Now a tempting preview of Saturday’s mouthwatering show. It’s not, with profuse apologies, for dieters. If we’re successful we will hopefully leave you incredibly hungry and thirsty. In our case that’s probably a pretty good thing… As always, we greatly appreciate you being a part of our loyal listening audience. Truly couldn’t do it without you.
Jamie Schler is an award-winning writer specializing in food and culture, her stories inspired by her multicultural family and 35 years living between France and Italy, completely immersed in the culture. After years spent working in high-end gastronomic tourism and as an interpreter at a prestigious Parisian cooking school, and having married into a deeply traditional French family, Jamie has become an expert on French cuisine. For her first cookbook, Orange Appeal – Savory & Sweet, Jamie returned to her native Florida and her lifelong passion for the most versatile fruit of the citrus family, the extraordinary orange.

The welcoming Irvine & Roberts Vineyards and winery is located in the picturesque Rogue Valley of Southern Oregon. “What’s old is new again. Restauration – Finely Crafted Food + Beverage is a combination of two of our favorite words that are defining pillars of the Long Beach community: restaurant+restore. Situated in the vibrant and creative stretch on 4th street between Cherry and Temple dubbed Retro Row, our little eatery brings the Long Beach family together to pay tribute to the American culinary spirit while embracing modern fare.” The establishment has recently relaunched after a thoughtful renovation necessitated by an unfortunate fire. Owner Dana Tanner joins us with the 411 what’s on the Restauration menu.

“Combining local, seasonal ingredients, artisan products and an expansive selection of premium regional wine, Napa Valley Grille recreates the charm, bounty and palates distinctive of West Coast wine country in a sophisticated setting within Westwood Village.” Veteran General Manager and Wine Director, Brian Cousins, and newly arrived Executive Chef Ben Diaz are our guests. Chef Ben’s new menu will launch in the coming weeks.

All of this and heaping helpings of extra deliciousness on this week’s not-to-miss show!

Show 359, February 8, 2020: Restauration – Finely Recrafted Food + Beverage (Long Beach)

Dana Tanner and Philip Pretty of Restauraton in Long Beach“What’s old is new again. Restauration – Finely Crafted Food + Beverage is a combination of two of our favorite words that are defining pillars of the Long Beach community: restaurant+restore. Situated in the vibrant and creative stretch on 4th street between Cherry and Temple dubbed Retro Row, our little eatery brings the Long Beach family together to pay tribute to the American culinary spirit while embracing modern fare.” Restauration recently relaunched after a renovation and refreshening as a result of an unfortunate fire in late 2018.

“Menus for Restauration created by Chef / Owner Philip Pretty are locally sourced and responsibly grown, using seasonal ingredients based on the abundant bounty available on the Southern and Central Coast. Many options are served family style intended for sharing. Our beer offerings feature craft beer on draft and in bottles/cans from across the US. The comprehensive wine list highlights small producers from California and other unique wine growing regions from afar.”

“Our vision was to create an environment that encourages an audience to stay awhile and brings them together in a hospitable space. We were able to do just that by recrafting the interior and exterior space with an urban style that integrates vintage and upcycled materials for a comfortable yet sophisticated feeling. Repurposed lighting, handmade tables & benches, a 70-seat patio encircled with vertical gardens that are warm yet refreshing all contribute to the inviting atmosphere.”

After years spent working in high-end gastronomic tourism and as an interpreter at a prestigious Parisian cooking school, and having married into a deeply traditional French family, Jamie has become an expert on French cuisine. Her writing focuses on more than just the recipes; she delves into the history of French cooking and individual dishes, the stories, traditions, and the daily family, cultural, and social rituals behind the food.

“For her first cookbook, Orange Appeal – Savory & Sweet, Jamie returned to her native Florida and her lifelong passion for the most versatile fruit of the citrus family, the extraordinary orange.”

