Show 426, May 22, 2021: Chef Monti Carlo of Island Girl Cooks Part Two

The Monti Carlo of Everyday Food

“Following a groundbreaking collaborative event featuring women-owned restaurants across Los Angeles in January 2021 called 10 Days RE:Her, newly formed non-profit RE:Her has organized a Covid-19 relief grant program, sponsored by DoorDash. RE:Her will distribute 15 cash grants of $10,000 each to female-identifying food and beverage entrepreneurs in LA County, which recipients can use to bolster their business however they see fit. Grantees will also receive access to consulting and mentorship from specialists in restaurant finance (Elissa Phillips of Mise En Place Restaurant Services), HR (Delmy Franco of HR Specialists Group) and PR/Marketing (Joy Limanon of Peridot Consulting).”

A committee of distinguished hospitality and business experts will select the grantees, including consultant and media personality, Monti Carlo, who continues as our guest.

“Applications for the grant program will be accepted from May 17-23. Grant recipients will be announced on June 14. Independent, majority women-owned restaurants or culinary businesses in Los Angeles County are encouraged to apply, including catering companies and food trucks. Check out the specifics for eligibility.

“For decades, cooking at the James Beard House in Greenwich Village has been an aspiration for many chefs and considered a career milestone. In May of 2021, The James Beard Foundation launched the Beard House Fellows program presented by Capital One, which re-envisions the potential of this historic space into a hub of training and professional development for talented emerging chefs.” Each Fellow will have a one-month residence at the Beard House where JBF will provide hard skills training in finance, legal, media training, wine knowledge, social media, food policy and advocacy and leadership assessment. The May fellow is Nicole Merino. Chef Monti Carlo serves on the Advisory Committee.

Show 303, December 22, 2018: Show Preview with Co-Host Andy Harris

Now a mouthwatering preview of Saturday’s tasty show. We’re in the true Holiday spirit…It’s not, with profuse apologies, for dieters. If we’re successful we will always leave you incredibly hungry and thirsty. In our case, and upon careful reflection, that’s probably a pretty good thing… Happy Holidays. Back on the 29th with a fresh show for 2018’s finale. Please join us.

Founded by Chinese-Brazilian brothers Wing Lam, Ed Lee and Mingo Lee, Wahoo’s Fish Taco, a community mainstay and something of a global pop culture phenomenon, has been serving up its eclectic Mexican-Brazilian-Asian menu since 1988. It’s their 30th Anniversary this year. In early October Wahoo’s presented a celebratory dinner (paired with premium Sonoma wines) at the revered James Beard House in Greenwich Village, a singular honor. Riding the wave and joining us is Co-founder, Wing Lam.

What are the “Top 10” Specialty Produce items in 2018? What’s sprouting on the horizon for 2019? We now continue Robert Schueller’s informative report from two weeks ago. More will be revealed by our enthusiastic resident produce authority, Robert Schueller of Melissa’s. We respectfully refer to him as The Prince of Produce. You can call him the Produce Guru for short.

Our esteemed wine expert, Kyle Meyer of Santa Ana’s Wine Exchange joins us for two commentaries. You’ve been seeing them on the wines from Australia and New Zealand for awhile and now screw caps on premium wine are becoming more common on domestic wines for very sound reasons. A cork is perhaps more romantic but it has proven not to be the best closure for wine. Kyle was an early adapter to the joys of Wines from South Africa. There is more to the premium wines of South Africa than Chenin Blanc. We’ll uncork the facts.

It’s the 63rd edition of the proud Rose Bowl Game (“The Granddaddy of All Bowl Games”) tradition that is the Lawry’s Beef Bowl staged over two nights (December 27th and 28th) at the original Lawry’s The Prime Rib on Restaurant Row in Beverly Hills. It’s fanfare and grand pageantry at its best. Beef Bowl historian Todd Erickson plates the spectacle up for us.

Our own Chef Andrew Gruel joins us with another informative “Ask the Chef” segment. With the Holidays upon us it’s great to have a real working chef in our corner always providing handy and practical advice!

All of this and heaping helpings of extra deliciousness on this week’s not-to-miss show!

Wing Lam of Wahoo's Fish TacosIn early October Wahoo’s Fish Taco presented a sold-out, celebratory dinner (paired with premium Sonoma wines) at the revered James Beard House in Greenwich Village, a singular honor. When I first started Wahoo’s 30 years ago, all I wanted to do was create a fun and casual place for fellow surfers to hang out and eat great food. Fast forward to today, it’s an honor and a privilege to present on behalf of Wahoo’s at The James Beard House,” said Wing Lam, co-founder of Wahoo’s Fish Taco. “To be chosen and invited to New York with my brothers is beyond what we could’ve ever imagined.”

