The boutique Rowen Wine Company is Rodney Strong Wine Estates new brand of small production, high-elevation wines from a remote and historic part of Sonoma County called The Cooley Ranch. This is the fruition of an 18-year project by Rodney Strong Proprietor Tom Klein under the personal direction of Winemaker Justin Seidenfeld who pulls the cork on this unusual venture for us.

Executive Chef Michael Rossi of THE RANCH Restaurant & Saloon in Anaheim is set to collaborate with Brewmaster Victor Novak of Golden Road Brewing for THE RANCH’s first ever Beer Dinner on Thursday evening, August 22nd. Chef Michael will craft globally-inspired dishes that pair with a selection of craft beers from Golden Road’s portfolio of core, seasonal and limited-edition brews. Chef Michael and Brewmaster Victor preview the menu and pairings with us.

“The Golden Foodie Awards has evolved into a celebration of Orange County’s rich culinary scene,” said Pamela Waitt, creator and producer of the Golden Foodie Awards, and president of the OC Restaurant Association. “Now in its 8th year, the Golden Foodie Awards have grown exponentially in reach and media attention. To enable us to continue to grow as an event, we have previously brought on the accounting firm of Moss Adams to audit votes and continue to attract sponsors who share a vision of highlighting those stand-out chefs and restaurants in Orange County.”

The Golden Foodie Awards is a people’s choice event that recognizes the best chefs, libations and cuisine at chef-driven and independent restaurants. With its focus on involving the Orange County community to serve as judges through their voting, the Golden Foodie Awards serve as a high honor and is an indication of local culinary trends and consumer preferences.

Connoisseurs of cuisine and lovers of libations will have a chance for one week (starting August 11th) to vote for their favorites among 14 categories (plus two more categories, Pastry Chef of the Year & Chef of the Year, that are peer voted). The voting includes categories ranging from Bartender of the Year to Best Service Award.

The sold-out gala awards ceremony is set for the Marriott Newport Beach on September 29th.

Joon Hyun-Baek of Mealtop CafeSince 1985 Mealtop has been serving traditional Korean shaved ice (Bingsoo) all over South Korea. These popular and traditional Korean desserts have recently arrived in the United States with locations in Buena Park and on L.A.’s Koreatown.

The menu at Mealtop features a multitude of authentic Bingsoo (shaved ice). All of Mealtop’s Bingsoo variations include four classic ingredients: soft shaved ice, braised red beans, chewy rice cakes and sweet condensed milk. The cast-iron braised sweet-but-savory red beans are the most important aspect, while the other three play equal parts in the taste of Korean tradition. All of the flavors come together in harmony and every ingredient is either made in-house using traditional techniques or locally sourced.

In addition to traditional shaved ice, Mealtop also offers other items such as lattes from South Korea (Bibibig Latte, Orange Latte and Babamba Latte), and desserts such as Ang Butter Bread and more.

(The reason for this name comes from the appearance that is created during the fermenting process.)

The vineyards at Cooley Ranch are above the fog line, which increases the sun exposure and heat that Cabernet Sauvignon and other Bordeaux red varietals need to ripen, but also provides cooling during the summer heat, which settles down in the lower valleys.

The 2016 ROWEN red blend is a lush and elegant wine consisting of wonderful high elevation, mountain fruit. The wine has aromas of dark cherries, blackberries and sweet toasted oak from the co-fermented Viognier. On the palate, the wine is balanced and structured from the Cabernet Sauvignon with notes of juicy cassis, light floral and sweet vanilla. Co-fermenting the Syrah with the Viognier is a classic Northern Rhone technique which adds an exotic floral element to the finished wine as well as a rounder mouthfeel. Enjoy this wine now with sharp cheeses and charcuterie, grilled filet mignon, cocoa dusted chocolate torte or cellar for enjoyment for years to come.”

He also represents Codorniu-Raventos, the producer of some of Spain’s most respected sparkling wines. Matthew recently conducted a masterclass on Cavas Codorniu for somms and wine retailers in West Hollywood. We’ll pop the cork with him.