“Jamie’s lifelong connection to the orange runs deep: she grew up on Florida’s Space Coast, the narrow strip of land sandwiched between the Atlantic Ocean and the Indian River, surrounded by the world-famous Indian River citrus groves. She grew up eating oranges daily, lots and lots of oranges; she sometimes feels like she has orange juice running through her veins. Devoting an entire cookbook to the orange allowed her to explore it in all of its forms, navels, juice, blood, bitter varieties, using the whole fruit, the flesh, the zest, juice, rind, the orange in powder form, marmalade, liqueur, orange flower water in innovative ways, from feature ingredient to essential flavoring.”:

“She has created a collection of more than 70 sunny, sophisticated, and comforting recipes, both savory and sweet, accessible to cooks of every level of experience and knowhow, offering the kind of recipes that she prepares for her own family and friends everyday, and drawing from the many cultures that fill her home and her kitchen.”

Winemaker Vince VidrineThe welcoming Irvine & Roberts Vineyards and winery is part of the picturesque Rogue Valley of Southern Oregon. It’s located just five miles from the heart of Ashland and the Oregon Shakespeare Festival. The new Irvine & Roberts tasting room on the property offers stunning views of the estate vineyards and the surrounding hills.

“The Irvine & Roberts families bring a unique collection of skills and passions to create their ultra-premium, artistically crafted wines produced in a style that evokes elegance, balance, and richness in their flavors and texture.”

“The estate vineyard is an exceptional example of geology and climate that provides the perfect growing conditions for some of the world’s most complex grapes: Pinot Noir and Chardonnay. Nestled between the Southern Cascade and Siskiyou Mountain Ranges, our ancient soils are some of the oldest in North America and are located on steep, high-elevation hillsides with glowing morning sun and shady, breezy afternoons.”

“Irvine & Roberts Family Vineyards is an alluring family winery in Ashland, Oregon, where we practice sustainable farming and produce ultra-premium Pinot noir and Chardonnay. Our high -altitude vineyard is adorned with distinctive soils, climate, and east facing slopes that produce wines with extraordinary balance, flavor and intensity. We believe great wines come from great soil, so we strive to be conscientious stewards of the land, protecting our vineyard soils through practices that are certified sustainable by LIVE and Salmon Safe. We admit to being obsessive with our grape growing practices to ensure quality in the vineyard, keeping grape yields low and production limited to ensure the optimal health of the vine; allowing us to produce exceptional Pinot Noir and Chardonnay with elegance and balance.”

In 1997, Doug & Dionne Irvine returned to their roots in Oregon with the desire to raise their daughters in the same place that they had such fond childhood memories. Choosing Ashland, they soon discovered that the 80-acre ranch they would call home turned out to be an incredibly unique vineyard site. The first vines were planted in 2007, and the journey continued from there when Doug’s sister and brother in law, Kelly and Duane Roberts, joined Doug and Dionne and created Irvine and Roberts Vineyards.

“We have a team of artisans and professionals in place to maximize the potential of this amazing site. From our tasting room ambassadors and vineyard artisans, to our management and winemakers and the distinct strengths of the family members themselves, Irvine & Roberts Vineyards is constantly striving for perfection. Out of love and respect for the great wines of the New and Old Worlds, our vision is to add our wines to the legacy of world-class Pinot Noir and Chardonnay.”

Winemaker Vince Vidrine has a great deal of experience working for prestigious wineries in both Oregon and Burgundy and we’re confident he’ll expand on our initial successes to craft complex, balanced and elegant Pinot Noir and Chardonnay.” “I am very excited about the opportunity to work with this team.“”

““We are all completely focused on producing Chardonnay and Pinot Noir at the highest level,” said Vidrine. “With the completion of this new winery and with a meticulous farming program led by the Results Partners vineyard management team, this project is perfectly poised for an excellent start.”

That assumption would be a mistake as Executive Chef Thomas O’Keefe of the LA Airport Marriott will explain.

Food Finders, a local food rescue non-profit, is organizing Chefs to the Rescue”, a fall fundraising event on Tuesday, October 18th from 6 – 9pm at the Expo Arts Center in the Bixby Knolls neighborhood of Long Beach. For this very unusual event, Food Finders is challenging prominent local chefs to create tasting samples and small plates made from perfectly edible and safe rescued, recovered or repurposed food that otherwise would end up being tossed away. Joining us with all the details is one of the featured chefs, Chef Philip Pretty of Restauration, and the event’s Producer, Terri Henry.

