Proprietor & Chef Isaac Gamboa of Beverly Hills’ side-by-side Prospect Gourmand and Gourmando has extensive fine dining experience working with big name chefs and at luxury hotel properties. In 2014 Chef Isaac and his wife, Chancey (the welcoming General Manager) opened the modest (and self-funded) Prospect Gourmand on La Cienega Blvd. in Beverly Hills. Favorable word-of-mouth spread about their honest, from-the-heart elevated cuisine and they soon developed a regular and loyal following. Two years ago The Gamboas were able to relocate to a larger space (with a better equipped kitchen including a pizza oven) on N. Robertson Blvd. located just North of Wilshire Blvd. on the West side of the street. It’s Lunch and Dinner daily with Weekend Brunch service. Also Happy Hour is featured on Weekdays from 3 to 6:30 p.m.

Eventually (post pandemic) there will be two concepts under the same roof. One side will be a nightly changing prix fixe menu based on what ingredients Isaac sees as the season’s best along with an a la care menu that features South of the Border specialties like Wild Pacific Shrimp a la Plancha with farmers market vegetables.

“Isaac Gamboa trained under the aegis of Michelin-starred Chef/Restaurateur Michael Mina in Las Vegas at his restaurants including American Fish, Nob Hill and Strip Steak; was part of the group’s opening teams, and honed valuable skills in fine dining and hospitality. Isaac then went on to be the Executive Chef of the luxury boutique hotel Shutters on the Beach in Santa Monica, California overseeing two of the most idyllic ocean front dining destinations: One Pico and Coast Beach Cafe and Bar.”

“He received his culinary arts degree from Le Cordon Bleu in Las Vegas and originally launched his career at Mandalay Bay Resort & Casino, as a Junior Sous Chef for the Five Diamond resort. Chef Isaac also specialized there in creating French pastries.”

At Angelina’s, guests dine on authentic Italian food made with only the finest ingredients imported from Italy and fresh produce from local farms. From one-of-a-kind artwork to hand-picked fixtures, the modern, upscale interior redefines the concept of a pizzeria.”

Angelina’s Pizzeria specializes in authentic Neapolitan-style pizza (pizza Napoletana). Each pizza is made using traditional techniques and cooked in their twin Ferrara wood-burning pizza ovens, making Angelina’s one of the few restaurants in the United States to hold a VPN Certification (Vera Pizza Napoletana). Overseen by the Associazione Verace Pizza Napoletana in Napoli, the VPN certifies that Angelina’s adheres to the strict requirements that make their pizzas “true Neopolitan Pizza.”

Scheduled to open early next year is the ambitious Bottega Angelina in Laguna Niguel. It’s an upscale Italian marketplace and ristorante.

Show 107, January 24, 2015: Chef Gary Arabia of the GC Marketplace

Gary ArabiaChef Gary Arabia, the long-established caterer to the stars, has operated the food and beverage operation on The Lot (previously known as Warner Brothers Hollywood) in Hollywood for 15 years. It’s also the base for his busy catering and event production firm, Global Cuisine by Gary Arabia.

Late last year Arabia launched a new venture, GC Marketplace by Gary Arabia, on Cahuenga Blvd. W. near Universal Studios. It’s a dazzling culinary destination for eating-in or grab-and-go. There are artisan food stations where the customers can interact with knowledgeable pros.

There is an impressive domestic and imported cheese case, a charcuterie counter with premium Jamon Iberico from Spain, smoked meats display, a pizza oven, rotisserie meats, prepared salad station, an ample dessert counter, an upscale coffee bar, a wine bar (with an in-house sommelier and 12 wines on “tap” dispensed from a Cruvinet) and a visually striking retail wine wall.

Virtually everything is made right there from scratch. That includes the buttery croissants, breakfast pastries, breads, and all the decadent desserts.

Show 41, September 21, 2013: Steve Samson and Zach Pollack, Co-Executive Chefs / Partners, Sotto Restaurant

Steve Samson and Zach Pollack of SottoSteve Samson and Zach Pollack are the Executive Chefs and co-owners of Sotto near Century City in Los Angeles. They have an incredible wood-burning pizza oven that is from Sicily that was installed by Italian craftsmen. Orange County foodies remember them as the well-received opening culinary team for highly-regarded Pizzeria Ortica.

In-mid-August they were the only Los Angeles chefs to be invited by Chef Javier Plascencia (the Wolfgang Puck of Northern Baja) to join with acclaimed San Diego chefs to prepare a seven-course, wine-paired meal at Chef Javier’s ranch, Finca Altozano, located in the Guadalupe Valley, Mexico’s premier wine region. Each course was matched with an appropriate Baja wine from the local region. This was one event as part of a bigger annual, week-long vintners’ festival.

