Jason McClain of the Jonathan ClubChef Jason McClain is the executive chef of the storied Jonathan Club, a very exclusive private club in Los Angeles established in 1894 with a rich history. He’s been an executive chef with The Four Seasons, the exec at Pechanga Resort & Casino, and has owned his own restaurants.

The Jonathan Club’s main building is located in Downtown Los Angeles with a second facility, the Jonathan Beach Club (established in 1927) located on the sand in Santa Monica. A prestigious social club at this level needs to have outstanding food and beverage as an amenity for their discerning members.

Chef McClain will take us behind the scenes on what resources and imagination he uses to fulfill this promise. He likes to say (with a dash of humor) he’s responsible for “the best restaurant in Downtown that no one knows about.”

One small example of his commitment to quality is his urban rooftop garden positioned on a former handball court where seasonally they grow heirloom tomatoes, broccolini, baby carrots, blueberries, figs, snap peas and yuzu. All the fruits and vegetables find their way onto the Club’s menu. This represents over $100,000 in produce annually. It helps that Chef Jason’s father is a retired landscape architect and could creatively bring the rooftop garden project in on a modest budget.

The title of the piece is “This isn’t your father’s pasta: The future of Italian cuisine has arrived.” He characterizes it as “nothing short of a revolution.”

We’ll hear about this movement from Johnson along with the restaurants in Los Angeles and Orange County who are part of this exciting new wave.

You’ll remember the always opinionated Chef Shirley Chung (Las Vegas – based) as a finalist in Season 11 of Bravo’s “Top Chef.” She is opening a modern Chinese restaurant in Irvine at the end of September.

It’s the Orange International Street Fair in Old Towne Orange this Labor Day Weekend. In the center of the action in a restored bungalow on W. Chapman is Wahoo’s Fish Taco. Co-founder Wing Lam joins us to discuss what’s new at Wahoo’s.

The Palm Restaurant, known for classic steakhouse fare, has been an institution in West Hollywood since its launch in 1975. That location is closing at the end of September. In early November a new, 6,000 square foot Palm will begin welcoming guests in Beverly Hills.

Shirley ChungYou’ll remember the always opinionated Chef Shirley Chung (Las Vegas – based) as a finalist in Season 11 of Bravo’s “Top Chef.”

Prior to her ride to fame on “Top Chef” she held the Executive Chef position at China Poblano by Jose Andres at The Cosmopolitan.

Chef Shirley is opening a modern Chinese restaurant in Irvine at the end of September. “I like my cuisine to tell a story,” commented Chef Shirley, who has developed the innovative menu of sharable plates for TWENTY EIGHT. “My inspiration for this menu is reflective of my childhood years in Beijing, my past experiences, and my travels, all of which have inspired me to push the envelope.”

“In addition to the menu of modern Chinese specialties, diners can look forward to an enticing Dim Sum and Small Plates menu, a full bar with a focus on craft cocktails, and private dining options for both large and small gatherings.”

Raymond Martin is the new executive chef for Wahoo’s. New on the menu are Street Tacos, a Kale Kai Salad, and Wahoo’s Wings.

The Palm Beverly HillsThe iconic Palm Restaurant in West Hollywood will close and lock its doors for the last time on September 30th after almost 40 years. The better news is that their new 6,000 square foot restaurant seating 185 guests will debut at in Beverly Hills at 267 N. Canon Dr. in early November.

Kedric Francis of the Orange County Register Magazine and Coast Orange County Magazine has been out and about exploring the latest finds in the OC. He was at the very exclusive pre-opening preview lunch for the eagerly anticipated Din Tai Fung Dumpling House in South Coast Plaza on August 15th and will share some of his observations.

