What crazy edible will they next put on a stick? One of the all-star, Fair Food personalities is the well-traveled Midway Gourmet, Chef Dominic Palmieri of Biggy’s fame on the RCS Carnival Midway.

Chef Dominic has noticed a taste trend in addition to the continuing appeal of spicy flavors. That’s sour. The creative minds at The Midway Gourmet have found spicy & sour inspiration and now perfected the all-new Hot Cheeto-n-Cheese Pickles which debuts at the OC Fair. It’s premium dill pickle chips smothered in cheese sauce and then topped with crunchy Hot Cheetos (crushed.)

Also a juicy, Hot Cheeto-n-Cheese Burger with premium Angus beef. “It’s a flame-grilled charbroiled burger sandwiched between a toasted buttery bun dipped in melted cheddar cheese then rolled in ground-up hot Cheetos. The burger is then topped with melted cheese and whole crunchy hot Cheetos.”

If you love to cook or love to eat, this is the place to meet! “Culinary Arts is again taking center stage at the 2021 OC Fair in the OC Promenade. The Main Stage there is booked every day throughout the fair and will be host to chefs, bakers, farmers, floral artists, food bloggers, mixologists, brewers, butchers and more. (Every evening there’s a great band to provide music.)” The OC Fair’s long-time Agriculture Education Supervisor, Evy Young, is our guide to all the delights.

Proprietors of Sixmilebridge Vineyards and Winery, Jim and Barbara Moroney, “came to Paso Robles with the singular dream of producing wines that had they found them elsewhere, would become favorites of theirs. The Moroneys want to express the singular character of their Westside Paso soil in wines they look forward to drinking every day.” “Sixmilebridge is best known for it’s estate grown Cabernet Sauvignon and Bordeaux-style blends. Their commitment to showcasing world-class wines begins with organically farmed, limestone-rich Paso Robles vineyards.” Jim Moroney joins us to pull the cork on Sixmilebridge Vineyards and Winery.

Robert Schueller of Melissa’s (our resident Prince of Produce) presented two, well attended talks on the Culinary Stage in the OC Promenade on Opening Day at the 2021 OC Fair. On the menu were California Specialty Fruit Crops and California Specialty Vegetable Crops. Also a preview of the always eagerly anticipated upcoming Hatch Chile season which is starting now. Robert will share a condensed version of his presentations with us. Melissa’s Produce will be featured in many cooking demonstrations on the Main Stage in the OC Pavilion, the site of the major culinary happenings. For the run of The Fair they will be showcased in the Rare Fruit Growers exhibit located in the Centennial Farms area.

FINCA Paso Robles is a casual restaurant which highlights Baja and Sonora style Mexican food with an emphasis on wood-grilled seafood and carne asada. Located in the historic farmhouse of the Old Hometown Nursery of Paso Robles adjacent to the Paso Market Walk comes the latest project from the owners of La Taquiza – a casual Napa based Mexican restaurant that has been in the Michelin Guide over the years.” Co-proprietor Diego Aguirre, a third generation restaurateur, joins us.

Robert Schueller of Melissa’s (our resident Prince of Produce) is presenting two talks on the Culinary Stage in the OC Promenade on Opening Day at the 2021 OC Fair. On the menu are California Specialty Fruit Crops and California Specialty Vegetable Crops. Also a preview of the always eagerly anticipated upcoming Hatch Chile season which just started.

Robert shares a highlighted version of his California Specialty Fruit Crops engaging presentation with us as well as the preview of the Hatch Chile season.

“Melissa’s kicks off Hatch Pepper season with an all-new Melissa’s Hatch Pepper Cookbook, a compilation of delicious recipes from the Melissa’s Corporate Chefs Team. These recipes have been collected over several seasons during their annual Hatch Pepper promotional campaigns. The recipes are divided into nine groups: Appetizers, Salads, Sides, Drinks, Condiments, etc., demonstrating the versatility of this unique pepper variety with more than one-hundred recipes. There are Hatch dishes for every meal of the day and for every culinary skillset from the novice cook to the serious chef.”

Melissa’s Produce will be featured in many cooking demonstrations on the Main Stage in the OC Promenade, the site of the major culinary happenings. For the run of The Fair they will be showcased in the Rare Fruit Growers exhibit located in the Centennial Farms area.

