Andy Harris and Andrew Gruel at the Pechanga Wine Festival for Angels Radio AM830 KLAAExecutive Chef Andrew Gruel of the rapidly growing Slapfish empire with restaurants in Huntington Beach, Laguna Beach, Newport Beach, LAX, Irvine at UCI and, now, Brea, is back as today’s special Guest Host.

Great to see so many listeners last Saturday at the 8th Annual Pechanga Wine Festival at the Pechanga Resort & Casino in Wine Country Temecula. Thanks so very much for supporting the good work of Habitat for Humanity.

We’re going to be talking about it on March 12th but Chef Josiah Citrin is hosting an exclusive culinary celebration at Melisse in support of the ment’or BKB Foundation on Sunday. March 13th. It’s seven incredible courses of contemporary Parisian fare prepared by a dream team of six guest chefs. Reservations for the limited, two-seatings (5 and 8:00 p.m.) can be made via Open Table or by calling 310.395.0881.

Next an ear-catching preview of Saturday’s inspiringly decadent show and not, with profuse apologies, for dieters. If we’re doing it right we will always leave you hungry and thirsty. In our case that’s actually a good thing…

What’s new, and fresh, in the world of fruits and vegetables? Glad you asked. Joining us for an update is our resident Produce authority, Robert Schueller of Melissa’s World Variety Produce. For starters the incredible Ojai Pixie Tangerines are back and there is a new, distinctive Dragon Fruit from Israel that’s sweet. And wonderful grapes are now available outside of the Summer season.

Chef Jason Montelibano at EATS Kitchen & Bar at Hotel Irvine (a locals’ favorite) in Irvine is at it again culinarily speaking. He’s just rolled out an all-new Good EATS Sunday Brunch. There is an epic $14 build-you-own Bloody Mary bar and Mimosa flights. Look for the just-debuted, over-the-top menu items including Shrimp and Grits, and Cinnamon Crunch French Toast.

On Saturday evening, March 12, as part of Cochon 555 L.A., Chef Steven Fretz will be hosting, along with six other celebrity chefs, a refined three-hour culinary experience, the Chef’s Course Dinner Series, at Church Key in West Hollywood. It begins with a reception featuring a selection of passed hors d’oeuvres followed by a seated dinner and premium wine pairings. The benefit dinner is limited to 40 seats. Tickets are available online at $125 per person and 100 percent of the proceeds will benefit Piggy Bank.

Moruno, from Executive Chef Chris Feldmeier and Managing Partner David Rosoff (formerly of Mozza) is now open at the Original Farmers Market in Los Angeles. Bringing a unique style of upscale casual dining to one of Los Angeles’ historic sites, the warm, vibrant flavors of the southern Spanish inspired menu is supported by a stellar wine list focused on Spain, the deep south of France, plus various islands and volcanoes. Executive Chef Chris Feldmeier is our guest.

Orange County Restaurant Week, organized by the OC Restaurant Association, will celebrate its eighth year as the region’s highest profile culinary event, with the 2016 Orange County Restaurant Week to be held from Sunday, March 6th through Saturday, March 12thThis year, 140 restaurants in 21 Orange County cities will offer a wide variety of options, from casual and family-friendly establishments, to upscale and fine dining. Following the screening will be a Q & A with filmmaker Laura Gabbert and Jonathan Gold moderated by KCRW’s “Good Food” host, Chef Evan Kleiman. C-CAP L.A. Program Director, Lisa Fontanesi, joins us with the 411 on the evening.

All of this and lots more absolutely incredible deliciousness on Saturday’s show!

Robert Schueller of Melissa's World Variety Produce in the AM830 KLAA StudioWhat’s new, and fresh, in the world of fruits and vegetables? Glad you asked. Joining us is our resident Produce authority, Robert Schueller of Melissa’s World Variety Produce.

For starters the incredible Ojai Pixie Tangerines are back and there is a new, distinctive Dragon Fruit from Israel that’s actually sweet. And wonderful, flavorful grapes are now available outside of the Summer season.

