Riip Beer Company started modestly as a Home Brew Operation on a 20 Gallon Brew Sculpture by More Beer in a small garage in Downtown Huntington Beach, California.

“Founded by two Brother-in-Laws in 2014, Riip Beer became one of Southern California’s first Nano Breweries to hit the rapid growing craft beer scene producing some of the best small batch, hand crafted ales in Orange County. Riip Beer was built organically from the ground up, the same way they craft their beers.”

In 2016 Riip Beer Company for the first time ever entered the prestigious GABF (Great American Beer Festival) competition and received a Silver Medal for it’s Super Cali IPA in the uber competitive American IPA category. Brewed on their 3bbl system Riip Beer became the smallest brewery to ever win a GABF in the American IPA category with over 400 entries from around the globe.

The winning tradition has continued under the direction of Brewmaster and Director of Brewing Operations, Ian McCall who is a Huntington Beach resident. Ian joined Riip Beer Co. (a bit over 2 years ago) from Beachwood Brewing where he was lead brewer of their Long Beach facility.

At this year’s Great American Beer Festival in Denver, Riip was in the highly exclusive category of most medaled breweries. They were awarded Gold for their Belgian-Style Ale – Category 82 (Tangible Passion,) A Silver for Coffee Stout or Porter – Category 10 (The Riizzo,) and a Silver for American-Style Black Ale or American-Style – Category 69 (Black the Ripper.)

Show 151, December 19, 2015: Chef Philip Tessier, Head Coach, Team USA 2017, Hestan Culinary Director

Philip TessierAfter more than a decade in the kitchens of the Thomas Keller Restaurant Group, Chef Philip Tessier led Team USA to a historic second-place finish at the Bocuse d’Or in the 2015 competition. The Bocuse d’Or is among the most demanding international cooking competitions, pitting chefs from twenty-four countries against one another in a marathon five and a half hour cooking challenge.

Chef Tessier will be the Head Coach for Team USA in 2017. Over the last several months Tessier has traveled around the country mentoring the four teams competing to represent the United States as Team USA 2017 in Lyon at the Bocuse d’Or.

Chef Tessier was also part of the distinguished judging panel of chefs on December 17th at the Venetian in Las Vegas to select Team USA 2017.

Show 138, September 12, 2015: ment’or BKB Foundation’s 2015 Young Chef Competitions

philip-tessierThe ment’or BKB Foundation debuted its 2015 Young Chef Competition Series in Los Angeles on Sept. 27th at Bouchon Beverly Hills. Other upcoming dates will be in Chicago, Houston and New York City. Four chefs between the ages of 22 to 27 compete on a Bocuse d’Or-style challenge, with the winning team in each city being awarded $10,000, which may be used to stage at the restaurant of their choice. The team placing second receives $5,000.

Culinary greats from the distinguished ment’or Culinary Council are on hand in each city to judge the competition, a ticked event with all the proceeds hoping to support the Foundation. In Los Angeles Alan Wong (Alan Wong’s) flew in all the way in from Honolulu to be a judge!

Skylar Stover, the Commis for Team USA at the 2015 Bocuse d’Or International Culinary Competition in Lyon, was the winner at Bouchon Beverly Hills. The next leg of the competition is Chicago on Sept. 17th.

Culinary Council member Chef Philip Tessier, formerly the Executive Sous Chef of The French Laundry in Yountville is our guest. Chef Philip is also the Team USA Head Coach for the 2017 Bocuse d’Or international culinary competition. Chef Philip was the Silver Statue Winner for Bocuse d’Or Team USA in 2015. This was a prestigious first for the United States.

Barrel-Oak Roasted Guinea Hen from Team USA at the Bocuse D'orTeam USA presented “the acclaimed panel of judges with a stunning meat platter of Barrel-Oak Roasted Guinea Hen with sausage of guinea leg confit, white corn mousse, and black winter truffle, “Garden of Sweet Peas” with French Laundry garden blossoms and herbs, sugar snap peas, and black trumpet mushroom panade, “Beehive” with boudin of smoked guinea liver, grapevine honey, pistachio “Pain des Genes, ” wild fennel buds, and topaz wine glaze, Black Truffle Consomme with ragout of gizzard and heart “confit,” steamed custard, and flowering cress, White Corn “Nest” with buttered corn pudding, crisped corn silk, and “petit” popcorn, and Preserved Chanterelles with salad of frisee and garden blossoms, pickled huckleberry, and “foie gras” jus.”

“The gorgeous fish plate showcased Brioche-Crusted Brown Trout Pave with American caviar, tartelette of crisped skin, garden dill, celery branch “Farci,” celery root puree, compressed apples, brown butter emulsion, sand smoked mushroom consomme. Both the meat platter and fish plate were designed by the lauded  Martin Kastner of Chicago.”

There is 6,000 years of winemaking tradition in the Country. The most prominent winery in Lebanon with a hard-earned international reputation is Chateau Musar. Serge Hochar is the larger-than-life personality behind Chateau Musar.

