Instant Dutch Yellow Potatoes

Sometimes when I come home late, I have to make a meal for the family with whatever is left in the fridge. We always keep a bag of Melissa’s Dutch Yellow Potatoes on hand, so I commonly revert back to this quick and simple classic. Most importantly, the kids and my boss love it.

This is a simple 2-step process. First, you cook the potatoes in boiling acidulated water. The vinegar acts to prevent the starch from breaking down. Next, you strain and slice the potatoes, then pan-sear them as if you were cooking scallops. Finish with some butter, sea salt, and fresh parmesan; you’re all set with a delicious meal (or side) in around 20 minutes.

These potatoes are round with golden yellow skin and creamy yellow flesh. DYPs® have a rich texture with a mixture of buttery and nutty flavors and the perfect amount of starchiness. Naturally resistant to greening and sprouting, they’re convenient to use and have a great shelf life.

Ingredients

  • One bag of Dutch Yellow Potatoes (about 1 lb)
  • 1 tablespoon white vinegar or cider vinegar
  • 1 tablespoon olive oil
  • 2 tablespoon butter
  • 1 tablespoon kosher or sea salt
  • fresh chives and fresh cracked peppers to garnish

Steps

Put your potatoes in a small sauce pot cover with cold water, add vinegar, and bring to a boil. Boil for about 15 minutes or until they are fork tender. Strain the potatoes and run cool water over them so they are easy to handle. Slice the in half. Get a saute pan hot and add the olive oil. Sear the potatoes on each side, or saute and flip, then finish with some whole butter off the heat. Garish with chives, salt and pepper and serve with a blizzard of fresh parmesan.

It’s located on the site of the long-running Café Pierre (and the ownership group includes the partners from the former Café Pierre who are the father and daughter combo of Chef Guy Gabriele and Sylvie Gabriele.)

The guest seating at Love & Salt has possibilities for all tastes and preferences. If old-style comfort is you choice then there are booths along the West wall. For foodies there are two different chef counters where the guest becomes part of the action in the kitchen. For a more lively experience the long bar offers the full menu and there is a lengthy communal table in the middle of the space running from the entrance area back to the kitchen.

Menu highlights at Love & Salt encompass unusual items including a Roasted Glazed Pig Head served with maple, vinegar, pale ale, condiments and toast.

Scopa Italian Roots in Marina del ReyChef Antonia Lofaso of the newly opened Scopa Italian Roots in Marina del Rey and Black Market Liquor Bar in Studio City picks up the conversation.

Chef Antonia is a graduate of the French Culinary Institute in New York and cooked at Spago for many years working her way up the tall kitchen ladder there. Her first executive chef post was at SBE’s Foxtail in West Hollywood.

Scopa, located next door to Roy Choi’s Sunny Spot, is her latest venture.

There is a huge antipasti bar where all the cheeses and salumi are cut and plated to order right in front of the guests. The mini Italian Hero (coppa, prosciutto, salami, provolone, olive oil, and vinegar) is very popular.

There is also an oyster bar.

The varied menu also offers salads, pasta, large plate mains, and seasonal sides including polenta. The Pappardelle with pork shank, stracciatella, and arugula is a standout. The flavorful T-Bone is a meat-lovers’ dream.

Antonia’s first cookbook, published in 2012, is still available via Amazon. It’s The Busy Mom’s Cookbook: 100 Recipes for Quick, Delicious, Home-Cooked Meals. Antonia has a teenage daughter and the recipes were developed through the eyes of a hardworking single mom.

Antonia Lofaso of Black Market Liquor Bar and Scopa Italian RootsFor a chef with as much media exposure as she has received Antonia Lofaso is refreshingly low-key. Her name is not even on the menu for the two successful restaurants in Los Angeles that she is both executive chef & partner of. The popular restaurants are Black Market Liquor Bar in Studio City and, the newest, Scopa Italian Roots in Marina del Rey, her loving homage to Italian-American red sauce cooking.

You first met Chef Antonia on Bravo’s “Top Chef” Season 4 set in Chicago. Two years later she was invited back to compete on “Top Chef All-Stars” where she battled to the finals.

Antonia currently serves as one of the regular judges on Food Network’s hit series, “Cutthroat Kitchen” hosted by Alton Brown. Season 2 is now airing on Sunday nights.