Savor the tasty, delicate treat of tree-ripened Ojai Pixie Tangerines bursting with sunshine-sweet flavor and juice. This seedless variety is the result of open pollination of Kincy, King and Dancy mandarins. Popular backyard trees in Ojai, California, they bear small to medium-sized citrus, having pebbly textured, yellow-orange rinds with loose skins that peel easily. The segments separate neatly for a quick snack, making them a great choice for eating out of hand.

Grapes from South America are now deliciously available in the non-Summer season. Highlights are the Melissa’s Muscato grapes (red and green Summer flavors.)

Green to amber-green Muscato seedless grapes arrive with a crisp, firm texture and a delicious tangy sweetness. Toss in fruit salads for texture, color, and a burst of juicy flavor. Succulently delicious— the ideal picnic or lunchbox treat.

Exclusively available from Melissa’s, Red Muscato grapes have a bright, rosy red color, firm texture with a very high sugar content. Slightly sweeter than its juicy sweet green-skinned cousin, Red Muscato grapes are a great addition to any fresh fruit ‘n cheese platter, sprinkled on yogurt or tossed in a green salad. This variety’s refreshing sweetness makes it a healthy out-of-hand snack food for kids and smart adults alike!

Jason MontelibanoChef Jason Montelibano at EATS Kitchen & Bar at Hotel Irvine (a locals’ favorite) in Irvine is at it again. He’s just rolled out an all-new Good EATS Sunday Brunch starting at 11:30 a.m.

There is an epic $14 build-you-own Bloody Mary bar and Mimosa flights. The Mimosa flight arrives with four, 6 oz. Mimosas. Passion Fruit and Blood Orange was a recent selection along with Strawberry Lemon. Look for the just-debuted, over-the-top menu items including Shrimp and Grits, and Cinnamon Crunch French Toast.

A “SoCal Restaurant Show” favorite is the Chilaquiles con Pollo. With the chicken is a sunny-side up egg, fried tortillas, roasted tomato salsa, lime sour cream, avocado and cotija cheese.

There is indoor and outdoor seating available. A cozy fire pit, too. With the lush landscaping and thoughtful design you’d never know you’re a long fly ball from the 405 San Diego Freeway.

Chef Jason knew he was destined to be a chef from an early age. From starting culinary school as a teenager, to refining his skills in some of the best kitchens in Southern California, his love for chef-driven, sustainable cuisine has been honed through years of hard work and dedication. His passion for international flavors and market-fresh ingredients are on full display in every single plate that leaves his kitchen.

Steven FretzOn Saturday, March 12, as part of Cochon 555 L.A., Chef Steven Fretz (our guest) will be hosting, along with six other celebrity chefs, a refined three-hour culinary experience, the Chef’s Course Dinner Series, at Church Key in West Hollywood. It begins with a reception featuring a selection of passed hors d’oeuvres followed by a seated dinner and premium wine pairings. The benefit dinner is limited to 44 seats. Tickets are available online at $125 per person and 100 percent of the proceeds will benefit Piggy Bank.

Our own Andrew Gruel is preparing a course with a Spring theme. Also on the distinguished chefs’ team is Ray Garcia (Broken Spanish) and Eric Greenspan (Mare, The Roof on Wilshire, Greenspan’s Grilled Cheese.)

Piggy Bank seeks to build a future for family farming with the goal of changing the future of food and promoting long-term farming sustainability. Piggy Bank will raise heritage breed pigs to be gifted to new farmers and culinary schools, assist new family farms with herd development and help existing farms challenged by disaster.

Chris FeldmeierMoruno, from Executive Chef Chris Feldmeier and Managing Partner David Rosoff (formerly of Mozza) is now open at The Original Farmers Market in Los Angeles. Bringing a unique style of upscale casual dining to one of Los Angeles’ historic sites, the warm, vibrant flavors of the southern Spanish inspired menu is supported by a stellar wine list focused on Spain, the deep south of France, plus various islands and volcanoes. Sherry will also feature prominently as will Morunos’ own proprietary vermouth called “Vermina.”

