Food Finders, a Southern California nonprofit focused on food recovery, is hosting its 4th annual Chefs to the Rescue fundraiser on Tuesday, October 1st from 6 – 9 p.m. at the Golden Sails Hotel located at 6285 E Pacific Coast Hwy in Long Beach. Food Finders celebrates 30 years of rescuing food this year. This unique, food-centric event challenges prominent local chefs to create “Edible Extras”; tasting samples and small plates made from perfectly edible recovered or repurposed food that might otherwise end up being tossed away. Food Finders’ Executive Director Patti Larson and participating chef Maralyn diPiazza of diPiazza Restaurant & Lounge join us with the tempting specifics.

“Downtown Los Angeles’ Preux & Proper is rooted in the bold flavors and techniques of the South. We season our food with a bit of Lowcountry swag and So-Cal culture. Our scratch cookery focuses on thoughtfully sourced sustainable ingredients, modern culinary technique and putting a whole lotta love into everything we do.” Newly launched at Preux & Proper is the lunchtime popup, South City Fried Chicken taking place Monday through Saturday. On Thursday nights it’s (Chef) Sammy’s Cookout. Serving all the delicious details with style is proprietor Joshua Kopel.

Greg Nagel is a certified Cicerone Beer Server and, as a journalist, is a regular contributor to OC Weekly’s extensive beer, wine & spirits coverage. Recently held (September 12th to 14th) at the Long Beach Convention Center was the 3-day 2019 California Craft Beer Summit produced by the California Craft Brewers Association. Greg provides the highlights.

As the long-time Los Angeles Times Test Kitchen director, Noelle Carter oversaw the testing of all recipes that appear in The Times. In addition, she wrote features and contributed to Food’s Daily Dish blog. Noelle also researched and penned the popular Culinary SOS weekly column for Food. A native Southern Californian, she holds a degree in film from the University of Southern California. She left The Times in January 2019. We’ll get updated on Noelle’s new activities with Noelle Carter Food.

The 3rd annual Valle Food & Wine Festival, hosted by celebrity chefs Nancy Silverton and Javier Plascencia, returns to Valle de Guadalupe, the hottest new wine-travel destination in the west, on Saturday, October 5, 2019 with a stellar list of over 30 award-winning culinary talents from both sides of the United States-Mexico border. The festival is unique in drawing a lineup of top chefs from as far as Mexico City and New York City to promote and celebrate the bounty of the region and the cuisine and wines of Baja California, both now being recognized world-wide. Event Co-Founder & Producer Carolynn Carreno (James Beard Award-winning author) joins us with the alluring details.

Maralyn diPiazza of Diapiazza'sFood Finders, a Southern California nonprofit focused on food recovery is hosting its 4th annual Chefs to the Rescue fundraiser on Tuesday, October 1st from 6 – 9 p.m. at the Golden Sails Hotel located at 6285 E Pacific Coast Hwy in Long Beach. Food Finders celebrates 30 years of rescuing food this year. This unique, food-centric event challenges prominent local chefs to create “Edible Extras”; tasting samples and small plates made from perfectly edible recovered or repurposed food that might otherwise end up being tossed away.

“We’ve seen some of the most amazing dishes at this event made using everything from potato peels to fish necks to pork belly,” said Patti Larson, executive director of Food Finders. “and while restaurants do a great job utilizing their inventory, we want to inspire people to do the same in their own kitchens and across the food industry in general. We also want to ensure that Food Finders can continue to serve its 400+ nonprofit partners that feed people in need, so this event supports that ongoing effort.”

“Food Finders, founded in 1989, works with local food vendors, grocery stores, restaurants and caterers to distribute donated food to other nonprofit organizations that feed impoverished families, children and elderly. Today there are 13 staff and some 300 volunteers who help rescue millions of pounds of food each year. Food Finders’ mission is to eliminate hunger and food waste while improving nutrition in food insecure communities.”

Once a month Chef Shachi hosts an interactive cooking class in the Boxcar Patio at ADYA Anaheim. Today’s class is “The Perfect Cup of Chai & Indian Tea Sandwiches.”

