“While the California Restaurant Association Foundation has been around for more than three decades, the inspiration for Restaurants Care came just a few years ago in 2015. Jose, a cook in Sacramento, was struck in a hit and run on his way home after a late-night shift. He suffered a broken back, amongst other life-threatening injuries.

The restaurant community came together and raised money to support Jose while he recovered. At that moment, The CRA Foundation knew that something bigger had to happen. Restaurants Care was created to take care of the most vulnerable in our industry.” Such is the case during the ongoing COVID-19 crisis. We’ll get all the details from Alycia Harshfield, Executive Director of the CRA Foundation.

Philippe’s (Philippe The Original) in Downtown Los Angeles has reopened for takeout and delivery with French Dips, sides and desserts, as well as beer and wine, available to go. Guests can now call the restaurant or order online via ChowNow to place an order for pickup. Delivery options are available from Postmates. Manager & Partner Andrew Binder provides all the juicy details.

The Pantry at Sapphire, Cellar. Craft. Cook, located at 1200 South Coast Highway in Laguna Beach, reopened Wednesday, April 1 for daily takeout service from 7 a.m. – 8 p.m. during the COVID-19 crisis.

Guests may call ahead (949.339.3027) to order breakfast, lunch or dinner and pick-up at The Pantry’s front door entrance where polite social distancing is observed. Food prices range from $7 – $15. Restaurateur Russ Bendel assumed ownership of the landmark property in March from Sapphire’s founder-proprietor, chef, Azmin Ghahreman, CEO of Sapphire Culinary Group. Restaurateur Russ Bendel is our guest.

Back in February, the Clink Different – Experience the Wines of Europe evening was hosted at The NoMad Hotel in Downtown Los Angeles. It was a walk-around tasting for wine and lifestyle journalists with four flights of unusual wines from Bordeaux and Wines of Germany followed by a multi-course wine paired dinner. The European wines featured were hand-selected by Ryan Bailey, the accomplished Wine Director for NoMad Los Angeles. Sommelier Ryan artfully pulls the cork on Clink Different for us.

El Cholo is L.A.’s very first surviving Mexican restaurant. Since opening its doors in 1923, El Cholo has operated as a family-owned business and today, the restaurants are run by Ron Salisbury, grandson of the founders. The legacy at El Cholo lies in its commitment to quality ingredients, long family history, loyal employees (some with the restaurants nearly 40 years) and their devoted and loyal clientele. Through prohibition, the L.A. Riots, true Hollywood glamour and into the 2000’s, El Cholo continues to bring back fond memories for their guests and create new ones.” Family patriarch Ron Salisbury (with 66 years of hands-on Hospitality Business experience) is our guest.

Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef” segment where Chef Andrew responds to listeners thoughtful inquiries. Chef Andrew is updating us on the impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the very survival of restaurants. Take-out/delivery when you can surely helps…Of course, the safety of restaurant employees and guests comes first. Also some genuinely useful tips for cooking at home. “All six of Philippe’s French Dips are on the takeout and delivery menus available from 11 a.m. to 7 p.m. daily. That includes Beef, Pork, Lamb, Turkey, Pastrami or Ham on a freshly baked French Roll single-dipped, double-dipped or wet with au jus. Swiss, American, Jack, Bleu or Cheddar cheese can be added.”

“Available sides on the limited menu include, Potato and Macaroni Salad, Coleslaw, Pickled Eggs, Beets, Stew, Chili, salad and a variety of desserts from brownies to cheesecake.”

“No breakfast will be available until the restaurant resumes dine-in service after the statewide orders due to the COVID-19 outbreak end or are lifted.”

“At present, due to The Foundation’s current resources, Restaurants Care grants are focused on restaurant workers who are diagnosed with coronavirus or those who have been quarantined with a Doctor’s note.”

Two breakfast favorites, with vegetarian options, as well as house-made pastries and coffee beverages are available. Lunch offerings include an entrée garden herb salad, Wagyu beef burger and a Jidori confit chicken sandwich, both come with hand-cut herb fries. Beverage selections are fresh brewed iced tea, bottled water, soft drinks, bottled beer and craft cocktails packaged in Mason jars for $10.

Think Breakfast Sandwich with house-made sausage, applewood bacon, cage-free egg, smoked gouda, cracked pepper aioli on a toasted challah bun or Jidori Chicken Confit Sandwich with house pickles, garlic dill aioli, on a potato roll with hand-cut herb fries.

Ryan Bailey, a Sonoma County transplant, started his hospitality career while in high school at one of Sonoma’s best restaurants, The General’s Daughter. Ryan now leads the Los Angeles wine team as Wine Director and curates NoMad’s expansive wine and beer program.

Adam Bell is one of the talented people at-work behind- the- scenes on the “SoCal Restaurant Show.” Since the beginning of the show over six years ago he developed and maintains the Website in addition to ably orchestrating the Social Media. He’s also a card-carrying foodie with a particular passion for pizza, craft beer, ethnic street food and coffee. Dolores and Philippe’s are run by third and fourth generation family members, respectively, and both are built on the foundation of hard work and core values that make them so enduring.

We pull Chef James out of his busy kitchen for a chat.