Steve’s and Zach’s dish was a beautiful, rustic spit-roasted lamb loin with Summer vegetables from the legendary Chino Farms in Rancho Santa Fe.

Restaurateur Javier Plascencia has Romesco in Bonita (right near the border) in the United States, and multiple restaurants in Tijuana including Mision 19 and Caesar’s Restaurante Bar (where the original Caesar Salad was created.)

Thai 2013 Food FestivalMark Sunday afternoon, September 29th on your calendar. Our very own Jet Tila is hosting the Thai 2013 Food Festival at Paramount Pictures Studios in the heart of Hollywood. It starts at 3:00 p.m.

Celebrity chefs from around the country and outstanding local Thai chefs will be there presenting their signature dishes for the guests to sample and enjoy. Entertainment will include music, Thai dancers and fruit carving.

Primal Pastures“Farmer Paul” Greive, the co-founder with his in-laws, of Primal Pastures in Temecula is with us. Primal Pastures is a pastured, “beyond organic and sustainable” livestock farm.

They just funded an amazing Kickstarter campaign to bankroll their expansion. The goal was to raise $40,000. Instead they realized $57,810.

They have recently leased over 200 acres of pastureland to expand.

“Our vision is to establish a “permaculture” – a system that effectively models the natural ecosystem with many varieties of plants and animals acting in synergy with one another on one farm. There are beautiful things that happen when cattle and sheep are incorporated with chickens, turkeys, and ducks.”

Chef David LeFevre of M.B. Post in Manhattan BeachExecutive Chef David LeFevre (ex-Water Grill) of the acclaimed Manhattan Beach Post and Fishing with Dynamite joins us.

Fishing with Dynamite in Manhattan Beach is his latest venture. It’s only 40 seats. The oyster bar is already enormously popular. They will serve some 300 to 700 oysters on a given day.

Chef LeFevre will be participating in the upcoming Thai Food Festival. He previews his dish for September 29th.

Susan Feniger of Border Grill and Susan Feniger's StreetSusan Feniger of Susan Feniger’s Street and Border Grill fame needs no introduction to listeners of the “SoCal Restaurant Show.” She was also one of the early super stars of Food Network with her business partner Mary Sue Milliken in the long running “Too Hot Tamales” series.

Susan Feniger’s Street will be a featured restaurant in the upcoming Thai Food Festival.

There are lots of Thai items on the regular Street menu.

The dish they are showcasing at the festival is Khao Gee, a Northeastern Thai snack.

Kajsa Alger of Susan Feniger's StreetKajsa Alger is the executive chef and partner for Susan Feniger’s Street.

As a teenager she snuck into the kitchen at CITY restaurant to begin an informal apprenticeship. That was the start of her long association with Susan and Mary Sue. She eventually rose to the post of Corporate Chef for all of Mary Sue and Susan’s restaurants.

She was on the Street project since the inception. There was months of intense recipe testing before the opening in 2009.

Kajsa is particularly proud of the Saturday and Sunday brunch menu they are offering until the end of the month. It’s an “All You Can Eat” small plate brunch with breakfast items as well as sandwiches and salads. It’s a modest $25 per guest and for an additional $15 you can partake of bottomless sparkling cocktails.

Neal Fraser of bld and RedbirdExecutive Chef Neal Fraser of bld joins us.

Chef Fraser is a contestant on Bravo’s “Top Chef Masters” this season. He comments on the ups and downs he experienced as a competitor. He observed that it’s a lot harder than he anticipated. That’s significant given that he previously bested an Iron Chef on Food Network’s “Iron Chef America”.

Show 40, September 14, 2013: Eric Klein, Executive Chef & Partner, Spago Las Vegas

Eric KleinIn 2007 Executive Chef Eric Klein (now a partner) was handed the keys to Spago Las Vegas by Wolfgang Puck and charged with freshening up the concept. This was quite a formidable assignment given that Spago is Wolfgang Puck’s flagship restaurant in Las Vegas! They celebrated their 20th Anniversary last year.

The restaurant is a busy café (with exhibition pizza oven) in the front and an elegant fine-dining restaurant open for dinner in the back. The front patio opens onto the busy main Forum Shops walkway. The location is right by the entrance to Caesars Palace’s Casino. Chef Eric shared a great parking tip. Give your car to the valet (without Valet fee) at Gucci and you’re steps from Spago.

As with the Beverly Hills original Spago Las Vegas attracts the A-List celebrity clientele in addition to sophisticated foodies. Chef Eric is the visible personality of the establishment.

Eric’s refreshing mantra is “never rest on your laurels and always be humble.”