For the 25th consecutive year the celebrity chef to the stars, Wolfgang Puck, will set the stage for the Oscars’ Governors Ball menu pairing classic Hollywood glamour with culinary whimsy. Working alongside Chef Puck is Wolfgang Puck Catering’s Executive Chef and Vice President, Culinary, Eric Klein (formerly Executive Chef & Partner of Spago Las Vegas. We’ll have an exclusive kitchen chat with Chef Eric.

Chef Jo-Jo Doyle is the Executive Chef & Director of Operations at Honda Center which celebrated its 25th birthday last year. They, unusually, manage all the food and beverage at Honda Center themselves to maintain quality control. It’s everything from a giant meatball with al dente pasta to sit-down dining. We’ll find out what’s new on the menu with Chef Jo-Jo.

Locally owned and operated, The Upper West opened its doors in 2010 and not long after its arrival on Pico Boulevard in Santa Monica has emerged as a consistent local favorite. Upper West’s ever-changing menu draws inspiration from around the world while maintaining eclectic flavors of Chef Nick Shipp’s very own. We pull Chef Nick away from his busy kitchen for a chat.

Co-Host Chef Andrew Gruel joins us from the road with another informative segment of “Ask the Chef.” It’s of considerable value to have a real, working chef in our radio kitchen! We missed talking with Chef Andrew about pizza last Saturday to commemorate (that all-important Holiday) National Pizza Day. We’re grabbling the perfect slice this week, instead!

Matthew recently conducted a masterclass on Cavas Codorniu for somms and wine retailers in West Hollywood.

Three of the Ars Collecta wines were among the first 12 single-estate Cavas designated by the Spanish Minister for Agriculture for the Cava de Paraje Calificado designation. The Cava de Paraje Calificado designation is, as of July 2017, a new distinction which sets requirements, characteristics and quality control standards that certify the excellence of Spain’s best premium Cavas.

The ambitious Ars Collecta project also created the 457 – the world’s most expensive Cava. 457, the masterpiece of the Ars Collecta collection is a cava that pays homage to the 457 harvests completed by the Codorníu Estate.

With vineyards in our property since 1551, we are proud to say that we have more than 450 years of experience in the manufacture of quality wines and cavas. Eric Klein of Wolfgang Puck CateringFor the 25th consecutive year the celebrity chef to the stars Wolfgang Puck will set the stage for the Oscars’ Governors Ball menu pairing classic Hollywood glamour with culinary whimsy. It’s for 1,500 VIP guests including Oscar winners and Nominees in the Ray Dolby Ballroom on the top level of the Hollywood & Highland Center. It starts immediately following the Oscar telecast on ABC.

Working alongside Chef Puck is Wolfgang Puck Catering’s Executive Chef and Vice President, Culinary, Eric Klein (formerly Executive Chef & Partner of Spago Las Vegas.

The culinary team creates more than 60 imaginative dishes from one-bite hors d’oeuvres to small-plate entrees that will be passed throughout the evening. The festivities include a Raw Bar with made-to-order Nigiri.

Service will be performed by a team of 10 maitre d’ staff, 850 service and support staff and 200 culinary staff.

On the order list for the Governors Ball is 350 pounds of Atlantic Bigeye tuna, 15 kilos of American, farm-raised caviar, 250 Maine lobsters, 450 pounds of house-smoked salmon, 240 kilos of Miyazaki Wagyu beef, 250 pounds of Parmesan Reggiano and 800 crab claws.

Jo Jo DoyleChef Jo-Jo Doyle is the Executive Chef & Director at Honda Center which celebrated its 25th birthday last year. They, unusually, manage all the food and beverage at Honda Center themselves to maintain quality control. It’s everything from a giant meatball with pasta to sit-down dining options in the Club Restaurants. Gluten-free and healthy snacks, too, from the Melissa’s carts.

