Anita Lau of Mad Hungry WomanThe Mad Hungry Woman blogger, Anita Lau, joins us with a gem of a San Diego County dining discovery in Del Mar. This is Tasting Room Del Mar with both outdoor and indoor seating.

Earlier in his career the chef there, Steven Lona, was part of the opening team at both Marche Moderne in South Coast Plaza as well as Charlie Palmer’s at Bloomingdales in South Coast Plaza. No wonder the food is first-rate.

The standout dish for Anita was the Pork Belly “because it is absolutely fantastic.” The full review is available on her blog.

Anita also shares her first impressions (especially the libations) of the long-in-the-works El Mercado Modern Cuisine in Santa Ana. This is a new concept from the chef/proprietor (Daniel Godinez) of the highly regarded Anepalco.

We’re hearing a lot from high-end steakhouses talking about premium aged beef. There is even a butcher shop/restaurant locally highlighting a burger with a 100-day dry-aged beef patty. What should we know about aging beef ? Joining us to chat about aging beef are the “Meatheads” from West Coast Prime Meats, Jay Henderson and Terry Hanks. They have over 50-years of combined, hands-on experience in the business!

Holland DoughertyIn August the James Beard Foundation announced the ten inaugural recipients of the JBF National Scholars Program. We’ll meet the West recipient of the National Scholars Program, Holland Dougherty, who is at University of California, Davis. She is a PhD Candidate in the Sustainable Agricultural Modeling Lab.

“We are proud that our Foundation’s newest scholarship program is committed to awarding $20,000 in financial aid to ten extraordinary scholars each year. A desire to pursue a career in the culinary arts is no longer limited to cooking in the kitchen,” said Kris Moon, vice president of the James Beard Foundation. “Just as the types of careers available in the culinary arts have evolved, so too is the Foundation’s scholarship program. The National Scholars Program supports a diverse group of students exploring virtually every educational discipline, whether that be history, anthropology, economics, management, or the sciences—as viewed through the lens of food.”

This year, and in each subsequent year, up to ten annual scholarships in the amount of $20,000 each will be granted. To ensure regional diversity, one awardee is selected from each of the ten geographic regions defined by the James Beard Foundation Awards.

The JBF National Scholars Program is a part of the larger James Beard Foundation Scholarship Program, which is awarding more than $750,000 in financial aid available in 2016, the largest annual total in the Foundation’s history.

Established in 1991, the scholarship program assists aspiring and established culinary professionals who plan to further their education at a licensed or accredited culinary school or hospitality institution, college, or university. In the past 25 years, the program has not only grown in visibility and financial scope, but in the breadth of subjects its recipients have embraced. As of 2016, the Foundation will have awarded over $6.5 million in financial aid to more than 1,800 recipients.

Though the state’s been producing whiskey since at least the 1860s, there’s never been such a selection of styles at such high quality as there is now. And you probably haven’t had the chance to experience the range for yourself, but with the latest edition of “The Thoughtful Feast: A California Whiskey Dinner,” all that’s changed.

On October 11, the Pacific Food & Beverage Museum (PacFAB), in collaboration with Women Who Whiskey – Los Angeles, will host a dinner featuring five highly distinctive styles of California whiskey, each paired with a sumptuous dish from the kitchen of 1212 Santa Monica, the newest culinary star on Santa Monica’s Third Street Promenade. Diners will enjoy the five whiskeys listed below, both neat and cocktailed, and a diverse five-course menu featuring lamb, pork belly, roasted root vegetables, and much more.

A portion of all proceeds support the National Food & Beverage Foundation (NatFAB), home of PacFAB, The Museum of the American Cocktail, and the Southern Food & Beverage Museum.

Dinner is $85 for all NatFAB, Women Who Whiskey, and Culinary Historians of Southern California members, or $95 for non-members, and includes tax and gratuity. “We wanted to produce a unique promotional piece that showcases the individual personalities of the culinary talent here, which in so many cases include body ink,” said Henry. “The calendar is our way of paying homage to those behind the scenes of our delicious dining experiences in Long Beach.”

More than just a one-time editorial feature, the calendar is a high quality promotional piece and expected to warrant a keepsake status beyond its 12 months. Based on the enthusiasm from the featured chefs, Henry expects it become an annual project.

Anita joins us with her spirited report.

“Founded in 2009 by Wayne Klintworth and Bob Laing, Bass & Flinders is an artisanal distillery, producing grape spirit using a traditional Alembic Pot Still to create a range of world‐class distillations including award winning gins, Australia’s first grape based Vodka, Limoncello, Grappa and an outstanding five-year aged spirit, Ochre.”

She will provide us with the highlights of a magnificent Chinese New Year banquet she enjoyed with colleagues as well as profiles a bakery/café with an Irish twist that’s one of San Diego’s hottest brunch spots.

Anita enjoyed a lavish Chinese New Year repast with prominent San Diego chefs (including the La Jolla Beach & Tennis Club’s Bernard Guillas) at the reenergized Emerald Chinese Cuisine in San Diego. The 12-course dinner was a “journey of Hong Kong classic cuisine with a modern inspiration.”

