You’ll remember the always opinionated Chef Shirley Chung (Las Vegas – based) as a finalist in Season 11 of Bravo’s “Top Chef” in New Orleans. She is opening a modern Chinese restaurant in Irvine at the end of September.

It’s the Orange International Street Fair in Old Towne Orange this Labor Day Weekend. In the center of the action in a restored historic bungalow on W. Chapman is Wahoo’s Fish Taco. Co-founder Wing Lam joins us to discuss what’s new at Wahoo’s.

Shirley ChungYou’ll remember the always opinionated Chef Shirley Chung (Las Vegas – based) as a finalist in Season 11 of Bravo’s “Top Chef.”

Prior to her ride to fame on “Top Chef” she held the Executive Chef position at China Poblano by Jose Andres at The Cosmopolitan.

Chef Shirley is opening a modern Chinese restaurant in Irvine at the end of September. “I like my cuisine to tell a story,” commented Chef Shirley, who has developed the innovative menu of sharable plates for TWENTY EIGHT. “My inspiration for this menu is reflective of my childhood years in Beijing, my past experiences, and my travels, all of which have inspired me to push the envelope.”

“In addition to the menu of modern Chinese specialties, diners can look forward to an enticing Dim Sum and Small Plates menu, a full bar with a focus on craft cocktails, and private dining options for both large and small gatherings.”

Raymond Martin is the new executive chef for Wahoo’s. New on the menu are Street Tacos, a Kale Kai Salad, and Wahoo’s Wings.

Opening soon is a long-in-the-works Wahoo’s location at Honda Center.

The Palm Beverly HillsThe iconic Palm Restaurant in West Hollywood will close and lock its doors for the last time on September 30th after almost 40 years. The better news is that their new 6,000 square foot restaurant seating 185 guests will debut at in Beverly Hills at 267 N. Canon Dr. in early November.

“Serving its classic steakhouse cuisine and generous “Palm-size” portions since 1975, The Palm in West Hollywood is equally famous for the caricatures of its celebrity customers and the entertainment industry power players that adorn its walls.”

Kedric Francis of Coast Magazine and the Orange County Register MagazineOur favorite debonair man about Orange County, Kedric Francis, is back with us for a dining report from his recent stay in Cancun. Kedric is the well-traveled Executive Editor of both Coast Magazine and The Orange County Register Magazine.

Kedric stayed at the 274 room, all-suite, Nizuc Resort & Spa in Cancun…secluded a bit away from the tourist zone on a cove. It’s on the grounds of the former presidential retreat. Lots of water…

There are six tempting dining options there so Kedric opted to never leave the property during his visit.

Ni is the Peruvian restaurant. Kedric particularly enjoyed their ceviches.

Indochine is an Asian-fusion spot. Recommended is the sushi and deep-fried Grouper.

Of course they need to have a wonderful Mexican restaurant. That’s Ramona overlooking the beach. It’s modern versions of regional recipes using local produce and spices.

Show 35, July 13, 2013: Chef Jet Tila with “Sushi 411.”

SushiJet has extensive experience in teaching the sushi basics to professionals so we asked him to share the fundamentals of sushi etiquette so guests will have the ability to eat better at their favorite sushi spot. With that said Jet also respectfully suggests that you follow the course in a sushi restaurant that provides you with the most pleasure.

Sushi was originally created in China as a way to preserve fish before refrigeration. It was layered, and heavily salted and vinegared.

The three basic types of sushi are sashimi, maki, and hand rolls. It takes years of rigorous training to become a master sushi chef.

One big faux pas in a sushi bar is to mix the soy sauce and wasabi together into a pool. The shaved ginger is actually a palate cleanser and not a side salad. Jet explained where each should be properly used.

If you sit at the sushi bar the chef is stealthily watching how you eat. At a sushi bar there are the seafood equivalents of filet mignon, rib eye, and chuck. All are edible of course. If the chef sees that you aren’t discriminating then the sushi you get will be the equivalent of “chuck.”

The chef knows what’s the best because he’s been prepping it all day. Omakase (literally) “trust the chef” is the way to go for a special experience. It’s a personalized tasting menu left in the hands of the chef. The sushi chef will present you one item at a time (from lighter to heavier) to savor.

If you really want to an impression with the sushi chef send over a beer or sake for them during the meal with your compliments. You’ll likely see some incredible fish as a result…

Fair food vendor, Chicken Charlie’s, always is always out there with fab fried food items. Eagerly anticipated is his new Krispy Kreme Sloppy Joe’s and Bacon A-Fair’s Wild Boar on a stick (an OC Fair exclusive.)

According to the Orange County Register’s Nancy Luna, Chicken Charlie sold 50,000 deep-fried Twinkies last year at the Fair!

Other Chicken Charlie highlights are a deep-fried bacon pickle and a waffle dog.

Alan WongChef Wong is one of the distinguished pioneers of Hawaiian Regional Cuisine. This group of influential chefs was advocating using local ingredients and sustainability years before the concept was fashionable. In Honolulu he is the owner / chef of Alan Wong’s and the more casual Pineapple Room located in Macy’s in the Ala Moana Center. On Maui his property is Alan Wong’s Amasia at the Grand Wailea Resort. That’s Hawaii Regional Cuisine with sushi and a robata grill.

Chef Alan defines Hawaii Regional Cuisine as an artful blending of all the cultures now populating the Islands. In addition to native Hawaiian food it includes influences from the Chinese, Japanese, Portuguese, Koreans, and Filipinos, among others.

Chopped Ahi Sashimi and Avocado Salsa StackThere are many ways to experience dinner at Alan Wong’s. The a la carte menu features salads and entrees. There is also an a la carte “Side By Side Tasting” menu. Additionally there is both a “Chef’s Tasting Menu” and “A Tasting of The Classics” prix fixe menu. Both of the “Tasting” menus have optional wine pairings matched with each course.

Miya Nishimura is Chef Alan’s Chef De Cuisine at Alan Wong’s. She is a rising star in her own right.

On Sunday, June 2nd Chef Alan Wong is one of the celebrity chefs with a tasting station at the annual Share Our Strength Taste of the Nation Benefit at Studio at Montage Laguna Beach Resort. The event starts at 4:00 p.m. One hundred per cent of the ticket sales revenues goes toward hunger relief efforts in Orange County