We’ll find out what’s new on the menu with Chef Jo-Jo.

Honda Center Food & Beverage Highlights :

  • Wine Cellar preserved by Sub-Zero: opened in December 2018 and features over 250 bottles from over 200 winemakers. It is the first of its kind in U.S. arenas. Sommeliers assist guests with bottle purchases that are poured into a decanter and can be enjoyed from their seats. Bottles are available for purchase from suites, in-seat, and at onsite restaurants. Wine is also available by the glass. (Open to guests on the Pacific Premier Club Level.)
  • Specialty Cocktails: Honda Center staff creates a specialty cocktail for each concert that comes to the building. Each one being handcrafted to the audience and themed to the artist/tour. We’ve received great feedback from guests who love to see what we have for each show.
  • Express Eats & The Kitchen: this unique location opened at the beginning of the ’17-’18 hockey season and features quick grab and go options at Express Eats and fresh sharable items at The Kitchen. The most popular item in this area are the three types of loaded fries: chicken, pastrami, and tri-tip.
  • Southern California: This stand is fresh twist on Southern favorites with a SoCal twist! Items like shrimp po’boy burritos, hot chicken sandwiches, and beignets are among the top sellers.

Loves Alex’s Lemonade, hosted by James Beard Foundation award-winners Chef Suzanne Goin and partner Caroline Styne (The Lucques Group) along with Chef David Lentz (The Hungry Cat), is set for Saturday, September 8, 2018, from 12:30 – 4:30 pm on  UCLA’s Royce Quad. The new contemporary German restaurant in Bixby Knolls, Rasselbock, is one of the participating restaurants in DINE LBC. We’ll meet proprietor Bjoern Risse, talk about his appealing DINE LBC menu and find out what a “Rasselbock” is. It is not on the menu.

When we last spoke with Chef Mike Minor, the Executive Chef for Mary Sue Milliken’s and Susan Feniger’s Border Grill in Las Vegas, he teased us with news that a BBQ concept was in the works. That has now launched as BBQ Mexicana, a quick service eatery located across the corridor from Border Grill at Mandalay Bay Resort and Casino. The menu was created by Mary Sue and Susan in collaboration with Chef Mike, a passionate BBQ master. We pull Chef Mike away from the smoker for a meaty chat.

Time for our mid-season report on the winning food and beverage lineup at Angel Stadium with Executive Chef Robert Biebrich. Joining him is Pastry Chef Tracy Felipe. We’ll update you on what’s new on the menu and the Japanese specialty items appearing regularly in St. Archer Brewing Co. With its focus on involving the Orange County community to serve as judges through their voting, the Golden Foodie Awards serve as a high honor and is an indication of local culinary trends and consumer preferences.

Connoisseurs of cuisine and lovers of libations will have a chance each week to vote for their favorites among 15 categories. The voting for August 3rd to 9thth includes Bartender of the Year, Best Cocktails in Orange County, Best Wine Program, Best Beer Program, Best Bar Program, Best New Restaurant and Best Lunch Spot in Orange County.

Guest Host Chef Jimmy Shaw of Loteria! Grill restaurants and Producer Andy preview the show.

Chef Jimmy Shaw of Loteria! Grill is with us. He brought the rich Mexican Street Food of his native Mexico City to Los Angeles. Keep in mind that Los Angeles is the 2nd largest Mexican City in the World. It all started in 2002 with a modest stand in the Original Farmers Market at Third and Fairfax in Los Angeles.

Chef Jimmy Shaw educates us on the ample Mexican sandwich, The Torta. He also talks about stocking Mexican ingredients in your home pantry.

Josh Lurie of Food GPS is at it again with delectable food and beverage events. The 3rd Annual Food GPS Fried Chicken Festival is set for Sunday afternoon, August 17th in Chinatown’s historic Central Plaza.

