Ross Pangilinan of Mix Mix Kitchen BarWhen accomplished fine dining chef Ross Pangilinan left the Patina Group’s Leatherby’s Café Rouge (Segerstrom Center for the Arts) to venture out on his own he wanted to create a more personal, chef-driven concept. His vision came to be as Mix Mix Kitchen Bar located in a bit of an unlikely location in Santa Ana. In normal times it’s a globally inspired dining concept presenting dishes which see influence from traditional French and Italian to modern Filipino cuisines.

During the ban on dine-in Chef Ross has shifted to preparing Tapas Family Kits (for 2 or 4 guests) for curbside pick-up. Also in Chef Ross’ family of restaurants is Terrace by Mix Mix at South Coast Plaza and the newly opened ReMix Kitchen Bar in the Long Beach Exchange.

For Friday, Saturday and Sunday Terrace by Mix Mix is serving Share Plates (for 1 to 10 guests) for curbside pick-up. For Friday, Saturday and Sunday Remix Kitchen Bar offers a Tasting Menu for 2 or 4 guests for curbside pick-up.

Ross PangilinanChef / Proprietor Ross Pangilinan (Mix Mix Kitchen Bar, Santa Ana) launched Terrace by Mix Mix in South Coast Plaza in late September. Located on level 3 of the Crate and Barrel / Macy’s Home Store Wing, TERRACE by Mix Mix concentrates on well-priced, market-driven small plates.

The cuisine showcases Pangilinan’s eclectic style, which is influenced by French, Italian, and modern Filipino flavors, as well as his refined technique. An approachable wine list offers varietals by the glass and bottle as well as rotating craft beers.

True to its name, the restaurant features full-service evening dining (and Weekend Brunch) in a beautifully designed covered terrace off the west end of Bridge of Gardens. A small wine bar, additional seating, an open kitchen and a counter offering a weekday lunch quick-service menu is inside.

Pangilinan opened his first restaurant, Mix Mix Kitchen Bar, in downtown Santa Ana in 2016. The name “Mix Mix” is inspired by the English translation of the Filipino dessert Halo-Halo and is also a play on Pangilinan’s culinary style and Filipino-American identity. The restaurant has been an unqualified success since opening, garnering accolades as best new restaurant from Orange Coast Magazine and earning the chef critical praise. Chef Ross was honored as “Rising Star Chef of The Year” at the 2018 Golden Foodie Awards.

Pangilinan’s culinary journey began upon graduating from Le Cordon Bleu in Pasadena. He traveled to France to work in the Michelin-starred Les Trois Marches in Versailles. Back in the U.S., he was hired as sous chef to open the critically acclaimed, fine dining Sinatra restaurant at Wynn Las Vegas. Returning to Southern California, Pangilinan worked as sous chef at the Patina flagship and became a protégé of founder chef Joachim Splichal. The Patina Group recognized his talent and named him executive chef at Leatherby’s Cafe Rouge, which is part of South Coast Plaza’s fine dining collection.

Ross PangilinanYear anniversaries in the turbulent, fine-dining restaurant business are occasions to be celebrated. A salute to owner/Chef Ross Pangilinan (ex-Leatherby’s Café Rouge in the Segerstrom Center for The Arts in Costa Mesa) who just observed the 1st Anniversary of downtown Santa Ana’s Mix Mix Kitchen Bar.

When it comes to owning a restaurant, there’s no such thing as smooth sailing. That being said, it seems as though we’ve had something to celebrate since the day we first opened our doors,” comments Chef Ross Pangilinan who received a nomination for Chef of the Year at the 2017 Golden Foodie Awards. “I am honored by the support of the Orange County community, grateful for the dedication of my team, and could not be more excited to see what new celebrations Year 2 will bring.”

An Orange County native, Ross Pangilinan discovered his passion for cuisine at a young age. Adventurous dining experiences he shared with his father and cooking shows like Frugal Gourmet, have influenced his global palate and helped define his career as a chef.

After high school, Pangilinan enrolled at Le Cordon Bleu in Pasadena. Excelling in his courses, he went on to work at various Southern California restaurants and in France for the two-Michelin-starred Les Trois Marche.

At the age of 21, Patina Restaurant Group recognized Pangilinan’s skills and offered him his first sous chef position at Pinot Provence in 2005. After two years, he returned to France to work in the Michelin-starred Regis restaurant where he strengthened his culinary technique and back of the house operations.

His sous chef position at the flagship Patina at the Walt Disney Concert Hall helped earn the restaurant its Michelin star in 2007. A year after various successes, including opening the modern Italian restaurant Sinatra within Encore at the Wynn in Las Vegas, Pangilinan returned to Patina Restaurant Group in 2009 as Executive Chef at Leatherby’s Café Rouge, where he led the culinary team for 7 years.

