“There’s just something about a new pair of jammies that says ‘cozy and safe’ to kids, and Huntington Meats is, once again, doing their part to make sure nightly bedtime rituals like fresh pajamas will provide a reassuring and peaceful good night to in-need children this holiday season. Huntington Meats sister shop Farmers Market Poultry will also be participating in the drive.”

“The two shops offering quality premium products are coming together to participate in the 5th annual Holiday Kids Pajama Drive to take place the entire month of November organized by proprietor / organizer Jim Cascone. The goal is to collect 300 plus pairs of pajamas for distribution to the Union Rescue Mission in downtown Los Angeles.”

“Customers that visit either of the shops and donate a pair of new, unwrapped pajamas valued at $10 or more will receive a complimentary pound of ground beef or homemade sausages from Huntington Meats, or a pound of ground chicken or ground turkey from Farmers Market Poultry. In addition to PJs for children aged infant to age 18, the shops will be collecting children’s slippers, robes, security blankets, story books and toothbrush / toothpaste sets through November 30th. At the conclusion of the Pajama Drive, collected items will be delivered to the Union Rescue Mission for gift giving to their youngest clientele over the holiday season.”

“Going on year five, we continue to feel that this was such a unique idea for the holidays,” said Jim Cascone, proprietor of both Huntington Meats and Farmers Market Poultry. “Toy drives are great, but we forget that some kids may never have received a brand-new pair of PJs, which was something many of us took for granted growing up.”

Hatch Big Game Chili

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium red onion, chopped
  • 1 cup red bell pepper, chopped
  • 8 Hatch chiles, roasted, peeled and seeded, chopped
  • 1 15 ounce canned tomato sauce
  • 2 packages Steamed Red Kidney Beans
  • 1 28 ounce canned diced tomatoes
  • 2 teaspoons cumin powder
  • 1 ½ teaspoons black pepper
  • 4 cups water

Brown ground beef in a large saucepan. Remove from pan and set aside. Heat oil in same saucepan, sauté onions and bell peppers, until translucent. Add Hatch chiles and beef to onion mixture. Add the rest of the ingredients, bring to a boil. Lower heat and simmer 1 hour.

Makes 8 servings.

Huntington Meats’ sister shop Farmers Market Poultry will also be participating in the drive.”

“For the second year in a row, the two shops offering quality meat and poultry products are coming together to participate in their Back-to-School School Supply Drive to take place the entire month of July. The goal is to collect enough supplies for 350 kids for distribution to the Union Rescue Mission in Downtown LA.”

“Customers that visit either of the shops and donate new, unused school supplies valued at $10 or more will receive a complimentary pound of ground beef or homemade sausages from Huntington Meats, or a pound of ground chicken or ground turkey from Farmers Market Poultry.”

“Having worked with Union Rescue Mission previously with other projects, we feel this was another way for Huntington Meats and Farmers Market Poultry to give back to the kids, this time providing them with some of the tools they need to excel in school this year,” said Jim Cascone, proprietor of both Huntington Meats and Farmers Market Poultry. “We forget that some kids may never have started school with brand new school supplies, which was something many of us took for granted growing up.”

Pronounced “GIM-bap,” this is a Korean seaweed rice roll filled with vegetables. They are similar to Japanese sushi except the rice is not sea- soned with vinegar. It is a tradition to make children kimbap for lunch or when they go on a school picnic or field trip in Korea. It is also a common street and party food. In this recipe we use bulgogi beef (Korean BBQ beef) and vegetables, but you can have fun trying out different fillings.

Allergans: Dairy-Free, Nut-Free, Vegetarian Optional
Total Prep & Cook Time: 50 minutes

What You’ll Need

  • 5 radishes
  • 1 cucumber
  • 1 carrot
  • 3 scallions
  • 2 cups short-grain rice
  • 1⁄2 teaspoon salt, plus more as needed
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil, plus more as needed
  • 1 tablespoon rice wine vinegar or apple cider vinegar
  • 2 teaspoons sugar
  • 3 eggs
  • 2 tablespoons olive oil
  • 12 ounces ground beef or ground chicken
  • 8 sheets toasted nori or Korean seaweed