Executive Chef Michael Rossi (ex-Napa Rose) has been at the helm of The Ranch Restaurant & Saloon since it’s opening day in early 2012. He was actually on the ambitious project over a year testing recipes before the first guests were greeted. The Ranch (unusually) has its own farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh fruits and vegetables used at the highly regarded and much acclaimed restaurant. It’s a chef’s dream to have these resources…

Freddy Vargas is the forward-thinking executive chef of the high profile Scarpetta located in the Montage Beverly Hills across a pocket park from Thomas Keller’s Bouchon Beverly Hills. This is one of Celebrity Chef Scott Conants’s restaurant properties. At lunch on Weekdays he’s operating a to-go Paninoteca. Think gourmet Italian sandwiches like a Porchetta. It’s spiced pork belly, broccoli rabe pesto and a fried hen egg on house-baked bread.

Those are the spots we all want to go…Brad shares with us some of his favorites in both Orange County and Los Angeles. Travis Rodgers is the easy-going Iron Man of personalities on AM 830 KLAA. Every weekday morning he’s on AM 830 KLAA talking sports for four hours beginning at 6:00 a.m. After he’s finished at 10:00 a.m. on AM 830 he continues his national show for Yahoo Sports Radio for another hour until 11:00 a.m. That’s five hours on Weekdays as the solo host.

Travis’ second favorite subject is good food. Did we say Mexican? The discussion with Travis is on assorted cravable eats.

Guest Host Celebrity Chef Eric Greenspan of Foundation Hospitality Group and Producer Andy preview the show.

Besides being all over Food TV (he bested Iron Chef Bobby Flay on Food Network’s “Iron Chef America”) Chef Eric Greenspan has made a name for himself in the rarified world of fine-dining. For almost two years he was the executive chef of Joachim Splichal’s highly-acclaimed flagship restaurant Patina. More recently he created The Foundry on Melrose Ave. In the Fall he returns to Melrose with the eagerly anticipated fine dining, Enclave.

Although Chef Eric Greenspan has created the more casual, Greenspan’s Grilled Cheese and The Roof on Wilshire, his heart and true passion remains in fine dining. We’ll talk about the future of fine-dining in Los Angeles and get Chef Eric’s perspective. We’ll also preview Chef Eric’s new series for the National Geographic Channel debuting in November.

The first Canstruction Competition is coming to Long Beach on August 21st. The resulting collections of food benefit Food Finders food rescue / food bank. It’s going to be a wild 12 hours benefiting people in need!

The Halos have an ace relief pitcher in Jason Grilli newly arrived in a trade deal with The Pittsburgh Pirates. In Pittsburgh he’s known for The Closer, a 3-decker grilled cheese sandwich using 9 different premium cheeses. He’s also part of the franchisee group bringing the popular Tom+Chee restaurants to Pittsburgh. Jason is with us live on the road from Globe Life Park in Arlington, Texas to talk about it.

The 2014 Los Angeles Food & Wine Festival (4th Annual) is once again upon us taking place in Downtown Los Angeles on August 21 -24. This is one of the biggest culinary festivals staged on the West Coast with culinary masters hosting power lunches, cocktail culture merging with some of the finest chefs for spirited dinners, and first –time events such as the “Ultimate Bites of L.A. Challenge” on Opening Night hosted by Graham Elliott and Fabio Viviani.

The 3rd Annual PigOut (benefiting Inspire Artistic Minds) is set for Sunday afternoon, August 24th at the California Scenario in Costa Mesa.

The main attraction will be a 250 pound Templeton Rye Duroc Pig of the Templeton Rye Heritage Pork Project.

The KTown Night Market and Block Party is coming to Angel Stadium on Friday and Saturday, August 22nd and 23rd. It’s 60 plus food trucks and vendors (including the Seoul Sausage Co.) and a large beer garden. Also there will be live music, games and rides. We’ll chat with the co-producer and one of the young founders of the participating Seoul Sausage Co.

Meet Mixologist Chris Amirault of Harlowe, a new bar that’s attracting a lot of attention in West Hollywood. Even his standard cocktails are very special. Chris also creates unusual draft and bottled cocktails.