Now he proudly presents, Mix Mix, his global dining concept exemplifying the techniques and traditions formed throughout his culinary journey.

It’s Dinner nightly and Sunday Brunch (think Shrimp Lumpia & other delights) from 11:00 a.m. to 3:00 p.m. Closed on Monday.

Ross PangilinanYou know Executive Chef Ross Pangilinan from his time at Leatherby’s Café Rouge in Costa Mesa at The Segerstrom Concert Hall. He’s now launched his own ambitious venture, Mix Mix Kitchen Bar (A Globally Inspired Chef-Driven Concept) in Downtown Santa Ana.

It’s an appealing, somewhat unfamiliar menu (Dinner) of global dishes with influences from traditional French and Italian to modern Filipino cuisines. Sunday Brunch has recently been added to the menu.

“The inspiration for my menu at Mix Mix comes from both the memories I embrace from childhood and techniques I’ve learned throughout my culinary career,” commented Chef Ross Pangilinan, who has worked in Michelin-starred restaurants across France and California. “At an early age, my father instilled in me an appreciation for diversity in food; together, we explored everything from hole-in-the-wall Chinese eateries to high-end French restaurants.”

Dishes like the Filipino Ceviche and Tropical Verrine pay homage to Pangilinan’s Filipino heritage. Among his signature dishes, the Tropical Verrine is a modern interpretation of the restaurant’s namesake dish, Mix Mix, the literal translation from Halo Halo, a traditional Filipino dessert featuring a mixture of sweets.

“The dining adventures I shared with my father sparked my inspiration for cuisine at a young age,” added Pangilinan. “To this day, I draw inspiration from the meals we shared together.”

In addition to its eclectic menu of global cuisine, Mix Mix offers handcrafted libations from its craft cocktail bar. The beverage program focuses on ‘shaken & stirred’ cocktails created with house-made bitters, syrups, and infusions, as well as French wines and craft beer from around the world.

Prominent features of the new restaurant include a succulent garden wall behind the bar and in the dining room, a 6-seat ‘butcher’s block’ Chef’s Table that peers directly into the restaurant’s open kitchen. The reservation-only Chef’s Table will offer a five-course “Oui Chef” menu that evokes a dining experience for all the senses.

anita-lau-mad-hungry-womanAnita Lau is the well-known and closely followed Diary of a Mad Hungry Woman blogger. She principally shares her Orange County and San Diego finds with her followers but there is an occasional Los Angeles find along the way, too. Her prose comes to life with her accompanying food photos. We’ll catch-up with Anita with both a profile of a San Diego and Orange County restaurant.

A new favorite of hers in La Jolla is Catania, part of Whisknladle Hospitality. She is over the moon for their Charred Local Spot Prawns. “There are no words to describe how mind-blowingly delicious these plump crustaceans are.”

In Costa Mesa Anita raves over the pre-theater dining at Leatherby’s Café Rouge at the Segerstrom Center for the Arts. Executive Chef Ross Pangilinan (a previous guest on the show) puts a lot of creativity into planning these special menus themed with the shows.

“This blog is a journal of mostly my eating adventures, but also, other things I’m passionate about, including travel, the arts, and also, necessities to complete my life. Centered predominantly in and around Orange County, CA, some will extend to Los Angeles, San Diego and beyond. I am constantly searching for delicious food to eat and fun things to do, nothing is out of bounds. Sometimes it doesn’t end well, but I can definitely say, it will always be an interesting journey.”

An Invitation to Preprandial Drinking,” Monday, May 11th, 2015 at one of L.A.’s happening restaurants, Scopa Italian Roots in Venice. Sampling of classic aperitifs is on the menu. It’s all in celebration of National Aperitif Day. Scopa’s Steve Livigni and MOTAC’s Philip Dobard join us to explain what an aperitif is and how it fits into a modern cocktail program.

When two highly regarded young chefs get together for a collaborative dinner that’s a recipe for true dining excitement! On Tuesday, May 12th, Chef Eric Samaniego of Little Sparrow in Santa Ana and Chef Carlos Salgado of Taco Maria at SoCo in Costa Mesa will partner up for a special chefs collaboration event, Little Maria. The five-course dinner will be hosted at Little Sparrow, featuring dishes that motivate both chefs to break out of their comfort zones. Little Sparrow’s Chef Eric Samaniego is our guest with all the tantalizing 411.

