Chef Anthony Jacquet of the Whisper Restaurant and Lounge at The Grove in Los Angeles was one of three talented North American Chefs to be chosen by the Taiwan Tourism to participate in Taste Taiwan 2014. The lucky chefs were hosted to an exclusive eight-day culinary adventure to Taiwan. Chef Anthony was inspired to then create a dish from his trip which is highlighted on The Whisper menu as a special for this month. Diners who enjoy this dish also have the chance to win roundtrip airfare to Taiwan on EVA Air.. Chef Anthony returns with an update.

Maison Giraud in Pacific Palisades opened its doors in 2011. The unpretentious restaurant and bakery reflect the life and experiences of master French Chef Alain Giraud (ex-Michel Richard’s Citrus.) Chef Giraud welcomes his guests to dine on fine French food in a friendly, family setting. You can see him every Wednesday morning shopping at The Santa Monica Farmers Market where he is a long-time fixture. Giraud arrived in Los Angeles in 1988 and joined Michel Richard at Citrus as Chef de Cuisine. Together they elevated Citrus to the ranks of the country’s most celebrated restaurants. Chef Alain is our guest.

Troy Johnson is San Diego Magazine’s colorfully opinionated Food Critic and Editor-at Large. Troy joins us to discuss his recent cover story on “Baja. The Best Food, Wine, Beer, Music, And More.” Johnson will also update us on what’s on the horizon of significance in San Diego dining for 2015.

The Museum of the American Cocktail (MOTAC), Golden State of Cocktails, and Dewar’s present “King Cocktail in Story and Song: Dale DeGroff in Conversation with Philip Dobard,” a very special edition of Touring the Cocktail: MOTAC Los Angeles. The presentation is set for Wednesday evening, January 28th at 6:30 p.m. at Casey’s Irish Pub in Downtown Los Angeles. Dale DeGroff is a central figure in the craft cocktail revolution of the last 25 years. Philip Dobard is Vice President of the SoFAB Institute, home of The Museum of the American Cocktail. Both Dale DeGroff and Philip Dobard join us to preview the intriguing “King Cocktail in Story and Song.”

Chef Eric Greenspan of Greenspan’s Grilled Cheese and The Roof on Wilshire is back with us. We’ll get an update on the prime time run of his new series, “Eric Greenspan is Hungry” for the National Geographic Channel which just completed its initial run and is available “On Demand” on cable. Starting on Sunday, Jan. 18th Chef Eric is launching a Greenspan’s Grilled Cheese Pop Up at Westfield Century City through the end of March 2015.In Century City there will also be some exclusive menu items for Greenspan’s first West L.A. outpost.

Dine Newport Beach Restaurant Week returns with a renewed and refreshed format this winter, spanning two weeks of scrumptious dining possibilities from Monday, January 19th to Sunday, February 1st, 2015. Diners have the opportunity to enjoy special price fixed menus at lunch or dinner priced to represent a great value. Some restaurants are offering special Newport Beach Restaurant Week cocktails to pair with their special menus. Polly Peak, Director of Dine Newport Beach (the marketing arm of the Newport Beach Restaurant Association) is with us to preview all the tasty morsels.

Anthony JacquetChef Anthony Jacquet of the Whisper Restaurant and Lounge at The Grove in Los Angeles was one of three talented North American Chefs to be selected by Taiwan Tourism to participate in Taste Taiwan 2014. The lucky chefs were hosted to an exclusive eight-day culinary adventure to Taiwan.

Chef Anthony was inspired to then create a dish from his trip which is highlighted on The Whisper menu as a special for this month. It’s a Berkshire Pork Belly Bun with housemade hoisin sauce, pickled Fresno peppers, five-spice candied peanuts, and a fried quail egg.

“This Taiwanese hamburger represents the West-Meets-East experience to me. I pieced all the ingredients together based on my memories.” (Chef Anthony.)

Diners who enjoy this dish at Whisper Lounge this month also have the chance to win roundtrip airfare to Taiwan on EVA Air.

The chefs’ eight-day tour of Taiwan was filmed and edited into an informative 30-minute documentary. The documentary follows the on-the-go chefs as they indulge in Taiwan’s finest restaurants and experience the island’s fresh produce markets and street foods, among other culinary adventures. Diners at Whisper this month who order the Berkshire Pork Belly Bun will receive a complimentary DVD copy of the documentary as a thank you gift.

You can see him every Wednesday morning shopping at The Santa Monica Farmers Market where he is a long-time and familiar fixture. Giraud arrived in Los Angeles in 1988 and joined Michel Richard at Citrus as Chef de Cuisine. Together they elevated Citrus to the ranks of the country’s most celebrated restaurants.