Anita’s brunch discovery is Chef Maeve Rochford’s Sugar and Scribe in La Jolla. Chef Maeve was the winner of Season 2 of Food Network’s “Holiday Baking Championship.” She is also very prominent in the expatriate Irish community in California. In addition to the crave-worthy baked goods Chef Maeve features recipes from her Irish grandmother. Think Rochford’s Shepard’s Pie and Erie Hash.

“This blog (Diary of A Mad Hungry Woman) is a journal of mostly my eating adventures, but also, other things I’m passionate about, including travel, the arts, and also, necessities to complete my life. Centered predominantly in and around Orange County, CA, some will extend to Los Angeles, San Diego and beyond. I am constantly searching for delicious food to eat and fun things to do, nothing is out of bounds. Sometimes it doesn’t end well, but I can definitely say, it will always be an interesting journey.”

When Anita is not writing or researching food she serves as Co-President of the Los Angeles / Orange County Chapter of Les Dames d’Escoffier.

Ted BassettiWhen industry veterans and partners Chef Michael Cimarusti, Craig Nickoloff and Donato Poto collaborate on a food venture you expect nothing but the very best. This is the same team that created the uber-successful Connie & Ted’s in West Hollywood.

Newly launched from this prominent culinary group is Cape Seafood and Provisions, a sustainable seafood market, on N. Fairfax Avenue in Los Angeles.

Cape Seafood and Provisions aims to provide guests with sustainable wild-caught whole fish, and custom filets, in addition to a variety of prepared items including housemade stocks and sauces, and grab-and-go dishes such as chowder and lobster rolls. For those who prefer turf over surf, the shop will also carry natural and USDA Prime steaks and chops from West Coast Prime Meats (Brea, California), which also supplies product to Providence and Connie and Ted’s.

“With Cape Seafood and Provisions, we look forward to sourcing the seafood people cook in their homes, and to further educate guests about what types of fish are safe to buy,” says Cimarusti. “If clients can’t find what they want in the shop, I will do my best to procure it within 48 hours,” he adds, provided it aligns with the shop’s sustainable prerequisites.

Cape Seafood and Provisions will offer the freshest seafood available from sustainable fisheries, sourced locally when possible. Daily selections may include sustainably caught whole, filleted, and portioned fish, East and West Coast oysters, live spot prawns, crabs, lobsters (when in season), clams and mussels, scallops, live uni (in season) and cleaned uni in trays, fresh and frozen shrimp and squid, and imported and domestic caviar.

The market will also sell a selection of “under-appreciated” species of fish, most notably California Groundfish such as Chuckleheads, Vermillion Snappers, Sheepshead, and Rock Cod, whose populations have recently been restored through fisheries management and Marine Protected Areas.

SOCO Uncorked 2015The 2nd Annual SOCO Uncorked in Costa Mesa returns on Thursday, March 31st at South Coast Collection and The OC Mix. Event organizer Nancy Milby of LCA Wine and participating Chef & Restaurateur Noah Blom of ARC (and the soon to be Restaurant Marin and The Guild Club) join us with a tasty preview.

SOCO Uncorked is unlike any other wine and food festival – it is truly a collaboration between all the tenants at  South Coast Collection (SOCO) and The OC Mix. Bites are provided by the culinary offerings at the food hall, including award-winning restaurants like Taco MariaPueblo, ARC, and more. To create the dishes, they use tenant offerings like Savory Spice Shop for all their rubs and spices. Nancy Milby and Master Sommelier Peter Neptune work with the restaurants individually to pair a wine varietal based on the dish they serve.

SOCO’s own Chef Noah Blom, owner and chef of the award winning ARC restaurant at SOCO, will demonstrate (as part of SOCO Uncorked) how to deconstruct a duck, and discuss how all of the various and sundry parts are used. Small bites will be offered of the delicious morsels, featuring duck of course, and will represent all three of Chef Noah’s SOCO restaurants, including the highly anticipated Restaurant Marin and The Guild, both coming soon to SOCO. Wines will be provided be Gerard Bertrand of the southwest of France.

Gerry KentPUBlic 74 opened quietly in San Juan Capistrano last year. On the menu are unusual libations and substantial pub food presented in a rustic gastropub setting. This is from the same team who created the popular PUBlic House in Old Town Temecula in 2008.

With ambiance designed to be industrial, relaxing, and rustic, PUBlic 74 features Edison light bulbs, reclaimed wood, and corrugated metal ceilings. The dining area and bar are full of varied details to offer patrons a true gastropub feel and experience. With two flatscreen televisions and private seating arrangements for up to 30 individuals, PUBlic 74 welcomes a wide variety of clientele. Its family friendly focus can be seen in its menu “For the Littles.”

They also offer select tables and booths to offer patrons the chance to enjoy the ambience of the dining room in close proximity to the bar and kitchen.

House specialties include the Destructed Chicken Pot Pie. It’s an herb grilled chicken breast atop sautéed Spring vegetables.

