Grilled Cheese Competition“The Big Cheese” Grilled Cheese Festival & Competition (4th Annual) returns to Provisions Market in Orange on the evening of Wednesday, April 12th.

In celebration of National Grilled Cheese Month in April, Provisions Market and OC Baking Company will once again join forces to host The Big Cheese, Orange County’s grilled cheese festival and competition. Event Co-Founder Chef Greg Daniels and his fellow OC Chefs will compete for the title of “The Big Cheese” in this 4th annual event to be held on National Grilled Cheese Day on Wednesday, April 12th from 6 p.m. to 8 p.m. at Provisions Market (143 N. Glassell Street, Orange, CA 92866).

OC Baking Company Master Baker Dean Kim will supply locally produced freshly baked bread to the competing chefs, while the farmer-owned dairy cooperative Tillamook County Creamery Association will offer a selection of its award-winning butter and cheeses for use at the festival, including new Farmstyle Cut Shredded Cheese crafted for ideal melt.

Competing chefs will present their own spin on the classic grilled cheese sandwich that will be evaluated by a panel of judges who will determine The Big Cheese 2017. In addition, the festival attendees will sample and then vote on a “People’s Choice” winner from the collection of high-profile chef participants including Amar Santana of Vaca and Broadway by Amar Santana.

“This is our 4th year, and I love how this event keeps bringing our local chefs together in a lighthearted competition to melt cheese and make people smile,” commented Chef Greg Daniels, who oversees the kitchens at Provisions Market and Haven Gastropub.

Gretchen BeaumarchaisNew for 2015 is the “A” Wine Cellar on the Field Level in Section 111. Guests can purchase a large selection of wines by-the-glass as well as by the bottle. It’s California-themed with a long list.

For the best in craft beer head over to Draft Pick near Gate 2. Lots of selections from Golden Road Brewery there. The beer is served in 24 oz. cups.

On the “Secret” menu is The Legends Dog. It’s topped with tender barbecued brisket from Smoke Ring Brisket.

A Stadium favorite, grilled cheese, is also well-represented. There is a Short Rib Grilled Cheese Sandwich on the menu along with a Thick Cut Bacon Grilled Cheese Sandwich.

Melissa’s is on the scene with some appealing healthy options at Melissa’s Fresh For You, available on every level of the Stadium. Custom and pre-made salads, fresh fruit, veggie dogs and veggie burgers are available. New for 2015 is the Acai Bowl with bananas, strawberries, granola and honey. The hummus platter is another tasty light option.

Besides being all over Food TV (he bested Iron Chef Bobby Flay on Food Network’s “Iron Chef America”) Chef Eric Greenspan has made a name for himself in the rarified world of fine-dining. For almost two years he was the executive chef of Joachim Splichal’s highly-acclaimed flagship restaurant Patina. More recently he created The Foundry on Melrose Ave. In the Fall he returns to Melrose with the eagerly anticipated fine dining, Enclave.

Although Chef Eric Greenspan has created the more casual, Greenspan’s Grilled Cheese and The Roof on Wilshire, his heart and true passion remains in fine dining. We’ll talk about the future of fine-dining in Los Angeles and get Chef Eric’s perspective. We’ll also preview Chef Eric’s new series for the National Geographic Channel debuting in November.

The first Canstruction Competition is coming to Long Beach on August 21st. The resulting collections of food benefit Food Finders food rescue / food bank. It’s going to be a wild 12 hours benefiting people in need!

The Halos have an ace relief pitcher in Jason Grilli newly arrived in a trade deal with The Pittsburgh Pirates. He’s also part of the franchisee group bringing the popular Tom+Chee restaurants to Pittsburgh. Jason is with us live on the road from Globe Life Park in Arlington, Texas to talk about it.

The 2014 Los Angeles Food & Wine Festival (4th Annual) is once again upon us taking place in Downtown Los Angeles on August 21 -24. This is one of the biggest culinary festivals staged on the West Coast with culinary masters hosting power lunches, cocktail culture merging with some of the finest chefs for spirited dinners, and first –time events such as the “Ultimate Bites of L.A. Challenge” on Opening Night hosted by Graham Elliott and Fabio Viviani.