Newly launched at Preux & Proper is the lunchtime popup, South City Fried Chicken, served Monday through Saturday. The heart of the menu is inspired regional fried chicken sandwiches where the premium Georgia chicken breast is brined overnight on buttermilk. Think the Austin with rojo bean hummus, burrata, javi’s tia’s hot sauce, pickled radish, cilantro, blue corn tortilla crumble and heirloom tomato

On Thursday night’s it’s (Chef) Sammy’s Cookout Barbecue with handcrafted libations including the Texas Two-Timer (Reposado Tequila based.) The menu highlight is the 18- Hour Bone-In Pork Shoulder (for 8 to 12 guests) served with a variety of creative, regional BBQ sauces. The Baked Mac & Cheese is unusually good and don’t miss the Spam Fries served in a Spam can with pineapple chipotle ketchup.

Unlimited tastings were offered from 170 breweries from across California pouring more than 500 beers of every style and variety.”

The menu offerings at Golden Road Pub OC are far from the pedestrian. Guest satisfaction is high and repeat business is the norm. Golden Road’s Director of Restaurant Operations, Adam Levoe, joins us to set the ample table. Adam started with Golden Road as the original chef in Atwater Village (the flagship brewery) before there was even a kitchen there.

For enthusiasts of Japanese beer, sake and sushi, a new festival comes to the calendar in April at Pechanga Resort Casino in Wine Country Temecula. The inaugural Pechanga Sake & Beer Festival takes over the Pechanga Summit Events Center on Saturday, April 20 from 1 p.m. to 3 p.m. with VIP entry at 12 p.m. Proceeds benefit Habitat for Humanity Inland Valley. Pechanga Resort Casino’s newly arrived Sommelier, Mark Amodeo, is our spirited guide.

Food Finders Long BeachThis month Long Beach-based Food Finders is celebrating 30 years of rescuing food and eliminating food insecurity in Southern California.

With thirteen employees and 300 volunteers, Food Finders rescues perfectly edible, unserved food from restaurants, caterers, grocery stores, bakeries, produce markets and other food vendors and delivers it within hours to nearby agencies such as shelters, senior centers, Boys & Girls Clubs, etc., that service the food insecure throughout Southern California. This rescue effort also reduces the amount of CO2 gasses leaked into the atmosphere by keeping discarded food out of the landfills.

A personal effort and passion that began at founder Arlene Mercer’s Seal Beach kitchen table 30 years ago, Food Finders has grown into an organization that has rescued 150 million pounds of food, equating to 125 million meals, since April, 1989.

“We’re proud of our efforts to reduce hunger and food waste over the last 30 years,” said Patti Larson, who succeeded Mercer as executive director of Food Finders in 2011 when Mercer retired. “But we still have a ways to go, considering 1 in 8 in Californians remain food insecure and yet the average family of four throws out $1,500 worth of perfectly good food each year.”

Food Finders 30th Anniversary fundraising goal is to raise $30,000 in financial donations during the month of April. For more information and how to donate, visit their website.

He joined Golden Road just under two years ago after 15 years with Chicago’s giant craft beer success story, Goose Island. For most of his tenure there Mark was the Director of Operations. He worked with Goose Island’s founder, John Hall, and also orchestrated the transition after their purchase in 2011 by Anheuser-Busch InBev.

Mark joins us to discuss the challenges of growing the Golden Road Brewing enterprise while maintaining the product quality and preserving the hard-to-duplicate, entrepreneurial corporate culture.

Mark AmodeoFor enthusiasts of Japanese beer, sake and sushi, a new festival comes to the calendar in April at Pechanga Resort Casino. The inaugural Pechanga Sake & Beer Festival takes over the Pechanga Summit Events Center on Saturday, April 20 from 1 p.m. to 3 p.m. with VIP entry at 12 p.m. Proceeds benefit Habitat for Humanity Inland Valley.

More than 40 premium sakes (daiginjo, ginjo, junmai and sparkling) including many award-winning brands and styles from all over Japan will be poured alongside Japanese beers. Brews include premium beers, reserve, super dry (European style) and black beers from the island nation. Guests can learn about sakes’ flavors and production styles from experts – the brewers themselves and those close to the brewing process. Pechanga chefs get rolled up in the festival as they prepare fresh sushi to pair with the sake and beer selections.

