Joshua TurnerLocated in Macy’s South Coast Plaza shopping center in Costa Mesa, California, the new Wolfgang Puck Kitchen specializes in Wolfgang’s interpretation of global comfort fare. The menu features a variety of signature recipes made with the best available, locally-sourced ingredients.

Highlights include the signature Chinois Chicken Salad, Crab Cakes with marinated tomatoes and basil aioli, and Bacon Wrapped Meatloaf with Yukon gold potato puree, crispy onion strings and with a port wine sauce. Wolfgang Puck was one of the pioneers of California-style pizza at the original Spago located high above the Sunset Strip in West Hollywood. The Smoked Salmon Pizza with dill cream, capers and chives is now an off-menu item at Spago but part of the regular menu at Wolfgang Puck Kitchen.

As one of the newest casual concepts in the Wolfgang Puck dining collection, Wolfgang Puck Kitchen promises a welcoming and relaxed dining environment, appropriate for a business meeting, leisurely lunch, family dinner or meal on the go. A peaceful, shaded patio (where you can have a real conversation) is part of the design.

Laurent BrazierThe newly launched Bistro Papillote at The OC Mix at SOCO is the first authentic French restaurant concept from Chef Laurent Brazier, Executive Chef Instructor of La Cuisine Culinary Arts located inside Macy’s Home Store in South Coast Plaza. On the menu is simple French Bistro cuisine.

Bistro Papillote provides full service breakfast and lunch, including Chef Laurent’s interpretation of quiches, crepes, Croque-Monsieur, and grab-and-go sandwiches and salads. There is even a formidable New Orleans-style Muffaletta Baguette (sandwich) with salami, mortadella, ham, swiss and tapenade. At the open-air crepe bar, guests are able to watch as delicious, fresh crepes are prepared right in front of them.

Bistro Papillote by La Cuisine is available for private events catered by Chef Laurent’s catering company, La Cuisine. The French wines served there are hand-selected by Chef Laurent who holds his Advanced Certificate of Wine & Spirit from the London WSET, as well as the Level One Sommelier from the Court of Master Sommeliers.

Somehow Chef Laurent also makes the time to teach a popular beginning wine appreciation class at LCA Wine at SOCO. He keeps it fun…

Alan WongChef Wong is one of the distinguished pioneers of Hawaiian Regional Cuisine. This group of influential chefs was advocating using local ingredients and sustainability years before the concept was fashionable. In Honolulu he is the owner / chef of Alan Wong’s and the more casual Pineapple Room located in Macy’s in the Ala Moana Center. On Maui his property is Alan Wong’s Amasia at the Grand Wailea Resort. That’s Hawaii Regional Cuisine with sushi and a robata grill.

Chef Alan defines Hawaii Regional Cuisine as an artful blending of all the cultures now populating the Islands. In addition to native Hawaiian food it includes influences from the Chinese, Japanese, Portuguese, Koreans, and Filipinos, among others.

Chopped Ahi Sashimi and Avocado Salsa StackThere are many ways to experience dinner at Alan Wong’s. The a la carte menu features salads and entrees. There is also an a la carte “Side By Side Tasting” menu. Additionally there is both a “Chef’s Tasting Menu” and “A Tasting of The Classics” prix fixe menu. Both of the “Tasting” menus have optional wine pairings matched with each course.

Miya Nishimura is Chef Alan’s Chef De Cuisine at Alan Wong’s. She is a rising star in her own right.

On Sunday, June 2nd Chef Alan Wong is one of the celebrity chefs with a tasting station at the annual Share Our Strength Taste of the Nation Benefit at Studio at Montage Laguna Beach Resort. The event starts at 4:00 p.m. One hundred per cent of the ticket sales revenues goes toward hunger relief efforts in Orange County
