USC Hospitality operated 44 food and beverage venues on the University Park Campus, Health Sciences Center Campus, as well as two off-campus venues. It also provides creative full-service catering.

“Ernest and his team of up to 40 chefs turn out about 10,000 meals daily between students, faculty, the hospital, the hotel, the Coliseum and special events. So the pressure is on to produce and produce well.” “The question is not how do we fit their needs?” “Instead of what do they want, it’s what do they not know exists that they can’t live without?” Ernest insists.

Chef Eric is also USC Hospitality’s Associate Director of Purchasing, Logistics & Special Projects. He’s our guest.

“USC really offers top-notch hospitality. That, paired with the executive team and the leadership team, makes (the department) amazing, top to bottom,” Ernest observes.

“We view roasting a carrot with the same attention as making foie gras. We apply modern technique to everything, across the board, to create the best USC experience,” he continues.

With 44 outlets and 44 different menus to fill daily, it’s essential to plan ahead, Ernest stresses. “Good enough isn’t good enough. Our department answers to every single person who walks on the campus,” he promises.

Chef Eric is also proud of USC Hospitality’s Teaching Garden. It’s an unusual collaboration with LA Urban Farms, LA & SF Specialty and Chefs to End Hunger.

What do Fried Gnocchi with Spicy Sausage, Crab Scampi Pasta and an All-Day Breakfast Sandwich have in common? They’re just a few of the new items that Chef Carlito and Yard House will introduce to its menu on September 12. The restaurant, known for its menu of American favorites and 100-plus taps of beer, will introduce a half-dozen new entrees to its menu, which will be available through January 15, 2017.

“As summer starts to wind down, and we head into the cooler months, it’s natural for the palate to gravitate towards heartier fare,” notes Chef Carlito Jocson. “Our Lobster Mac N Cheese, which has appeared on some of our special menus over the years, like Valentine’s Day or the holidays, is one we’re bringing back because it’s so popular. And, for the first time in our nearly 20-year history, we’re adding a breakfast sandwich.”

Jocson added that as a chef he studies food culture behaviors rather than trends, which helps drive his decision on what he feels needs to be added to the menu.

“I’m out a lot, and I observe what types of food people are seeking out,” added Jocson. “When I’m in Downtown L.A. late at night and there is a line halfway around the block at a chef-driven kiosk for a simple egg sandwich, I immediately start experimenting in the kitchen to create an egg sandwich for Yard House to answer that call for our guests.”

Chef Jocson also noted that, while Italian and Mexican fare have always been dining staples they’re both experiencing a resurgence among diners.

Justin MillerPizzeria Ortica, the well-respected Italian restaurant (launched in 2009) located across from South Coast Plaza in Costa Mesa, has added an artfully crafted Sunday Brunch to its already well-received lunch and dinner service.

The simple, but inspired a la carte menu is available Sundays from 11 a.m.-2 p.m. Pizzeria Ortica experimented with serving brunch on Father’s Day which proved popular and resulted in guests requesting that it be available weekly. Chef Justin Miller’s new menu features small plates, “eggs and such,” and pizzas, with prices ranging from $6-$16.

Innovative cocktails, crafted by award-winning beverage director Joel Caruso, include The Vegetarian—a bloody Mary with housemade mix and pickled vegetables; The Pescatarian, a tequila or gin version with house shrimp stock, and a POG (Hawaiian juice blend of passionfruit, orange and guava) spritzer.

Guests are greeted at the table with a basket of complimentary morning buns, flaky and stuffed with tomato conserva and Parmigiano, the creation of talented sous chef Colleen Flynn. Squash-blossoms filled with lemon ricotta; heirloom tomato-rubbed toast with prosciutto di Parma; and pork belly, braised and sliced with agrodolce, are among the starters.

“With brunch becoming so popular, the abundance of residential complexes within walking distance and Sunday matinees at Segerstrom Center for the Arts and South Coast Rep, it makes total sense to introduce brunch here,” said Jason Scarborough, Pizzeria Ortica’s general manager.

Executive Chef Michael Rossi (ex-Napa Rose) has been at the helm of The Ranch Restaurant & Saloon since it’s opening day in early 2012. He was actually on the ambitious project over a year testing recipes before the first guests were greeted. The Ranch (unusually) has its own farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh fruits and vegetables used at the highly regarded and much acclaimed restaurant. He was at the pre-opening preview lunch for the eagerly anticipated Din Tai Fung Dumpling House in South Coast Plaza (August 18th was Opening Day) and will share some of his observations.

Din Tai Fung is most famous for XiaoLongBao, the Shanghai-style soup dumplings which became a signature dish at the original site in Taipei.

Din Tai Fung at South Coast Plaza is over 8,000 square feet, making it one of the largest in over 100 locations worldwide.

Michael Rossi of the Ranch Restaurant and SaloonExecutive Chef Michael Rossi (ex-Napa Rose) has been at the helm of The Ranch Restaurant & Saloon since it’s opening day in early 2012. He was actually on the ambitious project for over a year testing recipes before the first guests were greeted.

The Ranch (unusually) has its own 2-acre farm located on the Edwards Ranch Estates in Orange which provides a lot of the fresh produce used at the highly regarded restaurant. Think of over 600 heirloom tomato vines featuring 90 different varieties. Original (and fully mature) orange and fig trees are also part of the property.