Located in the historic farmhouse of the Old Hometown Nursery of Paso Robles comes the latest project from the owners of La Taquiza – a casual Napa based Mexican restaurant that has been in the Michelin Guide over the years.” Co-proprietor Diego Aguirre, a second generation restaurateur, joins us.

Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef” segment where Chef Andrew responds to listeners thoughtful inquiries. Chef Andrew is continually updating us on the real impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the continued survival of restaurants during the initial, highly fluid stages of the hoped-for recovery. Chef Andrew provides more of his insider’s perspective on how the restaurant business is bouncing back from the pandemic. What changes can we expect in fine dining? He also reports on the progress of his new, ambitious “Save the Brave Burger” fundraiser to benefit Veterans with PTS.

Accompanying them in opening FINCA is son, Diego, and daughter-in-law, Cecilia, who both graduated from Cal Poly San Luis Obispo and have been in the area since 2013. With a combined 15 years experience in the wine and service industry between them, they are excited to bring their passion and love for their community to this home-grown venture.”

Beacon House Association of San Pedro is an all-male alcohol and drug treatment facility established in 1970 by a South Bay minister and a merchant seaman. The non-profit’s mission is to assist men recover from the diseases of alcoholism and addiction to other drugs. For this year their annual benefit will be 20CHEFS: A Social Distanced Fundraiser. Supporters are encouraged to bid (online) for special multi-course meals for a maximum of 10 guests created and prepared by prominent area chefs that are served at the buyer’s residence or at the chef’s restaurant. Celebrity Chef Andrew Zimmern of Food Network fame will be donating one of these dinner experiences. Chef Christine Brown of the newly opened Pacific Standard Prime in Redondo Beach is Co-Chair of the benefit and one of the participating chefs cooking a sumptuous meal for ten lucky guests. Chef Cristine puts down her tongs and joins us with all the salivating 20 CHEFS details.

Mutt Lynch’s in Newport Beach, celebrating their 45th Anniversary this year, has introduced a limited-time menu inspired by the distinctive and typically over-the-top specialty foods found at the OC Fair.  Available for a limited time, the special menu sees the addition of iconic Fair favorites, including Giant Turkey Legs and Deep-fried Oreos. When the OC Fair was canceled this year for only the second time in its over-130-year history due to the Coronavirus pandemic, Mutt Lynch’s found a way to keep its magic alive with a special menu recreating some of the Fair’s most iconic dishes. The OC Fair favorites will be available through Labor Day.” 2nd generation Co-owner, Jerilyn Lynch, is our guest with Giant Turkey Leg in hand.

“For over forty years, Restaurateur Piero Selvaggio (Valentino and Valentino Restaurant Group) and Restaurateur/Chef Celestino Drago of the famed Drago Brothers have been close friends, colleagues, and competitors in the thriving Los Angeles dining scene. Now, their longstanding relationship transcends to a proprietary level as Chef Celestino Drago officially has welcomed Piero Selvaggio to Drago Centro in Downtown Los Angeles as new Managing Partner!” Now that Drago Centro has reopened for pampered, evening patio dining Piero Selvaggio returns with the update.

Since Executive Chef Jonathan Blackford departed A Restaurant (Newport Beach) and CdM Restaurant (Corona del Mar) to develop a food venture of his own he’s given a lot of thought to what the dining community really needs right now. The result of this planning is Fork & Knife scheduled to launch in Costa Mesa in early October. “Fork & Knife is actually three concepts in one and I believe that it speaks to current dining habits and what the public wants right now,” commented Chef Blackford. “It has always been my goal to open a restaurant of my own, but the timing isn’t right for a full-service dining experience. What people want right now is a neighborhood place that offers fully prepared dinners, quick meals to carryout and quality products that you would find at a gourmet market – that’s what Fork & Knife aims to deliver.”

Jeff Nelson is the Founder and CEO of Liquid Farm with their distinctive Tasting Room in Los Olivos and the Winery in Lompoc.

The balance of the chef and restaurant awards (nominations announced previously) will not be presented this year. The live presentation will instead salute the already announced winners in categories including America’s Classics, Lifetime Achievement and Humanitarian of the Year. What does the future hold?