A Moruno, which was inspired by the duos trip to Spain, is a kebab cooked over live coals and marinated in spices (cumin, paprika, turmeric, peppers, etc.) highlighting Moorish and North African culinary influences.

The bar program from Dave Kupchinsky utilizes both pre-bottled and on tap cocktails in an efficient and creative manner and will run the deepest within the boutique upstairs Bar Vermut (coming soon) which will also feature its own unique menu.

By folding fine dining principles into a vibrant and welcoming environment, Moruno (and its sibling restaurant Bar Moruno opening soon at Grand Central Market) delivers great value through its’ unique and approachable brand of hospitality.

Executive Chef Chris Feldmeier is our guest.

Following the screening will be a Q & A with filmmaker Laura Gabbert and Jonathan Gold moderated by KCRW’s “Good Food” host, Chef Evan Kleiman.

On his many ventures to discover hidden gastronomic gems throughout the city, Gold frequently encounters underserved communities and the kids who live in them. Wanting to do more to create opportunities for the local youth, Gold and Laura Gabbert, the director of City of Gold, happily partnered with C-CAP LA on this project.

Taking place at The Wine Bar at the Landmark Theaters Westside Pavilion, the City of Gold event begins with a reception featuring premium wines from the Wine Exchange and craft beer from El Segundo Brewery and Smog City Brewing Co. as well as some of Gold’s favorite foods including sliders from West Coast Prime Meats, pork tostadas from Susan Feniger and Mary Sue Milliken’s Border Grill, crudités and fruit from Melissa’s Produce, desserts from Spago and an oyster bar, courtesy of Michael Cimarusti’s new Cape Seafood and Provisions.

Show 152, December 26, 2015: Show Preview with Guest Host Chef Andrew Gruel and Executive Producer & Co-Host Andy Harris

The happiest of Happy Holidays (Happy Hanukkah, Merry Christmas & Happy New Year) to all of our listeners and we’re back live with a fresh show (that’s sure to please) on January 2, 2016. Please join us often in the New Year!

Andrew Gruel at the AM830 KLAA StudiosExecutive Chef Andrew Gruel of the rapidly growing Slapfish empire with restaurants in Huntington Beach, Laguna Beach, Newport Beach, LAX, Irvine at UCI and, now, Brea, is back with us by phone in the 2nd segment.

Next a mouthwatering preview of Saturday’s high-energy and appropriately festive show and not, with apologies, for dieters. If we’re doing it right we will always leave you hungry and thirsty. In our case that’s probably a good thing…

Christmas Day is a difficult day to dine-out. For the most part the restaurants that are open are Chinese restaurants or restaurants located in Hotels. Executive Chef Michael Hung (ex-Faith & Flower) of Viviane Restaurant at the Avalon Beverly Hills really went the extra mile for his Christmas Day Dinner Menu. Executive Producer Andy was there and talks about the upbeat experience.

Our regular Guest Host, Chef Andrew Gruel of Slapfish, was just quoted in a front page New York Times Food Section piece, “Casting a Wider Net – Lesser-known, more sustainable fish are landing on American menus.” The article was written by Jeff Gordinier. Chef Andrew has discussed this significant trend on the show previously and we’ll revisit it.

There is just never enough time to talk with our always informative resident produce guru, Robert Schueller of Melissa’s World Variety Produce. We’ll pick up where we left off in his last report just before Thanksgiving. Looking ahead Robert will also share his Top 5 Produce Trends for the New Year. You will be surprised…

The Rose Bowl arguably has the richest history of college bowl games. It is affectionately known as “The Granddaddy of Them All” for good reason. Celebrating its 60th year of grand tradition as part of The Tournament of Roses and the Rose Bowl Game is the Lawry’s Beef Bowl. Our guests are the long time organizer (24 years) of the event for Lawry’s, Colleen Donatucci, and Todd Erickson, the author of Road to the Rose Bowl – 50 Years of Lawry’s Beef Bowl. Bring on the silver cart…