Vegetarian Option

  • 1 (16-oz) package firm tofu

Bulgogi Sauce

  • 1 tablespoon soy sauce
  • 
1 tablespoon sesame oil

  • 1 tablespoon mirin

  • 1 1/2 teaspoons sugar
  • 
1/2 teaspoon garlic powder
  1. Prep the ingredients
    Radishes — Trim the ends and thinly slice into small strips.
    Cucumber — Trim the ends, cut into 2-inch pieces, and thinly slice into small strips.
    Carrot — Peel and trim the ends. Cut into 2-inch pieces and thinly slice into small strips.
    Scallions — Trim the ends and thinly slice.
    Bulgogi Sauce — Combine all the ingredients in a small bowl and mix well.
    Vegetarian option
    Tofu — Drain. Use paper towel to press out the liquid from the tofu. Cut into 1⁄2-inch cubes.
  2. Cook the rice

    Rinse the rice in a colander to remove excess starch.
    In a medium pot, combine the rinsed rice, a pinch of salt, and 3 cups water and bring to a boil over high heat.
    Decrease the heat to low, cover, and simmer for 15 minutes, or until the liquid has been absorbed and the rice is tender.
    Remove from the heat, add 1 tablespoon of soy sauce and 1 tablespoon of sesame oil to the cooked rice, and mix well with a fork.
  3. Make the pickled radishes and carrots (while the rice is cooking)
    In a medium bowl, whisk together 1 tablespoon of rice wine vinegar or apple cider vinegar, 2 tea- spoons of sugar, 1 tablespoon water, and 1⁄2 teaspoon of salt.
    Add the radish and carrot strips and toss until combined. Let sit for at least 15 minutes.
  4. Prep the omelet
    In a bowl, whisk together the eggs, 1 tablespoon water, and a pinch
of salt.
    In a large nonstick skillet, heat 1 tablespoon of olive oil over medium-high heat until hot.
    Add the egg mixture and cook the omelet until the bottom sets and is cooked through, 2 to 3 minutes.
    Carefully flip the omelet onto a cutting board and cut into 1⁄2-inch strips.
  5. Sauté the meat or tofu

    In the same skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat until hot.
    Add the ground beef or chicken and, using a fork, crumble the meat and cook until it starts to brown, about 5 minutes.
    Vegetarian option
    Add the tofu and cook until it starts to brown, 2 to 3 minutes.
    Add the scallions and Bulgogi Sauce and sauté for 2 to 3 minutes.
  6. Assemble and serve the kimbap
    Place one seaweed sheet on a bamboo mat and spread with
a thin layer of rice. Add layers of meat or tofu, sliced cucumber, pick- led carrots, pickled radishes, and omelet strips on the lower center of the sheet.
    Lift the bottom of the mat to cover the ingredients. Roll up to the top. Roll with the mat once more to give it a firm shape.
    Repeat with the remaining ingredients. Brush the roll with sesame oil.
    Cut into bite – size pieces.

Thai-Inspired Lettuce Wraps

Fresh and tangy flavors paired with crunchy vegetables make for a satisfying bite in these refreshing lettuce wraps. Use your favorite ground meat or omit it altogether and double up on the vegetables. You can also make this into a bowl and serve it over chopped fresh lettuce or cooked rice.

Serves 2
Prep TIme: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes

  • 1 tablespoon olive oil
  • 1/2 pound ground chicken, turkey, pork, or beef
  • 2 garlic cloves, minced
  • 1 teaspoon minced fresh ginger
  • 1 carrot, diced or grated
  • 1 red bell pepper, thinly sliced
  • 2 tablespoons hoisin sauce
  • 1 tablespoon peanut butter or any nut butter
  • 1 scallion, thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime
  • Romaine or iceberg lettuce leaves
  1. In a pan, heat the oil over medium heat. Add the meat and cook, using a wooden spoon to break it up, for about 3 minutes, or until no longer pink.
  2. Add the garlic, ginger, carrot, bell pepper, hoisin sauce, and peanut butter and cook, stirring often, for 3 minutes.
  3. Turn off the heat and stir in the scallion, cilantro, and lime juice.
  4. To serve, separate the lettuce leaves and place on a plate. Add a couple of spoonfuls of the filling into the center of each leaf and eat taco-style.

REMIX TIP: For a Korean-inspired flavor, omit the hoisin sauce and peanut butter and instead add 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of brown sugar. For spice, add 1 tablespoon of gochujang (Korean red chili paste).
