Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef” segment where Chef Andrew responds to listeners thoughtful inquiries.

The segment provided the details of how attentive listeners can enter the contest to be awarded an incredible package of prime steaks from West Coast Prime Meats by submitting a worthy Holiday Cooking Question for Chef Andrew’s “Ask the Chef” segment that is used on-air. Chef Andrew was planning to join us from the opening of his Raw by Slapfish in downtown Indianapolis. At the last minute he connected with an earlier return flight and was in the air during the show. Producer Andy Harris provided the Contest details with a helpful assist from the show’s long-time Website and Social Media consultant, Adam Bell.

Adam also finished his travel commentary on his recent business trip to Miami. He shared his less than memorable experience staying at the legendary Fontainebleau Miami Beach resort there. In Adam’s observation service is clearly not up to their stellar reputation and the cleanliness of the room upon his arrival was not up to par. The upshot here is that when you make your hotel reservation find out what generally expected services there are not being offered due to the labor shortage and pandemic factors. Keep in mind there is no reduction in rates or Resort Fees to compensate for the unfortunate reduced level of service at these hotel properties.…

He established Knife & Spork Public Relations to become one of Orange County’s respected social media marketing firms for restaurants. He focuses on photo and video content creation, targeted marketing, ad support and customer engagement. He believes “Every Restaurant Has a Story to Tell.”

With restaurants’ budgets being especially tight right now (and every dollar of expense needing to be justified) Niyaz joins us with an expert’s advice offering grass roots avenues for restaurants to promote themselves and get more relevant eyeballs focused on what the restaurants are offering. It’s difficult to gain awareness right now as the algorithms continue to take away organic reach.

He sees value in modest expenditures with both Facebook and Instagram organized with care. Niyaz also suggests on concentrating on reaching a restaurant’s local community.

Paul is a dedicated cocktail aficionado and the camaraderie it generates. A proper martini (in Paul’s bartender lexicon) is only made with gin and should be stirred and not shaken and served ice-cold. Feig notes that vigorous shaking tends to dilute (as the ice melts) the strength of the martini.

During the initial “stay safely at home” period of Covid 19 Paul created and hosted a spirited cocktail show on his Instagram, Quarantine Cocktail Time. In each episode he demonstrated (with a dash of humor) the preparation of a new cocktail and spotlighted a worthy charity impacted by the health crisis. Initially Paul created one episode a day for 100 straight days. The library of shows is available on Paul’s Instagram.

A key Social Media influencer in Orange County is superstar foodie Edmond Cartojano of the Daily Food Feed blog. He’s food obsessed just like the rest of us. The influential Daily Food Feed on Instragram is less than a year old but Edmond has a four and one-half year background in restaurant public relations and marketing.

Edmond has an incredible 150,000 followers (and still growing) on Instagram and he’s not done yet. His passionate followers were all developed organically which adds more credibility to his efforts.

Edmond notes that food is emotional. The visuals on Instagram best showcase this.

We’ll get the scoop on how all of this came about and what’s in store for the future. We know Edmond loves ice cream, too, so there is a lot to chat about…

Show 117, April 11, 2015: Artisan Baker Dean Kim – “The Big Cheese” Competition

The Big Cheese Grilled Cheese CompetitionIn celebration of National Grilled Cheese Month in April Provisions Market (Chef Greg Daniels) and OC Baking Company (Dean Kim) will join forces to once again host The Big Cheese, Orange County’s grilled cheese festival and competition. Event Co-Founder Greg Daniels and his fellow Orange County Chefs will compete for the title of “The Big Cheese” on Monday, April 20th from 6 p.m. to 8 p.m. at Provisions Market. All proceeds from this year’s event will be donated to You Are Special, a local nonprofit that operates a food pantry to feed the hungry in the Orange community.

OC Baking Company Master Baker Dean Kim will supply locally produced, freshly baked bread to the competing chefs. The competitors will present their own spin on the classic grilled cheese sandwich that festival attendees will sample and then vote on.

This year, the professional chefs will be joined by one ProAm competitor who will be selected by event organizers in an Instagram contest. To enter, the public must create and present an original grilled cheese creation on Instagram and use the hashtag #thebigcheese2015 by Thursday, April 16th. The winning entry will be announced Friday, April 17th and the ProAm contender for “The Big Cheese” will participate in the festival on Monday, April 20th.