Bravo’s “Top Chef” has been an enormous hit for the emerging network. It’s now airing Season 13 which is, appropriately, all California – based. It’s also made a media star of Co-host Tom Colicchio. This season a couple of Southern California chefs are Cheftestants including the OC’s Amar Santana of Broadway by Amar Santana and the just opened Vaca in Costa Mesa. Food journalist Anne Marie Panoringan (who contributes the widely read “On the Line” chef profiles for OC Weekly) is writing an opinionated weekly recap of “Top Chef” with the emphasis on the OC perspective. We’ll talk to her about this.

It’s Champagne time. Our resident wine authority, Kyle Meyer of Wine Exchange in Santa Ana, is with us to discuss “Grower Champagne.” It’s a delightful passion at Wine Exchange.

There is still just never enough time to talk with our always informative resident produce guru, Robert Schueller of Melissa’s World Variety Produce. He’s back with a helpful, fact-filled 2nd segment this morning. Robert is profiling the current options for Variety Onions and Variety Potatoes.

All of this and lots more absolutely incredible deliciousness on Saturday’s show!

“In 1956, a new event honoring each team was launched by the late Richard N. Frank of Lawry’s, with the approval of the Tournament of Roses. Over time, with careful attention from Frank and the Lawry’s organization and the supportive partnership of the Tournament of Roses, the Lawry’s Beef Bowl became one of the Rose Bowl’s legendary traditions.”

“Eventually it was noted (and promoted) that the teams consuming the largest amounts of prime rib seemed to be winning on the playing field as well. A tongue-in-cheek item titled “Correct Steer,’ in the January 11, 1965 issue of Sports Illustrated claimed that “roast beef is better than tea leaves, crystal balls and fortune cookies” in predicting the Rose Bowl victor.”

Kyle Meyer of Wine ExchangeIt’s that celebratory time of year when our thoughts turn to Champagne. Our resident wine authority, Kyle Meyer of Wine Exchange in Santa Ana, is with us to pop the cork on “Grower Champagne.” It’s a delightful passion at Wine Exchange.

“This has been a passion of ours for probably a decade. We love all kinds of Champagne. But the majority of the Champagne produced comes from large, almost industrial producers who make ‘mass quantities’. The secret to the ‘big boys’ success? Marketing and consistency. The marketing part is simply awareness…the art of making people believe that one’s particular bubbly is the best and most prestigious. Usually that also involves heavy promotions, ‘boots on the ground’ out in the marketplace, ice buckets, and heavy discounts to high profile restaurants and clubs. All of these things fall on the ‘brand awareness’ side.”

“The beauty of grower Champagne is the fact that these individual artisan producers can be a lot more ‘individualistic’. They are not concerned with selling millions of cases to the public at large. The grapes for these individual cuvees come from a single village or cluster of villages that have their own unique character by virtue of their locations. This is the element of terroir, which is kind of like a ‘bonus’ or extra something that you won’t necessarily find in the large house cross regional blends.”

Manila Sky Nutty Jack ice CreamWhat’s new in ice cream ? (Sorry we just missed National Ice Cream Month…) Consider Manila Sky Ice Cream. This line of gourmet, sweet indulgences is a fusion of authentic Filipino inspired tropical ingredients combined with creamery fresh California milk. The flavors are bold.

What started as a hobby for founder Anthony Reyes and his wife has grown (since 2012) into a prosperous business. What’s not to love about creamy ice cream?

The captivating flavors are Coco Rico, Mango Dream, Mango Verde, Nutty Jack, Purple Yumm and Viva Avocado.

Nutty Jack Ice Cream is a distinct, tropical jackfruit ice cream with roasted cashews and a hint of sea salt. The star of this flavor is the Filipino jackfruit : a tropical fruit with notes of mango, pineapple and banana. Pairing jackfruit with cashews is a quintessential Filipino flavor combination that marries the depth of roasted cashews with the tropical sweetness of the jackfruit.”

