Show 413, February 20, 2021: Trevor Faris, Proprietor, Hank’s Bagels – Sherman Oaks & Burbank

Trevor Faris of Hanks Bagels

We’re bagel obsessed in Southern California so a new, independent bagel shop really needs to stand out to get attention in an already crowded and highly discriminating marketplace. Hank’s Bagels (Hank’s…a deli of sorts) is the creation of Chef Trevor Faris and the original, tiny Burbank location opened without fanfare in late 2019.

His hand-rolled bagels and spreads, along with a full menu of mouth-watering bagel sandwiches earned early word-of-mouth fame. Many days they sold out of bagels by the early afternoon. Demand has been so great that Chef Trevor opened a much larger, commissary location on Ventura Blvd. late last year to keep up. Chefs rave about these bagels and sandwiches.

The assortment of handmade bagels includes plain, poppy, sesame, salt, cinnamon raisin, onion, rosemary sea salt and everything. Spreads range from Scallion to Vegan Cream Cheese plus Lox. A popular Bagel Sandwich is the No. 2 with crispy fried egg, braised greens, gruyere, pickled peppers and aioli.

Chef Travis joins us with the bagel briefing.

Show 301, December 8, 2018: Bob Oswaks, Proprietor / Boulanger, Bob’s Well Bread Bakery, Los Alamos

Bob Oswaks

You would not expect to find an incredible artisan bakery which also serves popular word-of-mouth breakfast and lunch (extraordinary sandwiches) in the small town of Los Alamos in the heart of Santa Ynez wine country located just off the 101 Freeway. Bob’s Well Bread Bakery and Café delightfully defies expectations.

Unusually there are two cottages (“The Cottages”) available for guests on the Bob’s Well Bread property.

“Bob’s Well Bread was started by an entertainment executive-turned-baker who was looking for some balance in his life, and found a passion and a new calling that was both delightful and unexpected.  “When you make something naturally, and with your hands, there’s a magic to it.  If you’re eating a loaf of our bread, or drinking a bottle of our local wine, and you know that someone put in the time to make it by hand, there is just this personal connection.  It may not change the way it tastes, but it changes your experience, and that is what everyone wants—the experience.”

Bob and Jane Oswaks designed Bob’s Well Bread out of an old 1920’s gas station historic Los Alamos, opening their doors on August 1,2014.  They pride themselves on the finest ingredients, sourced locally and seasonally, in all of their products, including Jane’s house made jams, marmalades, marshmallows and gluten-free specialties.”

“Using natural fermentation for yeast and allowing the dough to rise slowly, Bob’s Well Bread makes artisan breads by hand in small batches, in a custom-built stone deck oven.”

The Café Menu (Breakfast & Lunch changes regularly. The word-of-mouth sandwiches are amply portioned and served on the fresh, house-bakedbreads. Sandwich nirvana…

Bob’s has grown over the last four years to the point that there is now both a dedicated baker and chef in-house overseen by Bob.

We’re on the rise with Proprietor/ Boulanger Bob Oswaks.

Next to fresh seafood, a properly prepared sandwich is one of Chef Andrew’s best friends. It’s a pleasing meal to-go artfully packaged between two slices of quality bread!

Great possibilities…

Show 83, August 9, 2014: Tarit Tanjasiri of CremaCafe & Bakery

Tarit TanjasiriTarit Tanjasiri is the consumed baker/proprietor of the revered CremaCafe & Artisan Bakery in Seal Beach. It started eight years ago as a small breakfast and lunch spot. Tarit couldn’t source a bread for his sandwiches that satisfied him so two years ago he added an adjacent production bakery. It’s the café on one side and the bakery on the other. We’ll meet him.

Tarit’s Kouign Amann was one of the OC Weekly’s “100 Favorite Dishes of 2014.”

According to Anne Marie Panoringan of the OC Weekly : “Per Tarit, a Kouign Amann is a pastry from the Brittany region of France. It’s often considered more of a cake than a pastry, although Crema utilizes croissant dough for their version. Layers of butter, dough, sugar and a bit of sea salt are formed. Shaped to resemble a blooming rose, it is then placed in the deck oven to bake. Sweetness and density are much higher in France, and they come in many more sizes, shapes and filling flavors.”
