Ross PangilinanYear anniversaries in the turbulent, fine-dining restaurant business are occasions to be celebrated. A salute to owner/Chef Ross Pangilinan (ex-Leatherby’s Café Rouge in the Segerstrom Center for The Arts in Costa Mesa) who just observed the 1st Anniversary of downtown Santa Ana’s Mix Mix Kitchen Bar.

When it comes to owning a restaurant, there’s no such thing as smooth sailing. That being said, it seems as though we’ve had something to celebrate since the day we first opened our doors,” comments Chef Ross Pangilinan who received a nomination for Chef of the Year at the 2017 Golden Foodie Awards. “I am honored by the support of the Orange County community, grateful for the dedication of my team, and could not be more excited to see what new celebrations Year 2 will bring.”

An Orange County native, Ross Pangilinan discovered his passion for cuisine at a young age. Adventurous dining experiences he shared with his father and cooking shows like Frugal Gourmet, have influenced his global palate and helped define his career as a chef.

After high school, Pangilinan enrolled at Le Cordon Bleu in Pasadena. Excelling in his courses, he went on to work at various Southern California restaurants and in France for the two-Michelin-starred Les Trois Marche.

At the age of 21, Patina Restaurant Group recognized Pangilinan’s skills and offered him his first sous chef position at Pinot Provence in 2005. After two years, he returned to France to work in the Michelin-starred Regis restaurant where he strengthened his culinary technique and back of the house operations.

His sous chef position at the flagship Patina at the Walt Disney Concert Hall helped earn the restaurant its Michelin star in 2007. A year after various successes, including opening the modern Italian restaurant Sinatra within Encore at the Wynn in Las Vegas, Pangilinan returned to Patina Restaurant Group in 2009 as Executive Chef at Leatherby’s Café Rouge, where he led the culinary team for 7 years.

Now he proudly presents, Mix Mix, his global dining concept exemplifying the techniques and traditions formed throughout his culinary journey.

It’s Dinner nightly and Sunday Brunch (think Shrimp Lumpia & other delights) from 11:00 a.m. to 3:00 p.m. Closed on Monday.

Tal Ronnen of Crossroads KitchenTal Ronnen, founder and chef of Crossroads and author of The New York Times Bestseller, The Conscious Cook, became known nationwide as the chef who prepared the meals for Oprah Winfrey’s 21-day cleanse. He made his culinary mark at a number of high-profile events, having catered Ellen DeGeneres and Portia de Rossi’s wedding, Arianna Huffington’s party at the Democratic National Convention, and a U.S. Senate Dinner.

A graduate of the National Gourmet Institute, Tal conducts master vegetarian workshops for students and staff at Le Cordon Bleu campuses nationwide. He is the collaborating chef at The Wynn and Encore Hotels in Las Vegas.

Jet adapted his signature Drunken Noodles (Giada De Laurentiss’ favorite) for the evening substituting tofu for pork. The dish earned high praise from the guests.

The Featured Cocktail was Mekhong Smoke. It’s Mekhong rum, mescal, thai basil, tamari salt and blistered shishito pepper.

Elizabeth WhittChef Instructor Elizabeth Whitt is, fortunately, no stranger to the show. When Chef Jet has a culinary quandary he goes right to Chef Elizabeth. She is a Le Cordon Bleu, Paris trained chef with expertise in both hot foods and pastry. She lived in Paris for 12 years and is fluent in the language.

In this segment Elizabeth talked about pumpkin. Should it be fresh or can it be canned? Also, the step-by-step instructions for preparing and baking the perfect, classic pumpkin pie.

Chef Elizabeth has a great tip about when to use fresh pumpkin. If the recipe is half-pumpkin (as an ingredient total) then by all means use fresh.

Elizabeth has an “Appetizers and Hors D’oeuvres” class coming up on December 5th from 6:30 to 9:00 p.m.

Barbara FairchildBarbara Fairchild is a respected food journalist, cookbook author, consultant, and educator. She is best known to us as the long-time former editor of Bon Appetit Magazine when they were based in Los Angeles.

This summer she taught a course in the Arthur L. Canter Journalism Institute at the prestigious New York University. Barbara tells us all about that as well as provides us with some great Manhattan dining suggestions ranging from a deli find to fine dining Italian and a comfortable celebrity chef restaurant that’s really worth going to.

Merrin Mae FuentebellaChef Merrin-Mae is a cheftestant on the first season of Food Network’s high pressure “Cutthroat Kitchen” hosted by Alton Brown. Her episode is entitled “Kiss My Grits” and was first aired on October 6th.

The level of competition was particularly intense and the sabotages were devilish. Chef Merrin-Mae made us proud in SoCal (she is a local) and she won the episode. One of the other cheftestants was a “Chopped” winner and was eliminated after the first round!

She currently works at Alma with executive chef Ari Taymor. When she did the show she was part of the culinary team at Sotto.

The latest fad diet that is getting a lot of attention is the Paleo Diet (also known as the caveman diet.)

Jason Kessler of Food RepublicFood journalist Jason Kessler of Food Republic and Bon Appetit was actually on the diet for 40 days and shares his experience with us. Jason’s observation is that because the diet is so restrictive you can drop some weight rather quickly. The severely limiting factor is that it gets monotonous rather fast.

anita-lauAnita Lau of the Mad Hungry Woman blog is with us with a San Diego dining discovery. Anita was a nominee for a Golden Foodie award in Journalism this year.

Anita’s find is Ristorante Kaz. This is an intriguing Japanese Italian fusion cuisine spot. Anita’s favorite bite was an angel hair pasta dish with creamy sea urchin with spinach and salmon roe.

Josiah CitrinFifteen years ago when fine-dining restaurants located outside of the protective umbrella of luxury hotels were at a low ebb in Los Angeles Chef Josiah Citrin sold his stake in a very popular Santa Monica dinner house and went out on his own to open a ultra-luxe, destination, freestanding, fine-dining, contemporary French restaurant with California accents. Josiah is a new member of the Bocuse d’Or USA Foundation’s prestigious Culinary Council. SoCal Restaurant Show Holiday PartyIt’s holiday time on “The SoCal Restaurant Show” today so let the festivities begin. Jet and his panel of distinguished experts, are presenting the celebratory menu for a full holiday feast along with some great cooking & entertaining tips.

With Chef Jet in-studio are William Lewis, sommelier and managing partner of The Winery Restaurant and Wine Bar in The District in Tustin and Le Cordon Bleu Paris – trained Elizabeth Whitt, an accomplished chef instructor and pastry chef.

Joining the panel by phone at 11:00 a.m. is Chef Mark Kalenderian of the historic Tam O’Shanter Inn in Atwater Village. Chef Mark is our beef expert this morning.