“Chefs must be invited in order to host a dinner at The James Beard House,” adds Lam. “We spent our entire careers catering some of the world’s biggest sporting and music events. Hosting dinner at The James Beard House is a testament to our hard work, and we can’t wait to show a brand-new audience what Wahoo’s Fish Taco is all about.

“It was 1988 when we, the Lee brothers, came together to open the first Wahoo’s Tacos in Costa Mesa, California, where the surf and skate industry had gathered.”

“We wanted to create a menu that was a reflection of our unique heritage. From China to Brazil, to Baja with hints of Greece, our bold, fresh flavors come from our memories of growing up in Brazil, surfing in Baja and working in our family’s Chinese restaurant.”

“Our food is true to this experience, worldly and uncommonly delicious. We’ll always offer you the best of where we’ve been to fuel your adventures.”

We’ve covered Jackfruit and Red Papaya. Number Eight on the Specialty Produce Hit Parade is Chayote Squash which is where we’ll pick the conversation up. It’s actually a fruit and a staple of the Creole kitchen.

Wines sealed with screw caps can actually age with grace. A cork is perhaps more romantic but it proven not to be the best closure for wine.

There is also a shortage of premium natural cork worldwide.

Kyle was an early adapter to the joys of wines from South Africa. While known for their whites there is more depth to the premium wines of South Africa than the familiar Chenin Blanc.

Show 226, June 3, 2017: Executive Chef Greg Daniels, Haven Gastropub, The James Beard Foundation’s Blended Burger Project

Greg Daniels of Haven GastropubThe national challenge of The James Beard Foundation’s annual Blended Burger Project is on! Answering the call in the OC is Chef Greg Daniels of Haven Gastropub in Orange with his creation of the Haven Breakfast Burger.

“The James Beard Foundations’ Blended Burger Project invites past and new Blended Burger Project™ participants to join a movement that strives to make burgers better by blending ground meat with chopped mushrooms, creating an incredibly delicious patty that’s healthier for your guests and more sustainable for the planet.”

The Haven Breakfast Burger contains more than 25% mushroom chorizo, combined with Haven’s custom grind, Tillamook sharp cheddar, maple coffee braised bacon, fried egg, arugula, and Haven ketchup, on an OC Baking Company double egg-washed brioche bun.

“My culinary team and I had a lot of fun creating a blended burger for the James Beard Foundation. Blending meat with mushrooms reduces calories, fat, and sodium while adding important nutrients like vitamin D, potassium, and B vitamins,” explained Chef Daniels, whose original Haven Burger has received national acclaim. “A blended burger also brings more sustainable, plant-based items to menus allowing Americans to enjoy the taste and flavor of the burgers they love, knowing it’s a healthier and more sustainable preparation.”

Haven Gastropub is asking guests to post photos with the hashtags #havenbreakfastburger and #blendedburgerproject. All guests who vote for their favorite blended burger online will also be entered to win an all-expense paid trip for two to the 2018 Blended Burger event at the James Beard House. More information and a list of all participating restaurants can be found online here.

We’ll hear all about blended burger deliciousness with Chef Greg.

Show 74, May 31, 2014: Chef Wolfgang Puck

Wolfgang PuckWhat is now known as California Cuisine never had a better day than when Celebrity Chef Wolfgang Puck opened the original Spago on The Sunset Strip in 1982. Its ambitions were modest…

Now the Wolfgang Puck Fine Dining Group has restaurants around the world with a second stronghold in Las Vegas.

Chef Puck was the first Chef to cook a meal at New York’s famed James Beard House. He is also the recipient of multiple James Beard Foundation Awards.

Another high-profile division, Wolfgang Puck Catering, provides the food for the annual Governors Ball for the Academy of Motion Picture Arts and Sciences. Wolfgang is better known internationally than many of the celebrities who he graciously serves!

Finally, Wolfgang Puck Worldwide, Inc. franchises casual Wolfgang Puck restaurants, licenses consumer products, is involved in book publishing, television and internet programming, and other licensing and merchandising efforts.

Wolfgang Puck’s most recent book, Wolfgang Puck Makes It Healthy – Light, Delicious Recipes and Easy Exercises for a Better Life is a personal project for him.

In the words of Chef Wolfgang Puck :

“I never, ever expected to write this book. If you had suggested to me ten years ago, or even five, that my next book would focus on healthy recipes and fitness, I would’ve said you didn’t know me very well.

I have figured out where I can modify ingredients to make a healthier dish. And today I can eat all my favorite foods without overeating anything.

I feel good because of the combination of eating well and exercising I’ve developed. Now I want to help you achieve the same goal, to feel healthy and happy, with plenty of energy to do the things you love to do.”

Chef Wolfgang’s practical advice is to cut down on the consumption of processed foods. Work more fresh fruit and vegetables into your diet along with more fish and chicken. It’s really worked for him! He proudly keeps up with his older boys now on their skiing adventures.