Josiah CitrinCharcoal Venice, the new inviting, neighborhood restaurant from Michelin-starred Chef and Proprietor Josiah Citrin (our guest), opened early last month on W. Washington Blvd., a burgeoning culinary destination in Venice, CA bordering Marina del Rey. A more casual concept than Citrin’s Melisse, Charcoal Venice upholds the chef’s philosophy “In Pursuit of Excellence,” with a simpler, more approachable menu.

As the name suggests, the daily menu features craveable comfort foods cooked over a live fire via a wood oven, over charcoal, in the coals, or in a Big Green Egg – imparting a smoky, backyard barbeque flavor with the use of premium oak and hickory lump coals. Adding to the communal atmosphere of the restaurant, these dishes are all large, family-style portions meant to be shared.

Citrin also offers starters, including a unique tartare selection, such as beef heart and lamb, alongside a selection of farmers’ market vegetables including a whole head of cabbage baked in the coals until it’s completely black on the outside and smoky on the inside.

“This is the type of casual concept I’ve always wanted to open. It’s the food that I prepare for my friends and family in my backyard on the weekend. Not too fancy, just delicious food that you crave,” says Citrin. “Mélisse is your special occasion restaurant, while Charcoal Venice is an every night place for a refreshing beer and a perfectly grilled entrée.”

In fall 2014 Dolin Estate broadened its scope further with the release of a new line of Central Coast Pinot Noir wines from such highly regarded vineyards as Talley Rincon, Bien Nacido and Solomon Hills. In 2015, Dolin Estate will introduce additional single-vineyard Pinot Noir and Chardonnay wines from the Central Coast.

Following their first vintage of Dolin Estate Chardonnay, Elliott and Lynn Dolin looked to the Central Coast to find a winemaker whose experience exceeded what was available in Southern California. They set up a meeting with Kirby Anderson at their Malibu Coast Vineyard, and right away they knew they had found a winemaker who shared their appreciation for wines made in a seamless, silky and voluptuous style. In 2010 Kirby began making Dolin Estate’s Chardonnay, and in 2012 he helped expand the portfolio to include Central Coat Rose of Pinot Noir and Pinot Noir.

Built in 1928, the Santora building houses the bakery’s 2,300-square-foot space, adding a “retro” feel with art-deco elements, reminiscent of simpler times. As the largest Blackmarket Bakery yet, the Santa Ana location remains family friendly as it sees the addition of new menu items, including craft beers and hard ciders. The menu will also feature a new lineup of savory “bar bite” offerings, sandwiches made with fresh-baked breads, seasonal salads and sweet and hearty brunch items (the latter of which will be coming this Spring).

Like its Costa Mesa counterpart, which opened in 2012, the Santa Ana restaurant focuses on its made-from-scratch daily retail offerings such as Chef Rachel’s artisanal breads and now-famous “eggywiches,” as well as delectable desserts, including the Total Eclipse Mousse Cake, Cookie Monster Bread Pudding, and her ever-popular Black Widow Tart. The highlight of the festivities will be the competition to select Team USA representing the United States in the prestigious Bocuse d’Or international cooking competition in Lyon, France in early 2017. This is the Olympics of the culinary arts.

Chef Richard Rosendale (Richard Rosendale Collective) is our guest. He is on the Chef Jury on Dec. 17th in Las Vegas and led Team USA at the Bocuse d’Or in 2013.

Anita Lau is better known to regular listeners of the “SoCal Restaurant Show” as the Mad Hungry Woman blogger. She was living in Hong Kong in the 90s before the turnover to China. Anita is just back from a 3-week visit. We’ll get a insider’s view of the dining scene there during the glory days of the British and now under Chinese authority.

One of the up-and-coming wineries in the Guadalupe Valley in Northern Baja is Lechuza, founded in 2005. It’s owned by Ray Magnussen (with his wife, Patty) who is also the hands-on winemaker. They are Americans. We’ll meet Ray.

Our regular Guest Host, Chef Andrew Gruel of Slapfish, was just in Chicago, a great dining out city whether you’re going for high-end gourmet or great street food. Chef Andrew will discuss his finds ranging from a true Chicago hot dog experience to the best in coal-fired pizza.

She was living in Hong Kong in the 90s before the turnover by the British to China. Anita was just back to Hong Kong for a 3-week visit. We’ll get a insider’s view of the dining scene there during the glory days of the British and now under Chinese authority.

Anita will fill us in on the impact of Michelin Stars in Hong Kong and also the best street food. Michelin in now even rating “Street Food” which seems a bit odd.

Anita notes that the big deal celebrity chefs are opening high-profile restaurants in Hong Kong. Gordon Ramsay is already there and Anita crossed paths with Chris Cosentino of “Top Chef Masters” fame there, too.

Born in Hong Kong and now living in Orange County, California, Anita Lau is an international author and writer who has lived in Malaysia, Australia, Nebraska, Oregon, San Francisco and also, Hawaii. Her obsession with food began at an early age but it wasn’t until her early 20s when her experimentation with cooking led her to start a small catering business which she would run in her spare time while at college in Australia.