Minjares, a Southern California native, and a 33 year restaurant veteran was the beverage manager at SkyCity Restaurant at the Seattle Space Needle prior to joining The Ranch team three years ago. Currently, he is combining the unique offerings of the restaurant’s heirloom vegetable farm in creating farm-to-glass cocktails, complimenting the restaurants’ seasonally driven menu.

Pastry Chef Mariah Swan of BLD in the Fairfax District of Los Angeles is no stranger to listeners of the “SoCal Restaurant Show.”

Her latest, long-in-the-works venture, is ICDC (Ice Cream, Doughnuts and Coffee) located next door to BLD on Beverly Blvd. The sweets menu changes daily. Swan created the popular Doughnut Shoppe Wednesdays at BLD. Look for her signature butterscotch doughnut.

It’s part of the prominent Patina Restaurant Group. Unusually it’s only available for dining on performance nights. Fortunately it’s not a stripped-down pre-theater, “get ‘em out fast” approach. It’s leisurely fine-dining that’s part of the full show experience.

Currently the creative pre-theater menus are the continuation of their Broadway-themed menus. They take inspiration from the music and characters of the running shows. Pangilinan and team transport patrons into the world of highly acclaimed theatrical performances through carefully crafted three-course menus that pay tribute to each cherished tale.

June showcases a Broadway jukebox musical, Motown, with dishes such as Motown Sound featuring Smoked and Grilled Pork Porterhouse, Lobster Mac and Cheese, Roasted Vegetables, and Rosemary Jus.

The changing Broadway show-themed menus are $45 per guest for 3 courses or $64 inclusive of menu and wine pairings.

Leatherby’s is also available for distinctive private dining functions for lunch or evening when there is not a performance.

“Guests can expect the unexpected” Samaniego said. “This has been in the works for a long time and Carlos and I are excited it’s finally happening.”

The Little Maria dinner features two seatings, at 6:00 p.m. and 8:30 p.m., priced at $85 per person with an optional $30 wine pairing. Tickets must be purchased in advance. To maintain the element of suspense the menu will not be revealed until a few days before the dinner.

Both Chef Samaniego and Salgado have made a huge impact on the Orange County culinary scene in the past year. Little Sparrow recently had their debut on Season One of Bravo’s “Best New Restaurant” series hosted by Chef Tom Colicchio while Chef Salgado was recognized by Food & Wine magazine as one of the “Best New Chefs of 2015.”

Minjares, a Southern Califorenia native, and a 33 year restaurant veteran was the beverage manager at SkyCity Restaurant at the Seattle Space Needle in Seattle prior to joining The Ranch team three years ago. Currently, he is combining the unique offerings of the restaurant’s heirloom vegetable farm in creating farm-to-glass cocktails, complimenting the restaurants’ seasonally driven menu.

The Edwards Ranch Estates heirloom vegetable farm is located on Ranch Owner, Andrew Edwards’s private property and is where a portion of the produce is grown that supplies the restaurant’s menu. The farm supports Executive Chef Michael Rossi’s vision of a seasonally driven menu and provides Rossi the creative freedom and flexibility to design menus and dishes around the seasons. Initially intended for restaurant menu development, the farm will now support a seasonally driven beverage menu.

Rossi and Minjares are currently working together on plans for the upcoming season. “Having the ability to blend the flavors from fruits, herbs, peppers and heirloom vegetables grown on our own farm, creating our own unique flavors for cocktails, it just doesn’t get any better,” said Minjares. Currently Minjares is also barrel aging and crafting his own bitters and aromatics for the new Spring cocktail menu.

This Spring’s beverage menu is divided into three sections, leading with Edwards Ranch Estates farm crafted cocktails featuring the LemonThyme Cocktail with house-made Meyer Limoncello, Nolet Gin, muddled Edward Ranch Estates lemon thyme, simple syrup, fresh lemon and a splash of soda. Listed next are the Signature cocktails and includes the Chipotle Margarita – Riviera Magazine’s 2013 Cocktail Tour Winner and the Old Fashion Cowboy. Signature Martinis & Manhattans complete the new menu and includes The Ranch Cucumber Martini, The Two-Step and the California Manhattan.

Her latest, long-in-the-works venture is ICDC (Ice Cream, Doughnuts and Coffee) located next door to BLD on Beverly Blvd. Everything is created in-house. The menu of ice cream and doughnuts changes daily.

Swan created the popular Doughnut Shoppe Wednesdays at BLD which ICDC now replaces. Now you can get incredible fresh doughnuts every day ICDC is open. (Closed on Monday.) You can get doughnut holes by the half-dozen. Look for her signature butterscotch doughnut.
