Florent and Amelia Marneau of Marche Moderne at South Coast PlazaThe acclaimed French chef, Florent Marneau, was the opening Executive Chef for Joachim Splichal’s first restaurant in Orange County, Pinot Provence at the Westin South Coast Plaza. He attracted well-deserved raves from the critics. In the mid-2000’s Chef Florent and his wife, Amelia (a talented pastry chef in her own right) were contemplating a restaurant of their own.

Henry and his son, Anton, were fans of Chef Florent from Pinot Provence and doing some memorable private functions for the Segerstrom Family.

Chef Florent is with us to share the story of how Marche Moderne at South Coast Plaza in the Penthouse was born in 2007. It’s unusual for an entrepreneurial husband-and-wife team with modest resources to be given such an incredible opportunity. Their 8th Anniversary is in April.

Marche Moderne, which opened in 2007, has been described as “probably the best bistro in Southern California” in the Los Angeles Times by S. Irene Virbila; was crowned best restaurant in the OC by Orange County Register restaurant Critic Brad A. Johnson; and named in the Los Angeles Times 2014 “101 Best Restaurants” by Pulitzer Prize-winning restaurant journalist Jonathan Gold. The Marneaus combine a passion for market-inspired ingredients and classic French cooking techniques with modern touches at their enduringly popular restaurant.

Besides being all over Food TV (he bested Iron Chef Bobby Flay on Food Network’s “Iron Chef America”) Chef Eric Greenspan has made a name for himself in the rarified world of fine-dining. For almost two years he was the executive chef of Joachim Splichal’s highly-acclaimed flagship restaurant Patina. More recently he created The Foundry on Melrose Ave. In the Fall he returns to Melrose with the eagerly anticipated fine dining, Enclave.

Although Chef Eric Greenspan has created the more casual, Greenspan’s Grilled Cheese and The Roof on Wilshire, his heart and true passion remains in fine dining. We’ll talk about the future of fine-dining in Los Angeles and get Chef Eric’s perspective. We’ll also preview Chef Eric’s new series for the National Geographic Channel debuting in November.

The first Canstruction Competition is coming to Long Beach on August 21st. The resulting collections of food benefit Food Finders food rescue / food bank. It’s going to be a wild 12 hours benefiting people in need!

The Halos have an ace relief pitcher in Jason Grilli newly arrived in a trade deal with The Pittsburgh Pirates. In Pittsburgh he’s known for The Closer, a 3-decker grilled cheese sandwich using 9 different premium cheeses. He’s also part of the franchisee group bringing the popular Tom+Chee restaurants to Pittsburgh. Jason is with us live on the road from Globe Life Park in Arlington, Texas to talk about it.

The 2014 Los Angeles Food & Wine Festival (4th Annual) is once again upon us taking place in Downtown Los Angeles on August 21 -24. This is one of the biggest culinary festivals staged on the West Coast with culinary masters hosting power lunches, cocktail culture merging with some of the finest chefs for spirited dinners, and first –time events such as the “Ultimate Bites of L.A. Challenge” on Opening Night hosted by Graham Elliott and Fabio Viviani.

The 3rd Annual PigOut (benefiting Inspire Artistic Minds) is set for Sunday afternoon, August 24th at the California Scenario in Costa Mesa.

The main attraction will be a 250 pound Templeton Rye Duroc Pig of the Templeton Rye Heritage Pork Project.

The KTown Night Market and Block Party is coming to Angel Stadium on Friday and Saturday, August 22nd and 23rd. It’s 60 plus food trucks and vendors (including the Seoul Sausage Co.) and a large beer garden. Also there will be live music, games and rides. We’ll chat with the co-producer and one of the young founders of the participating Seoul Sausage Co.

Meet Mixologist Chris Amirault of Harlowe, a new bar that’s attracting a lot of attention in West Hollywood. Even his standard cocktails are very special. Chris also creates unusual draft and bottled cocktails.

Canstruction Long BeachThe first CANstruction Competition is coming to Long Beach on August 21st. The resulting collections of food benefit Food Finders food rescue / food bank. It’s going to be a wild 12 hours benefiting people in need!

Four teams comprised of five prominent local architectural and engineering firms will transform thousands of cans of food into larger than life artistic masterpieces. The structures may be built up to 10’ x 10’ x 10’ and will be comprised of edible canned goods totaling over 7,000 lbs.

The completed structures will be on display to the public from August 22nd through September 2nd.

CANstruction was founded in 1992 to help promote the design community and raise food donations for hunger relief efforts. CANstruction events have been held in over 140 cities worldwide donating over 15 million pounds of canned foods to alleviate the concern of hunger and malnutrition.

The main attraction will be a 250 pound Templeton Rye Duroc Pig of the Templeton Rye Heritage Pork Project. Only 25 of these special pigs are in existence.

Chef Mike Puglisi (ex-Thomas Keller’s Bouchon Beverly Hills) of the soon-to-be Electric City Butcher in Santa Ana will be performing a pig deconstruction demonstration.

Koreatown Night MarketThe KTown Night Market and Block Party is coming to Angel Stadium on Friday and Saturday, August 22nd and 23rd. It’s 60 plus food trucks and vendors (including the Seoul Sausage Co.) and a large beer garden. Also there will be live music, games and rides.

Seoul Sausage Co., the Season 3 winners of Food Network’s “Great Food Truck Race,” are curating the all-star mobile culinary experience. The 20 food truck lineup includes fan favorites such as Coolhaus, Slangin Corea, and Fluff Ice.