Future expansion plans for the Edwards Ranch Estates include avocado trees, olive trees, and grape vines.

It’s a chef’s fondest dream to have these incredible resources…

We’ll meet Chef de Cuisine Michael Knowles.He started cooking at age 14! Chef Michael cooked at Wolfgang Puck’s Postrio in San Francisco in the 90s. He has elevated Black & Blue to an award-winning California steakhouse that’s true destination dining for discerning San Diego residents.

All of his pastas are made in-house along with some of the cheese.

His “Signature Indulgence” on the Black & Blue menu is “The Ultimate Surf & Turf” for $75.00. It’s also part of a betting challenge. How about Lobster Creamed Spinach as a premium side?

Travis RodgersTravis Rodgers is the easy-going Iron Man of personalities on AM 830 KLAA. Every weekday morning he’s on AM 830 KLAA talking sports for four hours beginning at 6:00 a.m. After he’s finished at 10:00 a.m. on AM 830 he continues his national show for Yahoo Sports Radio for another hour until 11:00 a.m. That’s five hours on Weekdays as the solo host.

He’s also the master of engaging with his listeners via Twitter.

Besides being all over Food TV (he bested Iron Chef Bobby Flay on Food Network’s “Iron Chef America”) Chef Eric Greenspan has made a name for himself in the rarified world of fine-dining. For almost two years he was the executive chef of Joachim Splichal’s highly-acclaimed flagship restaurant, Patina. More recently he created The Foundry on Melrose Ave. In the Fall he returns to Melrose with the eagerly anticipated fine dining, Enclave.

Although Chef Eric Greenspan has created the more casual, Greenspan’s Grilled Cheese and The Roof on Wilshire, his heart and true passion remains in fine dining. We’ll talk about the future of fine-dining in Los Angeles and get Chef Eric’s perspective. We’ll also preview Chef Eric’s new series for the National Geographic Channel debuting in November.

The first Canstruction Competition is coming to Long Beach on August 21st. The resulting collections of food benefit Food Finders food rescue / food bank. It’s going to be a wild 12 hours benefiting people in need!

The Halos have an ace relief pitcher in Jason Grilli newly arrived in a trade deal with The Pittsburgh Pirates. In Pittsburgh he’s known for The Closer, a 3-decker grilled cheese sandwich using 9 different premium cheeses. Jason is with us live from Rangers Ballpark in Arlington, Texas to talk about it.

The KTown Night Market and Block Party is coming to Angel Stadium on Friday and Saturday, August 22nd and 23rd. It’s 60 plus food trucks and vendors (including the Seoul Sausage Co.) and a large beer garden. Also there will be live music, games and rides. We’ll chat with the co-producer and one of the young founders of the participating Seoul Sausage Co.

Meet Mixologist Chris Amirault of Harlowe, a new bar that’s attracting a lot of attention in West Hollywood. Even his standard cocktails are very special. Chris also creates unusual draft and bottled cocktails.

Four teams comprised of five prominent local architectural and engineering firms will transform thousands of cans of food into larger than life artistic masterpieces. The structures may be built up to 10’ x 10’ x 10’ and will be comprised of edible canned goods totaling over 7,000 lbs.

The completed structures will be on display to the public from August 22nd through September 2nd.

CANstruction was founded in 1992 to help promote the design community and raise food donations for hunger relief efforts. CANstruction events have been held in over 140 cities worldwide donating over 15 million pounds of canned foods to alleviate the concern of hunger and malnutrition.

3rd annual PigOut in Costa MesaThe 3rd Annual PigOut (benefiting Inspire Artistic Minds) is set for Sunday afternoon, August 24th at the California Scenario (Noguchi Gardens) in Costa Mesa.

The main attraction will be a 250 pound Templeton Rye Duroc Pig of the Templeton Rye Heritage Pork Project. Only 25 of these special pigs are in existence.

Chef Mike Puglisi (ex-Thomas Keller’s Bouchon Beverly Hills) of the soon-to-be Electric City Butcher in Santa Ana will be performing a pig deconstruction demonstration.

Koreatown Night MarketThe KTown Night Market and Block Party is coming to Angel Stadium on Friday and Saturday, August 22nd and 23rd. It’s 60 plus food trucks and vendors (including the Seoul Sausage Co.) and a large beer garden. Also there will be live music, games and rides.

Seoul Sausage Co., the Season 3 winners of Food Network’s “Great Food Truck Race,” are curating the all-star mobile culinary experience. The 20 food truck lineup includes fan favorites such as Coolhaus, Slangin Corea, and Fluff Ice.

We’ll chat with the co-producer Danny Park and Yong Kim, one of the young founders of the participating Seoul Sausage Co.

Marissa SharonPastry Chef Marissa Sharon opened DOMA in Beverly Hills in 2012 with Executive Chef Dustin Trani. She previously was in the pastry department at Chef Scott Conant’s highly regarded Scarpetta at Montage Beverly Hills. The two collaborate seamlessly and compliment each other.

Her cannolis are truly outstanding and she also makes most of the pasta used at the restaurant.

DOMA is considered one of the finest new restaurants in L.A. – in the grand European tradition but with a sleek and modern twist.

DOMA is hosting a special “Dinner Party Series” evening to benefit C-CAP on Monday evening, April 7th @ 6:30 p.m. Chef Dustin is a graduate of the C-CAP high school program!
