David PrattExecutive Chef/Proprietor David Pratt of Brick Restaurant in San Clemente likes to challenge himself. He’s been very successful since opening 6 years ago with his distinctive gourmet pizzas from the wood-burning oven with a subspecialty in massive, multi-meat (beef, pork and veal) meatballs cooked in the wood-burning oven.

Chef David has newly installed an eye-popping Santa Maria-style grill and the appealing farm menu has broadened to include grilled lobster, rib-eye and hangar steals, lamb chops and whole young chicken.

“David Pratt, a visionary and true foodie at heart, is passionate about fresh, sustainable and flavorful food. He cares deeply about the food he creates, but he cares even more that people are happy with it. “I try to talk to each table that comes in,” David says. “I want to make sure everyone has a good experience.”

“His hands are in each aspect of the business, from making pasta and shopping at farmers markets to overseeing the wine list and meeting guests.  One bite into a wood-fired Margherita pizza or the house roasted Porchetta and it all comes full circle.”

The traditional turkey is kind of boring. Chef Andrew presents his recipe for Turkey Porchetta which will add some needed pizzazz to your Thanksgiving meal.

If you must roast the whole turkey then Chef Andrew recommends brining. The result is a lovely, moist turkey.

Along the way Chef Andrew talks about his oyster stuffing, some dessert ideas and worthy suggestions for the leftovers.

Take a deep breath, be calm, and Chef Andrew is here to help relieve a bit of the November 26th stress.

Jet Tila at Cochon 555Time to check in with our esteemed emeritus show host, Chef Jet Tila. Locally he’s the chef and partner of Stir Market in Los Angeles. He’s also one of three permanent judges on Food Network’s hit series, Cutthroat Kitchen” with Host Alton Brown.

Chef Jet’s Porchetta Sandwich at Stir Market was just recognized by Restaurant Hospitality magazine as “Best Sandwiches in America 2015: Pork.” The key ingredients are porchetta seasoned with fennel, lavender, lemon zest, rosemary and garlic.

“What the Judges Said: This category nearly drove us insane because there were so many great entries, but we fell in love with this porchetta sandwich. In Italy, it’s not uncommon to find street vendors serving this elaborately stuffed and rolled pork in sandwich form, but rarely is it seen in sandwich form in this country. It’s labor intensive to prepare, but well worth the effort. Tila lays juicy white pork atop house-made jam and then adds texture with layers of crispy pork skin. What else can we say but, “Yum!” “

Jet’s new chef at Stir Market in Beverly Grove is Stacy Rampton. Chef Jet previously worked with her at Wynn Las Vegas and Encore at Wynn Las Vegas.

Chef Jet is also part of Food Network’s “Cutthroat Kitchen’s” Summer Tournament, “Camp Cutthroat.” It’s five episodes. Can you imagine host Alton Brown as your Head Counselor? It debuts on Wednesday evening, August 12th. Chef Jet’s two episodes are August 26th (“Rock Wall Me, Amadeus”) and September 2nd. (“If it Bleeds We Can Skillet”) .

Show 121, May 9, 2015: Working Class Kitchen and Executive Chef David Coleman

Working Class KitchenDavid Coleman is the executive chef and partner in the new Working Class Kitchen in Long Beach located on an industrial side street. This is the newest addition to the growing Michael’s Restaurant Group which includes Michael’s on Naples, Michael’s Pizzeria and Chianina Steakhouse.

“Michael” is Michael Dene. Before opening Michael’s on Naples in 2007 he had no previous restaurant experience.

It’s an unusual sustainable deli and butcher shop which also serves as the commissary for Michael’s Restaurant Group. It’s surely the only spot in town where you can enjoy a Chianina Beef Burger.

There is a Piedmontese Corned Beef Sandwich available on house rye with Sonoma pickles and Dijon.

It’s also a butcher shop with fine cuts and choice meats. You can buy Chianina beef by the pound or an entire Porchetta for your next backyard grilling party.

The motto of Working Class Kitchen is “Sine Labore Nihil.” That’s fancy Latin for “Nothing Without Work.”

He was actually on the ambitious project over a year testing recipes before the first guests were greeted. The Ranch (unusually) has its own farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh fruits and vegetables used at the highly regarded and much acclaimed restaurant. It’s a chef’s dream to have these resources…

He was at the pre-opening preview lunch for the eagerly anticipated Din Tai Fung Dumpling House in South Coast Plaza (August 18th was Opening Day) and will share some of his observations.

Din Tai Fung is most famous for XiaoLongBao, the Shanghai-style soup dumplings which became a signature dish at the original site in Taipei.

Din Tai Fung at South Coast Plaza is over 8,000 square feet, making it one of the largest in over 100 locations worldwide.

Michael Rossi of the Ranch Restaurant and SaloonExecutive Chef Michael Rossi (ex-Napa Rose) has been at the helm of The Ranch Restaurant & Saloon since it’s opening day in early 2012. He was actually on the ambitious project for over a year testing recipes before the first guests were greeted.

The Ranch (unusually) has its own 2-acre farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh produce used at the highly regarded restaurant. Think of over 600 heirloom tomato vines featuring 90 different varieties. Original (and fully mature) orange and fig trees are also part of the property.

Future expansion plans for the Edwards Ranch Estates include avocado trees, olive trees, and grape vines.

It’s a chef’s fondest dream to have these incredible resources…