Chefs Kiyo Ikeda, head chef of Umi Sushi & Oyster Bar, Kok Che, executive sous chef of Pechanga’s Asian restaurants, and Duane Owen, Pechanga Executive Chef, will be on hand to meet with guests, present them fresh, made-on-site sushi, and allow visitors to find out their expert suggestions for matching sushi with sake.

Tickets are now on sale and available at Pechanga’s website, by calling (877) 711-2946 or at the Pechanga Box Office. General admission tickets are $75 and include a keepsake sake sampling cup. VIP tickets are $150 and include early entry at 12 p.m. and a wooden sake holder and cup. Tickets include unlimited samples of sake, beer and sushi. Guests must be 21 or older to attend.

The festival’s idea sprang from the popularity of beer and sake within Southern California, as well as the continued rise of sushi as a mainstay of sought-after fare in America. The 2nd place win for Pechanga’s Umi Sushi & Oyster Bar in USA Today’s Best Casino Restaurant readers’ poll also helped cement the festival’s possibility at the Temecula resort/casino.

Food Finders, an established food recovery nonprofit, is hosting the 3rd annual “Chefs to the Rescue”, a fundraising event on Tuesday, October 9th from 6 – 9pm in Long Beach. For this unique event, Food Finders is challenging prominent local chefs to create “Edible Extras”; tasting samples and small plates made from perfectly tasty and safe rescued, recovered or repurposed food that otherwise would end up being tossed away. Participating Chef Philip Pretty of Long Beach’s Restauration and Food Finders’ Patti Larson (Executive Director) join us.

2018 marks a major milestone for both Philippe the Original in Downtown Los Angeles and its famous French Dip Sandwich.

The classic French Dip will celebrate its centennial and the restaurant will celebrate 110 years in business. There’s an epic Monday, October 1st celebration planned, including $1.10 French Dips, live entertainment, the USC Trojan Marching Band and a whole lot more.

Today, Philippe’s boasts over 75 employees, serves about 20,000 sandwiches per week, more when the Dodgers are in town, and prepares about 100 gallons of its famous Hot Mustard every week.

The company has some employees who have been with the restaurant for over 30 years.

The Binder / Martin family has strived to keep the restaurant as original as possible throughout the years; sawdust floors, décor, payphone booths and some of the cheapest coffee in town at 45 cents a cup. It wasn’t until 2014 that the restaurant took down the cash only sign and began accepting credit cards.

Show 241, September 16, 2017: 4th Annual CANstruction Long Beach, Landmark Square Building Lobby

Canstruction Long BeachOne of the most visually stunning demonstrations of talent and creativity within the architectural and engineering communities will provide a much-needed source of food for Food Finders to help eliminate hunger in the Long Beach community. The fourth annual CANstruction® Long Beach competition benefiting Food Finders will be held in the Landmark Square Building lobby on September 21st starting at 8am. CANstruction® participants will design and build unique structures made entirely out of canned goods. This year’s theme is “Rock-CAN-Roll”, and participating teams may depict music in any way they want.

The completed structures will be on display to the public from September 21st through October 1st. Visitors are encouraged to bring canned goods to the Landmark Square Building lobby to be used as “votes” for their favorite structure by placing the cans in Food Finders supplied bins next to each structure resulting in a “People’s Choice” award. Additional awards including “Structural Ingenuity”, “Best Use of Labels”, “Most Cans”, “Best Meal” and “Juror’s Favorite”, will be chosen by a panel of local judges following the exhibition.

“Food Finders is excited to be the beneficiary of the fourth annual Long Beach CANstruction”, said Patti Larson, Executive Director of Food Finders. “Last year’s event generated a 28,000 pound donation of canned goods, and this unique event will continue to heighten awareness of food insecurity in our community and will play an important role in helping to feed those in need in our own backyard.”

“Our five talented teams have spent months designing their entries and are allowed only 12 hours to meticulously stack and color-coordinate their cans into ingenious feats of design”, added Terri Henry of terri henry marketing LLC, who organizes the event. “The ultimate donation of thousands of cans of food to feed the hungry in our community makes it all worthwhile to the teams.”

Chandra Johnston, representing 2nd time Long Beach CANstruction® participant Kamus + Keller Interiors / Architecture, provides the 411.