Culinary celebrity Katie Chin is a prominent Chinese food expert and best-selling author. Her newest cookbook is Katie Chin’s Everyday Chinese Cookbook: 101 Delicious Recipes from My Mother’s Kitchen. The book pays homage to Katie’s late Mother, the legendary chef and restaurateur, Leeann Chin. Katie is our guest.

Over 50 years ago Nicolaniello Buono opened a modest Italian Grocery and Deli in San Pedro. In 1973 that transitioned into Buono’s Italian Pizzeria. There are now two locations in Long Beach and the original in San Pedro. The Flagship is at 250 W. Ocean Blvd. in the heart of Downtown Long Beach. Two generations of the Buono Family are still actively involved. Family CEO, Frank, hand-kneads the dough for us.

The Brand Boulevard Block Party on October 22nd will celebrate the latest additions to the Glendale culinary community along with local favorites like Porto’s Bakery. The festival includes the finest fare from 20+ chefs and restaurants, tastings from wineries and local craft breweries, live entertainment and lots more. The charitable beneficiary is the Careers through Culinary Arts Program (C-CAP.) One of the participating restaurants is the soon-to-be Bacari G.D.L. at The Americana at Brand. It’s a contemporary wine and cicchetti bar with creative small plates. It’s obvious an executive chef is involved. Co-founder Robert Kronfli joins us.

Our Co-Host, Chef Andrew Gruel, is a devotee of breakfast. Last week Chef Andrew shared his favorite hole-in-the-wall OC neighborhood spots for a hearty breakfast. We got such a positive response to this segment that we’ll continue…Every popular national fast food spot that serves breakfast has a signature a.m. menu item. Chef Andrew will highlight his favorites.

All of this and lots more absolutely incredible deliciousness on Saturday’s show!

Participating chefs include:

Tickets are $45 per guest or $80 per couple and are available for advance purchase through the Food Finders website.

That assumption would be a mistake as Executive Chef Thomas O’Keefe of the LA Airport Marriott will reveal.

This is a busy Marriott airport property (55,000 square feet of meeting space) that Chef Thomas has made a destination for locals to dine at, too. His three full-service restaurants are JW’s Steakhouse, Latitude 33 (3 meals a day), and Champions Sports Bar. Chef Thomas makes it a point to buy locally when he can.

The beef at JW’s is local premium, true natural, from Brandt Farms. It’s corn fed beef, sustainably raised without hormones or antibiotics.

We’ll get an unusual behind-the-scenes look at the kitchens of the L.A. Airport Marriott.

Katie ChinCulinary celebrity Katie Chin is a prominent Chinese food expert and best-selling author. Her newest cookbook is Katie Chin’s Everyday Chinese Cookbook: 101 Delicious Recipes from My Mother’s Kitchen. The book pays homage to Katie’s late Mother, the legendary chef and restaurateur, Leeann Chin.

Author Katie Chin’s love of cooking blossomed at an early age—watching and later helping her renowned mother, Leeann Chin, prepare delicious Chinese dishes in her popular restaurants. Born in China, Leeann was an award-winning restaurateur and author revered for her ability to demystify Chinese cooking for the American home cook. Katie inherited her mom’s passion and talent, and has become a respected food writer and television personality in her own right. Sadly, Leeann passed away in 2010, but her recipes live on. Katie is eager to share her mother’s food legacy with you in this book—an homage to Leeann’s mastery of all that Chinese cooking has to offer.

This treasury of family recipes includes many unique dishes that Leeann developed during a six-decade career in the food business, including time-honored classics that she herself learned from her mother in China. Some dishes reflect Leeann’s Chinese-American childhood or are recipes which Katie and Leeann developed while together. Others are creations that Katie has developed more recently. Woven throughout the book are fond memories and anecdotes from Katie’s childhood, always involving cooking and eating with her mom.

Katie Chin’s Everyday Chinese Cooking is a celebration of Leeann Chin’s amazing mastery of the complete array of flavors and techniques in Chinese cuisine, and her unique ability to make them accessible to Westerners. Katie provides tips and techniques which allow anyone to create a refined and tasty Chinese meal at home.

