Jeoffrey Offer of Butcher's House Brasserie

Butcher’s House, a modern brasserie centered around the antique craft of butchery, debuted last month at Costa Mesa’s South Coast Collection. Helmed by Chef-Owner Jeoffrey Offer, Butcher’s House offers a menu centered around dry-aged meats and rustic brasserie-style dishes representative of his hometown Toulouse in the south of France. For Offer, Butcher’s House is more than an homage to his culinary roots; it is the fulfillment of his lifelong American dream.”

“Offer’s culinary inspiration began at home, shadowing his mother in the kitchen as she prepared Sunday dinners and family-style meals. His father, a local butcher, taught him the precision and attention to detail involved in preparing different cuts of meat. While his storied culinary career spans over a decade across three continents, his most recent role was executive chef of Moulin for nearly six years. In 2014, he joined award-winning restaurateur Laurent Vrignaud in the opening of Moulin’s flagship location in Newport Beach to the expansion of the brand’s fifth location. As a classically trained French chef, Offer brings more than 12 years of experience in cooking, kitchen logistics, and operations management to the opening of his first restaurant, Butcher’s House.”

“In 2013, I came to America with nothing but a backpack and a dream,” comments chef-owner Jeoffrey Offer. “Butcher’s House allows me to take ownership of my American dream and share my passion for cooking with the people who will continue to make that dream a reality. It is and has been a true labor of love.”

“Butcher’s House features a menu highlighting wood-fired cuts of meat, dry-aged and butchered in-house. During dinner, guests can enjoy premium steaks like a 30-day Dry-Aged Bone-in Ribeye, Filet Mignon, and New York. A selection of house specialties like Toulouse Sausage, Country-Style Pork Paté, and Duck Confit pay homage to Offer’s upbringing in the south of France. His expertise in pastry arts is displayed through rustic-yet-refined desserts, including a Chocolate Mousse and Crème Brûlée.”

“During lunch, Butcher’s House serves sandwiches, salads, and dry-aged beef burgers available a la carte or as combos with the option of including a drink and dessert. The beverage program focuses on a curated selection of French wines, artisan beers on draft, and a menu of classic French-inspired fermented cocktails crafted with soju-based spirits.”

Show 404, December 19, 2020: Yong and Ted Kim, Founders, Seoul Sausage Co.

Yong and Ted Kim of Seoul Sausage Company“Back in 2010, brothers Yong and Ted Kim started crafting Korean-inspired sausages in their kitchen and Seoul Sausage Co. was born. Their two signature sausages — the Kalbi and the Sweet & Spicy — quickly began to pick up buzz at the farmers markets, wineries, and parties where they popped up, so the Kims decided to quit their advertising jobs, officially launch Seoul Sausage Company, and audition for Food Network’s “Great Food Truck Race,” Season 3 on a lark. And lo and behold, against incredible odds, they won!”

“Since then, Seoul Sausage Co. has really gone full-throttle in their embrace of Korean-American flavors.” COVID 19 required reinventing their business model. A very active and growing catering business was put on hold and their menu is now available nationwide for convenient delivery via Goldbelly, the curated online marketplace for premium regional and artisanal foods crafted by local purveyors throughout the Country.

“From their signature sausages to kimchi fried rice balls and buckets of twice-fried boneless sweet & spicy Korean fried chicken, these goodies (available now exclusively via Goldbelly) are bursting with big, bold flavors that have taken the City of Angels (and soon nationwide) by storm.”

Watch for the launch of the Seoul Sausage Co. menu in Orange County delivered to your door via the major Third Party Delivery services.

Seoul Sausage Co. was one of 2 fortunate winners in the “An Idea for LA” initiative that provided marketing makeovers for LA area businesses struggling to survive the current pandemic. The award was the creation of a trio of “Meet Seoul Sausage” animated spots. Battery (ad agency,) animation studio Stoopid Buddy Stoodios and actor Donald Faison created the humorous, pro bono campaign.

Jim CasconeIt’s a good sign of the times. The old-fashioned, full-service, neighborhood butcher shop is back in fashion. This is where you can source the exact cut of meat or poultry that you need and get expert advice from a master butcher who also knows how to prepare and cook everything they sell. What a concept.

Located at the Farmer’s Market at 3rd and Fairfax since 1986, Huntington Meats is proud to offer the finest quality meats and sausages.

“A true old-fashioned butcher shop, Huntington Meats offers traditional roasts, steaks, chops, ground beef and much more. You’ll discover an astonishing selection of sausages here (Cajun, three-cheese, chicken sausage, Italian from mild to Wow! and many more). For parties, select a variety to barbecue so everyone can have a taste! Huntington is also one of the city’s exclusive purveyors of Harris Ranch meats.”