The Museum of the American Cocktail (based in New Orleans at the Southern Food & Beverage Museum) is presenting an evening of cocktails, food, and entertainment featuring (the always entertaining) culinary historian and author Richard Foss on August 18th at 6:30 p.m. at Roxanne’s Lounge in Long Beach. The presentation is : “Dry With a Twist: A Liquid Lesson in How Prohibition Changed America.”

One of the most important wine regions in Mexico is the Valle de Guadalupe located about an hour and one-half South of Tijuana. The best of these wines are slowly finding their way North to Southern California. Manuel Alvarez of AlXimia Vino Elemental winery joins us from the Valle de Guadalupe with his Family’s story.

Tarit Tanjasiri is the baker/proprietor of the revered CremaCafe in Seal Beach. It started as a small breakfast and lunch spot. Tarit couldn’t source a bread for his sandwiches that satisfied him so he added an adjacent production bakery. We’ll meet him.

“A new kind of cocktail book, The 12 Bottle Bar, distills the craft cocktail movement for the home bar. Irresistibly uncomplicated, just 12 bottles create over 200 distinct and seasonal cocktails, including beer and wine cocktails.” The husband-and-wife authors are with us.

Orange County’s answer to the prestigious, red carpet awards shows is The Golden Foodies. Voting has started for this year in the first group of categories and the public is invited to vote for their favorite restaurants and related categories. Good luck to all…

Joshua Lurie of Food GPSJosh Lurie of Food GPS is at it again with delectable food and beverage events. The 3rd Annual Food GPS Fried Chicken Festival Presented by Bolthouse Farms is set for Sunday afternoon, August 17th in Chinatown’s historic Central Plaza. Hours are 4:00 p.m. to 7:00 p.m.

This all-inclusive, chef-focused event includes some of L.A.’s best chefs preparing unique fried chicken dishes and complimentary sides. Additionally, there are an array of delicious desserts (Valerie Confections) and beverages.

Dry with a Twist: A Liquid Lesson in How Prohibition Changed AmericaThe Exhibition Room at Roxanne’s Cocktail Lounge & Latin Grill, Long Beach’s “hidden speakeasy,” hosts the next edition of Touring the Cocktail: MOTAC Los Angeles, a liquid lesson in how Prohibition changed America. Come out for an evening of culture and cocktails, costumes and music! Dress as a flapper, bootlegger, moonshiner, or temperance crusader (no hatchets please, ladies). There will be prizes for the best costume, giveaways, and more!

Whether you were a regular tippler or never let a drop of alcohol past your lips, Prohibition affected every American’s life. Dining options, dating habits, vacation choices, and perhaps most infamously, the attitude of citizens toward law enforcement, were forever altered by the temperance movement’s short-lived crowning achievement. Even so, most Americans don’t really understand who we were before that great experiment, how Prohibition came to pass, and the ways in which the period reverberates to this day.

Historian Richard Foss, author of “Rum: A Global History,” transports participants to a world of temperance terrorists and flappers, moonshiners and smugglers, and ordinary citizens who just wanted a drink and would get it by any means necessary. Drinkmaster David Valiante executes a menu of five period cocktails, illustrating the ways in which America’s palate for drinks has changed.  (Don’t worry, bathtub gin will not appear on the menu, but some delightful and largely forgotten beverages will make a glorious reappearance.) A light dinner of savory specialties from Roxanne’s Latin Grill is included in the price of admission.

Tickets are $40 in advance, $35 for members of SoFAB/MOTAC and the USBG. Tickets at the door are $50 (subject to availability.)

Tarit’s Kouign Amann was one of the OC Weekly’s “100 Favorite Dishes of 2014.”

According to Anne Marie Panoringan of the OC Weekly : “Per Tarit, a Kouign Amann is a pastry from the Brittany region of France. It’s often considered more of a cake than a pastry, although Crema utilizes croissant dough for their version. Layers of butter, dough, sugar and a bit of sea salt are formed. Shaped to resemble a blooming rose, it is then placed in the deck oven to bake. Sweetness and density are much higher in France, and they come in many more sizes, shapes and filling flavors.”
