Show 283, July 28, 2018: 5th Annual Stu and The Kids Benefit at Vibiana, DTLA

Stuart SkverskyThe 5th annual Stu and the Kids Fundraiser, an exceptional Thai-flavored Food & Wine Festival hosted by Chef Stuart Skversky (ex-Spago) with the help of his high-profile chef friends, returns to Vibiana in DTLA on Sunday, August 5, 2018. Proceeds will fund scholarships for Hill Tribe kids in Chaing Mai, Thailand. This is the 4th year we’ve proudly supported this significant Benefit.

In 2009, Stuart Skversky, a graduate of the Culinary Institute of America and a rising-star chef, made a dramatic life change by giving up a promising chef career in Los Angeles to move to Chiang Mai, becoming a full-time volunteer at the Wat Dan Chan (a local Buddhist temple), teaching local children English, cooking and baking. Recognizing a need to help prepare these high-risk Hill Tribe kids following their graduation, he founded Stu and the Kids to better prepare them for adulthood, helping them get into a university or technical college and giving them the tools for an independent future.

Proceeds from this event go directly to the children’s education, school uniforms, supplies, housing, food and tuition for higher education. Now in their ninth year of fundraising throughout the world, Stu and The Kids has raised over $500,000 for the charity, including last year’s astounding record of $158,000 accumulated from the Los Angeles festival, fundraising on the east coast and online donations during 2017.

Stu and The Kids supervises 29 kids, including eleven that received scholarships in 2018 to support education and jobs in accounting, business management, in-home elder care, cooking and fashion and textiles. The charity hopes to increase the awards to twelve, four-year university scholarships in the coming year.

The Thai restaurant community in Los Angeles is embracing this Benefit. Sarintip “Jazz” Singsanong of Jitlada fame will be in attendance and cooking.

Tickets for advance general admission, VIP admission and kids may be purchased online. General Admission in advance is $125.

It’s the City of Beverly Hills’ 100th Birthday. It takes a mega-talented pastry chef (and his skilled team) to create and bake a massive edible cake befitting this very special occasion. 15,000 slices will be served.

Anthony Bourdain has called upon Chef Jet’s considerable expertise in Thai cuisine in the past with his prior Travel Channel’s “No Reservations.” Jet discusses his recent adventures with Mr. Bourdain for the new season of CNN’s “Parts Unknown.” Hint…It’s in Las Vegas.

Chef Eric Greenspan (ex-Foundry on Melrose) is a genuine character and an accomplished chef. He’s now also the maestro of gourmet grilled cheese sandwiches!

Jet Tila and a heritage pig at Cochon 555 in 2013Anthony Bourdain has called upon Chef Jet’s expertise in Thai cuisine in the past with Travel Channel’s “No Reservations.” Mr. Bourdain’s new series is “Parts Unknown” for CNN just starting its 3rd Season on Sunday evenings. The second episode of the new season of “Parts Unknown” (April 20th air date) was Las Vegas.

Jet was tabbed by Anthony Bourdain to give him the insider’s tour of the menu at Lotus of Siam. This is one of the most critically-acclaimed Thai restaurants in the United States. Jet points out to have the best experience there you really need to know what to order from a very large menu.

We had some particularly high profile culinary celebrities with us this week. Daniel Boulud (of his flagship Daniel in New York) is in Los Angeles the Week of Oct. 21st and we had him for a long, engaging chat discussing his new book, on keeping a classic French restaurant fresh and operating a new restaurant in Las Vegas.

Also when it comes to Thai food in America one of the leading authorities is Andy Ricker of Pok Pok in Portland and Brooklyn. He modestly does not profess to being an authority on Thai cuisine but Chef Jet feels otherwise. Surprisingly he’s not even Thai. Jet gets all the 411 from him on some of his signatures dishes and his love of all things Thai.

Andy Ricker of Pok PokSurprisingly Chef Andy Ricker is not from Thailand but as an accomplished restaurateur he’s found great success recreating the flavors of Northern Thailand which he really fell in love with during an extensive visit in 1992. He started with a modest restaurant in Portland, Oregon and his growing empire now extends to Brooklyn.

The original Pok Pok in Portland became a must-stop destination for visiting foodies after being profiled on Food Network’sDiners Drive-ins and Dives.” In 2011 Andy was bestowed the honor of “Best Chef – Northwest” from The James Beard Foundation.

Just out from Ten Speed Press is Pok Pok : Food and Stories from the Streets, Homes, and Roadside Restaurants of Thailand. Particularly helpful are the writings on what differentiates the various regions of Thai cuisine. The book also contains suggestions for complete menus using the various recipes.

Pok Pok: Food and Stories from the Streets, Homes, and Roadside Restaurants of Thailand by Andy Ricker“Pok Pok” is a Thai reference to the sound heard from a mortar and pestle when you are grinding food in it.

On to the recipes…

Chef Ricker shares his signature recipe for chicken wings which is more Vietnamese than Thai. He also talks about the famed papaya salad and provides tips on how to properly prepare it. In Thailand there are some hundred variations of this popular dish.

Susan Feniger of StreetSusan Feniger of Susan Feniger’s Street in Hollywood and Border Grill (Los Angeles, Santa Monica and Las Vegas) fame needs no introduction to listeners of the “SoCal Restaurant Show.” She was also one of the early super stars of Food Network with her business partner Mary Sue Milliken in the long running “Too Hot Tamales” series.

Susan Feniger’s Street will be a featured restaurant in the upcoming Thai Food Festival.

There are lots of Thai items on the regular Street menu.

The dish they are showcasing at the festival is Khao Gee, a Northeastern Thai snack.

A new Border Grill, with a full bar, has just debuted in the revitalized, and greatly expanded, Bradley International Terminal at LAX.
