Show 235, August 5, 2017: House of An Executive Chef Tony Nguyen, Pop-up Crustacean Menu at AnQi, Costa Mesa

Tony NguyenAs Beverly Hills Vietnamese fusion institution Crustacean undergoes a major five-month redesign this summer, Orange County diners will be treated to signature dishes prepared by Crustacean master chef Helene “Mama” An at AnQi, a sister restaurant at South Coast Plaza. Beginning August 1 and through September 30, diners at the upscale gourmet bistro AnQi will be able to savor a sampling of signature dishes from An’s famous Secret Kitchen that previously were not available at the Costa Mesa restaurant.

The pop-up version of Crustacean’s highly acclaimed menu will be available at dinner only Monday through Friday in the Q Lounge at AnQi, which like its Beverly Hills counterpart has won acclaim for its signature style of Euro-Vietnamese cuisine and An’s creative use of Asian herbs and spices in her cooking.

Reservations are required and are limited to 60 guests a night and should be made by phone: 714.557.5679. AnQi is located at South Coast Plaza, 333 Bristol St. Costa Mesa

The pop-up Crustacean menu at AnQi will include 10 appetizers, four main courses and two desserts.

The tantalizing appetizer options include Turmeric Grilled Calamari ($15), with saffron, orange zest and peanut mustard sauce; Sweet and Spicy Chicken Meatballs ($15), made with basil, tofu, tempura flakes and Gochujang sauce; and the addictive XO Noodles ($18) with scallops, shrimp, chicken, bird’s eye chili, shallots and Hennessy cognac.

Among the choices for the main courses are Rack of Lamb ($46), made with chardonnay flambé, Steamed Seabass ($49); and An’s Famous Roasted Crab ($65), featuring An’s garlic sauce and secret spices and available in or out of the shell.

A mouthwatering dessert option is Grandma Diana’s Famous Banana Fritters ($12).

Nyesha Arrington of LeonaVenice, CA. – based Chef Nyesha Arrington is no stranger to the show. You know her from Bravo’s “Top Chef” and Esquire Channel’s “Knife Fight.”

We’ve chatted with her in the past when she was at The Wilshire and, more recently, about her pop-ups. She is now creating the menu at the new LEONA restaurant in Venice.

At LEONA Chef Nyesha is serving seasonally driven, ethically harvested and globally inspired Progressive Californian cuisine inspired by the mosaic of the Golden State. It’s dinner and weekend brunch for the moment with lunch debuting later this month.

“We want you to feel like you were hugged from the inside,” explains Arrington. “Our food is consciously prepared. For instance we may use ingredients with health benefits, like turmeric or ginger, but we’re not afraid to use butter, cream and other classic culinary styles when it is appropriate. We’re mindful of modern dietary preferences and create thoughtful dishes accordingly. We also strive to be progressive in creating sustainable sourcing and kitchen practices with little to no food waste.”

In the early 1900s “LEONA” was the original street name for what now is Washington Boulevard.

“We’re California natives and Venice residents,” comments proprietor Kristian Vallas, “We wanted this restaurant to represent why we love Venice and its tradition of avant-garde entrepreneurship. We’re approaching things differently operationally and creatively.”

Chef Andrew was just in Williamsburg, Brooklyn doing three-seatings at Loosie’s Kitchen for his “One Night (Fish) Stand, Water–to-Table, five-course prix-fix sustainable seafood menu. Locally sourced seafood was on the menu and used in his signature lobster burger and an “ultimate” fish taco with Montauk tilefish.

Chef Andrew also weighs-in on Union Square Hospitality Group’s innovative plan to eliminate tipping in all of their 13 high-profile New York restaurants. The goal is to create a fair wage system for all employees including the back-of-the-house folks who don’t ever share in the gratuities.

Show 108, January 31, 2015: Chef Mark Peel and Rascal

Mark PeelChef Mark Peel was the founding executive chef of the landmark Campanile in Hollywood which closed in 2012 after a long run. He was also the opening chef for Wolfgang Puck’s original Spago in West Hollywood.

Now, after the announcement of Bombo, Peel’s new seafood driven space scheduled to open in March at the iconic Grand Central Market, Chef Peel is giving enthusiasts the chance to get a sneak peak of what tempting new dishes may appear on the restaurant’s debut menu with two additional Pop-Up Dinners at Rascal (known for casual American fare.) Look for the steamed clams and pork sausage with roasted onion, chick peas, lobster broth and flax seed rice.

“Mark is a really wonderful guy, and it has been an amazing experience to have a Chef of his caliber working alongside our very own Chef,” says Rebecca Clark, who Co-owns Rascal with her husband, Sandy. The Clarks’ have both worked in the hospitality industry for a very long time and had met Peel in passing years ago. Peel’s true relationship with Rascal developed when he began frequenting the restaurant with his family, quickly becoming one of their neighborhood regulars.

Arabia’s latest venture is the impressive and ambitious GC Marketplace. It’s a gourmet specialty food store and restaurant all under one roof. One of the attractions is a 12-seat marble Chef’s Table located in the intimate kitchen.

“GC Marketplace is 30 years in the making,” observes Arabia. “The concept is a culmination of everything I love and the vision was to create a luxury shop, with the finest products and ingredients available. A place where people can come together to dine, grab something quick to go, or gather all the items they may need to create the perfect occasion at home.”

John AtkinsonLouie’s of Mar Vista is a true gem of a discovery in the Mar Vista area of Los Angeles located in a former butcher shop. (The renovation was an exhausting 5 years.) It’s American Bar Food A.S.A.P. (as Southern as possible.) Think Kalua Pig Monte Cristo Egg Roll with 12-hour roast pork shoulder, ham, swiss, cabbage and bang bang sauce. Chef John Atkinson is the owner along with his wife Laura Develle Atkinson (who is from New Orleans.)

Laura designed the interior of Louie’s of Mar Vista. A long bar dominates the North end of the space. Visualize teak, Carrara marble, and brass fixtures.

“Louie’s of Mar Vista is an enthusiastic celebration of Southern California food and lifestyle, living in the present with an eye on the past.” The Mar Vista Sunday Farmers’ Market takes place just outside their door. For Louie’s it’s a great source for fresh, local ingredients. They serve brunch on Saturday and Sunday from 11:00 a.m.

They also own the very busy North End Caffe in Manhattan Beach which was featured in a frequently repeated episode of Guy Fieri’s “Diners, Drive-Ins and Dives” on Food Network.

Chef Anthony Jacquet of the Whisper Restaurant and Lounge at The Grove in Los Angeles was one of three talented North American Chefs to be chosen by the Taiwan Tourism to participate in Taste Taiwan 2014. The lucky chefs were hosted to an exclusive eight-day culinary adventure to Taiwan. Chef Anthony was inspired to then create a dish from his trip which is highlighted on The Whisper menu as a special for this month. Maison Giraud in Pacific Palisades opened its doors in 2011. The unpretentious restaurant and bakery reflect the life and experiences of master French Chef Alain Giraud (ex-Michel Richard’s Citrus.) Starting on Sunday, Jan. 18th Chef Eric is launching a Greenspan’s Grilled Cheese Pop Up at Westfield Century City (2nd level of the Dining Terrace) through the end of March 2015. In Century City there will also be some exclusive menu items for Greenspan’s first West L.A. outpost.