Favorite Chinese recipes include:

  • Firecracker Shrimp
  • Mu Shu Pork
  • Peking Duck Summer Rolls
  • General Tso’s Chicken
  • Tangerine Beef
  • Hoisin Lacquered Ribs
  • Tea-Smoked Sea Bass
  • Banana Wontons
  • Five Spice Chocolate Cake
  • And many more…

Katie Chin was born and raised in Minneapolis by her award-winning restaurateur mother, Leeann Chin. She is the co-author of Everyday Chinese Cooking (Clarkson Potter, 2000) and author of 300 Best Rice Cooker Recipes and Everyday Thai Cooking. She was co-host with her mother, Leeann, of the 2003 national PBS cooking series Double Happiness. Katie has served as a guest judge on Food Network‘s Iron Chef America and appeared on Cooking Channel‘s Food(ography) program in 2013.

When not testing out her new recipes on family and friends, she divides her time as a private chef and culinary consultant. Katie has been called the “Asian Rachel Ray” by many of her fans because of her sparkling personality and approachable style.

“From the pizza fashioned from hand-kneaded dough made fresh daily, to the homemade sauces and sausages, to the fresh mozzarella, and the gas-fired brick ovens, eating at Buono’s is like dining at a pizzeria in the Old Country. When you order any of their Italian specialties, such as lasagna, spaghetti, eggplant parmigiana, or linguini e vongole, you are tasting a bit of Italy near the shores of the Pacific.

Show 166, April 2, 2016: Show Preview with Executive Producer & Co-Host Andy Harris & Chef Andrew Gruel

Andrew Gruel and his son WilliamExecutive Chef Andrew Gruel of the rapidly growing Slapfish empire with restaurants in Huntington Beach, Laguna Beach, Newport Beach, LAX, Irvine at UCI and, now, Brea, is back as today’s special Guest Host.

Now an enticing peek at Saturday’s provocatively decadent show and not, with profuse apologies, for dieters. If we’re doing it right we will always leave you hungry and thirsty. In our case that’s actually a good thing…

For the last ten years Executive Chef Michael Lomonaco has been at the culinary helm of Porter House New York at 10 Columbus Circle in Time Warner Center. After a carefully orchestrated month’s renovation the establishment has reopened as Porter House Bar & Grill. We’ll hear what’s new on the grill from Chef Lomonaco himself.

Every town has one: a humble restaurant serving up soul-satisfying food, a place that joins the whole community together. Since 1998, the James Beard Foundation has recognized nearly one hundred such establishments – local eateries distinguished as timeless institutions within their communities – by honoring them with their America’s Classic Awards. Newly published from The James Beard Foundation is James Beard’s All-American Eats – Recipes and Stories from Our Best-Loved Local Restaurants. Joining us is Bricia Lopez of Guelaguetza (a 2015 Award Winner) and Alison Tozzi Liu, Editorial Director of JBF Media.

The annual Dine LBC – Long Beach Restaurant Week is taking place April 23 – May 1, 2016. Each participating restaurant from twelve unique neighborhoods in the city offers a three course menu priced at $20, $30, $40 or $50, either per guest with wine pairing options at fine dining locations OR dinner for two priced at $20, $30, $40 or $50, where diners share an appetizer, each enjoy their own entree, then share a dessert at more casual establishments. Producer Terri Henry and Chef Philip Pretty of Restauration (a participating restaurant) are our guests.

Native Son Alehouse opened in Downtown Santa Ana in the Summer of 2014. It’s a relaxed, laid-back hangout with a rooftop lounge known for its extensive selection of 27 rotating, hand-selected craft brews on tap. We’ll tap the keg for all the 411 with proprietor Jon Sanchez.

When it comes to fresh seafood the term “Organic” is starting to be thrown around quite regularly. With fish and other seafood what does the organic label really mean? Are there even accepted standards in the United States for using this on a label? Our own resident seafood authority, Chef Andrew Gruel of Slapfish, will clear the haze for us on this one

All of this and lots more absolutely incredible deliciousness on Saturday’s show!