We’ll chill with Co-founder Anthony Reyes.

Andrew GruelThe raw oyster bar seems to be popping up as an attraction at a lot of restaurants these days including ones that offer very little seafood. It’s a legitimate trend…

Satarist Jonathan Swift once wrote, “He was a bold man that first ate an oyster.”

There are three primary species of oysters that are commercially harvested domestically. They are the Pacific, Eastern and the Olympia. They can be sold under different names depending on where they are harvested. Live oysters are best enjoyed as fresh as possible.

Oysters are high in calcium and iron. They provide a good source of protein.

Our own resident seafood expert, Chef Andrew Gruel, will provide some needed 411 on what every listener should know about enjoying these plump bivalves that now are seemingly on restaurant menus everywhere.

Chef Ida Rodriquez of Melissas World Variety ProduceHatch Chile season is upon us! Fresh Hatch Chiles, grown only in the Mesilla Valley of New Mexico, are available for just a few short weeks each year in August and September. Many connoisseurs consider them the world’s tastiest chiles.

Once roasted, Hatch Chiles are easy to peel and seed. Roasting heightens the robust earthy flavor of the chiles and the texture of the thick walls of the chile pod becomes lusciously rich. These unique qualities, and the pepper’s variable heat (unlike other chile peppers, Hatch Chiles come in varieties that cover the full spectrum of heat levels) have earned Hatch Chiles great popularity far beyond the local community of Hatch, New Mexico.

Melissa’s World Variety Produce has led the charge in popularizing the coveted Hatch Chiles and developing many great recipes using them. From now through mid-September Melissa’s will be sponsoring weekend Hatch Chile Roasting parties at area supermarkets including at select Bristol Farms and Gelson’s. Check the Melissa’s website for locations, dates and times.

Melissa’s Corporate Chef, Ida Rodriguez, joins us to highlight the joys of Hatch Chile season.

Brendan CollinsAt the age of 15, Chef Brendan Collins quit secondary school to follow his dream and enroll in culinary school, where is was classically trained in French technique. By 17, the talented Nottingham native had his first job at London’s La Gavroche, a Michelin two-star restaurant. Today Collins is the Executive Chef and Proprietor of both Birch in Hollywood as well as the Executive Chef of The Corner Door in Culver City.

Drawing on his training in butchery and belief in using the whole animal, Collins is dedicated to using only the best ingredients and cooking food that he likes to eat. He combines impeccable French technique, seasonal California ingredients, and his inimitable “British lad” attitude to create a cuisine that is at once comforting and exciting, while maintaining a relaxed, English pub atmosphere

For the past three years, The Corner Door has been known as one of the best spots for cocktails in all of Southern California, filling both the bar and dining room with guests imbibing on their always seasonal and innovative beverage program. And now, with Executive Chef Brendan Collins at the helm of the kitchen, The Corner Door has introduced a completely new Dinner Menu with eats to match.

Collins, formerly the chef at such notable spots as Melisse, Anisette and Palihouse, opened his own acclaimed restaurant Waterloo & City just next to The Corner Door until he decided to close (and sell) it late last year. Though he was also working on his newly opened Hollywood restaurant, Birch, at the same time, Collins was deeply invested in Culver City. “It is a close-knit community, and all the restaurants are friends with each other,” he says. “I lived and worked in Culver City for seven years, and wanted to keep a connection with the neighborhood.“

As Executive Chef, Collins will be cooking at The Corner Door at least one day a week, but his longtime lieutenant and Chef de Cuisine Ali Haji has taken charge of day-to-day operations. Haji has worked with Collins continually for the last eight years, beginning at Mesa, in Costa Mesa. “I am closer to Ali than anyone, maybe even my own wife,” Collins says. “He knows what I like and the standards I like to keep; he is ready to step up and run his own kitchen.”

Show 133, August 1, 2015: Chef Carla Hall

Carla HallABC’s “The Chew’s” Chef Carla Hall is, fortunately, no stranger to the show. She is a Daytime Emmy Award-winning chef and best-selling cookbook author.