“While Chef Trees is descended from Jewish Austrian wine merchants, growing up he spent a lot of time at his best friend Alfio’s house. “I love Italian food because of Alfio and his family,” says Trees. “That’s the food I grew up eating. My mom was always working and didn’t have time to make dinner, so whenever we were hungry we went to Alfio’s house. They’d be making lasagna or braciola, and pasta – there was always pasta. That’s my comfort food.” “

Who is Esther? “Great-aunt Esther was a tough, smart, no-nonsense type who cared about people and gave good advice. “She was a big support to my mom when I was growing up, and that was huge,” says Trees. “She was always there for us.””

“Esther wrote the check that sent Chef Trees off to the CIA (after all, someone had to get him out of Alfio’s kitchen). When she passed in 2016 she left James a nest egg – the money he needed to finally open his own restaurant.”

The North County Food Bank’s FOOD 4 KIDS Backpack Program provides weekend backpacks filled with nutritious food to elementary school students living in poverty (Escondido’s Lincoln Elementary is in the program).

Kids on the program receive free breakfasts and lunches at school Monday through Friday but face hunger at home on the weekends. The backpack of food they receive sees them through the weekend so they can return to school ready to learn on Monday. To feed one child for the entire school year costs $200; for one month it costs $22, and for one weekend it costs $5.50.

Food Finders, an established food recovery nonprofit, is hosting the 3rd annual “Chefs to the Rescue”, a fundraising event on Tuesday, October 9th from 6 – 9pm in Long Beach. For this unique event, Food Finders is challenging prominent local chefs to create “Edible Extras”; tasting samples and small plates made from perfectly tasty and safe rescued, recovered or repurposed food that otherwise would end up being tossed away. Participating Chef Philip Pretty of Long Beach’s Restauration and Food Finders’ Patti Larson (Executive Director) join us.

2018 marks a major milestone for both Philippe the Original in Downtown Los Angeles and its famous French Dip Sandwich.

The classic French Dip will celebrate its centennial and the restaurant will celebrate 110 years in business. There’s an epic Monday, October 1st celebration planned, including $1.10 French Dips, live entertainment, the USC Trojan Marching Band and a whole lot more.

ADYA (Anaheim) hosts interactive Indian culinary demos every 3rd Saturday of the month from 11a.m. to 1 p.m. priced at $35 per guest (unless otherwise noted) and include easy-to-follow recipes to take home with you, culinary secrets from Chef Shachi Mehra and of course, lunch served with wine/beer or chai. “Discover Diwali” is set for Saturday, Oct. 20th. For this unique event, Food Finders is challenging prominent local chefs to create “Edible Extras”; tasting samples and small plates made from perfectly tasty and safe rescued, recovered or repurposed food that otherwise would end up being tossed away.

“We are making inroads on reducing hunger and food waste, but we have a ways to go, so this event is designed to remind people that food and water are precious commodities,” said Patti Larson, executive director of Food Finders. “We’re continuing this theme not only because it remains timely, but aligns perfectly with our mission—and everyone loves the food created but these popular local chefs!”

Today, Philippe’s boasts over 75 employees, serves about 20,000 sandwiches per week, more when the Dodgers are in town, and prepares about 100 gallons of its famous Hot Mustard every week.

The company has some employees who have been with the restaurant for over 30 years.

The Binder / Martin family has strived to keep the restaurant as original as possible throughout the years; sawdust floors, décor, payphone booths and some of the cheapest coffee in town at 45 cents a cup. It wasn’t until 2014 that the restaurant took down the cash only sign and began accepting credit cards.

A new event has just been added to the festivities on Saturday, October 13th at 8:00 p.m.—the first public screening and Santa Barbara County premiere of the wine movie SOMM 3 will be held outdoors under the stars in the historic Solvang Festival Theater, 420 Second Street, Solvang. SOMM 3 is the highly anticipated follow-up to the influential wine films SOMM and its sequel SOMM: Into the Bottle.

Every town has one: a humble restaurant serving up soul-satisfying food, a place that joins the whole community together. Since 1998, the James Beard Foundation has recognized nearly one hundred such establishments – local eateries distinguished as timeless institutions within their communities – by honoring them with their America’s Classic Awards.

Guelaguetza is the most recent Los Angeles area recipient (2015) of The James Beard Foundation’s America’s Classics Award. Other area recipients are Langer’s Delicatessen, Philippe the Original and Yuca’s Hut.

Guelaguetza is well represented in the newly published James Beard’s All-American Eats: Recipes and Stories from Our Best-Loved Local Restaurants from the James Beard Foundation and Rizzoli. Bricia contributes an oral history of Guelaguetza along with their signature recipe for Estofado de Pollo (Chicken Estofado.)

“Guelaguetza first opened its doors in 1994 by immigrant husband and wife Fernando Lopez and Maria Monterrubio. Since then, our goal at Guelaguetza has been to showcase the best of our family recipes and stay true to authentic Oaxacan ingredients. Guelaguetza’s mission is for all of its patrons to live and experience Oaxaca through all of its dishes.

Today, Mr. and Mrs. Lopez are retired and have paved the way for their children, Paulina, Fernando Jr, Elizabeth and Bricia Lopez. This new generation of Oaxaqueños has taken upon themselves the responsibility of not only continuing their family’s restaurant success but also expanding its legacy. The Lopez’s have undoubtedly become ambassadors to Oaxacan cuisine in Los Angeles.