Chateau Musar, founded by Serge’s father, was established back in 1930. Hochar revived the winery and traveled over the globe promoting the wines. The success of Chateau Musar aided in the establishment of the contemporary wine industry in Lebanon. He skillfully guided and grew the winery through a turbulent decade of civil war in Lebanon.

Eric Asimov (The New York Times greatly respected wine writer) points out in a recent piece on Chateau Musar that when the civil war ended in 1990 there were five wineries operating in Lebanon. By 2104 there were almost 50.

Show 77, June 21, 2014: Jason Wilson, Founder, Back Forty Beer Co., Gadsden, AL

Jason WilsonFounded in 2009 by Jason Wilson, Back Forty Beer Co. is one of the oldest Alabama breweries and the first to distribute outside of the state. Back Forty beers are available statewide in Alabama, Florida, Georgia and Mississippi. The brewery is located in Historic Downtown Gadsden, Alabama.

“In 2008, after several years in the corporate world and with over 150 brewery tours under his belt, founder Jason Wilson reached out to renowned Brewmaster Jamie Ray and asked for his help in developing recipes for Back Forty Beer Co.

The goal for the liquid was simple – to expose Southerners to the same craft beer culture that Wilson had been part of for the last ten years. This meant starting out with classic beer styles and evolving with customers along the way. Jamie agreed and in January of 2009 he became Back Forty’s first employee.

In June of 2009, Back Forty released its first offering, Naked Pig Pale Ale. The beer was only available in the North-Central Alabama home market, but the response was overwhelming. In March of 2010 the second Back Forty offering hit the shelves, Truck Stop Honey Brown Ale. Later that year Truck Stop Honey was awarded a Silver Medal at the Great American Beer Festival, and in the weeks following, distribution offers poured in that allowed Back Forty to expand its coverage throughout Alabama.

How do you conduct a serious educational wine tasting (that’s also fun) with a group? Wine, food and travel writer Linda Kissam is with us to explain.

Quality Italian beef, pasta, and sustainable seafood are on the menu at the new Chianina Steakhouse in the Naples area of Long Beach. This is from the hospitality team known for Michael’s on Naples. Linda Kissam recently experienced a dinner there.

The craft beer movement, surprisingly, is vibrant and thriving in Alabama. Back Forty Beer Co. is the largest, and oldest, packaging brewery in the State.

The 36th Annual Greek Festival brings a “Taste of Greece” to Orange County at St. Paul’s Greek Orthodox Church from June 27th to 29th. More than 11,000 guests are expected to attend the three-day festival which will feature traditional Greek cuisine, wine tasting, live music, and authentic Greek dancing with lessons. It’s a family-friendly affair!

Linda KissamHow do you conduct a serious, educational wine tasting with a group that’s also entertaining and fun? Wine, food and travel writer Linda Kissam is with us to explain. She organizes tastings all the time…

She expertly demonstrated this recently for a group of professional food, wine, and travel journalists at the annual conference of the International, Food, Wine, and Travel Writers Association in Montgomery, AL.

It was an organized tasting of five Italian Sparking Wines.

It’s fun but there is a proper way of doing this.

She also explains what the International Food, Wine, and Travel Writers Association does and what their mission is. Linda serves as their First Vice President.

Chianina SteakhouseHigh-end steakhouses with a serious bar and deep wine lists are very much in fashion these days.

How about an elegant steakhouse that serves limited availability, high-quality Italian beef, prime steaks, and sustainable seafood? There is also a well-regarded executive chef (David Coleman) overseeing things. We’ll be meeting the General Manager of Chianina Steakhouse in the Naples neighborhood of Long Beach, part of the ever expanding Michael’s Restaurant Group. We’re joined by Alejandro Duran of Chianina.

Jason WilsonFounded in 2009 by Jason Wilson, Back Forty Beer Co. is one of the oldest Alabama breweries and the first to distribute outside of the state. Back Forty beers are available statewide in Alabama, Florida, Georgia and Mississippi. The brewery is located in Historic Downtown Gadsden, Alabama.

“In 2008, after several years in the corporate world and with over 150 brewery tours under his belt, founder Jason Wilson reached out to renowned Brewmaster Jamie Ray and asked for his help in developing recipes for Back Forty Beer Co.

The goal for the liquid was simple – to expose Southerners to the same craft beer culture that Wilson had been part of for the last ten years. This meant starting out with classic beer styles and evolving with customers along the way. Jamie agreed and in January of 2009 he became Back Forty’s first employee.

In June of 2009, Back Forty released its first offering, Naked Pig Pale Ale. The beer was only available in the North-Central Alabama home market, but the response was overwhelming. In March of 2010 the second Back Forty offering hit the shelves, Truck Stop Honey Brown Ale. Later that year Truck Stop Honey was awarded a Silver Medal at the Great American Beer Festival, and in the weeks following, distribution offers poured in that allowed Back Forty to expand its coverage throughout Alabama.

Jason revealed the great news that it looks like Back Forty Beer Co.’s styles will be available in Southern California by year’s end. We’ll keep you posted…