Chef Eric’s first assignment in Las Vegas (after relocating from Beverly Hills) was SW Steakhouse at Wynn Las Vegas.

Azunia TequilaJim Riley, the founder of Azunia Tequila joins us. In his spare time Jim is a professional off-road racer of some note.

This is a case study of how a boutique tequila company grows a brand in an environment dominated by cash-rich giants. Riley has built his brand with clever grass-roots marketing and being seen in the right places.

Azunia Tequila is organic and 100 per cent Weber Blue Agave. It is available in the styles of Platinum Blanco (great for cocktails,) Reposado, and Anejo.

Brock Radke of Las Vegas WeeklyOur man in Las Vegas, Brock Radke, is back with us. Brock is the respected Web and Food Editor for The Las Vegas Weekly.

Last month Brock had a great piece in The Weekly entitled. “Where are they now? Checking up on the first wave of Vegas food truckers.”

Fukuburger has probably been the most successful and is still on the streets. A brick and mortar location for Las Vegas is in the plans. Sloppi Jo’s was a big success with the food critics but, ultimately, not a viable business model. Proprietress Jolene Mannina has parlayed this into other food projects for herself. In fact she’s the head of Culinary Arts for the upcoming “Life is Beautiful” Festival in Downtown Las Vegas. The originator of Slidin’ Thru has moved on but the truck still does events and catering and there is a bricks and mortar drive-through.

Brock also talked about the just launched Heritage Steak at The Mirage on The Strip. The proprietor is Tom Colicchio of Bravo’s “Top Chef” fame and a James Beard Award recipient.

Elizabeth Huettinger of the Addison in Del MarSommelier Elizabeth Huettinger is the new Wine Director at Addison restaurant and The Grand Del Mar Resort in Del Mar. She was previously part of the wine team at Spago Beverly Hills.

Elizabeth just took the incredibly difficult “Advanced” certification test from the Court of Master Sommeliers. She shares that humbling experience with us.

Earlier in the Summer the Grand hosted a special screening of the documentary, “SOMM”. It’s the first effort by filmmaker Jason Wise.

“SOMM” tells the fascinating story of four sommeliers attempting to pass the rigorous and prestigious Master Sommelier exam. This test has one of the lowest pass rates imaginable. Elizabeth’s head sommelier at Spago (her previous post) is a Master Sommelier. She talks about hosting the screening (there was wine and abundant food stations) and her reaction to the highly acclaimed documentary.

Lena KwakChef Lena Kwak is the highly acclaimed research development chef for The French Laundry and The Thomas Keller Restaurant Group in Yountville, CA. She created the position.

With the backing of Keller she developed Cup4Cup, a healthy wheat flour-substitute which has gone national over the last two years. It’s carried in Williams-Sonoma stores and also available at the Bouchon Bakeries in Yountville, Beverly Hills, Las Vegas, and New York.

Last year Kwak was named as one of Forbes Magazine’s “Top 30 Under 30” for her work with Cup4Cup.

In addition to bread mixes the proprietary line also includes a brownie mix, pizza dough, and pancake/waffle mix.

Amar SantanaChef Amar Santana is very familiar to Orange County foodies. His mentor, Chef Charlie Palmer (Aureole,) brought him out here from Manhattan in 2008 to open Charlie Palmer’s at Bloomingdales at South Coast Plaza in Costa Mesa. Talk about a plum assignment for a young chef…

With the backing of one of his very loyal guests he later departed to open a venture of his own, Broadway by Amar Santana in Laguna Beach. Since opening in 2011 it’s been a hit with both the food critics and guests. The bar has also created its own loyal following for unusual libations and a welcoming atmosphere. Their superior Moscow Mule (not listed on the bar menu) is a thoughtful homage to the original version created in the late 30s in Hollywood and now using all fresh ingredients and from scratch ginger beer.

Michael Passmore of Passmore RanchMichael Passmore is an elite class freshwater fish farmer in the Sacramento area. His Passmore Ranch is sustainable aqua farming and his clientele are discriminating celebrity chefs all across the country who he, unusually, supplies directly.

They started modestly by selling live fish at Northern California farmers’ markets, and their quality and service quickly established them as premium purveyors for top restaurants and Michelin-starred chefs around the country.

Passmore Ranch offers premium freshwater white sturgeon, black bass, striped bass, catfish, silver carp and trout, plus prized domestic caviar.

Today Passmore Ranch is 86 acres and they raise fish in 80 million gallons of fresh water pumped up from the pristine Cosumnes aquifer. The ranch has a variety of open lakes and massive tanks used to increase the variety of sustainable fish they grow.

In the works is a plan to begin a thoughtful rollout of limited direct sales to serious home cooks. The info will be posted on their website.