The 3rd Annual PigOut (benefiting Inspire Artistic Minds) is set for Sunday afternoon, August 24th at the California Scenario in Costa Mesa.

The main attraction will be a 250 pound Templeton Rye Duroc Pig of the Templeton Rye Heritage Pork Project.

The KTown Night Market and Block Party is coming to Angel Stadium on Friday and Saturday, August 22nd and 23rd. It’s 60 plus food trucks and vendors (including the Seoul Sausage Co.) and a large beer garden. Also there will be live music, games and rides. We’ll chat with the co-producer and one of the young founders of the participating Seoul Sausage Co.

Meet Mixologist Chris Amirault of Harlowe, a new bar that’s attracting a lot of attention in West Hollywood. Even his standard cocktails are very special. Chris also creates unusual draft and bottled cocktails.

Early in his professional career Jason earned the appropriate nickname, “Grilled Cheese.” This is explained in his newly published book, Just My Game with a foreword by Clint Hurdle.

Grilli, and partners, are also the Pittsburgh franchisees for the rapidly growing Tom+Chee. This is a grilled cheese and tomato soup shop for the kid at heart. The restaurants mix classic comfort food with fresh ingredients, healthy alternatives, and a flare for the unexpected. In addition to the regular menu there are lots of daily specials.

Chef Eric Greenspan’s (ex-Foundry on Melrose) long in the works grilled cheese café is now open. It’s Greenspan’s Grilled Cheese located next door to the Melrose Umbrella Co, (the former Foundry location which is now an upscale tavern.)

Chef Eric graciously reveals the three cornerstones of excellence in grilled cheese sandwich making. Surprisingly it starts with “okay” bread.

The Melrose Umbrella Co. (a well-managed bar with specialty cocktails) is now in the front part of the former Foundry on Melrose space. The rear part of the space is being reformatted into a 30 to 40 seat fine dining space by Chef Eric. He promises his refreshed fine dining concept will make a big splash! Fine dining will always remain his focus. Perhaps a Fall opening…

Eric talks about his extensive portfolio of Food Television appearances. He is one of the very few chefs to “reign supreme” over an Iron Chef on Food Network’s “Iron Chef America.” He bested Iron Chef Bobby Flay in “Battle Goose !”

He participates in national pop-ups under the catchy El Nosh Latin / Jewish brand.

Donald WressellTwenty five years ago Donald Wressell was then the highly regarded executive pastry chef at The Four Seasons Los Angeles at Beverly Hills. Chef Donald was responsible for the production of everything from the fresh, buttery croissants to eye-popping wedding cakes. He created a stunning edible birthday cake for Beverly Hills’ Diamond Jubilee celebration. It was a miniature of Beverly Hills’ iconic City Hall. The rest of the cake was 100 sheet cakes. 10,000 slices were served!

It’s now the 100th Birthday of Beverly Hills. Chef Donald is now the executive chef for the Guittard Chocolate Co. How do you possibly top yourself?

For the Century Celebration festivities in addition to the 9-foot tall, 8-foot wide replica of Beverly Hills City Hall there is a miniature replica of Rodeo Dr. with edible shopping bags containing items sold on Rodeo Drive. Talk about artistry…

The cake will weigh some 4,000 pounds and serve 15,000 celebrants. It’s a dark chocolate cake with 150 layers with dark chocolate filling and a white chocolate buttercream frosting.

Look for the cake @ 3:30 p.m. on Sunday, April 27th in front of the Luxe Hotel Rodeo Drive in the 300 N. block.

It’s all part of Taste Beverly Hills that afternoon.

Chef Carlos was part of the opening team of the Paris Hotel on The Strip in Las Vegas. He then moved to Colorado to serve as Executive Pastry Chef for Sky Goble at the Brown Palace Hotel in Denver. A year later, Enriquez joined Goble at the Ahwahnee Resort in Yosemite National Park. In 2006 Chef Carlos returned to Las Vegas and worked as Assistant Pastry Chef at the Hard Rock Hotel and Casino, and later at Alex Restaurant at Wynn Las Vegas. He was Executive Pastry Chef at Café del Rey in Marina del Rey before joining the Patina Restaurant Group as Corporate Pastry Chef in 2012.