Hall is a true believer that, “If you’re not in a good mood. The only thing you should make is a reservation.”

Last Saturday (July 25th.) Chef Carla was the honoree at the James Beard Foundation’s Chefs & Champagne benefit in The Hamptons. In New York this is always the annual culinary highlight of the Summer. It’s held on the grounds of the Wolffer Estate Vineyard in Sagaponack. In addition to free-flowing Champagne over 40 celebrated chefs (including Chefs Tom Fraker and Marco Zapien from Melissa’s) served their own delectable creations.

A silent auction at Chefs & Champagne consisting of fine-dining experiences, wines and spirits, cookware, and culinary travel packages raised a record-breaking amount of over $75,000 to support the James Beard Foundation’s mission and educational programs, including culinary student scholarships and the organization’s annual food conference on sustainability, public health, and nutrition.

In June she was part of First Lady Michelle Obama’s Presidential Delegation to the World Expo in Milan and the USA Pavilion. The Delegation toured the USA Pavilion which showcases American leadership on global food security and development issues, innovation, climate change and sustainability, and nutrition and health.

Just as wine is to the French or beer is to the Germans, whiskey – especially bourbon and rye – is an integral part of the history and culture of the United States. The Art of American Whiskey traces the arc of this beloved, renowned spirit – from its earliest days in the Colonial era, through the Civil War, Prohibition, the Great Depression, and up to the current craft-distilling boon. Author and whiskey expert Noah Rothbaum is our guest.

They are just as tasty and actually typically priced at a better value. Unfortunately they are known as “trash fish.” Don’t let that name fool you. Smelt, sardines, and mackerel can be delicious.

All of this and lots more absolutely incredible deliciousness on Saturday’s show!

Show 132, July 25, 2015: Robert Schueller of Melissa’s World Variety Produce

Robert Schueller of Melissa's World Variety ProduceThe esteemed Price of Produce, Robert Schueller of Melissa’s, is back to update us on the fresh and juiciest grapes of Summer. New this year are Jelly Drops Grapes. Returning are the coveted Cotton Candy grapes.

Melissa’s Muscato grapes vary in color from green to red to black and are hybrids of some very special seedless grape varieties. They make a perfect summer snack with their crisp texture and mouthwatering, juicy interior. Muscato Grapes are much sweeter than the average grape, measuring at a brix (sweetness) level of at least 22 compared to the average grape brix of about 16.

Toss Muscato Grapes into a summer fruit salad, add to your favorite sauce, or eat right out of hand. These delectable summer treats are a great addition to any dessert.

Jelly Drops Grapes are a hybrid of the popular Thompson Seedless grape and the rich, meaty Concord grape. The result is a plump, juicy, dark purple seedless table grape with a thin skin. Their aromatic, earthy flavor is similar to that of a Concord, but mellowed by the mild sweetness of the Thompson. This variety is a perfect out of hand summer snack fruit or delicious when used as a sweet sauce ingredient for almost any kind of meat or poultry dish.

Cotton Candy Grapes™ are an unusual new hybrid variety developed over eight years by breeding wild grape species in California. As its name implies this grape has a distinctive flavor that does, remarkably, taste very much like the spun sugar confection. This is not a genetically engineered product; but rather a tedious hand-pollination process was employed that resulted over many seasons

The fruit has an initial burst of Cotton Candy flavor that recedes into a mild, juicy sweetness. Actually, these green to light yellow seedless grapes are low in acid and pleasantly sweet without being overly sugary. A great new healthy snack food for kids or the child in all of us!

Here he worked with hundreds of chefs, fisherman and like-minded organizations establishing a national culinary awareness for the sustainable seafood movement.

Lesser-known fish species are just as tasty as the seafood stars and typically priced at a better value. Unfortunately they are known as “trash fish.” Don’t let that regrettable name fool you. Smelt, sardines, and mackerel can be delicious.