We’ll chat with the co-producer Danny Park and Yong Kim, one of the young founders of the participating Seoul Sausage Co.

Chris AmiraultMeet Mixologist Chris Amirault of Harlowe, a new bar that’s already attracting a lot of attention in West Hollywood. He’s the Head Barman there. This is from the 1933 Group (Oldfield’s Liquor Room and Sassafras.)

Even Chris’ standard cocktails are very special. Chris also creates unusual draft and bottled cocktails. Also of note are the carafe cocktails and the shared punch bowls.

Not easy to order a libation these days with all the tempting options!

Executive Chef Colin Crannell of the Lobster in Santa MonicaThe guests still think of Executive Chef Collin Crannell of The Lobster in Santa Monica as the “new” chef even though he’s been there four years. He has serious fine dining background going back to Joachim Splichal’s Patina and luxury hotels.

Of course he’s a lobster specialist. There is even a lobster ravioli on the menu with Santa Monica farmer’s market vegetables. He’s a regular at the network of Santa Monica Farmers Markets. He also does some pretty wonderful thinks with steak.

Chef Crannell impresses with soup, too.

His favorite appetizer is Burrata cheese with local seasonal Heirloom Tomatoes and Basil Pesto.

The Lobster is located at the top of the entrance to the historic Santa Monica Pier. It’s an incredible ocean view. The restaurant proudly defies the notion that if you offer a great view you can probably get away with serving mediocre food.

Seoul SausageA little over a year ago those three wild & crazy, youthful Korean-Americans (Ted and Yong Kim and Chef Chris Oh) opened the Seoul Sausage Co. in Little Osaka, West Los Angeles. They are known for melding distinctive Korean flavors into American sausages. Their other signature item is the “flaming balls.” Korean Fried Chicken (KFC) with corn bread is another specialty.

Seoul Sausage Co. opened right after the three partners won Season 3 of Food Network’s “Great Food Truck Race. First prize was a cool $50,000 and the new food truck they took across the country on the series. It’s affectionately known as “Big Mama.” The “Flaming Balls” was a dish created by necessity in an intense competition on “Great Food Truck Race.”

The (always entertaining) Seoul Sausage Co. guys are with us to talk about the sweet ride that has been the last year. The lines are still out the door.

Joe Manzella of Taps Fish House and Brewery and the CatchRestaurateur Joe Manzella is the proprietor of TAPS Fish House & Brewery in Brea and Corona, and The Catch in Anaheim on Katella near Angel Stadium.

Joe is also a lifelong sandwich fan and a history buff. He’s traveled the country researching regional favorites. Working with his executive chef he’s launched the “Famous 50” sandwich program. Each week a different regional favorite is showcased at both TAPS in Brea and The Catch in Anaheim. Thus far the Famous 50 has included favorites including lobster roll, Mama Manzella’s meatball sub, muffuletta, Chicago Italian Beef, and the Cubano.

According to Manzella to reach true sandwich nirvana five critical points must be met. He shares them with us on the show. One clue…All his bread comes from star baker Dean Kim at the OC Baking Co. in Orange.

Linda BurumLinda Burum is a well-known food journalist who currently contributes to Los Angeles Magazine and LA Weekly.

Linda is just back from a trip to Taipei, Taiwan where she did a bit of restaurant research.

Linda reports on her dining adventures there and mentions where you can get some of these same signature dishes locally.

Jon Blackford of A RestaurantWhat is now the popular A Restaurant on Pacific Coast Highway in Newport Beach is a classic dining spot dating back to 1926. A few years ago new, local ownership completely restored the place to its current ageless steakhouse atmosphere. It’s handsome with a very popular bar.

Jon Blackford is the executive chef. His charge is to continue to serve great steaks but also elevate the rest of the menu. Believe it or not he loves market fresh vegetables and amazes with beets.

He impresses with creative charcuterie and cheese plates and house-made grilled sausages.

Erin Whitcomb of Front Porch PopsErin Whitcomb’s Front Porch Pops were the hit of the Orange International Street Fair in Old Town Orange over Labor Day Weekend. They were being enjoyed everywhere on the Festival site. The pops are handmade in small batches.

Tangy Lemon Cream was the first frozen novelty sold back in 2010.

Erin’s Pop Philosophy:

  • We use real fruit and fresh dairy to make our pops.
  • Our pops are handcrafted by our staff using our own recipes.
  • You’ll never find artificial colors, flavors, or high–fructose corn syrup in our pops. Ever.
  • We use locally grown, organic produce whenever we can. We sell our pops at farmer’s markets and take great pride in saying, “The plums from that farmer over there are in this popsicle right here!”

New to the line (and just in time for the Holidays) are small batch pies. The crust is hand-rolled.

Providence RestaurantIn the opinion of the “SoCal Restaurant Show” this is L.A.’s finest seafood restaurant owned by Executive Chef Michael Cimarusti and business partner Donato Poto. Poto oversees the smooth-running front-of-the house there and also is the ultimate curator of the superb wine list. They previously worked together to great acclaim at Water Grill in Downtown Los Angeles before going out on their own and establishing Providence in the original home of Joachim Splichal’s Patina.

Amelia spoke about one of a series of delectable special events that Marche Moderne orchestrates during the year to keep the restaurant fresh. Now through December 30th is the festive “40 Days of Champagne and Caviar” Holiday Celebration. It’s a nightly special menu of six premium caviar selections and accompanying bubbly from four renowned Champagne houses along with the traditional accoutrements and caviar-friendly cocktails. How about that for Holiday spirit ?