Since then Alain has been the executive chef at Lavande, a fondly remembered French Provencal restaurant at the Loews Santa Monica Beach Hotel. He was the opening executive chef in 2002 at the high profile and much written-about Bastide on Melrose Place in West Hollywood. Before opening Maison Giraud, Alain was the opening executive chef at Anisette, an ambitious French brasserie located in the landmark Clocktower Building in Santa Monica.

Maison Giraud hosts a gourmet oyster bar on the first Thursday of each month conducted by Master Ecailler Christophe Happillion. On the fourth Thursday of each month is the Four Star Dinner (7-courses) showcasing the talents of a prominent Guest Chef.

Foie gras is back on the menu at Maison Giraud.

Steve Bramucci is a freelance food and travel writer based in Laguna Beach. For the final issue of OC Register Magazine he researched and wrote the provocative piece, “The 20-Mile Meal.” “With the help of The Haven Collective’s Executive Chef Greg Danielss, writer Steve Bramucci tests the limits of the “Eat Local” concept by sourcing a multicourse dinner from within 20 miles of his Laguna Beach apartment.” How did it all turn out ? Steve Bramucci takes us through that journey.

Love & Salt is the latest addition to the dynamic Manhattan Brach dining scene. It’s located on the site of the long-running Café Pierre (and the ownership group includes the partners from the former Café Pierre.) It’s now a high-energy Italian inspired restaurant under the culinary direction of partner Michael Fiorelli (ex- mar’sel at the Terranea Resort.) He blends accessibility and innovation with a menu that celebrates the soul of Italian cuisine reflected through a distinctly Southern California personality. Co-owner Sylvie Gabriele (Farm Stand) is our guest. She is a 2nd generation restaurateur.

Newly opened in Irvine is Twenty Eight Restaurant & Lounge which features a fresh, modern approach to traditional Chinese cuisine. The menu is contemporary Chinese dishes that utilize local, seasonal ingredients and bold flavors. The modern Chinese cuisine menu was created by Executive Chef & Partner Shirley Chung, best known from Season 11 of Bravo’s “Top Chef New Orleans.” Partnered with Chef Shirley in Twenty Eight is seasoned restaurateur Stacie Tran, who has experienced a long history in the hospitality industry. We’ll be joined by both Chef Shirley and Stacie Tran.

The slider eating competition at Dog Haus Biergarten (gourmet hot dog concept) in Old Pasadena will kick off the community’s fourth annual Cheeseburger Week (January 11th to 16th) with a challenge for their fans. Ten competitors, selected through qualifying rounds held at each Dog Haus location during the month of December and early January, will face off to see who can eat the most Dog Haus sliders in six minutes. Last year the victor consumed 38 sliders in 6 minutes! Founding Dog Haus partner Hagop Giragossian provides a briefing.

Chapter dishes are L.A. adaptations of signature Five Leaves items. Chef Ken’s motto is to have a fun place with good food.

Sylvie GabrieleLove & Salt is the latest addition to the dynamic Manhattan Brach dining scene. It’s located on the site of the long-running Café Pierre (and the ownership group includes the partners from the former Café Pierre.)

It’s now a high-energy Italian inspired restaurant under the culinary direction of partner Michael Fiorelli (ex- mar’sel at the Terranea Resort.) He blends accessibility and innovation with a menu that celebrates the soul of Italian cuisine reflected through a distinctly Southern California personality.

Guy Gabriele (the larger-than-life executive chef and co-owner of the former Café Pierre) created the eclectic wine list.

There are two chef counters in Love & Salt. One looks into the pizza prep station and the other view is right into the main kitchen with the highly visible wood-burning oven as the highlight. There is also an unusual, long community table running down the length of the space.

Shirley ChungNewly opened in Irvine is Twenty Eight Restaurant & Lounge which features a fresh, modern approach to traditional Chinese cuisine. The menu is contemporary Chinese dishes that utilize local, seasonal ingredients and bold flavors. There is a full bar with a focus on distinctive craft cocktails.

The modern Chinese cuisine menu was created by Executive Chef & Partner Shirley Chung, best known from Season 11 of Bravo’s “Top Chef New Orleans.” Partnered with Chef Shirley in Twenty Eight is seasoned restaurateur Stacie Tran, who has experienced a long history in the hospitality industry.

“The number twenty eight has always been important to me,” explained Stacie. “In traditional Chinese culture, the number holds significant meaning. In my personal life, it has always been an indicator of positive change and success.”

We’ll be joined by both Chef Shirley and Stacie Tran.

DogHaud Slider Eating CompetitionThe slider eating competition at Dog Haus Biergarten (gourmet hot dog concept) in Old Pasadena will kick off the community’s fourth annual Cheeseburger Week (January 11th to 16th) with a challenge for their fans. Ten competitors, selected through qualifying rounds held at each Dog Haus location during the month of December and early January will face off to see who can eat the most Dog Haus sliders in six minutes. Last year the victor consumed 38 sliders in 6 minutes! Watch out Coney Island!

Dog Haus is Southern California’s craft casual hot dog concept with a passion for creativity quality and commitment to community. The first Dog Haus opened in Pasadena in 2010 offering signature 100 per cent all-beef skinless Haus dogs, Haus Sausages and natural Angus beef burgers on grilled King’s Hawaiian Rolls. Guests can customize their own creations, too, choosing from a selection of more than 40 quality toppings.

Fine-dining chef Michael Brown joined the team last year as Culinary Director. Food Network’s Chef Adam Gertler is Dog Haus’ official “Wurstmacher.”

In addition to five franchise restaurants, Dog Haus currently operates three-company owned locations in the greater Pasadena area.

Hidden in plain sight in The Grove adjacent to the Original Farmer’s Market in Los Angeles is the comfortably elegant, The Whisper Restaurant and Lounge. Right now it’s a great respite from the craziness of The Grove during the Holidays. The Whisper celebrated its 10th birthday this year and, for the last seven years, has been under the culinary direction of Executive Chef Anthony Jacquet. The best known anchor (there are over 20 possible dining destinations) is the West Coast Flagship of 85 Degrees, a hugely popular Taiwanese bakery café (230 plus cafes in Taiwan) that is always busy. We’ll be provided with an informed overview of this foodie’s paradise by Marketing Manager, Suzie Won.

The Museum of the American Cocktai in association with Craft in America Center presents : Crafting the Cocktail : Handmade Objects and Implements for Classic and Modern Libations.” It’s a landmark exhibition of one-of-a-kind, handmade barware that showcases innovative designs inspired by the ways in which we enjoy distilled spirits, both neat and well-mixed. The exhibit will be hosted at the Craft in America Center in Los Angeles from December 6, 2014 to February 21, 2015.

“The Museum of the American Cocktail (MOTAC) presents A Complete History of Drinking (Abridged),” the next edition of Touring the Cocktail: MOTAC Los Angeles. The seminar will take place Monday, December 8 at 6:30 p.m. at the Ace Hotel’s Upstairs Rooftop Lounge. Celebrate Repeal Day Weekend in Los Angeles with Museum of the American Cocktail.

The Whisper celebrated its 10th birthday this year and, for the last seven years, has been under the culinary direction of Executive Chef Anthony Jacquet. It’s classic American cuisine with contemporary surprises. It’s surprisingly reasonable for the quality of the food and the refined atmosphere.

Chef Jacquet recently returned from an eight-day culinary adventure in Taiwan as part of the 2014 Taste Taiwan Culinary Tour. Of 25 chef nominations in the United States and Canada three chefs were selected to participate on the trip including Anthony Jacquet. He created a signature dish inspired by his time in Taiwan. This dish will be a special in January.

The chefs’ “Taste Taiwan” food journey is profiled in an upcoming documentary for CNBC which will air at 10:00 a.m. on Sunday morning, December 28th.

Chef Anthony joins us to share the highlights of this special experience.

Shortly after the book was available an online baking club, Tuesdays with Dorie, was formed so that members could bake their way through the book and learn from it and each other. The group finished the book’s 300 plus recipes and is now deep into Baking with Julia.”

Cocktails are inherently craft–centered : making a fine beverage requires an arsenal of tools, materials, and know-how. The process is a fundamental as the product. This exhibition will encompass the myriad items in the bartender’s toolkit, ranging from the miniscule to the sizeable, from the swizzle stick to the punchbowl, from the barstool to the liquor cabinet.

The exhibit will be hosted at the Craft in America Center in Los Angeles from December 6, 2014 to February 21, 2015.

SoFAB Institute President and MOTAC Managing Director Liz Williams, author of the forthcoming Lift Your Spirits, a history of drinking in New Orleans, will present a concise and colorful history of drinking, from the ancient roots of alcoholic beverages to the modern craft cocktail revolution. Acclaimed bartender and Ace Hotel Beverage Manager Dan Sabo will deliver a menu of classic libations surveying the history of mixed drinks, and guests will enjoy gourmet appetizers courtesy of Executive Chef Ken Addington of L.A. Chapter at Ace Hotel.
